Baconed Broccoli

Coconut Oil
1-1.5c Bacon Ends
Frozen Broccoli

Cheddar Melt Cheese Blend Shredded Cheese

Add 1T of Coconut Oil to skillet. Brown Bacon Ends. Add in Broccoli. Cook and keep covered. I allow my broccoli to get a lil brown on bottom, cooking up all the juices. Top with some cheese. Melt. Serve.

Butternut Squash Soup

Rub Crock Pot with Butter (I used Salted)
1 Butternut Squash, deseeded, cubed, we leave skin on
1.5c Diced Cooked Ham (I used Ham Steak)
3c Vegetable Broth (I do Cubes+Water)
3c Chicken Broth (I do Cubes+Water)
1 can Pinto Beans, drained
3c Fresh Kale
1 Red Pepper, cut up
1 SMALL Onion
1/3c Frozen Corn
1.5c Baby Carrots, cut up
1/2T Fresh Garlic, minced
1/2T Curry Powder
1/4tsp Ginger Powder
1/4-1/2tsp Himalayan Salt
1c canned Coconut Milk (Last Hour.)

Cut, deseed, and cube Squash. Add all, except Coconut Milk. Cook on High first 2 hours, then, low, for an additional 3-4hours (Until Squash is soft). Last hour, scoop out most of the Squash Cubes. Add Squash to blender with some of the soup juice. Blend smooth and add back to crock. Pour in Coconut Milk. Cook on low another hour.

Beef, Canadian Bacon, & Swiss Pretzel Burgers with Horseradish Dressing

Frozen Beef Patties, grilled
Canadian Bacon, grilled
Pretzel Buns, toasted on grill, Buttered
Swiss Cheese

Top with: Mustard on one side (Opt.), AND, good amount of:
Horseradish Sauce (PLEASE, TRY ON BURGER!):
2 Very good size Tablespoons of Horseradish Sauce
3T Light Mayo
1t Ground Mustard Powder
Couple grinds of Black Pepper
Good shake of Garlic Powder
1/4 tsp Sugar
1/8-1/4tsp Sea Salt
1.5 to 2T Red Wine Vinegar
1/4c Sour Cream (If none, 1/8c Milk)
Premake and place in fridge.

Grill Burgers. Grill Canadian Bacon. Toast Buns, butter. Top Burgers with Canadian Bacon, then, place Cheese on top of Canadian Bacon… Melt. Add Mayo or use our AWESOME Horseradish Sauce!

Served with a Quick Hawaiian Pasta Salad:

Sauce:
1c KEN’S Buttermilk Ranch OR Miracle Whip
1c+2T Crushed Pineapple in Juice, drained
1-1.5tsp Lemon Juice
1tsp Paprika
A lil shy of 1/4c Real Bacon Pieces (In Salad Section)
1/4c Craisins

Ingredients:
1/4c Turkey Pepperoni, quartered
1/4c Cucumber, peeled and seeded, cubed
1/4c Sweet Bell Peppers, seeded, cut up
2-4T Sweet Red Onion, minced up
1 Celery, minced
1/4c, or so, Cheese, cubed small
Optional: 1/2c Ham cubes. 1/2tsp Sugar (Added to sauce.)

Spiral Noodles, to desired consistency (NOTE: IF not making right before, you need to make it a lil extra saucy. As, the noodles will soak up the sauce and flavor.)

I always premix sauce and set aside til use, to blend flavors. Boil noodles, accordingly. Rinse with COLD Water. DRAIN WELL.

Top with:
Hawaiian Sunflower Seeds or Honey Roasted Bunches Of Oats Granola

Ham and Bacon Potato Soup

1/3T Butter
6c Water
4 Chicken Broth Cubes
1 Vegi Cube (2c worth!)
4.5c Potatoes, diced small
1c of Ham (I used smoked Ham Steak)
1/2c Carrot Sticks
1 Celery
3/4 of an Onion
1.5tsp Fresh Garlic, minced
1-2T Parm Cheese (Store shelf kind)
1tsp Dijon Mustard
1/8tsp Mustard Powder
1/4tsp Celery Salt
1/4tsp Cajun Seasoning
1/2T Fresh Parsley
2tsp Chives, minced
1/4tsp pepper

Last Hour:
2-3 Large Bacon Slices, cooked and crumbled
1/2c Evaporated Milk (Or, Sour Cream. I used Evap. Milk!)
1/2c Shredd. Cheddar Cheese (Or, Velveeta. I used Shredd. Cheese)

Optional (I skipped): Peas and/or Broccoli.

Dice up Potatoes, I dice smaller. Add all, except Bacon, Evaporated Milk, and Shredd. Cheese. Last hour, Remove most Potatoes with some juice. Blend well. Add back to crock, adding in Bacon, Evaporated Milk, and Shredd. Cheese. Make sure to only cook on Low last hour.

Ham Salad (For MANwiches)

1 Ham Steak, cooked, diced
3T Dried Craisins (Less Sugar Kind)
Plump 1/4c Pineapple Chunks
Few Tablespoons Onions, chopped small
3/4 Celery Stick, 1/3cut long way, then cut small

1/4c KEN’S Honey Mustard (Or, more to taste)
1/3c Mayo (Or, more to taste)
1/2T Yellow Mustard
1/4tsp-1/2tsp Paprika
1/8tsp Cayenne Powder
1/4tsp Black Pepper
1/4tsp Onion Powder
1/4tsp Mustard Powder

Top with Pickle slices, Lettuce/Spinach, Tomato (Optional).
Boiled Egg Slices are optional, but, I skip.

Healthy Idea: Try Raspberry Yogurt in place of Mayo, or to help cut Mayo!

Our Lil Ol Family Ham

For Thanksgiving we had an amazing Apple Cider Brined Turkey with a Lemon Saged Butter Rub. For Christmas: Our Family Ham Recipe. We’ve done for some years now. Combining an old favorite with anew, making it even better! Making it our Keeper for Christmas!

About 10 lb. Ham (Bought a Pig, came with a Smoked Ham)

Glaze:
1/2c Light Brown Sugar
1/3c Yellow Mustard
2T Butter, softened
1T Lemon Juice (Concentrate kind)
1tsp White Vinegar
1/2T Worcestershire
1/4tsp Mustard Powder
1/4-1/2tsp Fresh Cracked Pepper
1/8tsp Ginger Powder/Season
Optional: Use Garlic Oil instead of Butter. Also, try adding 1/2tsp Chinese 5 Spice! Delish!

Pineapple Rings, drained
Smoked Ham, scored

Butter Pan, add in grate. Add:
3c Baby Carrots, halved
2c Onions
2c Celery
3-4c Fingerling Potatoes, halved or 1/3’d or Sweet Potatoes

Add Vegis to Pan. Add in Grate. Mix Ham Glaze. Score Ham (Slight cut lines into). Lightly brush Ham with Glaze, getting in scored areas. (I brush on Glaze 3 times during cooking).
With Toothpicks, secure Pineapple Rings around Ham (Added either at beginning, or half way through). Add to Pan. Cook according to directions (15-20minutes per pound, I believe).
Served with tTt’s Mashed Taters, Buns, Chicken Stuffing cooked in Vegi/Chicken Broth with Onions and Celery, Canned Cranberry Sauce (Great with Stuffing!), and Vegis from the Pan that the Ham was cooked. Mmm Mmmm Mmmmmmmm…

Note: A lot of people score and add Glaze last hour, I just do it at beginning. Your option.

Simple Crock Pot Ham and Vegis

Now, this is probably a given, with doing for years. (One of the many ways to eat Ham, the simplest, too!) Long lines of others who have done this. But, will throw it on here… Well… Just because!
We love having our Loaded Salad nights. For the Ham, we cook in Crock, with Vegis. Then, kiddos eat Ham and Vegis that night. Leftover Vegis make for great side dishes, upcoming dinners. And, Ham, gets cut up, and placed in fridge for our Salads! Or, Sandwiches or Dishes.

Large Ham Cut
1/3c Water
Few good splashes of Worcestershire
A good shake of Mustard Powder
2c Potatoes, or so
1-2c Onions, or so
1c Celery, or so
2c Carrots, sliced, or so
Optional: Mushrooms, Cabbage, I’ve even amped with 1/2can DRAINED Sauerkraut!, Green Beans, Canned Beans (Drained), endless options…

Butter Flavor Cooking Spray Crock. Cover and cook on Low all day. Serve up. Or, separate and eat vegis as side dish for dinners. And, cut up Ham for Salads, Sandwiches, etc.

tTt’s LOADED Ham N Cranberry Salad with Tay’s DEVINE Balsamic Dressing

LOW CALORIES LOW CARBOHYDRATES – AMAZING Flavor!

Tay’s Balsamic Dressing:
2T Balsamic Vinegar
1/2T Extra Virgin Olive Oil
1/4tsp Lemon Juice (Fridge 100% kind)
1T Honey Mustard
1T Maple Syrup (Organic Grade B)
1/16tsp Sea Salt
1/8tsp Pepper
1/8tsp Mustard Powder
1/4tsp Greek or Italian Season (I did Italian)

Lettuce
Romaine Lettuce
Ham
Dried LESS SUGAR Craisins/Cranberries
Cubed Cheddar Cheese
Red Onions, sliced
Mushrooms, chopped
Canned Basil Oregano Tomatoes, drained well
Sprouts
Cucumber, sliced, quartered

Cut all up to desired consistency. Premix Dressing. Allow to set about 10-20minutes. Drizzle over Salad. A LITTLE GOES A LONG WAY!!!

Notes: Organic Maple Syrup (Grade B) has Many Benefits! As do Sprouts! Use them!

2 Frozen Chicken Breasts (From 3 lb bag)
1c packed diced Ham (I used uncooked REAL Ham Steak)
1 can Black Beans with Jalapeno in Lime, drained
1 can Chili Beans, undrained
2 cans Stewed Tomatoes, undrained
1 – 1.5c canned Pineapple Chunks in Natural Juice, drained (Reserve Juice)
— 2T Reserved canned Pineapple Chunk Juice (Optional)
1 Sweet Red Bell Pepper
1 Green Bell Pepper
1 Onion
1 Garlic Clove, minced
1/2tsp Dried Cilantro
1T + 1tsp Chili Powder
1/4tsp Garlic Powder
1/2tsp Cumin
1/4tsp Onion Powder
1/4tsp Coriander
1/4tsp Paprika
1/4tsp Ginger Powder
1/16tsp Sea Salt
1/4tsp Dried McCormick’s Orange Peel

Add all to Butter Flavored Cooking Sprayed Crock. Cook on low 6-8 hours.

Mahalo! Hawaiian Coconut Marinaded Chicken Topped with a Delicate Hawaiian Sauce

Thawed Chicken Breasts

1c Lawry’s Hawaiian Marinade
1/2c canned Unsweetened Coconut Milk

Pineapple Topping/Dipping Sauce:
3-4T Crema Mexicana
1/4c canned Crushed Pineapple (In Juice)
1/4 Paprika
1/8tsp Sea Salt
1/4tsp Lemon Juice (Fridge Concentrate Kind)
1/3T Butter
1/4tsp Red Pepper Flakes

Mix Marinade and Coconut Milk. Add in chicken. Marinade 5-6 hours. Cook however you’d like (Grill, Skillet, Oven- We did Oven. Covered with Foil. Baked 450 for about 35 minutes). Top with WARMED Sauce (I microwaved about 30 seconds).
OTHER OPTIONS BELOW!!!

Notes: Eat this alone. Or, Over rice (Cooked in broth).
OR:
1 Green Pepper. 1 Red Pepper. 1/2 Onion. 1c Zucchini (Sliced/Halved). 1 Garlic Clove, minced… Cut up all. Butter Flavor Cooking Spray Baking Dish. Add in vegis. Top marinaded Chicken over. Bake 450 for 35-45 minutes, covered. Serve with a lil sauce over top. (1c Diced Ham- Added in with vegis- Is Optional… And extra tasty.)
Wanna go an extra mile?!: Marinaded Chicken Above can be breaded, and served topped with sauce. Mix Cornstarch (Or flour) with Coconut Flakes. Dip in beat Eggs. Then back into Cornstarch/Coconut mixture. Fry in Oil, browning each side. Bake in preheated oven, 450, for about 12-15minutes… Til cooked. Top with Sauce. Or use as dipping sauce.

Mahalo! Hawaiian Pasta Salad – It’s Grindz!

2c Uncooked Noodles of choice (I would’ve used Bow Tie, only had Mostaccioli)

1c uncooked Chicken Breasts, cubed largish
1c Ham Steak, diced (Mine was uncooked)
1/2c Lawry’s Hawaiian Marinade
1/2T Coconut Oil

1/2 Red Pepper
1/2 Green Pepper
1/2 Onion

Sauce:
1/2c Mayo
1/2c canned Crushed Pineapple (In juice), slight drain
1/8-1/4tsp Sea Salt
1/4tsp Paprika
1/4tsp Lemon Juice (Fridge Concentrate Kind)

Topping: Shredded Cheddar Cheese

Marinade Chicken and Ham for about 5 hours. Heat skillet with Coconut Oil. Add in marinaded Chicken and Ham. Cook til done. Set aside. Allow to cool.
Mix Sauce ingredients. Set in fridge, til use.
Boil Noodles (Noodle tip: Add in a LIL Oil and a pinch of salt while boiling. Helps noodles sticking.). I drain and rinse in cold water. DRAIN WELL!!!
Chop up Red Pepper, Green Pepper, and Onion.
Combine all together. Serve.
(When premaking for party… Keep in mind, noodles and chicken mix may eat up sauce. So, I always make a lil saucier. Add sauce no longer than 30 minutes prior to serving. Altering sauce amount (Like doubling) is up to your tastes.)

NOTES: I’m sure you can make a “Half the Flavor” pasta with skipping marinade… But, it’s SO TASTY with! And Cheap!

Mahalo!!! Chicken Wiches (Hawaiian Chicken Sliders w/ SPECIAL Hawaiian SAUCE)

About 2 lb Chicken
Lil shy of 1c WHOLE Cherry Tomatoes
Lawry’s Hawaiian Marinade

1c Ham, cubed smallish (Or sliced of cooked bacon for topping)
1 Garlic Clove, minced
1/2 Red Pepper
1/2 Green Pepper
1/2 Onion

Sauce:
1/2c Mayo
1/2c canned Crushed Pineapple, slight drain
1/8tsp Sea Salt
1/4tsp Paprika
1/4 Lemon Juice (Fridge Concentrate Kind)
A good shake of Pepper

Bun of choice: Hawiian Buns! Or Buns/Wraps/Lettuce Wraps (Low Carb)

Marinade Chicken AND whole Cherry Tomatoes (*See Notes) for about 7-8 hours (I did 7). Cube Chicken (I do a quick toss back in marinade.). Add chicken to Butter Flavor Cooking sprayed Baking Dish. Add in Peppers, Onions, Garlic, and Ham. Cover with Foil. Bake at 450 for about 20 minutes. Then, mix around. Uncover. Bake additional 25 minutes. Top onto Bun/Wrap of choice. Top with sauce.

Notes: Top with Minced Jalapeno for heat. Or Red Pepper Flakes in marinade, for heat. You can skip Cherry Tomatoes and use slices for Topping. Ham is optional- You can choose to use Cooked Bacon as Topping, instead. Cheese and Lettuce/Spinach are optional toppings, as well.

*** This can be easily turned into a dish of Hawaiian Chicken N Peppers over Coconut Rice (I’d Add: Paprika, Lemon Juice, Pineapple, N Pepper to the Rice Recipe… Or… Just add Pineapple to Chicken N Peppers, top over Coconut Rice… Endless Options to this dish…)

Rollin Hawaiians (Hawaiian Style Ham Enchiladas)

Soft Shells (Cabbage Leaves/ Egg Rolls work)
Fresh Tomato, diced (We did Roma)
Shredd. Mozarella Cheese
Spinach, rough chop
Cream Cheese Mix:
2 oz. Cream Cheese
1/2T Mayo
1.5T SOUTHWEST SPICY Mustard (Don’t Skip)
Ham Mix:
1.5c Ham, diced small
1/2 of Onion, chopped
1/3 of Green Bell Pepper, chopped small
2T Dried Sweetened Cranberries (Don’t Skip)
Topping (Over rolled shells):
1c Great Value Peach Pineapple Chipotle Salsa
About 3/4c To 1c Shredd. Cheddar Cheese

Grated Parmesan Cheese (Store shelf kind)

Butter Flavor Cooking Spray baking dish (Mine fit 6 tacos).
Blend together Cream Cheese Mix. In separate bowl, toss together Ham Mix.
On soft shell spread THIN layer of Cream Cheese Mix. Top with Ham Mix. Top with: Tomatoes, Spinach, and MOZ. Cheese.
Roll, tucking in corners. Lay into baking dish.
Mix topping together (Salsa/Chedd. Cheese). Top over rolled shells.
Sprinkle with good amount of Parmesan Cheese.
Bake, uncovered, at 425 for about 40minutes, or so.
Optional: Top with Sour Cream.

Note: My ham was not precooked. I’m sure there’s no big difference in that. Optional to add a few Tablespoons of Pineapple Chunks, chopped smaller. I forgot. But, thought it had the perfect amount of sweet, so will continue to skip it! Also, can kick this up with adding a lil bit of Red Pepper Flakes or minced Jalapeno!

Souped Up Black Bean Stew (Black Bean Stew)

1 bag Dried Black Beans
10c Water
6 Chicken Broth Cubes
2 Beef Broth Cubes
1 can Black Beans WITH Jalapeno IN Lime, undrained (Optional)
1/3T Butter
1/2 lb. Cheese Sausage Link (Cheddar Brats work!)
About 1lb. Boneless Chicken Breast (Large chicken breast)
1c Bacon ENDS
1c Ham, diced (I believe I used Smoked Ham Steak. Optional, I skip sometimes.)
1 Onion (I added last hour, if it matters)
1T Chili Powder
1/2-1tsp Cumin
1/4tsp TO 1/2tsp Garlic Powder (NOT SURE ADDED. “Think” I did 1/2tsp)
1/4tsp Mustard Powder
1/4tsp Red Pepper Flakes (Optional)
1/4tsp Pepper
1/8tsp Sea Salt
1 Dried Bay Leaf

Rinse Beans. Butter Flavor Cooking Spray crock (Or, Butter). Add all to crock. Cook on High first few hours. Then, switch to low for rest of time. Cook 7-8 hours. OPTIONAL: Scoop out half the Beans, blend smooth, add back in, and stir.

Serve with Rice:
Lemon Pepper Rice:
2c Instant Rice
2c Water (Per rice instuctions)
1/2tsp + 1/2tsp Lemon Pepper
I microwave rice with 1/2tsp lemon pepper, covered. Then stir in rest of lemon pepper, when done.
Or:
Lime and Cilantro Rice (Rice cooked in Water + Crushed Broth Cubes with Dried Cilantro. Splash with a LIL Lime)
Reg. White Rice (As dish has enough flavor!)

NOTE: Black Beans DYE everything! Caught me off guard at first! Just a Heads Up…

The Swiss Pig Rolls (Swiss Ham Rolls)

Soft Shell
LISA’S GREEN CHILE TOMATILLO SALSA
Shredded Swiss Cheese
Ham Lunch Meat Slices (Thick)

4oz Cream Cheese
3-4T Sour Cream (I did 4)
1tsp Fresh Chives, minced

Mix cream cheese, sour cream, and chives in a bowl. Spread onto entire taco shell. Then, spread with drained salsa (*See Notes). Top with thick slice of ham (I halve to fit length). Sprinkle with swiss cheese. Roll. Fridge for 1 hour, or so (I wrap in foil til use. Usually overnight!). Slicing optional. Serve cold. Or SLIGHTLY warm (DO NOT warm too long. Test run it. These will ooze if not careful!). Eat as taco warmed, or slices for parties.

Salsa Note
: I use a fork to scoop out salsa. Place into seperate bowl, and drain excess juices. This helps preventing everything to be too runny, etc.

Swiss Porkers (Ham and Swiss Wontons)

Ham N Swiss Wontons
Filling:

1c Swiss Cheese, shredded
1/2c+2T Ham
1/4tsp Dijon Mustard
1/8 tsp Pepper
2T Cream Cheese

Wontons Wrappers
Smidge More of Cream Cheese to spread in each

Blend Filling. Spread a baby’s spoon worth of cream cheese onto each wonton. Top with filling. Close tightly. Place onto baking pan SPRAYED with Butter Flavor Cooking Spray. Lightly spray tops with more. Bake in preheated oven at 375 for ABOUT 7minutes (Keep eye on), or so. Til the bottoms are cooked or LIGHTLY browned. Then Broil 1 minute (Keep eye on)
Made about 15, or so, wontons.

*Photo, on plate, was after freezing. It froze okay. Just microwave it correctly- NOT Nuke it! I wet my finger with water. Quickly rubbed each. Microwaved 4 about 45sec.-1min. Was Delicious. Freezing: Place separately onto plate. Once frozen, throw all into ziploc.

Porky Pig N Bean Soup (Ham & White Bean Soup)

1c to 1.5c Ham, cubed
1 can Cannellini beans, drained
1can Northern Beans, drained
1 can Navy Beans, drained
1 can Butter Beans, drained
5c Water + 5 Chicken Broth Cubes
1 Onion
1 Carrot, grated
1.5tsp Garlic, minced
1/4 tsp Mustard Powder
1/8tsp Sea Salt
1/8tsp Pepper
1/4tsp Cajun Seasoning
1 Bay Leaf

Add all to Butter Flavor Cooking Sprayed Crock. Cook low about 8 hours.

*I like it the way it is. You can choose to use dried beans, but, will need to alter, more broth. Longer cooking time may be needed. Also thickening. Like 1-2T Flour with some of the soup broth blended, well. Then stirred into the soup. May alter flavor, tho. Try above recipe FIRST!

1c UP TO 1.5c Ham, diced small (I use 1c)
1 can Cream of Celery
4c Chicken Broth Cubes + 4c Water
1/4c UP TO 1/4c+1/8c Pimento Green Olives, sliced (I use 1/4c)
1 Med. Onion
1T Capers, minced
1tsp Worcestershire
1tsp Prepared Mustard
1/4tsp Mustard Powder
1/16 Sea Salt
1tsp Dried Parsley
1/4tsp Dried Dill Weed
1/2c Frozen Peas (Add last hour)
1.5c Milk (Last hour)
1c Shredded Swiss Cheese (Last hour)
1c Med. Shell Noodles (Last 45min.)

Cook on low for 5 hours. Last hour add in cheese, milk, and peas. Stir frequently. Last 45minutes, add in noodles. Serve with Biscuits.

Piggy Pie (Ham N Sweet Potato Pie)

1.5c TO 2c Ham, diced (Leftover Holiday Ham)
1c BABY Carrots, cut in half
2 cup Sweet Potatoes (I may have used Yam), diced
1 small Onion, chopped
2 small Garlic Cloves, minced
2.5T Dijon Mustard
1/4c Brown Sugar (Not packed!)
1/4 tsp Mustard Powder
1T Honey
Few grinds Black Pepper
Pie Crusts
Sour Cream (To top for serving- DON’T SKIP!)

Add all, except crust, in crock sprayed with butter flavored cooking spray. Cook on low 4 hours, until cooked. Allow to cool some, add to pie crust. Cook according to crust directions. Allow to cool a little. Top with sour cream! It’s delicious with sour cream, trust me. (Forgot to add that for photo)

Sweet Porky Pig and Carrots



3-4 Pork Chops (I use bone in, but REMOVE BONE)
2T Dijon Mustard (Nice size T)
1/4c Brown Sugar
1/4 tsp Mustard Powder
1T Honey
2 Garlic Clove, minced
1 small Onion, chopped
1/4 tsp Pepper
1/16 tsp Sea Salt
1.5c TO 2c BABY Carrots

Butter Crock, well. Add all ingredients (I don’t brown meat, just throw in.). Cook low 4-5 hours, until all’s cooked and soft. Stirring. (If needed, add in Chicken Broth, a little as needed. Throughout cooking. I didn’t need to.)

Note: Maybe add a cup of large chunk Sweet Potatoes! I will try this next time. Also this recipe goes GREAT with HAM!!!

Aloha Soup-Ah (Hawaiian Soup)

4 cups Water
4 Chicken Broth Cubes
1 can Pineapple Chunks, drained
1 can Tomatoes (Basil Oregano kind, or Stewed), entire can
1 Green Pepper
1 Onion
1 tsp Oregano
1/8 tsp Onion Powder
Grated Parmesan
1 cup Ham, diced
6 oz. Canadian Bacon, MINCED

LIGHTLY oil skillet. Brown up meat. Spray crock with cooking spray. Add all ingredients- EXCEPT Parmesan. Cook on low 5-6 hours. Add in 1 tsp parmesan per bowl (Optional). Serve.
