Healthy(er) Chili Cheese Sweet Potato Fries

Absolutely Amazing! Using Beneficial Sweet Potatoes, Turkey Meat, and Air Fryer… These are BETTER than the more unhealthier versions! 

1/2 lb. Turkey Meat (Browned while seasoned with: Basil, Oregano, Pepper)
1/2, or so,  10oz. can Hormel Chili w/NO Beans (Or, to taste)
1/4-1/3  15oz. jar Salsa Con Queso Dip (Or, to taste)

Shredded Cheddar Cheese
Green Onions
Fresh Jalapeno, minced
Optional Topping: tTt’s Pico

Sweet Potato, cut to fry size
1.5tsp Olive Oil
1/2 Tay’s Chili Fry Seasoning (Recipe Below)

Brown and season meat with Basil, Oregano, and Pepper. Stir in Queso Cheese and Hormel Chili until desired consistency. Simmer a few minutes, stirring.
Cut Fries to size desired. In ziploc mix mix Oil and HALF the fry Seasoning (Save rest for another meal). We use Air Fryer and cook.
Lay Fries onto plate. Top with a little Shredded Cheese. Top with Meat/Cheesy Chili mixture. Top with a LITTLE more cheese. Then, Green Onions and Jalapenos. (Enjoy it with tTt’s Pico).

Tay’s Chili Cheese Fry Seasoning (We only used 1/2):
2tsp Orrington Farm’s Broth Base & Seasoning (Or 1 Beef Broth Cube, crushed)
1tsp Tony’s Creole Seasoning
1tsp Chili Powder
1/2tsp Mustard Powder
1/2tsp Pepper
1/2tsp Paprika
1/2tsp Garlic Powder
1/2tsp Onion Powder
1/8tsp Cayenne Powder
1/8tsp Sea Salt
(Another version of this was used for this recipe.)

Try the Loaded Version:

Smoked Apple Roast-wich

SMOKED PORK:
Charcoal (If using Charcoal Smoker)
Hickory Smoke Chips
Pork Roast/Butt/Shoulder
Apple (Gala), cored/sliced thin (Don’t Skip!)
Bacon Cheddar Cheese Slices
Buns, Mayo, Honey BBQ

Mustard Sauce (For Brushing. NOT TOPPING)
1/3c Mustard
1tsp Vinegar
1tsp Worcestershire
1/2tsp Lemon Juice
1/2tsp: Paprika, Brown Sugar
1/4tsp: Chipotle Powder, Course Black Pepper
1/8tsp Sea Salt

McCormick’s Grill Mates Barbecue Seasoning

Injection:
1/2T Salted Butter
2c Apple Cider
1T McCormick’s BBQ Seasoning
2T Honey BBQ Sauce
– Boil Injection Recipe til dissolved. Cool Completely.

Preheat Smoker to 250. Inject Pork with Injection (I didn’t use all, but, most! TRY NOT TO SQUEEZE THE MEAT!). Brush Entire Pork, lightly, with Mustard Sauce. Then, sprinkle all sides, WELL, with with McCormick’s BBQ Seasoning. Wrap completely in foil, sealing tightly. Cook about 5 hours at 250 (I kept it between 225 and 300, most times at 250.). Using HICKORY Smoke Chips, throughout (I just did…).
Last hour, remove from juices and set Roast on the grate in smoker, to smoke. Add fresh chips. Smoke at 225 for 50 more minutes. Remove, cut up. Top with BACON CHEDDAR Cheese Slices, to melt. Add to Grill Toasted Bun (We used Whole Wheat), spread one bun, lightly, with Mayo, and the other bun, lightly, with Honey BBQ. Top with thinly sliced Fresh Apple.

Served with:
GRILLED VEGIS:
Bag Sweet Mini Bell Pepper Mix
Sweet Potato, cubed
Onion
Drizzle Olive Oil
Good Sprinkle Dried Oregano
Good few Grinds Pepper
1tsp Jalapeno (Optional)
Mushroom (Optional)
– Wrap all tightly in foil. Cook on Grill til soft.

Toppings: PEPPERED BACON, Fried Onions, Tomato, Jalapeno,
Provolone or Velveeta Jalapeno Cheese, Mustard/Ketchup,
and Cowboy Jalapeno Sauce:
4T Mayo
1T Jalapeno, minced, or more to taste
3/4tsp McCormick’s BBQ Seasoning, or more to taste
1/8tsp Brown Sugar
1/4tsp Paprika
1/2tsp Lemon Juice
1tsp Louisiana Hot Sauce

Premix Burger Mix (First 11 Ingredients). Marinade 1 hour in fridge. Premix Sauce Ingredients, place in fridge til use. Nicely Pepper Bacon Slices. I Bake til crispy. Set aside, covered, til use. Grill Burgers (Awesome on Charcoal Grill, if done right). Right off the Grill, top with Cheese (I used Velveeta Jalapeno Cheese, not a lot, just enough). Top with Bacon and other Toppings. Be sure to use Tay’s Cowboy Jalapeno Sauce! With FRIED ONIONS, Tomatoes, More Jalapenos, and optional: Ketchup/Mustard (I did Ketchup/Mustard on one Bun, and loaded the Cowboy Jalapeno Sauce on the other Bun).

Mexican BBQd Legs (Chipotle BBQ Legs) with CRISPY Seasoned Sweet Potato Fries

Chicken Legs, Skin Removed

Sauce:
1/3c CHIPOTLE Honey BBQ Sauce (Sweet Baby Rays)
1.5tsp Lime Juice (100% fridge kind)
1/2T Brown Sugar
1/4-1/2tsp Chipotle Powder (I did 1/4tsp)

Optional Marinade (I Skipped):
3T Vinegar (Optional)
1T McCormick’s BBQ Seasoning (Optional)

Optional Step (I SKIPPED). Marinade Chicken Legs: Add skinned Legs to Ziploc Bag. Add in Vinegar, shake around. Add in half BBQ Seasoning, shake. Add in other half, shake. Marinade ONE HOUR! That’s it.

Premix BBQ Sauce (Depending on how many legs you are cooking, you may need to double the batch, or so.) Set aside. GRILL Legs (Best on Charcoal Grill, if you know how to do it correctly! Grill Tip Below.). Near end, Brush BBQ Sauce on Legs, flip. Allow to cook a minute or two. Brushing BBQ on other side. Then, flip. Cook a minute or two, allowing to caramelize.
Optional: Add 1/8tsp Cinnamon Powder to Sauce Recipe. I skipped, AND I skipped Marinade. Still was AMAZING! 

CRISPY Sweet Potato Fries:

Sweet Potato, cut to fry size
Cold Water

Crisco Oil/ Deep Fryer

Seasoning: 
1 Beef Broth Cube, CRUSHED
1tsp Cajun Seasoning
1tsp Chili Powder
1/2tsp Mustard Powder
1/2tsp Pepper
1/2tsp Paprika
1/2tsp Garlic Powder
1/2tsp Onion Powder
1/4tsp Dried Dill Weed
1/8tsp Cayenne Powder
1/8tsp Sea Salt

Cut Sweet Potato to desired Fry Size. Place in bowl of Cold Water, place in fridge for about 20minutes. Prep Seasoning in a bowl. Gently and Quickly, Pat dry. At about 350-400, deep fry for about 6 minutes, or til LIGHTLY browned. Place onto paper toweled plate. Finish up batches. THEN, go back to first batch and RE-DEEP FRY for another few minutes. Place onto paper toweled plate and season well with Seasoning, I had leftover seasoning, so, DON’T USE ALL.

Charcoal Grilling Tip: If it tastes like straight up smoke… You’re doing it wrong! We build a hill in center of grill. Light charcoal (We used Regular Charcoal). Once coals are ashy grey, they are ready. Prop Grill Open, using a Slightly crushed pop can, ON IT’S SIDE. Chicken: Lay Chicken on outer part of grill (Outside hill). Once Chicken isn’t sticking to grate, so much, it’s ready to flip. Flip once, that’s it (Unless applying Sauce and Thickening the Sauce, that’s more flipping). Cook til Thermometer reads correct temp. 

Chipotle Rasberry Pork-wiches

1.5 lb Pork Roast
1c Beef Broth (I used Water + Crushed Broth Cubes)
2-3T can Chipotle in Adobo Sauce, minced, or more to taste
1/2T Garlic, minced
1/2tsp Cumin
1/2tsp Onion Powder
1/4tsp Pepper
(Optional, I SKIPPED, for Xtra Sweetness: 1/2tsp Brown Sugar)

Sauce (Later adding. Optional to double up on Sauce):
4T Reserved Juice from Crock (After cooking)
1/3c HONEY BBQ
1tsp Chipotle in Adobo, minced
2T Raspberry Preserve

Butter Flavor Cooking Spray Crock Pot. Add, and mix, Beef Broth, Chipotle in Adobo, Garlic, Cumin, Onion Powder, Pepper to Crock. Add in Meat. Cook on low 8 hours, turning around in juices. Shred up. Reserve 4T of Juices. Discard rest.  Mix Sauce. Add to shredded Meat. Keep on Warm or Low for about 15-20minutes. Serve on Buns of Choice.

Tay’s Rocky Mountain Chili


rockychiliphotosA Great Chili Recipe. I’m using some leftovers tonight for Smoothered Burritos ANNND Smoothered Sweet Potato Fries! Check Back Soon!

1/2 – 1 lb. Bacon ENDS (1/2pkg.)
1/2-1 lb Pork Sausage (I used 1 lb.)
2tsp Jalapeno, deseed, minced
2c Med Onions
A lil shy 1c Celery
1T Fresh Garlic Cloves, minced
1T Butter (Plus, some to rub Crock)

1c Beef Broth
1c Chicken Broth
1 can diced Tomatoes (Garlic Basil Oregano), undrained
1 can diced Tomatoes WITH Green Chiles, undrained

1 can Cannellini Beans, drained
1/2T Cumin
1/2tsp Coriander
1/8tsp Sea Salt
1/4tsp Pepper

3T White Corn Shells (Not the hard/cooked ones), blended
Serve with: Tay’s Bread Balls

Add 1T Butter to skillet. Add in Bacon and Pork Sausage, cook. Adding in Garlic, Onions, Celery, Jalapenos. Cook down Juices. Add in Broths, cook down “Some”. Add in Tomatoes. Cook some. Butter Crock Pot. Pour in. Add in Seasons. ADD BEANS. Cook on Low 6 hours. 30 minutes before Serving, in a blender, blend shells to almost a powder. Stir 3T into Crock. Allow to set 20-30minutes. Eat!

Optional: More Chiles or 1/2tsp Green Chile Powder. I used Water + Broth Cubes to make Broth… If that matters.

Leftovers (EXACT RECIPES COMING SOON! Check Back.): I’m debating on blending Chili to smooth (That’s Optional). Using the other 1/2 pkg. of Bacon Ends, I may cook it with Pinto Beans and make Smoothered Burritos: Blend Chili, mix with Cheese, top over Bean Burritos.
I have enough for 2 meals, so then, I will use the leftover of the leftovers (Chili) for Sweet Potato Fries: Double Fry Sweet Potatoes (Or baked). Bake/Heat Cheese over tops til melted. Serve Fries with Blended Chili, Sour Cream, Tomatoes, and other toppings of chioce (Olives, Jalapenos, Onions, Beans, Shredded Lettuce, etc.).

Chimi-nade (Steaks/Pork) with AMAZING Steak BUTTER

4T Extra Virgin Olive Oil
1.5T White Wine Vinegar
4T Balsamic Vinegar
2T Fresh Cilantro
1/4c Fresh Parsley
2T Fresh Oregano
1.5tsp Garlic Powder
1/2-1tsp Cumin (I did 1/2)
1/2tsp Pepper
1tsp Crushed Red Pepper Flakes
1/2tsp Sea Salt, or more to taste

Marinade Pork or Steak 6-8 hours. BEST ON CHARCOAL GRILL! Side of Potato and Mushroom/Onion Mix (Mushrooms, Onions, Extra Virgin Olive Oil, LOTS of Course Black Pepper and Dried Oregano).
– Marinated Steak/Pork was served topped with Tay’s Steak (Or, Pork) Butter:

Great on Steak, Pork, EVEN Toast (Makes for great Melts, Burgers, Sandwiches, etc.)!

Tay’s Garlic Steak (Or, Pork/Toast) Butter:
1/2c Beef Broth (I used 1/2c Water + 1/2 Beef CUBE)
4T Sweet Cream Butter
1tsp Lemon Juice (100% fridge kind, Lime “May” work for above Steak Recipe)
2tsp Garlic Powder
1/4tsp Mustard Powder
1/4tsp Sage
1/2T Green Onions, minced
1/2T Fresh Parsley

Add all to Sauce Pan. Simmer til juice is cooked down A LOT! Remove from heat. Stir constantly as it cools (I set a Ice Pack over the bowl to help.). Spoon onto Meat at end of cooking, or right off the heat!
(I wish I had a better Butter photo. I forgot photo, THEN… My camera was dying. So, no melting deliciousness showing in this quick photo… Bummer… It looked more AMAZING!)

tTt’s Tennessee Honey Chicken

Chicken Marinade
(4-8 hours):

1 Shot Jack Daniel’s Tennessee Honey Whiskey
2T Honey
1T Brown Sugar
1T McCormick’s Montreal Steak Seasoning
Optional: 1/4tsp Sea Salt (We skip!!!)

Add thawed Chicken and Marinade to Ziploc Bag. Marinade. BEST ON CHARCOAL GRILL (Grilling Tip Below)! Eat this AMAZING Chicken alone. Over Rice cooked in Broth with Vegis. On a Manwich with Baked Bacon, Cheese, Tomato, Lettuce, and Mayo/Miracle Whip… Endless Ideas!Or Serve over Rice and Vegis (Rice cooked in Microwave with Chicken Broth instead of Water. I use Water + Crushed Broth Cubes).

EASY Grilled Jalapeno Poppers with Ranchero Chicken

Ranchero Chicken Marinade (4-6 hours):
1 McCormick’s Grill Mates Smoky Ranchero Marinade Pkt
1T Avocado Oil (100% Pure)
4T Red Wine Vinegar

Jalapeno Poppers and TECHNIQUE:
Jalapenos, cut off top (Stems). We used a Wine Bottle Cork Screw to scrape along edges of inside to de-seed Jalapenos (Whatever technique works for you: Small Knife, Corer, etc.)
Wrap Turkey Bacon (Halved length wise) around
Sargento’s Chipotle BBQ Cheddar Snack Bite Cheeses (I used 1 per Jalapeno)

Stuff Cheese Wrapped in Bacon into Jalapenos.
 – Cooking Technique: We used a MINI Aluminum Pan. TURN UPSIDE DOWN! Cut small Xs into it (Fits 6 perfect. I tried more, but, Xs expanded, making ONE BIG HOLE. So, don’t over pack. Also, it fits nicely on grill w/ other foods.).
KEEP PAN UPSIDE DOWN and LIGHTLY press Jalapenos into Xs. Grill. Eat! (Dipping Sauce is Optional-Ranch.)
YOU CAN EVEN Cool in fridge, slice, and Serve on Sandwiches. Burgers. Etc.

Photo doesn’t do these justice. We ran short of time, so kinda rush cooked them. They are lovely looking, all roasted/grilled!

A MUST TRY! Tay’s Pork-wiches with Tay’s Chimi Sauce

Bone-In Pork Chop Marinade
(Or, Steak. Pork’s BEST!):

3T Extra Virgin Olive Oil
3T Soy Sauce
2T Lime Juice (100% fridge kind)
2T Worcestershire Sauce
1tsp Regular Mustard
1T Garlic Powder
1tsp Onion Powder
1.5T Dried Basil
1/2tsp Course Black Pepper
1/8tsp Cayenne Powder

Tay’s Chimi Sauce
(Chimichurri- USE THIS!):

1T EVOO
6T Mayo
1/2 tsp Garlic Powder
1T White Wine Vinegar
2T Balsamic Vinegar
2T Dried Cilantro
1tsp Crushed Red Pepper Flakes
1/4tsp Cumin
1/4tsp Pepper
1tsp Dried Oregano
A lil shy 1/4tsp Sea Salt

Buns/Wraps of Choice (Also, AMAZING on Softshells the next day!)
Shredded Moz. Cheese
Toppings: Onions, sliced thin. Fresh Tomatoes or Pico (I used fresh tom.)

Evenly coat Chops with Marinade and Marinade about 5 hours. Mix Tay’s Chimi Sauce Ingredients, set in fridge til use.
BEST on Charcoal Grill (Tastes amazing if done right. If it tastes like Smoke… You are NOT doing it right!). Or cook in skillet… Just cook the Meat! 
Once cooked, allow to set a minute, covered. Thin Slice cooked Meat. Lay flat and top with Shredded Cheese and melt. Add to Buns/Wraps with Toppings of choice.
(Some topped with A LITTLE Ketchup on one Bun Slice, then Chimi Sauce on Other Bun Slice. Fresh Tomato Sliced. Red Onion Slices. Some liked it with no Ketchup, just Chimi Sauce).
 – Also, an Optional Topping: Dried Oregano seasoned Mushrooms sauteed w/ Butter Spray or Extra Virgin Olive Oil. I skipped.
LEFTOVERS?  Melt Cheese over Meat (I used PepperJack). Top Meat with Sunny Side Up Eggs. Serve with Toast and a lil Salsa on side! (I skipped Chimi Sauce).


Skillet Tip: Lightly Oil or Spray pan. Get to a nice heat, to a SIZZLE. Sear Pork on each side about 3-4 minutes, or til done. Allow to set a few minutes.

AVOID TOO MANY FLIPS. Allow meats to sizzle once it hits grill. Seal that side, flip. Seal other side. Locks in Moisture! Also, Meat cooks as it sits!

Chipotle Chicken with Citrus Avocado Sauce

Eat As Chipotle Chicken topped with Citrus Avocado Sauce. Or, Shred and have yourself a Man-wich topped with Citrus Avocado Sauce! However you choose, these are AMAZINGLY Tasty!

 – Chicken Marinade (Don’t add to Chicken, yet!):
1 can Chipotle in Adobo, I halved Peppers
4 Garlic Cloves, minced
2T Lime Juice (100% Fridge Kind)
2T Brown Sugar
1/4tsp Sea Salt
1/4c Heavy Whipping Cream

 – Citrus Avocado Sauce:
2 RIPE Avocados
2T 100% Pulp Free Orange Juice
1.5tsp Lime Juice (100% fridge kind)
1tsp White Wine Vinegar
1/2tsp Garlic Powder
1/2tsp Onion Powder
1/2tsp Cumin
1tsp Dried Oregano
1/4tsp Dried Mint
1/4tsp Sea Salt


PREMIX Marinade, DON’T ADD TO CHICKEN, yet! I halved Chipotle Peppers. Premix Sauce Ingredients. RESERVE 2T Marinade (For later mixing). Place in fridge til use.
I cut shallow slits into chicken, so marinade can get in there. Marinade Chicken (I used Bone In and removed Skin). Marinade 4-6 hours. Best on Charcoal Grill. Even Grill the Chipotle Peppers! They are GREAT!

– Regular Chicken Breast topped with Citrus Sauce: Brush on Reserved Marinade. Top with Citrus Avocado Sauce. Eat. Don’t forget to Serve with Those Chipotle Peppers.

– Sandwiches: Shred up Chicken and Remove Bones. Mix in Reserved Marinade. Top onto Sandwich with: Mayo/Miracle Whip, Tomato, and Optional Coleslaw Topper
Toppings (If sandwich/Burger): Tomato, Onions, Miracle Whip/Mayo, and:
Optional Coleslaw Topper:
2c Coleslaw Mix (Cabbage Carrot Mix, NOT SAUCE)
3/4c Lite Sour Cream
1tsp Dried Cilantro, minced
1/8tsp Garlic Powder (OPTIONAL)
Small Splash of Lime Juice (Fridge Concentrate kind)
1/8-1/4tsp Sea Salt

Holy Mole Chili (Mole Chili) – (Options below on using this to Make a Stew!)

About 1-1.5 lb. Frozen Chicken (Large cut/Roast/Pork/Beef, works)
1 can Basil Oregano Garlic Tomatoes, undrained
1 can Black Beans, drained
1 can Kidney Beans, drained
2 can Chili Beans, undrained (I used 1 S&W Chili Seasoned White Beans & 1 S&W Chili Seasoned Pinto Beans)
1-3T Mole Sauce (I did 2T)
1c Beef Broth (I did 1 Cube + 1c Water)
1 Brown Gravy Pkt.
1/4c Water
1 Onion
2 Celery, halved long way, cut
1tsp Cumin Powder
1tsp Dried Oregano

Toppings (Opt.): Pico/Salsa, Sour Cream, Tortillas, Shredd. Cheese, Crackers

Add all to Butter Flavor Cooking Sprayed Crock. Cook on Low 5-6 hours. Eat Alone. With Rice (Cooked in Broth + Splash of Lime + Shake of Cilantro).

 *** Notes ***: I was even thinking of MAKING a STEW. Roast, Carrots, Onions, Peas, Celery, etc. 1c Beef Broth. 1/4c Water. 1 Brown Gravy Pkt. 1can Beans (Cannellini Beans), 1-3T Mole, 1tsp Oregano, 1tsp Cumin. 1/4tsp Pepper. (Debating 1-2T Tomato Paste).
But, Chili won. Maybe, I will make Stew soon.

Tay’s Chicken Pitas – Healthier

Tay’s Chicken Pita is Healthier and Lower in Calories, but you wouldn’t know!

Peppered Parmesan Avocado Sauce:

3T Mayo (Lite can be used)
1/4c Sour Cream, or more to taste
1tsp White Vinegar
1/4tsp Garlic Powder
3T-1/4c Grated Parmesan Cheese (Store shelf kind)
1/2tsp Black Pepper
1 ripened Avocado
Optional: 1/2-1tsp Ranch Dressing PKT. (I used Fiesta Ranch Pkt.)

-Flat Bread/Pita (We used Joseph’s Flax Oat Bran & Whole Wheat Pita)
-Cooked Chicken Breasts (I used Tay’s Mexi Marinade, grilled. *SEE NOTES)

We Mexi Marinaded Chicken, then Grilled (Charcoal Grill’s Best!). Blend Peppered Parmesan Sauce Ingredients. I lightly rub Pitas, using fingers, with Water. Microwave 10 seconds. Spread half with Peppered Parmesan Avocado Sauce. (Optional to spread other half with Refried Beans). Top with Cooked Chicken Breast and Toppings of Choice. I had no Salsa, so, improvised with Quicky Pico (Below).
 ** NOTES: Any Chicken will do: Plain, Boiled in Chicken Broth (Toss frozen Chicken into a pan w/ Water, throw in 1-2 Chicken Broth Cubes. Bring to boil, boil til cooked.), Desired Seasoning. Any. **

1can Basil Oregano Tomatoes, drained (All I had)
To taste Red Onions, chopped
1tsp Jalapeno deseeded, minced, more to taste
1/2tsp Dried Chives
a lil shy 1/2tsp Dried Cilantro
a lil shy 1/2tsp Garlic Powder
1/8tsp Sea Salt, more to taste
1/8tsp Pepper
1tsp+1/4tsp Lime Juice (Fridge concentrate kind)

Potato Oles:

Season (Pre and Post cooking), well, with either: Tay’s Rub or Tater Ole Season

Season, bake according to directions. Once done, season lil more. Eat.

Sweet Chipotle Legs with Grilled Asparagus and Toast

Great for Chicken or Turkey Legs, Wings, Breasts, etc.

Marinade (1hr)(6 legs):
1T McCormick’s Montreal Steak Seasoning
3-4T Lime Juice (100% fridge kind) (I do 3!)
4 sm. Garlic Cloves, slivered

Sauce:
2T Chipotle Pepper in Adobo, minced
1.5T Lime Juice (100% fridge kind)
2T Brown Sugar
1/16tsp Sea Salt

Premix Sauce, set aside til use.
In Ziploc Bag, marinade Chicken 1 hr. BEST ON CHARCOAL GRILL!
Cook Legs. Last few minutes cooking, Brush on Sauce! Cook a minute or two, flip, brush more Sauce, cook a minute or 2… Right before serving, I brush any Sauce left, onto Chicken.
Served with Grilled Asparagus and Toast. Sprayed with Butter Flavor Spray (Or use Butter), seasoned with Salt, Pepper, (Garlic Optional). Wrapped in foil. Grilled.
We don’t even season Toast, but, you can Brush LIGHTLY with Seasoned Butter or Olive Oil (Garlic Powder, Sea Salt, Pepper, Optional: Butter Flavor Seasoning). Brown each side on Grill.

Charcoal Grilling Tip: We build a hill in center of grill. Light charcoal (We used Hickory Charcoal). Once coals are ashy grey, they are ready. Place on food, on outside of hill of charcoal. Prop Grill Open, using a Slightly crushed pop can. Chicken: Lay Chicken on outer part of grill (Outside hill). Once Chicken isn’t sticking to grate, so much, it’s ready to flip. Flip once, that’s it. Cook til Thermometer reads correct temp.

Lemon Chicken Legs / Wings

Marinade (1 hr)(6 legs):
1-2T White Vinegar
2T (Pick ONE): McCormick’s Montreal Steak OR Tay’s Chick Rub

Marinade another 30minutes in fridge. Butter Flavor Cooking Spray pan. Bake, uncovered, at about 425-450 for 18minutes, flip, bake another 12-18minutes, or til juices run clear. Toss with Sauce (Or brush on half way)

Eat these as Tacos, or Enchiladas. Meat is Optional, I used Turkey to cut Calories. Beef+Chorizo can be used, etc.

Meat Mixture (*See Notes):
1.5 -2 lb. Turkey Meat (See Notes)
1/2 lb Chorizo
1 pkg. Frontera Red Chile Enchilada Sauce w/ Roasted Tomato & Garlic
3/4tsp Cumin

Toppings (Choose): Sour Cream, Guacamole, Salsa, Shredd. Lettuce, Tomatoes

Premix Bean Salsa (Just toss all). Allow to set some.
Cook Meats. Adding in Fontera Sauce and Seasons. (See Notes).
You can have these as Tacos, or Quesadillas:
Butter flavor cooking spray skillet. Top HALF of Burrito Shell with Cheese, Meat Mix, Bean Salsa, more Cheese (I used both Monterey Jack and Cheddar). Fold. Slide into skillet. Brown. BUTTER FLAVOR COOKING SPRAY TOP, then flip. Brown other side (I place lid over to help heat cheeses). Cut up. Serve with Toppings of Choice.

1/4c Black Olives, chopped (Optional)
1 jar Favorite Pinto or Black Bean Dip (YES! Use Dip)

Toppings Ideas: Tay’s Guaca-HOLY MOLY SauceShredd. Cheese, Sour Cream, Salsa/Pico de Gallo, Tomatoes, Queso Cheese or Sauce, THIN spread of Mole, Shredd. Lettuce.

Cook Turkey most way. Add in Onions, Garlic, Jalapenos, Black Olives, and Taco Pkt. Once juices are cooked down some, add in Beans. Simmer a few minutes. Serve up on

Optional (Soft Shells): Heat Skillet. Spray with Butter Flavor Cooking Spray. Top shells with Above. Roll. Add to heated and sprayed skillet. Brown each side. Sprinkle with Garlic Powder. Also, Optional to add or top with Bell Peppers.

3T: Red Onions, Red Bell Pepper, grated Cucumber (Opt.)

Sauce:
1 nice ripened Avocado (OPTIONAL!)
1/2c Sour Cream
1tsp Dried Cilantro

Shredded Cheese (Try Moz. or Mexi/Taco Blend)

Add FROZEN Chicken to a pot with Water and 1-2 crushed Chicken Broth Cube(s). Turn on heat. Bring to Boil til cooked. Allow to set a few minutes in Broth. Cut up.
Mince Vegis. Toss Chicken, Bacon Pieces, and Vegis.
Blend Sauce ingredients. Mix, TO DESIRED CONSISTENCY, with Chicken (I did all). Add to Egg Rolls. Optional to Top with Shredded Cheese. Brown in Butter Flavor Cooking Spray Skillet. OR, Bake in Oven (Sprayed with Butter Spray on both sides). OR, Fry in Oil (Try Coconut Oil)Serve with Salsa and Sour Cream.

Notes: Up, Downsize, or Skip Vegis, to your taste!

1/4c Kraft Toasted Sesame Seed Dressing
2T Teriyaki Sauce
1/3c Sweet Baby Ray’s HONEY BBQ Sauce (USE HONEY!)
1T Soy Sauce
1tsp Green Onions (Optional, I skipped)
1/2T Brown Sugar

Sea Salt
Pepper
1/2T Olive Oil
1/2T Flour

Premix Sauce. Set aside. LIGHTLY Sea Salt and Pepper Legs. Add into ziploc bag, add Oil, toss. Sprinkle in half the Flour, toss. Sprinkle in other half, toss. Fridge for about 15-20minutes. Bake 425-450 for about 18 minutes, flip. Cook another 12-18minutes, til juices run clear. Toss with Sauce. Serve.

REMOVED SKIN FROM LEGS (Easier to do when Partial Frozen!).
I Marinaded in Ziploc Bag: 6 Legs + 1/2T White Vinegar + 1-2T Chicken Rub (I skipped Brown Sugar for this particular recipe). Marinade 20min.
Add 1/2T Olive Oil to bag, toss around. Sprinkle in half of 1/2T Flour in the bag, toss. Add other half, toss. Set in fridge for about 20 minutes.
Butter Flavor Cooking Spray baking pan. Bake, uncovered, at about 425-450 for 18minutes, flip, bake another 12-18minutes, or til juices run clear.
I tossed cooked Chicken with Tay’s Sweet Honey BBQ Sauce (Recipe below)!

2 Chicken Breast (Marinade):
1T Vinegar
1tsp McCormick’s Montreal Steak Seasoning
1 Pkt. 0.4 oz. Hidden Valley Buttermilk Ranch

2 Slices Bacon, baked, minced (Or Real Bacon Pieces)
4T Sweet Red Bell Pepper

Marinade Chicken about 4 hours. Foil line a baking dish. Bake Bacon til crispy. Crumble. Add Marinaded Chicken to Nonstick Pan. Cook til mostly cooked, then, add in rest (Except Cheeses and Loaf, der!). Cook down juices. Set aside to cool.
Thin slice French Loaf. Butter Flavor Cooking Spray each side (Or just bottoms). Sprinkle each side with a lil Garlic Powder and Onion Powder. Once Meat mix is to cool, add in Cheeses. Top each slice with Meat/Cheese mix. Sprinkle tops with Butter Powder and Parsley (Optional). Wrap in Foil. FREEZE (Make sure to freeze face up, til frozen (Few hours), then add to ziploc freezer bag).
Cooking: PREHEAT Oven to 450. Open Foils some (So, tops aren’t touching foils). Bake about 12-15 minutes, or til nice and toasty and melted.

Tay’s Bread Bowl Tacos (Tacos in a Delicious Fried Bowl)

Frozen Bread Loaf Dough
Dried Oregano
Cumin
Garlic Powder
Deep Frying Supplies (Oil, Fryer, etc.) 
Toppings:
Canned Refried Beans
Tay’s Guaca-HOLY MOLY! Sauce Recipe USE THIS!!!
Salsa
Shredded Cheese
Shredded Lettuce

We used our leftover Tay’s Crock Pot Sweet n Spicy Chicken Recipe (Any Taco Meat will work).
Bread Bowls: I use freezer Bread Dough. I place in bowl (Earlier in day – To thaw), on a Warmer. Once thawed enough to handle, Sprinkle with Cumin and Oregano, Fold, Sprinkle again, fold… Keep doing til nicely seasoned, WELL! Cover, allowing to rise.
Heat Oil. Break off large piece. I had to improvise with a metal measuring cup. I dipped into oil to oil it (Helps with sticking) spread dough around it. Using tongs, deep fry to shape into a bowl form. Brown both side. Lay onto paper towels. Sprinkle with Garlic Powder.
Top bowls with Refried Beans, Taco Meat, Tay’s Guaca-HOLY MOLY! Sauce, Salsa, Shredded Cheese, Shredded Lettuce. Eat!

Crock Pot Lil Sweet Lil Spicy Chicken

About 3 lb. Chicken or Roast/Large Cut of Choice (Pork/Beef)

Pick ONE of Two Options (Both give very different, YET, AMAZING flavor):
Option 1: Fontera Red Chile Enchilada Sauce w/ Roasted Tomato & Garlic
Option 2 (I did): Stubb’s Chiles, Lime, and Ginger Marinade
Then, add:
1 Taco Season Pkt.
1/2c Root Beer
Brown Sugar (1/2tsp if using Stubb’s. 1tsp if Enchilada)
1/4tsp McCormick’s Garam Masala
1/4tsp Chipotle Powder (Optional)
2 Garlic Cloves, minced
1/2tsp Dry Mustard
1/2T Cumin
1/2tsp Pepper
Add Heat (Optional. I skipped): Red Pepper Flakes or minced Spicy Chiles

Add all to Crock Pot. Cook on low 8, or so, hours. Add to Shells/Bun of choice. Top with Taco Toppings of Choice. We used Tay’s Jalapeno White Sauce along with tTt’s Pico de Gallo, Shredd. Cheese, and Lettuce.

*** LOW CALORIES – LOW CARBOHYDRATES ***

About 2tsp Coconut Oil (Or Butter Spray. More if Frying)

Chicken Marinade
(UP TO 4-5hours):

1.5 lb. Chicken
1 Hidden Valley Buttermilk Ranch PACKET
1 tsp McCormick’s Montreal Steak Seasoning
1T White Vinegar

Shrimp Marinade (UP TO Few hours):
1/2lb. Shrimp (Bell Peppers/Onion Mix, in it’s place)
1tsp TO 1/2T Tony’s Creole Seasoning
1tsp McCormick’s Cajun
1/4tsp Brown Sugar
1/4tsp Chipotle Powder

Toppings: Grated Carrot, minced Celery, minced Red Onion, Avocado Sauce (Recipe Below),

Avocado Sauce:
1 Avocado, mashed
1/2T Mayo
2T Sour Cream
1tsp Lemon Juice
1/2tsp Garlic Powder
1/4tsp Dried Dill Weed
1/4tsp Cumin
1/2tsp Dried Parsley
1/8tsp Sea Salt
1/8tsp Pepper
1/2tsp Dried Cilantro
1/4tsp Dried Oregano
1/2tsp dried Dried Chives
A smidge shy of 1/4tsp Red Pepper Flakes

Marinade Chicken. Diced up.  Marinade Shrimp. (Not a Shrimp Person?: Saute Sweet Bell Peppers and Onions with Shrimp Marinade Ingredients (Can cut back on amounts, if need be).)
Make Sauce: Remove skin and seed, MASH Avocado! Then, I add Sauce Recipe to Blender, blend. Set aside.
In SEPARATE PANS, Heat 1tsp Oil in each, cook Shrimp and Chicken.
Top either: Soft Shells, Buns, Egg Rolls, or Spring Wraps (As we did) with Chicken, 4 Shrimps, grated Vegis (I mix together), and Avocado Sauce. Roll. Cooking Options:

Spring Rolls: Soak each Sheet in Water for about 30 seconds. Top with ingredients. Roll.
Egg Rolls: Top em. Roll em, using water to close ends. Butter Flavor – Cooking Spray Skillet. Brown each side. Sprinkle with Garlic Powder (My favorite way)
OR Bake (Butter Flavor Spraying each side, Bake ABOUT 12-18min., flipping half way thro)
Or Deep Fry.
Tacos/Buns– Top. Add Cheese, Salsa, Sour Cream, if desired. Eat.
Note: OPTIONAL to also add grated Cucumber to Carrots, Onions, Celery.

Beer N Brat Mac N Cheese

Seeing a recipe for a Dip on FB, I thought we’d use Idea and turn it into a Mac. 

4 Jalapeno Cheddar Brats (Or Favorite Brat)
1/2T Butter
1.5 cans Pilsner Light Beer
1/4tsp Sea Salt
1/2tsp Garlic Powder

Up to 2/3c Reserved Beer Broth (Above)(I use 2/3c)
1/2c canned Evaporated Milk
Up to 2+3/4c Shredded Mild Cheddar Cheese
Brats, cut up
3T REAL Bacon Pieces
3T Fresh Onion, minced
1/2T Grated Parmesan Cheese (Store shelf kind)
1/4tsp Dried Thyme

About 1/2 Pkg. (3c COOKED) Dried 3 Cheese Tortellini Noodles (Cooked in Water with Pinch of Sea Salt + 1/2tsp Extra Virgin Olive Oil)

Bring: Beer, Butter, Brats, Salt, Garlic Powder to a boil. Boil for about 10 minutes, or so.
In sauce pan, add 2/3c reserved Beer Broth, Milk, Cheese, Brats, Bacon Pieces, Onions, Parm. Cheese, and Thyme. Stir frequently til nice and melted.
Boil Noodles with Sea Salt and Oil. Add about 3c COOKED noodles to Cheese.
I have yet to try, but, you could replace Sea Salt with Broth Cube (Crushed). We liked as was, so keeping it.

Cajun Ranch Sweet Tater Fries

2 Sweet Potatoes, cut to desire
1.5T Chives or Green Onions (Optional)
2T Jalapeno, deseed, minced
1T Extra Virgin Olive Oil (Vegetable or Hot Chili Oil)

1.5-2T WISHBONE Ranch Dressing & Season Pkt.
1tsp Chili Powder
1tsp Onion Powder
1.5tsp Garlic Powder
1/2tsp McCormick’s Cajun
1/2tsp Sea Salt

Cut Potatoes. In a bowl add all the Seasons. Add half the Cut Potatoes to a large Ziploc Bag. Add in half Oil, toss around, then add half the Season Mix. Add other half of Potatoes, other half of Oil, MINCED JALAPENOES, GREEN ONIONS, then rest of Season Mix. Toss around. Allow to marinade some while the oven Preheats. Preheat to 450. I Butter Flavor Cooking Spray pan. Add Potatoes. Bake about 35, or so, minutes. (I usually check around 25minutes, in case)

Tay’s Pizza Sticks

Egg Rolls, halved
Garlic Powder
Grated Parmesan (Store shelf kind)

About handful, or so, Shredd.Cheese (We use Moz. and/or Chedd.)
Turkey Pepperoni, to taste
REAL Bacon Bits/Pieces, to taste
Sprinkle Dried Parsley
Sprinkle Dried Oregano
1-2T Onions

In Blender, blend Bottom 6 Ingredients. I halve Egg Rolls (To make sticks). Top a line, kinda pressing compact, rub edges with Water. Roll, sealing edges. Butter Flavor Cooking Spray Skillet. Heat. Add Sticks, brown all sides. Add to plate, sprinkle both sides with Garlic Powder and Parmesan. Serve with heated Spaghetti Sauce to dip.

Notes: TOPPING Ingredients are Optional. Ideas (1-2T): Black Olives, Sauerkraut, Bell Peppers, Meats (Chicken, Sausage, Turkey Kielbasa, Shrimp, etc), Dipping Sauce (Alfredo, etc.), Banana Peppers, Tomatoes, etc. 

Swiss Shroom Burgers (HEALTHIER Mushroom and Swiss TURKEY Burgers)

AMAZING Flavor!!! And, Healthier than Most. But, you wouldn’t know with it’s FLAVOR!!!

Meat Mixture:
2lb. Turkey Meat (Beef can be used)
1 Mushroom Gravy Packet
1T Worcestershire
1tsp Soy Sauce
1T Green Onions, minced super small
2tsp Dried Parsley
1/2tsp Garlic Powder
1/2tsp Dried Dill Weed
1/2tsp Onion Powder
1/4tsp Sea Salt
1/2tsp Ground Pepper
2-3T Celery, minced

Sauteed Mushroom Topping:
1tsp Extra Virgin Olive Oil or Butter
1 pkg. Baby Bella Mushrooms, chopped
3/4tsp Dried Oregano
1/4tsp Lemon Juice (Fridge 100% kind)
1/4tsp Dried Rosemary, crushed more

– Toppings: Tay’s Balsamic Garlic Sauce (Recipe Here) (<-USE IT!) or Mayo, Swiss Cheese, AND FRIED ONIONS!!!
 Tay’s Redhead Flatbread (Recipe here) or Bun of Choice

Mix Meat Mixture. Allow to marinade about 20 minutes. Form Patties. Cook. Near end add on Swiss Cheese, to melt. Try with Tay’s Balsamic Garlic Sauce (Recipe Here) on Buns. Top with Sauteed Vegis. Then, Fried Onions (Optional, but delicious!).

I’ve been doing these for years. First starting with Making Pizza Roll types with Wontons. With shortly after deciding sticks were EASIER to make. I know this is a repost, but, I haven’t updated old post with a new photo, so Here it is.

Egg Roll Wraps, halved

1c Shredd. Mozzarella  Cheese
1/2c Mont. Jack Cheese
1/4c Queso Blanco
1T Grated Parmesan Cheese (Store shelf kind)
2T REAL BACON PIECES
1.5T Jalapeno, deseed, minced
2T Green Onions
1/4tsp Pepper
1/2tsp McCormick’s Brick Oven Seasoning (Optional)
1tsp Dried Parsley
1/4tsp Garlic Powder
1/4tsp Onion Powder

Blend all, except Egg Roll Wraps (Derr!). Cut Egg Roll Wraps in HALF!!! Spoon a line (About cheese stick size) onto Egg Rolls. Roll. Fold in Sides. Fry in Coconut Oil. Place on plate lined with Paper Towels. Sprinkle with Garlic Powder.
Dip in Ranch, Salsa + Sour Cream, Spaghetti Sauce, endless options.

COOKING OPTION: Baking is an Option. Or, Butter Flavor Cooking Spray Skillet and Brown Each side. Baking or Frying is best! If skipping McCormick’s Brick Oven, try 1/8tsp Sea Salt.

REPOST – Popeye Stick Em Ups (Tay’s Cheesy Spinach Sticks)

I’ve been doing these for years. First starting with Making Pizza Roll types with Wontons. With shortly after deciding sticks were EASIER to make. I know this is a repost, but, I haven’t updated old post with a new photo, so Here it is.

1/2 UP TO 1 pkg. Frozen Spinach (Fresh works!)
1/2tsp Olive Oil
1/4tsp + 1/8tsp Sea Salt
1tsp Dried Parsley
1tsp Garlic Powder
1/4tsp Onion Powder
1.5T Green Onions

1 can White Beans, drained, mashed some
1/3c Queso Blanco
1c Shredded Moz. Cheese (Or mix of Mont. Jack + Moz.)
4T Grated Parmesan Cheese (Store shelf kind)

2T Sour Cream OR Milk

Egg Rolls, HALVED
Coconut Oil (For Frying)
Sprinkle Garlic Powder

Cook/Saute Spinach, Salt, Parsley, Garlic, Grn. Onions, and Meat (If using) in Oil.
In blender, Rough BLEND: Beans, Queso, Cheeses, Milk/Sour Cream. Add Cheese Mix to Spinach. Cook a few minutes, to blend flavors.
CUT EGG ROLLS IN HALF (Important). Add a thin line of Spinach Mix to Egg Rolls. Roll, folding in edges at end..
Fry in Coconut Oil. Set on paper towel, sprinkle LIGHTLY with SMALL pinch Garlic Powder (Or Garlic Salt-LITTLE).
Serve with Salsa, Spaghetti Sauce. Or Tay’s Jalapeno White Sauce+Salsa.

Notes: Optionals: Meat (I skip!): 1/4lb: Sausage, Turkey Kielbasa, Chorizo, Chicken, or Seasoned Shrimp (Cut up/mince all to fit!)
Others (I skip!): 1/4c-1/2c Sweet Bell Peppers, Corn, Olives, Onions, Jalapeno, Tomatoes, etc. (All minced to fit)
COOKING Option: Butter Spray Skillet, Brown Each Side.

Tay’s Crocko’s Tacos with a DELICIOUS Jalapeno White Sauce

About 2.5lb., or so, Roast or Chicken (I did Frozen Chicken)
Fontera Red Chile Sauce with Roasted Tomato & Garlic (OR Old El Paso Red Chile and Roasted Garlic Mexican Cooking Sauce! If you can find it!!!)
1 Fiesta Taco Pkt. (Reg. works)
1tsp Garlic Powder
1/2tsp Dry Mustard Powder
1tsp Cumin
1/2tsp Dried Oregano
1/2tsp Pepper
1/2T Jalapeno, deseeded, minced
1 Dried Bay Leaf

Saute Vegis:
1 Pkg. Frozen Sweet Bell Peppers/Onions Mix
1tsp Extra Virgin Olive Oil
1/2tsp Dried Oregano

Sauce:
1/2c Sour Cream
1tsp Dried Cilantro
1/4tsp Lime (Fridge 100% kind)
1/4tsp Garlic Powder
1T-2T Fresh Jalapeno, minced (I did 1T)
1/8tsp Sea Salt
1/8tsp Dill Weed (Optional, I believe I skipped..?)
1tsp Wishbone Ranch Dressing PACKET

Toppings: Shredded Cheese, Lettuce, Tomatoes

Premix Sauce. Set in fridge til use. Butter Flavor Cooking Spray Crock Pot. Add first 10 Ingredients. Cook on low til Chicken is cooked. Shred, add back to crock. Allow to cook about 20 more minutes. Saute Vegis on skillet. Top Hard Shells or Soft Shells with Chicken Mix, Vegis, Sauce, Shredd. Cheese, Lettuce, and Tomatoes.

Porter Burger served with Creole Sweet Tater Fries (Ultimate Stuffed Burger fit for The Porter served with Creole Sweet Potato Fries)

(Creole Sweet Potato Fries- Recipe Below)

Meat Mixture:
1 lb. Ground/Cubed Steak
1 lb. Ground Beef
3T Real Bacon Pieces
1T Worcestershire
1tsp Garlic Powder
1tsp Montreal Steak Seasoning
1/2tsp Onion Powder
1/2tsp Mustard Pwdr.
1/2tsp Paprika
1/2tsp Pepper
1/4tsp Sea Salt
1/4tsp Liquid Hickory Smoke (Can skip if charcoal grilling)

Burger Cheese Center:
1/2c canned Queso Blanco (Blend w/Provolone)
2/3c Provolone (Blend w/ Queso)
Jalapeno Slices or minced (Optional)

Saute Vegis:
1/2T Extra Virgin Olive Oil
1c Mushrooms, sliced
1c Onions, sliced
1tsp Dried Oregano
1tsp Soy Sauce

Toppings: Tomato Slice, Lettuce, Cheddar Cheese Slice
Great w/ No Sauce. But, options: Ketchup/Mustard OR Our Garlic Balsamic Mayo
Bun of Choice

First, mix top 12 ingredients. Set aside to set some.
In a blender, blend Queso Blanco and Provolone Cheeses.
Form 4 oz. to 6 oz. Balls with Meat Mixture. Divide each Ball into 2 Patties. Place a spoonful of Blended Cheeses on one Patty. Top with a few Jalapeno. Top with other Patty. Press down edges to make a stuffed Burger.
Saute Vegis: Add in Oil, Onions, and Mushrooms. Add in Oregano. Once about soft, add in Soy Sauce. Cook few minutes, set aside.
In separate pan, fry burgers. Once just done, top with Chedd. Cheese Slice, to melt.
Top Toasted Bun with Sauce(s) of Choice (Or no Sauce). Add Burger, Sauteed Vegis, Tomato, and Lettuce.

*** Creole Sweet Potato Fries ***:
Large Sweet Potato, cut to fry desire
About 1T Extra Virgin Olive Oil
1tsp Tony’s Creole Seasoning
1/2tsp Garlic Powder
1/4tsp Pepper
1/4tsp Dill
(Seasons can be altered to taste)

Mix in Ziploc Bag. Allow to set about 15 minutes. Bake in Oven at about 450, til desired done-ness. I like to Broil mine at end, to nicely brown (Optional).
