Baked Tuscan Chicken

4-6 Boneless Chicken Breasts, thawed
Italian Bread Crumbs
Grated Parmesan Cheese (Store Shelf Kind)
Sauce/Spread:
1/3c Mayo *See Notes
1/3c TO 1/2c Jarred Roasted Red Peppers, cut up
1tsp Balsamic Vinegar
1/4tsp Garlic Powder
1/4 tsp Onion Powder
1/2T Oregano
1/4T Parsley
1/8 tsp Sugar
1/16 tsp Sea Salt
1/8 tsp Pepper
1/4 tsp Basil
1/8 tsp Thyme
1/16 tsp Celery Salt

Mix Spread, place in fridge til use. Preheat oven 425. Butter Flavor Cooking Spray glass pan. Add A LITTLE sauce to bottom, barely any. Line up chicken. Smoother them with rest of sauce. Sprinkle small amount of Italian Bread Crumbs. Then Sprinkle with good amount of Grated Parmesan Cheese. Bake about 30-40 minutes, til done. Delicious lower calorie, lower carbohydrate meal.
*Notes: Haven’t tried, but, maybe using 1/6c Mayo + 1/6c Sour Cream, will cut calories. Email me and let me know if it’s tasty.
