Sweet N Spicy Fake Out

This one’s been around the town… A keeper!

Chicken, thawed, cut up
Asian Style Frozen Vegi Pkg.
1 Red Pepper

Sweet Sauce:
1c Sweet Thai Chili Sauce
2T Sriracha Hot Sauce
1T Lime (100% fridge kind)
3/4tsp Dried Cilantro

Cook Chicken in skillet, adding in Frozen Vegis. Cook down juices some. Add in Sauce, allow to cook some/simmer. USE SAUCE TO DESIRED TASTE!If any leftover, use for Sweet Thai Pizza! Serve as is. Or, AS WE DID: Over Rice (Cooked in Broth with splash of Soy Sauce). Or, over Quinoa.

Aspara-FOILS (Asparagus Foils)

OH MY DELICIOUSNESS!
These are AMAZING! Easy to Make. Grill, Bake, Stove Top. Or, even cook as Camping Foils (Right on the Hot Coals).

Butter Flavored Cooking Spray
10 Fresh Asparagus Sticks
3 Bacon Slices, cut to 1 in. sizes
Mushroom, sliced
2tsp-1T Onion Soup Mix Packet (We did 1T)
Good Shake of Pepper
TINY Pinch of Sea  Salt (Optional)

Butter Spray Foils. Lay in Bacon. Top with Asparagus, then Mushroom. Sprinkle over Onion Pkt. Powder, then Pepper and Salt. Wrap up in Foil. Bake or toss onto Grill, as we did. Once all’s cooked/Soft. Eat!

ZuSKINNIES (Zucchini Skins) – A healthy and Beneficial Snack

I make ZucCandies (A candy that is made with Zucchini and tastes like Fruit Snacks/Gummies) and never wanting to waste anything… I, ALSO, use the Peeled Skins to make ZuSKINNIES (A great snack to replace Chips!), which are an Extremely Beneficial part of the Zucchini: 
Zucchini’s skin is a more concentrated source of nutrients. Carries Vitamin C, Potassium, and most of the Zucchini’s Fiber and Vitamin K. The skin itself is a rich source of Antioxidant Carotenoids, including Lutein, Zeaxanthin and Beta-Carotene.

Skins from peeled Zucchinis (About 16 oz.)
2T Water
1T Pepper
2tsp – 1T Sea Salt (I did 1T)

Place all into ziploc bag, mix around. Marinade 30 minutes. Place onto Dehydrator. Dehydrate til dried to crisp (Crisps a lil as sits, as well. I want to say I did 8-12 hours. Not sure).

1 – 1.5 lb. Ground Beef (Turkey/Chicken for lighter. Pork, can be used.)
1 Sloppy Joe Packet (Store Brand)
1/2tsp McCormick’s Montreal Steak Seasoning
1/4c Buffalo Sauce (Store Brand)
1/4c Louisiana Hot Sauce (Store Brand)
2T Ketchup
3T Water
(About 1/4c, or so) Baby Carrots, grated
(About 1/4c, or so) Celery, minced *See notes
(About 1/4c, or so) Onion, cut small

 Sauce:
1/3c Hidden Valley Cilantro Lime Ranch Dressing
1/3c Wishbone Blue Cheese Dressing
1 – 1.5tsp Fresh Green Onions, minced
1 Cucumber, peeled, deseeded, grated

Fresh Tomatoes, diced
Buns or Wraps of Choice 

Premake Sauce. Place in fridge (Optional to set grated Cucumber in strainer and allow to drain some, I didn’t.)
Brown Beef, drain excess juices, if needed. Add in Packet, Season, Sauces, Ketchup, Water, Vegis. Simmer til thick. Top onto Bun or Wrap of Choice (We used Joseph’s Flaxseed Flatbread).

Notes: I add a little more Minced Celery at end, for a nice crunch. Tasty.

Tay’s Carne A-Salad (Carne Asada Salad)

Marinade Steak or Pork (4hrs):
2T Soy Sauce
1T+1tsp White Vinegar
1T Taco Seasoning Pkt.
1/2T Cumin
3/4tsp Garlic Powder
3/4tsp Onion Powder
3/4tsp Dried Oregano
1/2tsp Chili Powder
1/2tsp Paprika

HIDDEN VALLEY Cilantro Lime RANCH Dressing

Lettuce
Sweet MINI Bell Peppers
Red Onions
Cherry Tomatoes
Carrot Slivers
Seasoned Texas Toast Croutons

Optionals:
1/4c Corn
1c canned Pinto Beans, rinsed, drained
1 Avocado, cubed small (Or top each bowl with Our Citrus Avocado Sauce)
Tortilla Strips/Fritos

Marinade Meat. BEST ON CHARCOAL GRILL! Cook. Cut up to desired size.
Mix all ingredients into bowl. Add Meat (Or mix in with Salad Ingredients). Add in Dressing (USE CILANTRO LIME RANCH!!!). Top with Croutons/Tortillas (And, Citrus Avocado Sauce, if using). EAT!


Charcoal Grilling Tip: If it tastes like straight up smoke… You’re doing it wrong! We build a hill in center of grill. Light charcoal (We used Regular Charcoal). Once coals are ashy grey, they are ready. Place on food, on outside of hill of charcoal. Prop Grill Open, using a Slightly crushed pop can. Chicken: Lay Chicken on outer part of grill (Outside hill). Once Chicken isn’t sticking to grate, so much, it’s ready to flip. Flip once, that’s it. Cook til Thermometer reads correct temp.

Tay’s Balsamic Watermelon Strawberry Salsa – And, a few ideas for it! Including EASY & HEALTHY Pizzas!

1/2c Strawberries, chopped
1c Watermelon, cubed small
1 can Basil Oregano Garlic Diced Tomatoes, DRAINED
1/2c Sweet Mini Bell Peppers, chopped
2tsp Balsamic Vinegar
2tsp Green Onions, minced
1/4tsp Sea Salt
1/2tsp Garlic Powder
2-3T Red Onions (I did 2.5T)
1/2tsp Lemon Juice (100% Fridge Kind)
1/4tsp Dried Mint
1tsp Fresh Cilantro, minced (Try WITHOUT FIRST, then add)

– Optional (I skipped. Forgot.):
1tsp Jalapeno, deseed Minced
1/2c Goat Cheese or Crumbled Feta (Optional, I skip for Pizza)

Toss all. Allow to Marinade 20 minutes.
Ideas for Use: Salsa for Chips. Salsa for Sweetened Shells (Fry Soft Shell in Butter. Toss in Sugar and Cinnamon.) Serve as Topping for Wrap, Sandwich, Balsamic Burgers, or Quesadillas. Or, as we did… MAKE Taco Shell Pizza.

Tay’s Chicken/Bacon w/ Balsamic Watermelon/Strawberry Salsa Pizzas:
Chicken (I marinaded in White Vinegar and McCormick’s Montreal Steak)
Bacon

Shredded Cheese of Choice
Grated Parmesan Cheese (Store shelf kind)
Tay’s Balsamic Watermelon and Strawberry Salsa
Soft Shells
Pepper, Dried Oregano (Oregano Optional)

I marinaded Chicken 1hr. Cut up. I added Avocado Oil to skillet. Cooked Chicken, if excess juices- Drain it, to help crispify (Especially, for Bacon). Add in Bacon to Chicken. Cook all (Draining excess juices, if needed). Cut up all to smaller pieces. Or toss all in Oven, Bake.
Butter Flavor Cooking Spray Baking Pan. Lay in Soft Shells (Optional to Butter Spray OUTSIDE Edges, to help brown). Top with Chicken, then Bacon. Top with Salsa. Top with Cheeses of Choice (I used Moz., then sprinkle of Pepperjack.+Jalapeno, then, a small sprinkle of Cheddar). Sprinkle Tops with Grated Parmesan (Be sure to get the outside Edge nicely), Pepper, and Dried Oregano (Optional)
Bake, uncovered, at 450 for about 8 minutes.

TAYs AMPED UP Roasted Red Pepper Hummus

1 can Garbanzo Beans (Chickpeas), drained
1/3c Kraft Olive Oil Vinaigrettes Roasted Red Pepper (Salad Dressing)
1/3c jar Sweet Roasted Bell Peppers (Preferably w/ Red in it. Optional)
1-2tsp 100% Peanut Butter *SEE NOTES for Options
1/4tsp – 1/2tsp Cumin
1/4tsp  – 1/2tsp Garlic Powder

For Heat (Options, Pick One! I skipped): tTt’s xXx Seasoning, Cayenne, Louisiana Hot Sauce, Red Pepper Flakes

Blend all in Blender til desired smoothness. Serve as Dip, Topping, etc.
Notes: PEANUT BUTTER can be swapped for Fresh Peanuts, Sesame Seeds, Sesame Oil, Tahini… I have only tried 100% Pure Peanut Butter (Literally, the ingredients only say PEANUTS! That’s it!). Some like it sweet, maybe 1/4tsp Sugar can be added… But, I liked it as it was. Healthier, too!

Tay’s TAYsty Pasta

AMAZING Dish! With a SECRET Ingredient! Most know of the Italian Salad Recipe. This one has a few things that make it STAND OUT! Plus, Lower in Calories, than most. 

16 oz. Garden Delight Rotini Noodles
1tsp Extra Virgin Olive Oil
1/4tsp Sea Salt

 SAUCE (Premix):
1 Bottle Regular or Zesty Italian Salad Dressing (We used Reg. -Essential)
1.5T BALSAMIC Vinegar (Use! Don’t skip!)
1.5T Grated Parmesan Cheese (Store shelf kind)
1tsp White Sugar
1/2c jarred Roasted SWEET Red & Yellow Peppers in Marinade, chopped (Opt.)

1c Mild Cheddar or Colby Cheese Brick, cubed
1c Tomatoes, gutted and diced (We’ve used drained Basil/Oregano Tom. in pinch)
3/4c Signature Honey Ham Cubes
1 pkg. TURKEY Pepperoni Slices
1 can small/pitted Black Olives, drained well
UP TO 1/2c Red Onions, chopped or minced (Opt.)
1/3 Cucumber, peeled and cubed
1/3c Red Pepper, seeded and gutted, cubed (Opt.)

PREMIX Sauce Ingredients. Set aside. Cook Noodles in Boiling Water with Salt and Oil (Oil helps noodles from later sticking).  Drain well. Rinse with Cold Water, drain well, again. Be gentle.
Add all to bowl. CAREFULLY MIX all Ingredients. Add to fridge til use.
Please note, the longer it sits, the MORE the noodles will soak up flavor of sauce. Creating a less flavorful dish.

*** NOTES:
Salami (Diced) in place of Ham OR, Better Yet BOTH! MEAT IS YOUR PREFERENCE! We used Turkey Pepperoni to cut Cals. It was AWESOME! Also, for Cheese, you can choose to do: 1/2c Mild Cheddar (Cubed) with 1/2c Other Cheese of Choice (Cubed).

BBQ Salad w/ Chipotle Peach Pineapple Dressing

2.5T McCormick’s BBQ Seasoning
2-3T White Vinegar
Pork Chops (I used 2 avg. size Bone-In chops)*

SARGENTO’s Chipotle BBQ Cheese Snacks
Lettuce
1/2 can Reduced Sodium PINTO Beans, drained/slight rinse
1 can Fire Roasted Tomatoes, drained
Sweet Onions
4 Mushrooms, chopped
Sweet Mini Bell Peppers
Carrot Slivers (We skipped)
Corn (We skipped)
Boiled Eggs
Seasoned Texas Toast Croutons

 – Dressing:
1c Chipotle PEACH Pineapple Salsa
1c Ken’s Buttermilk Ranch Dressing
1tsp tTt’s xXx Seasoning (Red Pepper Flakes may work)

Marinade Pork Chops for about 3-4 hours. Blend Dressing Ingredients. Set in fridge til use. We grilled our Pork Chops. Then, Removed bones and fat. Cut into desired strip sizes.
Add all to Salad Bowl, to desired amounts. (*See Notes). Toss. Serve with Dressing and Croutons.

*Notes: Chicken may work, too. Or meat of desire. I keep Eggs Separate, so it doesn’t spoil as fast.

Tay’s Hawaiian Salad N EASY Hawaiian Dressing

Marinade (For just Chicken. Marinade 1 hr. Choose ONE!):
3T White Vinegar + 1-1.5T McCormick’s Montreal Steak Steasoning
   OR:
Lawry’s Hawaiian Marinade

Bacon (Seasoned with Pepper while cooking)

Lettuce
SARGENTO’s Chipotle BBQ Cheese Snack Bites
Fresh Tomatoes, halved
Red Onions
Sweet MINI Bell Peppers
Carrot Slivers
Papaya (Optional)
1T Jalapeno, deseed, mince (Optional for Heat)
Mushrooms (Optional)
Boiled Eggs (See Notes)
Seasoned TEXAS TOAST Croutons

Nice sized 1/3c+2T canned CRUSHED Pineapple in JUICE

2T Mayo (And/Or: Canned Coconut Milk, Lemon or Pineapple Yogurt, may work)
2T Avocado Oil
1/2c canned Crushed Pineapple IN JUICE
1/4tsp Sea Salt
1/4tsp Paprika
1/4tsp Lemon Juice (Fridge Concentrate Kind)

Marinade Chicken. (I did McCormick + White Vinegar Marinade, what I had on hand. In Above Photo.). Cut to desired sized strips. Preheat oven to about 425-450. Lay Chicken onto Butter Flavor Cooking Sprayed pan. Cook about 10-15minutes. Lay on Bacon (You can lay it right over Chicken, too). I seasoned Bacon with Cracked Pepper. Bake til Bacon and Chicken is done. Allow to set 1 minute. Crumble Bacon.
Toss everything into a bowl, EXCEPT dressing.
BLEND Dressing of Choice Ingredients. Allow to set while prepping and cooking.
Serve each Salad with Dressing of Choice, Croutons, Seeds, and Eggs (If kept separate).

Notes: Eggs can spoil quickly if left in salad for long period. You can add right before, or keep separate and add as you serve up a bowl.

Spicy Grilled Gumbo and Rice with Black Eyed Peas

Chicken Marinade (I used Bone-In/Skin Removed):
2T White Vinegar
1T Louisiana Hot Sauce
1 McCormick’s Grill Mates Baja Citrus Packet (OPTIONAL, good w/o)
1T Cajun Seasoning
1tsp Creole Seasoning
1tsp Paprika
1/2tsp Pepper
2 Dried Bay Leaves

1/2 lb. Shrimp (Add shrimp to Marinade last hour!)
1/2 lb. Turkey Kielbasa (Or Link of Choice)

Corn on Cob, 1/3cut
1c Fingerling Potatoes, diced
1c Sweet Potatoes, diced
Sweet MINI Bell Peppers, halved
Onions
Mushrooms
1T Garlic, minced (I Believe I forgot!)
Asparagus (Optional)
1c Celery (Optional, I skipped)
– Sauce:
1 can Tomato Soup (*See Notes)
1tsp Lemon Juice
1/4tsp Paprika
1/4tsp Dill Weed
1tsp Worcestershire (Optional)
1/2can Tomato Paste (Optional)

Serve with side of Rice:
2c Rice
2 Chicken Broth Cubes, crushed + 2c Water
1/2-1 can Black Eyed Peas, drained

I used Bone In Chicken and Removed the Skin. Add to ziploc bag. Toss with Vinegar and Louisiana Hot Sauce. Then, add in rest. Mix Around. Marinade 4-6 hours. LAST 30 MINUTES, ADD Shrimp to Marinade.
We charcoal grilled in foil pan: Butter Flavor Cooking Spray pan. Add in Vegis.
PREMIX Sauce. Pour over Vegis. Top with Link, then Chicken and Shrimp. Covering is optional.
Served with Side of Rice with Black Eyed Peas: Crush Broth Cubes, Add to Water and stir. Add Rice. I microwaved. Once cooked, mix in 1/2-1 can drained Black Eyed Peas.

Notes: You can try with Stewed Tomatoes, in place of Tomato Soup. You can also try Tomato Sauce, etc. I liked as was. Am leaving it.
ALSO, if Charcoal grilling: Try to make sure Coals are Level to level out heat. And, You can USE A LIL WATER to Help with Bottom Burning too Much! We did NOT have this problem, and did NOT need Water, but, your Choice! Or, you can choose to dilute the Tomato Soup.

Marinaded Grilled Vegis

1 bottle Lawry’s Steak and Chop Marinade
2 pkg. Mushrooms

Corn on Cobs, cut into 1/3 pieces
Sweet MINI Bell Peppers
Onions
Fingerling Potatoes
Fresh Asparagus
Fresh Cut Carrots (I used crinkle cut)

Butter Flavor Cooking Spray
Course Black Pepper
For Serving (Optional, choose): Sour Cream, Salsa, Ketchup, Prepped Horseradish Sauce, Steak Sauce.

Gently Wash and Marinade JUST the Mushrooms About 2 hours. Butter Flavor Cooking Spray Aluminum Pan. Line bottom with Asparagus, add in Rest, TOPPING with Mushrooms last. Sprinkle with Pepper. Best on Charcoal Grill. Cook til soft. Tossing occasionally, we only needed to do once. Optional to serve with Sauce or Nothing.
We like it alone. Some like it with Sour Cream and Salsa. Some, Horseradish. Some Ketchup and Sour Cream. Some Steak Sauce and Sour Cream. 

Notes: You can amp this up with Meats. But, we wanted a Vegi Dish. Was AWESOME!

Tay’s Baja Chicken

Great Alone, on Tacos, for Salads (As we did), or over Rice (Mexi)! Amazing LOW CALORIE, LOW CARBOHYDRATES Chicken! AWESOME Flavor!!!

Marinade (I believe I did 1.5-2 lbs.- 6hrs):
1 McCormick’s Grill Mates Baja Citrus Marinade Pkt.
2T White Vinegar
1tsp Garlic Powder
1tsp Chili Powder
1/2tsp Paprika
1/2tsp Onion Powder
1/2tsp Chipotle Powder

Add Marinade and Chicken to ziploc bag. Mix. Marinade about 6 hours. BEST ON CHARCOAL GRILL! Eat Alone, on Tacos, or, as we did, on Salads (To desired consistency):

Lettuce
Radish, sliced THIN (Optional)
Mushrooms
Red Onion, slivered
Carrots, matchsticked
Hard Boiled Eggs
Tomatoes
Canned Black Beans WITH Jalapeno IN Lime, drained
Buttermilk Ranch Salad Dressing

Chicken Ranchinade N Vegis

This is an AMAZING Low Calorie Meal. That’s not only BENEFICIAL with Beans and Sweet Potato, BUT, AMAZING in Flavor. Great Chicken Marinade. EASY TO MAKE! This can be cooked Many A Ways! Even on Hot Camp Fire Coals! Eat as is. Or, topped with Salsa, Sour Cream, Cheese, and FRITOS. Or, on Shells for Tacos! Just Check Below for more options.

Chicken Marinade:
Ranch Packet (I used Hidden Valley)
1/2tsp McCormick’s Montreal Steak Seasoning
1T Lemon Juice (100% fridge kind)
2T Red Wine Vinegar
1tsp Garlic Powder
1/2tsp Onion Powder
1/2tsp Paprika
1tsp Chili Powder
1T Jalapeno, deseed, minced

About 3/4can Black Beans, drained
Sweet Potato, diced
1/2Pkg. Sweet MINI Bell Peppers
3/4 Large White Onions
1 RIPE Avocado, diced
Extra Virgin Olive Oil (Or Butter Spray)
Dried Oregano

Rice: 2c Rice, 2c Water, 1-2 Vegetable Broth Cubes (1-2c worth)

Marinade Chicken, in ziploc bag, about 4-6 hours (I believe I did 5hr).
Place Vegis into Foil. Drizzle about 1/2tsp-1tsp Extra Virgin Olive Oil over them. Season, WELL, with Oregano. Wrap Tightly. Place on grill a little before Chicken.
Grill Chicken SEPARATELY, right on grate.
Cook Rice in Broth (I do in Microwave, covered. Stirring half way).
Eat as is. On Shells… Optional to serve topped with SHREDDED CHEESE, SOUR CREAM, and SALSA, (EVEN Frito Chips). Most liked mixing Chicken, Rice, and Vegis together. A few liked it separate.

Cooking Option: Can be Baked! Butter Flavor Cooking Spray Baking Dish. Lay in Vegis. Top with Chicken. Cook Rice in Microwave or Stove Top (Can even stir Rice, Water, Crushed Broth Cube(s) in with Vegis for Baking). Cover with Foil. Bake til Chicken is done. Serve over Rice.
TRY IN FOILS on Hot Camp Fire Coals for EASY CAMPING MEAL!

Whether you cook on grill, in oven, or on hot coals in fire pit (Great for camping)… These are AMAZING. And, pretty healthy! Tons of Vegis! Fiber in Beans! And, Beneficial Sweet Potatoes! 

2 lb. Chuck Roast Marinaded (4-6 hours):
1/2 Taco Pkt. (I used Fiesta Style)
2 1/2T White Vinegar
1/4c Soy Sauce
1T Cumin
1/2T Garlic Powder
1/2T Onion Powder
1/2T Dried Oregano
1tsp Chili Powder
1tsp Paprika

Vegis:
Small drizzle Extra Virgin Olive Oil
Good shake Dried Oregano
1 pkg. Sweet MINI Bell Pepper Mix (Orange Red Yellow)
Onions
Mushrooms
Sweet Potatoes, diced (2 sm./med.)
1 can (Mild) Black Beans with Jalapeno in LIME JUICE, drained
1 can Southwestern Corn (Bell Pepper/Onion kind), drained

Toppings: Drizzle Taco Sauce, Salsa/Pico de Gallo, Sour Cream

Marinade 2 lb. Chuck Roast in ziploc bag. BEST ON CHARCOAL GRILL!!!
In a bowl, mix ALL Vegi Ingredients. Add to foil (Ours used 2). Wrap tight. Grill Chuck RIGHT ON GRILL, and cook Vegis in Foil.
Cut up Chuck. Top bowls with Vegi Mix, then Meat. Then, Toppings of choice.

Potato Tip: Stab whole potatoes with knife about 3 times on each side. Microwave Potatoes (Whole) for few minutes (Depends how many I do 3-4/5 minutes). Dice up. Then, grill. Cuts cooking time and ensure those potatoes are soft through.

Loaded Greek Sweet Potatoes

HEALTHY & BENEFICIAL! MANY ways to make this. Over Sweet Potato Fries, over Baked Sweet Potatoes and Vegis (Options below)… But, here’s what we did:

Oil (Hot Chili Oil, Coconut, Olive Oil (What we used)… Any, works)
Sweet Potatoes, diced (Fry option below)
1 can Artichokes, drained
Black Olives, halved
Red Onions
Sprinkle Garlic Powder,  Pepper, Sea Salt (Optional, we skip salt)

Easy Greek Marinade (Or try Tay’s Greek Marinade):
Chicken
1T McCormick’s Gourmet GREEK Seasoning
1.5tsp McCormicks Montreal Steak Seasoning
2T Worcestershire
1tsp Dijon

Toppings:
Roasted Red Pepper Hummus
Tay’s Avocado Tzatziki (Below) (Or Guacamole)
Fresh Tomatoes
Crumbled Feta Cheese

DIRECTIONS: Marinade Chicken 4-8 hours. Toss Potatoes and Artichokes with a lil Oil (We used Olive). Place into Foil. Grill both Chicken and Potatoes (Separately). Add Potato mix to bowl. Top with Chicken. Top with Toppings and Cheese Mix. OR TOP ALL ONTO Pita Breads!

Tay’s Avocado Tzatziki:
1 Ripe Avocado, mashed
1/2c Sour Cream, or to taste
1-2T Mayo
1T Grated Parmasen Cheese
1tsp Lemon Juice (100% fridge kind)
1c Cucumber, peeled, seeded, grated
1/4tsp Garlic Powder
1/2tsp McCormick’s Gourmet Greek Seasoning
1/4tsp Dill Weed
1/8tsp Mustard Powder
1/8tsp Sea Salt


NOTES/OPTIONS:
 -Or, Marinade Chicken, cut up. Add Chicken, Potatoes, Artichokes, Onions, and Olives to baking dish. Bake. Top with Toppings.
 -Cut Sweet Potatoes to fries, toss with Oil, season. Bake. Cook rest (Together or separately up to you). Top all onto Fries.
 -Also, you can skip tzatziki and use Marinaded Cucumbers and Onions (Skip onions with vegis). Eat on Pitas, or over Sweet Potato Vegi Mix, or Sweet Potato Fries! Here’s a Sour Cream Cucumber and Onion Recipe I found:
2 cucumbers, thinly sliced
1/2 small white onion, thinly sliced
1/2 cup white vinegar
1/4 cup water
1/4 cup and 2 tablespoons white sugar
1-1/2 teaspoons dried dill, or to taste
1/2c Sour Cream, or to taste

Salt & Pepper Cucumber slices. I set into strainer in fridge for about 15minutes. Bring to boil, Vinegar, Water, and Sugar. Add Cukes to bowl. Pour over. Allow to marinate 1 hour.
Sour Cream Version: Drain, reserving 1-2T Marinade. Stir in 1/3c Sour Cream with reserved Marinade.

Lemon Peppered Grilled Vegi Foils

Fingerling Potatoes, halved
Green Beans, ends cut, halved
Mushrooms, halved
Olive Oil or Butter
Lemon Pepper Seasoning

Add all to foil. Drizzle with Oil/Butter, toss. Season, WELL (A alot), with Lemon Pepper Seasoning. Grill.

LOADED Hawaiian Lemon Peppered Chicken and Rice

Frozen Chicken Breasts
1/4-1/2 Frozen Pkg. Shrimp (Optional)
2c Instant Uncooked Rice
2c Water
2 Chicken Broth Cubes, crushed (Optional)
Lemon Pepper Seasoning

1/2 pkg. MINI Sweet Bell Pepper Mix, deseed, halved
1/3-1/2c Red Onions
1/3-1/2c Pineapple Chunks
1/2 bottle Lawry’s Hawaiian Marinade
1-2T RESERVED Marinade

Cut Peppers and Onions. Place into Bowl or Ziploc Bag. Add in Marinade. Marinade 4-5 hours. Once done, Reserve 1-2T excess Marinade, toss rest.
Butter Flavor Cooking Spray Baking Dish. Add in Rice, Water, and Broth. Add in marinaded Vegis, reserved Marinade, and Pineapple Chunks. Give a light stir. Top with Chicken and Shrimp. Season, WELL, with Lemon Pepper. Cover with Foil. Bake, at about 425-450 til Chicken is done.

Delicious Glazed and Seasoned Salmon

1/2T Course Black Pepper
1/4tsp Cayenne
1/4tsp Paprika
Optional, I skip (1/8tsp-1/4tsp Sea Salt)

1T Organic Grade B Maple Syrup
1T Dijon Mustard

Mix Glaze (Maple Syrup and Dijon). Brush nice layer onto top of Salmon. Mix Seasons (Pepper, Cayenne, Paprika, Salt (If using)). Season, well, with season mix. Grill til flaky.
(Try not to move too much, it will flake apart. Can choose to place onto foil.)

Served with Sweet Mini Bell Peppers: Place into Foil. Grill. That’s it!

Our Other Salmon Recipe:
Place Lemon slices onto grill (Optional). Lay Salmon onto Lemon Slices (Skin down). (Optional to add a Honey/Dijon Glaze). Season top, nicely with McCormick’s Lemon Pepper Seasoning. Grill.

Tay’s EASY Sweet and Spicy Grilled Chicken:
Chicken Marinade (ONE HOUR! That’s it!):
About 1/3c White Vinegar
About 1T McCormick’s Montreal Steak Seasoning

Chicken Sauce (To toss cooked Chicken):
1 part Sweet Thai Chili Sauce (Asian aisle. I did about 1/3c)
1 part Louisiana Hot Sauce (I did about 1/3c)

Tzatziki Sauce:
1/2c Sour Cream
2T Mayo
1T Grated Parmasen Cheese
1tsp Lemon Juice (100% fridge kind)
1c Cucumber, peeled, seeded, grated
1/4tsp Garlic Powder
1/2tsp McCormick’s Gourmet Greek Seasoning
1/4tsp Dill Weed
1/8tsp Mustard Powder
1/8tsp Sea Salt

Toppings: Lettuce, Tomatoes, Red Onions, Italian Shredd. Cheese
Flatbread/Wrap of Choice (I used Joseph’s Flaxseed Flatbreads)

Marinade thawed Chicken Breasts 1 hour, mixing around every so often. (Great time to make Tzatziki Sauce.). This Chicken is BEST ON CHARCOAL GRILL!!! Cook Chicken. Once cooked, cut into strips. Toss Chicken with Sauce IMMEDIATELY.
Top Flatbread/Wrap of choice with Tzatziki, Chicken, Lettuce, Tomatoes, Onions, Cheese

Optional to use Breaded/Fried Chicken to toss with Sauce, instead.

1 small container PLAIN Greek Yogurt (Cream Cheese may work)
1/2-1 Italian Dressing Season Pkt. or premade Italian Salad Dressing
1/2c jarred Pepperoncini, cut up
Full 1/2c Turkey Pepperoni pieces
1/2c Red Pepper, chopped
A lil shy 1/2c Red Onions, chopped
Splash of Lemon Juice (100% fridge kind)
Olives, halved (Optional. I forgot in photo)
1/2tsp Red Pepper Flakes or Jalapenos, minced

Wraps/Buns/Flatbread/Bread of Choice
Fresh Tomatoes
Lettuce
Shredded White Cheese (Or diced Brick Cheese)

Add Frozen Chicken to pan of Water with 1-2 Chicken Broth Cubes. Bring to Boil. Boil til cooked. Cut up.
Add in rest of Salad Ingredients. Top onto Wrap/Bun of choice, with Toppings of choice. Eat.

1 Frozen Bag Brussel Sprouts
3 Med. Onions
1 8 oz. Pkg Mushrooms
Up to 1T Course Black Pepper

Heat Oil. Add in Vegis. Cook some. Add in Teriyaki, cook down. Eat.
I served over Chinese Spiced Chicken and Rice:
Place 1c Rice into Butter Flavored Baking Dish, add in 1c Water, (Optional to add 1 crushed Broth Cube to Rice/Water), lay over Frozen Chicken, Sprinkle nicely with Chinese 5 Spice, cover with Foil. Bake til Chicken is done.

Boiled Eggs
Miracle Whip or Spin Blend Mayonnaise
LITTLE Squirt of Mustard
Good Sprinkle of Paprika
Few Drops to a Splash of Lemon Juice (100% Fridge Kind)

For Heat, I add:
Splash of Louisiana Hot Sauce or Tabasco
Cayenne Powder

Other Optional Adds:

Sweet Red/Green Bell Peppers, minced

Mix all. Stuff Eggs (Deviled Eggs), Egg Salad Sandwiches… Or, Mix (I do with Heat options, Celery, Real Bacon Pieces). Top a Soft Shell with a Lil Shredded Mild Cheddar Cheese. Roll up, tucking in sides. Heat Skillet. Spray with Butter Flavor Cooking Spray. Brown each side. Sprinkle with a Little Garlic Powder (Or a LITTLE Garlic Salt). Eat, or place in fridge for later Cooler eating!

Easy HEALTHIER Banana Chocolate Chip Ice Cream

A Healthier Go-To for a Sweet Tooth Fix! We’ve seen the Banana Ice cream Idea before. Wanting to amp this up, with the kiddos, we came to this recipe:

4-5 Ripe Bananas (I believe we did 4…?)
Up to 1/2tsp Vanilla Extract
1T Honey
1tsp Cocoa/Cocao Powder

Chocolate Chips

In blender, blend Bananas, Vanilla, honey, Cocoa. BUTTER FLAVOR (Or, Organic Coconut Oil Spray) a Muffin Pan. Pour blended ingredients into pan. Sprinkle tops with Chocolate Chips (I press down a little, so they freeze into it and aren’t loose). Place into freezer. Once COMPLETELY frozen, you can remove and place all into 1 Freezer Friendly Ziploc Bag. Enjoy.

Not another Cabbage Soup! Cabbage and Beans

1 Beef Shank
1/4-1/2 lb Turkey Kielbasa
1 lb Dried Kindey Bean
8c Water
6 Vegetable Broth Cubes (6c worth. Or, more to taste)
Head Cabbage
1 can Stewed Tomatoes, undrained
1/2 sm can Tomato Paste
1c Carrots
2 Celery Stalks
1 sm./med. Onion
1/4c Green Onions (Optional)
1tsp Paprika
2 Dried Bay Leaves
1tsp Tony’s Creole
1tsp Garlic Powder
1/2tsp Dried Thyme
1/4tsp Pepper

Butter Flavor Cooking Spray Crock Pot. Add all. Cook on low til Beans are done (I cook on HIGH first 1-2 hours, then, LOW.) Be sure to remove bones before eating.

Not a Cabbage Person? Kale, Spinach, etc.Optional to up the Broth Cubes, or use 1/2 Beef Cubes 1/2 Vegi Cubes. Endless Ideas for this Beneficial Dish!

Tay’s HEALTHIER Loaded Sweet Tater Fries

“Sweet potatoes are high in Vitamin A, B5, B6, Thiamin, Niacin, Riboflavin, Antioxidants, Potassium. They’re Fat-Free, relatively Low in Sodium, High in Fiber, and have Fewer Calories than White Potatoes.” 

Sweet Potatoes, cut to fry desire
1/2T Extra Virgin Olive Oil
Fry Season (Recipe Below)
1 lb. LEAN Ground Turkey Meat
1/2 lb. Chorizo (Or more Turkey Meat)
1 Taco Season Pkt.
1 can S&W Chili Seasoned Pinto Beans, undrained
3T Water

Toppings: Shredded Cheese (Reduced Fat), tTt’s Pico de Gallo (Or Salsa), Sour Cream, Jalapeno, Lettuce, Onions (Or Toppings of Choice)

Preheat Oven. In ziploc bag, toss Sweet Potato Fries with Oil. (Reserve about 1/2tsp Fry Season for Post-Cooking Seasoning.). Sprinkle in half the Fry Season, toss. Sprinkle rest, toss. Dump onto Butter Flavor Cooking Sprayed Baking Dish. Bake 450 for 20-30 minutes.
In skillet, cook Turkey Meat and Chorizo. Add in Chili Beans, Taco Season, and Water. Simmer a few minutes, or til cooked down.
Top Fries with Toppings of Choice.

Fry Season:
2tsp Paprika
1tsp Chili Powder
1tsp Cumin
2tsp Onion Flakes (Or 1/2-1tsp Onion Powder)
1tsp Garlic Powder
1/8-1/4tsp Cayenne Powder (I did about 1/4tsp)
1/2tsp Sea Salt (Or to taste. Optional)

Optional: Use Refried Beans or Favorite Chili (Or Both) in place of Chili Pinto Beans (That’s a Boat Load!).
Tater Tots, Fries, etc. in place of Sweet Potatoes (They have Store Bought Sweet Potato Fries/Tots, some already seasoned!).

Easy Orange Marinade

Marinade:
1/2c 100% Orange Juice
1/3-1/2c Soy Sauce
1tsp Garlic Powder
2 Dried Bay Leaves

Marinade 5-6 hours. OPTIONAL (We do!): Remove from Marinade, drain excess juice. Place on plate. Season both sides with shake of (Choose ONE!):
-McCormick’s Brick Oven Seasoning (What we did!)
Tay’s Chicken Rub (w/Brown sugar!)
-Or, McCormick’s Montreal Steak Seasoning
Allow to sit 15minutes.
 Then, Grill! (Charcoal Grill is Best!)

Eat Alone. Or serve over Rice (Cooked in Broth) with Vegis.

Tay’s Chicken Pitas – Healthier

Peppered Parmesan Avocado Sauce:

3T Mayo (Lite can be used)
1/4c Sour Cream, or more to taste
1tsp White Vinegar
1/4tsp Garlic Powder
3T-1/4c Grated Parmesan Cheese (Store shelf kind)
1/2tsp Black Pepper
1 ripened Avocado
Optional: 1/2-1tsp Ranch Dressing PKT. (I used Fiesta Ranch Pkt.)

-Flat Bread/Pita (We used Joseph’s Flax Oat Bran & Whole Wheat Pita)
-Cooked Chicken Breasts (I used Tay’s Mexi Marinade, grilled. *SEE NOTES)
-Toppings: Peppered Parmesan Avocado Sauce, FRESH Tomatoes, Shredd. Chedd. Cheese, Salsa or Quick Pico (Recipe Below), Lettuce. OPTIONAL: TINY Spread of Refried Beans

We Mexi Marinaded Chicken, then Grilled (Charcoal Grill’s Best!). Blend Peppered Parmesan Sauce Ingredients. I lightly rub Pitas, using fingers, with Water. Microwave 10 seconds. Spread half with Peppered Parmesan Avocado Sauce. (Optional to spread other half with Refried Beans). Top with Cooked Chicken Breast and Toppings of Choice. I had no Salsa, so, improvised with Quicky Pico (Below).
 ** NOTES: Any Chicken will do: Plain, Boiled in Chicken Broth (Toss frozen Chicken into a pan w/ Water, throw in 1-2 Chicken Broth Cubes. Bring to boil, boil til cooked.), Desired Seasoning. Any. **

Quicky Pico/Salsa:
1can Basil Oregano Tomatoes, drained (All I had)
To taste Red Onions, chopped
1tsp Jalapeno deseeded, minced, more to taste
1/2tsp Dried Chives
a lil shy 1/2tsp Dried Cilantro
a lil shy 1/2tsp Garlic Powder
1/8tsp Sea Salt, more to taste
1/8tsp Pepper
1tsp+1/4tsp Lime Juice (Fridge concentrate kind)

Potato Oles:
Tater Tots
Season (Pre and Post cooking), well, with either: Tay’s Rub or Tater Ole Season

Season, bake according to directions. Once done, season lil more. Eat.

3T Lime Juice (Fridge 100% kind)

Marinade Chicken in ziploc bag. Best on Charcoal Grill. Last hour I remove from fridge to bring closer to room temp before cooking.
Eat as is. Shred, eat over Salads, Rice, on Tacos, Fried Taco Bowls, Mole Enchiladas, etc. MANY USES!

Served with TACO TAY’S TAYter OLES:

Tay’s Wasa-Pea Soup (Tay’s Wasabi Split Pea Soup)

6c Broth (I did 6c Water + 4 Chicken Broth Cubes + 2 Beef Broth Cubes)
2c Water + 2c worth Vegetable Broth Cubes
1/2 – 1 lb. bag Dried Split Peas (I did 1/2pkg. to cut Cal.)
1/2 lb. Turkey Kielbasa/Sausage Link
2 Potatoes, diced
1c Celery
2c Fresh Carrots, sliced
1 lrg. Onion, chopped
1T Jalapeno, minced
1 large Garlic Clove, minced
1/2tsp Black Pepper
1tsp Garlic Powder
1tsp Dried Oregano
1tsp Dried Parsley (1 TBSP if fresh)
1/4tsp Ginger Powder
1.5T Soy Sauce
1/4c Prepared Kikkoman’s Wasabi Sauce (Last hour) + More for serving

Butter Flavor Cooking Spray Crock. Add all, EXCEPT Wasabi Sauce. Cook on low til Peas are done (About 5-8hours). Last 30min.-1hr. add in Wasabi Sauce (I turn my heat to warm at this point). Serve each Bowl with a lil more Wasabi Sauce (Optional).
Notes: Up Wasabi amount, to taste. But, give it time before adding more, as it’ll spread a lil. Wasabi Paste can be used, but, have yet to try. May need to alter Paste amount.

Eggs (4T Egg Whites (4 Eggs). Or, 3-4 Eggs w/yolks)

Moosh Banana!!! Whisk: Eggs, Vanilla, Stevia, Lemon Juice, Bananas. In a Butter Flavor Cooking Sprayed Muffin Pan/Or Baking Dish (As I used), add in Fruits of Choice. Pour Egg Mix over tops. Toss SLIGHTLY! Bake 425 for about 20-25 minutes, til eggs are cooked. Allow to set a few minutes, UNCOVERED!!!

NOTES: I use Lemon Juice for this recipe. May skip if doing a Peanut Butter Recipe. And be careful when mixing TOO MANY things… Eggs can only hold together so much!
