El Low TaCarbos (Low Carb Taco Dish)

Low Carb Taco Cass.


Lower Carbs
10 Eggs
1/2c Sour Cream
1/8tsp Baking Powder (Optional)
1/4tsp Chili Powder (Optional)
1/4tsp Garlic Powder

1.5c Shredd. Mexi Cheese
1 lb. Lean Ground Turkey
1 Taco Season Pkt. (Skip water in instructions)
2/3c Salsa
Up to 1/2can Black Beans w/ Jalapenos (Drained well)
1 Onion
1/2 Green Pepper, cut small
1/2 Red Pepper, cut small
1c Spinach, chopped small

Sprinkle Top with Pepper
Toppings: TACO SAUCE (Don’t skip this), Sour Cream, Roma Tomatoes, Lettuce, FRITOS, etc.

Cook turkey meat. Add in taco seasoning and salsa (Skip water on packet instructions). In a bowl blend first 5 ingredients. In a separate bowl toss the rest. Place meat mixture in Butter Flavor Cooking Sprayed pan. Pour egg mixture over top. Give slight stir, to get eggs underneath, too. Sprinkle top with pepper. Bake about 30-35 minutes at 400-425. Or until pick goes into center and comes out clean.

*Regular beans work. You can choose to use egg whites. Substitute accordingly. Even serve on shells as Mexi Breakfast Burritos.
