Mexi-Style Meal (Steak Tacos, Beans, Rice)

Marinaded Steak Tacos, Spicy Frijoles charros (Made with Red Beans), and Cilantro Lime Rice.

Steak Marinade:
1lb. Steak
1 Beef Broth Cube, crushed

1T Dried Oregano
1tsp Cumin Powder
1/4tsp Him. Salt
Good shake of Pepper
1 Large Garlic Cloves, minced
Good shake of Onion Powder
PEEL of 1 Mandarin Orange

Organic Cold Pressed Coconut Oil
1/2pkg, or so, Fresh Sweet Mini Bell Peppers, sliced thin
1 Onion, sliced thin
1/4tsp Him. Salt, or to taste
1/3c Water (I add to ziploc bag to get left behind Marinade Season)

Shells, Moz. Cheese, Butter Spray

Marinade several hours in ziploc bag. After marinading, slice meat into thin, small pieces. Add Oil to pan and heat til hot. Add meat (With orange peel slices). Cook til mostly cooked. (Remove small pieces of orange peel, so they don’t get lost with peppers. Keep large ones in.) Add in Peppers, Onions, Salt, Water. COOK DOWN. Remove rest of orange peels.
Top Meat onto Shells. Add in Moz. Cheese. Roll. Butter spray skillet and wraps. Brown each side.

Instant Pot Spicy Frijoles Charros (Made with Red Beans):
1c DRIED Small Red Beans
1/3c, or so, Bacon Ends, fried up (WITH grease)
1/2 can Tomatoes in Green Chiles, drained some (Get those chiles)
2.5c Water
2.5 Beef Broth Cubes, crushed
2.5T Minced Jalapeno (I used Jarred)
2T Fresh Onion, minced up
1 Garlic Clove, minced
1tsp Dried Cilantro
1tsp Cumin
1/4tsp Him. Salt
Good shake of Pepper

Add all to Instant Pot. I sautee to dissolve the cubes and quicken the heating process. Set on Pressure Cook with Seal closed for 35-40 minutes. Once done. Allow to Pressure Release on it’s own for about 10-15minutes. Release Seal. Set on Sautee and COOK DOWN JUICES, mostly.

Cilantro Lime Rice:
Rice cooked in Chicken Broth, with Splash Of Lime Juice and Good Shake of Cilantro.

Pork N Beans Chili Soup with side of Cilantro Lime Rice

Crock Pot… Just throw it in, and forget about it! Delicious never came so easy! 

2 bone in Pork Chops
1 Beef Broth Cube
1c + 1/2c Water
1 15oz. can Tomato Sauce
1 can Tomatoes (I wanna say I used w/chiles), undrained
1 can Black Beans WITH Jalapeno in Lime, slight drain
1 can S&W Onion, Garlic, Jalapeno White Chili Beans, undrained
1 can Light Red Kidney Beans, drained
1T Soy Sauce
1/2 lrg. Onion
1/2c frozen Corn (Opt., I forgot!)
1 Swt. Red Pepper
1 fresh Garlic Clove, minced
3/4-1T Cumin
1/2T Dried Oregano
1/2tsp Course Black Pepper
1/4tsp Sea Salt
2 Dried Bay Leaves

Add all to crock, cook on high 4 hours, or low 6-8 hours. Serve in bowl with Rice off to side of it.

Serve with Cilantro Lime Rice:
2 1/2c Instant Rice
2 1/2c Water
1 Beef Broth Cube, crushed
Splash of Lime
Good Shake of Dried Cilantro

Mix all. Microwave, covered, according to directions, stirring.

Mexi Cumin Chicken, Rice, and Beans

Eat as is, with Toppings. Or, as we did, as BURRITOS!

Chicken
Chicken Marinade:
1T White Vinegar
1T + 1tsp 100% Avocado Oil
1tsp Lime Juice (100% Fridge Kind)
1T Cumin Powder
1tsp Chili Powder
1/4tsp Sea Salt
1tsp Garlic Powder
1/2tsp Onion Powder
1/4tsp Pepper
1/4tsp Chipotle Powder

1 + 1/4c Minute Rice
1 + 1/4c Water
1 Chicken Broth Cube, crushed
1-2T Taco Sauce (I used 1T)
1 can Black Beans w/ Jalapeno in LIME, drained

Toppings: tTt’s Pico, Sour Cream, Shredded Cheese, Lettuce, Taco Sauce
Soft Shells (If tacos)

Marinade Chicken 5-6 hours. Butter Flavor Cooking Spray a baking dish. Lay in Rice, Water, Sprinkle over Crushed Broth Cube, stir in Taco Sauce. Stir in Drained Black Beans. Top with Chicken. Bake at about 425-450 about 35 minutes (Til Chicken is done). Cut up Chicken. Mix into Rice. Serve on Soft Shells with Pico, Sour Cream, Cheese, Lettuce, Taco Sauce. Enjoy! OR… Eat as is, topped with Toppings, skipping Shells.
Optional Step: Roll up Toppings in Soft Shells. Butter Flavor Cooking Spray skillet. Brown each side of Burritos.

Another Mexi Chicken Marinade:
2T White Vinegar
2T Soy Sauce
1/8tsp Sea Salt
1T+1tsp Cumin
1T Montreal Steak Seasoning
2tsp Garlic Powder
1tsp Onion Powder

Bean Sauce:
1can Refried Beans
3/4c Broth (Chicken or Beef) (Water can be used or 1/2-1/2)
1/2tsp Garlic Powder
1/4tsp Onion Powder
Optional: 1/2T canned Chipotle Peppers in Adobo Sauce, mince (Or, 1/4tsp Chipotle Powder), or to taste

Mushrooms, chopped
1/2 can Southwestern Corn (Bell Pepper kind)
Onions, chopped
Dried Oregano
Good Splash of Soy Sauce

Corn Shells
Sargento’s Artisan Blend Shredded Mexican Cheese (Queso+Mexi types)

Marinade and Cook Chicken (Charcoal Grill IS BEST!), shred. I also grilled the Vegis, in foil, separately with a lil Oil (1/2tsp), seasoned well with Oregano, and a good few splashes of Soy Sauce.
Bean mix: Simmer in sauce pan a few minutes, to blend nicely.
(For flexibility, place Corn Shells inbetween lightly damped paper towels. Microwave few second til more flexible). Fill with Chicken, Vegis, and a lil Cheese. Roll. I use toothpicks to hold in place. Top with Bean mix, then, Queso/Cheese. Bake, uncovered. I did about 425-450 for about 15-18minutes.

Not another Cabbage Soup! Cabbage and Beans

1 Beef Shank
1/4-1/2 lb Turkey Kielbasa
1 lb Dried Kindey Bean
8c Water
6 Vegetable Broth Cubes (6c worth. Or, more to taste)
Head Cabbage
1 can Stewed Tomatoes, undrained
1/2 sm can Tomato Paste
1c Carrots
2 Celery Stalks
1 sm./med. Onion
1/4c Green Onions (Optional)
1tsp Paprika
2 Dried Bay Leaves
1tsp Tony’s Creole
1tsp Garlic Powder
1/2tsp Dried Thyme
1/4tsp Pepper

Butter Flavor Cooking Spray Crock Pot. Add all. Cook on low til Beans are done (I cook on HIGH first 1-2 hours, then, LOW.) Be sure to remove bones before eating.

Not a Cabbage Person? Kale, Spinach, etc.Optional to up the Broth Cubes, or use 1/2 Beef Cubes 1/2 Vegi Cubes. Endless Ideas for this Beneficial Dish!

Turkey Chorizo Quesadillas W/ Chipotle Cranberried Bean Salsa

Eat these as Tacos, or Enchiladas. Meat is Optional, I used Turkey to cut Calories. Beef+Chorizo can be used, etc.

Meat Mixture (*See Notes):
1.5 -2 lb. Turkey Meat (See Notes)
1/2 lb Chorizo
1 pkg. Frontera Red Chile Enchilada Sauce w/ Roasted Tomato & Garlic
3/4tsp Cumin
1/4tsp Pepper
1/2tsp Dried Oregano
Optional: Garlic Powder and Taco Seasoning (I skipped)

Tay’s Chipotle Cranberried Bean Salsa (Recipe Below)
Shredded Cheese: Mont. Jack or Cheddar or Moz.
Shell of Choice: Corn, Soft, Gyro/Pita, etc.

Toppings (Choose): Sour Cream, Guacamole, Salsa, Shredd. Lettuce, Tomatoes

Premix Bean Salsa (Just toss all). Allow to set some.
Cook Meats. Adding in Fontera Sauce and Seasons. (See Notes).
You can have these as Tacos, or Quesadillas:
Butter flavor cooking spray skillet. Top HALF of Burrito Shell with Cheese, Meat Mix, Bean Salsa, more Cheese (I used both Monterey Jack and Cheddar). Fold. Slide into skillet. Brown. BUTTER FLAVOR COOKING SPRAY TOP, then flip. Brown other side (I place lid over to help heat cheeses). Cut up. Serve with Toppings of Choice.

 *** Tay’s Chipotle Cranberried Bean Salsa:
1 can Pinto Beans, drained
1T canned Chipotle Peppers in Adobo Sauce, minced
3T Dried Semi Sweetened Cranberries (Or fresh)
2T Pulp Free Orange Juice
1tsp Lime Juice (100% fridge kind)
1/3c Red Onions
1 Celery, minced small
1/8tsp Cinnamon Powder
1/8tsp Sea Salt (Or more to taste)

Toss all, allow to sit some. Longer, better. Eat with Quesadillas, Tacos, on Bruschetta, as Dip, etc..

* Notes: I used Turkey and Chorizo. To cut Calories. You can use Beef with Chorizo or just Chorizo. Ours was GREAT, so leaving as is, healthier, too! Optional to add Taco Seasoning or Garlic Powder to Meat Mix. I skipped, was amazing! Or season how you wish your Taco meat to be.

Frozen Bread Loaf Dough

Deep Frying Supplies (Oil, Fryer, etc.) 
Toppings:
Canned Refried Beans
Tay’s Guaca-HOLY MOLY! Sauce Recipe USE THIS!!!
Salsa
Shredded Cheese
Shredded Lettuce

We used our leftover Tay’s Crock Pot Sweet n Spicy Chicken Recipe (Any Taco Meat will work).
Bread Bowls: I use freezer Bread Dough. I place in bowl (Earlier in day – To thaw), on a Warmer. Once thawed enough to handle, Sprinkle with Cumin and Oregano, Fold, Sprinkle again, fold… Keep doing til nicely seasoned, WELL! Cover, allowing to rise.
Heat Oil. Break off large piece. I had to improvise with a metal measuring cup. I dipped into oil to oil it (Helps with sticking) spread dough around it. Using tongs, deep fry to shape into a bowl form. Brown both side. Lay onto paper towels. Sprinkle with Garlic Powder.
Top bowls with Refried Beans, Taco Meat, Tay’s Guaca-HOLY MOLY! Sauce, Salsa, Shredded Cheese, Shredded Lettuce. Eat!

HEALTHIER OPTION: Don’t Fry Dough. Season and Bake around Muffin Pan creating bowls, sprinkle cooked Bowls with Garlic Powder.

Cheesy Juh-La-Peeno Baconed Beans (Cheesy Jalapeno Baconed Beans)

1 lb. Dried Pinto Beans
6c Water
4 Chicken Broth Cubes, crushed
5T Jalapeno, deseed, minced (Save 1/4tsp Seeds)
1/4tsp Jalapeno Seeds
1c Onion
1T Fresh Garlic, minced
2tsp Dried Cilantro
2tsp Cumin
1/4tsp + 1/8tsp Sea Salt
1/4tsp Pepper
1 can Fire Roasted/Peeled Green Chiles, undrained
1c Pico De Gallo (tTt’s Recipe) (Last hour)

2c Shredded Cheese (Mexican Mont. Jack/Cheddar kind)
1/2c canned Queso Blanco (Monterey Jack Cheese Sauce)
2.8 oz. REAL Bacon Pieces

Crock Pot Beans. Cook on Low about 9 hours.
Last hour: Smash beans, mix well. Mix in 1c tTt’s Pico de Gallo
Sprinkle top with 1/2c Shredded Cheese. In bowl, Mix 1c Shredded Cheese AND 1/2c Queso Blanco Cheese Sauce. Spoon, evenly on top. Then, sprinkle 1/2c more
Shredd. Cheese. Top with REAL Bacon PIECES. Cook remainder hour.
Top with Pico de Gallo (tTt’s Recipe) and Sour Cream. Leftovers, have Burritos!
Served with Black Eyed Pea Quesadillas.

Rootn’ Tootn’ Beans (FANTASTIC Root Beer Kidney Beans)

1 lb Polska Kielbasa (All I had at time, was tasty. Your Choice)
1-1.5T Organic Coldpressed COCONUT OIL
1 nice size Onion

1 lb Dried Light Red Kidney Beans
5-6c Water *SEE NOTES
4 Beef Broth Cubes, crushed
2c A&W Root Beer *SEE NOTES
1 15oz. can plain Tomatoes, drained
1 Red Pepper (Optional, I skipped- Forgot…)
1tsp packed Brown Sugar
1/2tsp Garlic Powder
1/2tsp Onion Powder
1/2tsp Chili Powder
1/4tsp Sea Salt
1/4tsp Mustard powder
1/4tsp Ginger Powder
1/4tsp + 1/8tsp McCormick Garam Masala (DON’T SKIP)
1/4tsp Paprika

Add Water, Beef Cubes, Root Beer, Tomatoes, Seasons to Crock Pot. Stir, lightly, add in Dried Beans.
In skillet, Saute Onions and Kielbasa in COCONUT OIL (Has to be Coconut Oil! It adds to this dish!). Add Kielbasa, Onions, and all it’s Juices, to the Crock Pot. Cook on High, first 2 hour. Then Low for 6, or so, hours. LIGHT Stir, occasionally.

*NOTES: I did 6c Water, but, came out liquidy- Slightly Soupy. Next time, I will alter Liquid or Beans. House still loved it, especially the next day! So, will post now, edit later. Was thinking of either: Adding more Dried Beans … or … Changing Liquids, using 5c Water + 2c Root Beer (Keep it 4 Broth Cubes) … or … 5.5c Water and 1.5c Root Beer (Keep it 4 Broth Cubes) … We’ll see…
Leftovers? Line Large Bell Pepper (Ready for stuffing) with 2-4 slices Bacon. Add in Beans. Top with Cheese. Bake.

Adobo Dare You to NOT Try these Tacos! (Philippine Adobo Chicken and Bean Tacos)

Soft Shells
Leftover Adobo Grilled Chicken (*Recipe Below)
– Bean Mixture:
2cans Refried Beans
1 can Basil Oregano kind Tomatoes, drained
1 can Black Beans, drained
1/2 Onion
Sprinkle Dried Oregano
1/4c Salsa

Toppings: Shredded Mild Cheddar Cheese, 1 tsp Sour Cream, 1tsp Salsa
(Optional), Lettuce.

Saute Onions, add in rest of Bean Mixture Ingredients. Top onto shells with Adobo Chicken (Shredded) and Toppings.
Optional: Butter Cooking Spray Skillet. Roll Adobo, Beans, and Toppings onto
Softshell, tucking in sides. Brown each side. Optional to BARELY sprinkle a
little Garlic Powder onto browned soft shells.

* Philippine Chicken Marinade (About 5-6 hours, or so):
Chicken Breasts, thawed
1/2c Soy Sauce
1/2c Rice Vinegar
4 large Dried Bay Leaves
1T Garlic Powder
1tsp Coriander Season
1T Dried Chives
1/2tsp Pepper
1/2tsp Red Pepper Flakes

In ziploc bag, add all. Marinade about 5-6 hours. BEST ON CHARCOAL GRILL!!!

Grilling Tip: We build a hill in center of grill. Light charcoal (We used Hickory Charcoal). Once coals are ashy grey, they are ready. Place on food, on outside of hill of charcoal. Prop Grill Open, using a Slightly crushed pop can. Chicken: Lay Chicken on outer part of grill (Outside hill). Once Chicken isn’t sticking to grate, so much, it’s ready to flip. Flip once, that’s it. Cook til Thermometer reads correct temp.

Crock Pot Mexican Bean Burritos

1 lb. Dried Pinto Beans
6c Water + 4 Beef Broth Cubes
1c + 2/3c Bacon Ends
1/8tsp Hickory Flavored Liquid Smoke
1T Balsamic Vinegar
1c Red Onion
1 Green Pepper
1/2tsp Garlic Powder
1/2tsp Cocoa Powder (Yes, Add!)
1tsp Chili Powder
1/2tsp Cumin
1/4tsp Pepper
1/8-tsp Sea Salt
1tsp Dried Oregano
1/4tsp Red Pepper Flakes
1/4tsp Chipotle Powder
4T UN-Sweetened Raisins (Added Last Hour)

Shell of choice: Soft Shell, Hard Shell, Lettuce Wrap, Egg Roll Wraps, Rice Wrap
Toppings (All Optional, just ideas): Louisiana Hot Sauce, Tomatoes, Salsa, Sour Cream, Shredd. Cheese, Rice (Cooked in Broth)

Butter Flavor Cooking Spray Crock. Add all ingredients, EXCEPT, Raisins. Last 1-1.5hr, Mash Beans, then  add Raisins. Cook on high 1st hour, then low for about 8-9 hours. Serve with Toppings on Shell of Choice (Optional to heat skillet, spray with Butter Flavor Cooking Spray, then Brown each side. Sprinkle at end with Garlic Powder or Garlic Salt is Optional.).
We just do Bean and Cheese, maybe Hot Sauce n Sour Cream. Then Brown!

* NOTES:
– If using Egg Roll Wraps or Soft Shells. Heat skillet. Spray with Butter Flavor Cooking Spray. Brown each side of Egg Roll Wrap/Soft Shell.
-Optional to Saute Vegis and Bacon, before adding to crock. I skipped, just threw all in. Was DELICIOUS!

tTt’s Stuffed Taters – With Homemade Bean Recipe!

Golden
Potatoes
Onions, chopped
Shredded Cheddar Cheese, minced some
Beans (Homemade Recipe Below. Canned Refried Beans may work)
Taco Sauce
Jalapeno Sour Cream

I microwave potatoes for about 4-5 minutes. Then, halve long way. Scoop out center (Not entire- Leave some in!).
Mix beans with potato centers. Add in onions and cheese. Mix. OVER FILL potatoes. Brush some taco sauce over. Bake about 425-450 for about 35-45minutes. Top with jalapeno sour cream. Enjoy.

Bean Recipe:
16 oz. dried Pinto Beans
6 1/3c Water
4 Chicken Broth Cubes
1T Fresh Basil
1T Fresh Oregano
1/8tsp Sea Salt
1/4tsp Pepper
1/4tsp Garlic Powder
1/2tsp Red Pepper Flakes
1T Onions, minced
2tsp Fresh Jalapeno, deseeded and minced

Bean Rolls (Meatless Bean Rolls)

WISHBONE! Italian Dressing Pkt. (Use Wishbone!)
1-2 can Black Beans, drained (I used 2)
1-2 can Black Eyed Peas, drained (I used 2)
1c canned Southwestern Corn, drained
2 Romas, diced
1 sm.-med. Onion
1/2 Green Pepper + 1/2 Red Pepper
3T Jarred jalapenos, rough chop
1/4c Fresh Cilantro, chopped

1tsp Extra Virgin Olive Oil
1T+1tsp Red Wine Vinegar
1.5T Lime Juice (Concentrate kind)
1/4tsp Dried Dill
1/2tsp Chili Powder
1/4tsp Sea Salt
1/4tsp Pepper
1/2tsp Garlic Powder
1/4tsp Cumin
1/4tsp Sugar
1/4tsp Coriander

Butter Flavor Cooking Spray Crock. Add all ingredients. Cook on low for about 4, or so, hours. Add to Egg Rolls or Taco Shells. Top with Shredded Chedd. Cheese and a little Sour Cream. Heat skillet. Spray with butter flavor cooking spray. Brown all sides.
You can also top over chips. Or, do as I do… Add to bowl with a little cheese, sour cream, a little salsa, top with croutons (I used Texas Toast Seasoned). Or Stuff into bell peppers. Bam! Done! You’re welcome.

Cheesy Brat N Beans

1 lb. CheddarBest Smoked Sausage Link with Cheddar Cheese, sliced
1 can Hunts Diced GARLIC Fire Roasted Tomatoes, undrained
1 can S&W CHIPOTLE Pinto Beans, undrained
1 can Cannellini Beans, drained
1 can Jalapeno Black Beans with Lime Juice, drained some
1/2tsp Red Wine Vinegar
1/2tsp Chili Powder
1/4tsp Cumin
1/8tsp Coriander

Butter Cooking Spray Crock. Add all ingredients. Cook on low about 5-6 hours.

Chick-A-Peas (Seasoned Chickpea Snack)

Healthier, and full of Fiber, snack!
1 can Garbanzo Beans (Aka Chickpeas), drained
Ranch Season Packet (Not entire)
Chili Powder
Garlic Powder
Paprika
Few splashes Red Wine Vinegar
Splash of Lemon Juice
Butter Spray (Or Extra Virgin Olive Oil)

Preheat oven to 425-450. Spray pan (Or using paper towel, rub lightly Olive Oil). Mix Chickpeas with good sprinkle of Ranch Powder, Chili Powder, Garlic Powder. Good Shake of Paprika. Then splash with Vinegar and Lemon Juice. Bake about 20minutes, shake halfway thro. Enjoy. Olive Oil may need shorter cooking time!
You can also use good sprinkles of ranch pkt. and taco season pkt. with vinegar and lemon. Cayenne Powder for spice. I’ve even used leftover BBQ Marinade Pkt. Etc. Another goodie is Sprinkle Ranch pkt. with Sprinkle Italian pkt. with sprinkle Parm. Cheese, and splash red wine vinegar! Yum!

It’s ALL MIXED UP! Taco Salad

Frito Taco Salad
Frito Taco Salads, a ritual for a while now.

1.5-2lb Beef (Turkey can be used)
2 GOOD Taco Season Packets
1/2c Water
1/2 can Diced Tomatoes, drained (Reserve juice)
3/4c Salsa
1/2can Refried Beans*
Little less than 1/2 can Black Beans w/Jalapenos* Optional
1 small onion, chopped (Added right before freezing- If freezing)

Cook beef. Add in taco seasons, tomatoes (With Juice), salsa, beans, onions, shakes of: Garlic Powder, Chili Powder, Onion Powder.
Serve with FRESH tomato, fritos, sour cream, shredd. cheese, lettuce, whatever other toppings of choice.

If freezing: Allow to cool. Place in freezer bag (I double bag), lay flat. Day of eating, either thaw or just throw into crock. (I just threw in and kept on warm, flipping.) Serve with FRESH tomato, fritos, sour cream, shredd. cheese, lettuce, whatever other toppings of choice.

*(Rest of cans we used for tacos, the night I premade meals) These are also optional. Point is, just premake and freeze. Or eat time of making and place cans in fridge for later burritos, or freeze burritos for later eatings.
