Baconed Cabbage

1 Cabbage Head, separated
1/2T, or so, Him. Salt
2 squirts of Stevia Sweetner (Or, 1/2T Sugar)
Enough Water to cover cabbage

1.5-2lb Bacon Ends, cook. SAVE 1/4c GREASE. Chopped up.

Leftover Bacon End Grease
1 Garlic Clove, minced
1 Onion, cut up
1/2-1c Bella Mushrooms, cut up

3/4c Water
1 Beef Broth Cube, crushed
1tsp Red Pepper Flakes
1/2-1tsp Pepper

Mix, well, Water, Salt, and Stevia. Add in Cabbage. Cover and place in fridge for 5-6 hours. Drain
Cook Bacon Ends, reserving grease. Cut up Bacon Ends and set aside on plate.
In grease add in Garlic, sautee some. Add in Onions, Sautee some. Add in mushrooms, Sautee some.
Cut up drained Cabbage. Alternate, adding into skillet, Cabbage and Bacon Ends.
Premix Water and Beef Broth Cube until dissolved. Add in Red Pepper Flakes and Pepper.
Pour around and on Cabbage/Bacon. Cover and cook on medium heat until soft and juices are cooked down. If juices are not cooked down, remove lid and continue.

SERVED WITH:
Air Fried Frozen Brussels and Onions
Air Fried Corn *See notes

Add Frozen Brussels and Onions to Air Fryer, top with Frozen Corn Pieces. Air Fry on Fries Button. That’s it.
Notes: You can make a Corn Mixture of Mayo+Tajin+Chili Powder+Sea Salt+Onion and Garlic Powder. Rub onto corn when done.

Baconed Broccoli

Coconut Oil
1-1.5c Bacon Ends
Frozen Broccoli

Cheddar Melt Cheese Blend Shredded Cheese

Add 1T of Coconut Oil to skillet. Brown Bacon Ends. Add in Broccoli. Cook and keep covered. I allow my broccoli to get a lil brown on bottom, cooking up all the juices. Top with some cheese. Melt. Serve.

Baconed Rutabaga

Bacon, cooked (RESERVE GREASE!)
Butter (Compensate for grease cooking up)
2 Rutabagas, diced
Fresh Garlic, minced
Onion
Sea Salt
Pepper

Optional: Top with Cheese Slices

Cook Bacon, leave grease in pan. Set Bacon aside. Add Rutabaga to pan. Cook til soft, adding in Onion. Near end, crumble Bacon, add in and season with Pepper and Salt.
Optional to top with Cheese Slices.

Served on the side of:
Steak
  Marinade, ABOUT:
1/2T Lime Juice
1/2T Lemon Juice
1tsp Beef Base Seasoning
1tsp McCormick’s Worcestershire Pub Seasoning
1tsp: Garlic, Onion Pwdr., Orange Peel
2tsp Cumin, Chili Powder
1/4tsp Coriander
Shake of Salt and Pepper
  Topped with:
Sweet Bell Peppers saute in Oil with Oregano
Warmed Avocado (I mixed with Onions and Tomatoes)

Ham and Bacon Potato Soup

1/3T Butter
6c Water
4 Chicken Broth Cubes
1 Vegi Cube (2c worth!)
4.5c Potatoes, diced small
1c of Ham (I used smoked Ham Steak)
1/2c Carrot Sticks
1 Celery
3/4 of an Onion
1.5tsp Fresh Garlic, minced
1-2T Parm Cheese (Store shelf kind)
1tsp Dijon Mustard
1/8tsp Mustard Powder
1/4tsp Celery Salt
1/4tsp Cajun Seasoning
1/2T Fresh Parsley
2tsp Chives, minced
1/4tsp pepper

Last Hour:
2-3 Large Bacon Slices, cooked and crumbled
1/2c Evaporated Milk (Or, Sour Cream. I used Evap. Milk!)
1/2c Shredd. Cheddar Cheese (Or, Velveeta. I used Shredd. Cheese)

Optional (I skipped): Peas and/or Broccoli.

Dice up Potatoes, I dice smaller. Add all, except Bacon, Evaporated Milk, and Shredd. Cheese. Last hour, Remove most Potatoes with some juice. Blend well. Add back to crock, adding in Bacon, Evaporated Milk, and Shredd. Cheese. Make sure to only cook on Low last hour.

Tay’s Hawaiian Salad N EASY Hawaiian Dressing

1-2 Thawed Chicken Breasts
Marinade (For just Chicken. Marinade 1 hr. Choose ONE!):
3T White Vinegar + 1-1.5T McCormick’s Montreal Steak Steasoning
   OR:
Lawry’s Hawaiian Marinade

Bacon (Seasoned with Pepper while cooking)

Lettuce
SARGENTO’s Chipotle BBQ Cheese Snack Bites
Fresh Tomatoes, halved
Red Onions
Sweet MINI Bell Peppers
Carrot Slivers
Papaya (Optional)
1T Jalapeno, deseed, mince (Optional for Heat)
Mushrooms (Optional)
Boiled Eggs (See Notes)
Seasoned TEXAS TOAST Croutons
Honey Roasted Sunflower Seeds

DRESSING (A few options. Choose ONE!) Recipe:
   Our Favorite:
1/3c Ken’s Buttermilk Ranch Dressing
Nice sized 1/3c+2T canned CRUSHED Pineapple in JUICE
1/2tsp Lemon Juice
1/4tsp Paprika
   OR:
2T Mayo (And/Or: Canned Coconut Milk, Lemon or Pineapple Yogurt, may work)
2T Avocado Oil
1/2c canned Crushed Pineapple IN JUICE
1/4tsp Sea Salt
1/4tsp Paprika
1/4tsp Lemon Juice (Fridge Concentrate Kind)

Marinade Chicken. (I did McCormick + White Vinegar Marinade, what I had on hand. In Above Photo.). Cut to desired sized strips. Preheat oven to about 425-450. Lay Chicken onto Butter Flavor Cooking Sprayed pan. Cook about 10-15minutes. Lay on Bacon (You can lay it right over Chicken, too). I seasoned Bacon with Cracked Pepper. Bake til Bacon and Chicken is done. Allow to set 1 minute. Crumble Bacon.
Toss everything into a bowl, EXCEPT dressing.
BLEND Dressing of Choice Ingredients. Allow to set while prepping and cooking.
Serve each Salad with Dressing of Choice, Croutons, Seeds, and Eggs (If kept separate).

Notes: Eggs can spoil quickly if left in salad for long period. You can add right before, or keep separate and add as you serve up a bowl.

1 FROZEN Chicken, Boiled in Broth, Cut up
3T: Red Onions, Red Bell Pepper, grated Cucumber (Opt.)
3-4T Spinach, minced
Sauce:
1 nice ripened Avocado (OPTIONAL!)
1/2c Sour Cream
1tsp Dried Cilantro
1/4tsp Lime (Fridge 100% kind)
1/4 Garlic Powder
1T-2T Fresh Jalapeno, minced (I did 2T)
1/8tsp Sea Salt
1tsp Wishbone/Hidden Valley Ranch Dressing Pkt. (Or to taste)
1/8tsp Dill Weed
2tsp REAL Bacon Pieces

Shredded Cheese (Try Moz. or Mexi/Taco Blend)

Add FROZEN Chicken to a pot with Water and 1-2 crushed Chicken Broth Cube(s). Turn on heat. Bring to Boil til cooked. Allow to set a few minutes in Broth. Cut up.
Mince Vegis. Toss Chicken, Bacon Pieces, and Vegis.
Blend Sauce ingredients. Mix, TO DESIRED CONSISTENCY, with Chicken (I did all). Add to Egg Rolls. Optional to Top with Shredded Cheese. Brown in Butter Flavor Cooking Spray Skillet. OR, Bake in Oven (Sprayed with Butter Spray on both sides). OR, Fry in Oil (Try Coconut Oil)Serve with Salsa and Sour Cream.

Notes: Up, Downsize, or Skip Vegis, to your taste!
Optional to Season Chicken once cooked/cut up (Try Greek Seasoning or 1/2pkt Taco Season)

FREEZER FRIENDLY. Once browned (I use Butter Flavor Cooking Spray), add to plate. Freeze. ONCE FROZEN, add to Freezer Ziploc Bag! ReHeat in Oven or Microwave-Cooks fast!

REPOST – The Cheesin Hot Headed Pigs (Tay’s Jalapeno Bacon Cheesy Sticks)

I’ve been doing these for years. First starting with Making Pizza Roll types with Wontons. With shortly after deciding sticks were EASIER to make. I know this is a repost, but, I haven’t updated old post with a new photo, so Here it is.

Egg Roll Wraps, halved

1c Shredd. Mozzarella  Cheese
1/2c Mont. Jack Cheese
1/4c Queso Blanco
1T Grated Parmesan Cheese (Store shelf kind)
2T REAL BACON PIECES
1.5T Jalapeno, deseed, minced
2T Green Onions
1/4tsp Pepper
1/2tsp McCormick’s Brick Oven Seasoning (Optional)
1tsp Dried Parsley
1/4tsp Garlic Powder
1/4tsp Onion Powder

Blend all, except Egg Roll Wraps (Derr!). Cut Egg Roll Wraps in HALF!!! Spoon a line (About cheese stick size) onto Egg Rolls. Roll. Fold in Sides. Fry in Coconut Oil. Place on plate lined with Paper Towels. Sprinkle with Garlic Powder.
Dip in Ranch, Salsa + Sour Cream, Spaghetti Sauce, endless options.

COOKING OPTION: Baking is an Option. Or, Butter Flavor Cooking Spray Skillet and Brown Each side. Baking or Frying is best! If skipping McCormick’s Brick Oven, try 1/8tsp Sea Salt.

(Creole Sweet Potato Fries- Recipe Below)

Meat Mixture:
1 lb. Ground/Cubed Steak
1 lb. Ground Beef
3T Real Bacon Pieces
1T Worcestershire
1tsp Garlic Powder
1tsp Montreal Steak Seasoning
1/2tsp Onion Powder
1/2tsp Mustard Pwdr.
1/2tsp Paprika
1/2tsp Pepper
1/4tsp Sea Salt
1/4tsp Liquid Hickory Smoke (Can skip if charcoal grilling)

Burger Cheese Center:
1/2c canned Queso Blanco (Blend w/Provolone)
2/3c Provolone (Blend w/ Queso)
Jalapeno Slices or minced (Optional)

Saute Vegis:
1/2T Extra Virgin Olive Oil
1c Mushrooms, sliced
1c Onions, sliced
1tsp Dried Oregano
1tsp Soy Sauce

Toppings: Tomato Slice, Lettuce, Cheddar Cheese Slice
Great w/ No Sauce. But, options: Ketchup/Mustard OR Our Garlic Balsamic Mayo
Bun of Choice

First, mix top 12 ingredients. Set aside to set some.
In a blender, blend Queso Blanco and Provolone Cheeses.
Form 4 oz. to 6 oz. Balls with Meat Mixture. Divide each Ball into 2 Patties. Place a spoonful of Blended Cheeses on one Patty. Top with a few Jalapeno. Top with other Patty. Press down edges to make a stuffed Burger.
Saute Vegis: Add in Oil, Onions, and Mushrooms. Add in Oregano. Once about soft, add in Soy Sauce. Cook few minutes, set aside.
In separate pan, fry burgers. Once just done, top with Chedd. Cheese Slice, to melt.
Top Toasted Bun with Sauce(s) of Choice (Or no Sauce). Add Burger, Sauteed Vegis, Tomato, and Lettuce.

*** Creole Sweet Potato Fries ***:
Large Sweet Potato, cut to fry desire
About 1T Extra Virgin Olive Oil
1tsp Tony’s Creole Seasoning
1/2tsp Garlic Powder
1/4tsp Pepper
1/4tsp Dill
(Seasons can be altered to taste)

Mix in Ziploc Bag. Allow to set about 15 minutes. Bake in Oven at about 450, til desired done-ness. I like to Broil mine at end, to nicely brown (Optional).

Ultimate Cheesy Melt served on Garlic Texas French Toast

Add onto Wraps, Bread (Buns/Toast/Hoagies/Garlic Bread/etc.), Lettuce Wrap, OR Our Texas Toast Options Below (Garlic Parmesan Texas French Toast OR Garlic Texas Toast)! Who says French Toast can only be eaten one way?!

2 Chicken (Boil in Water + 1 Chicken Broth Cube, crushed), shred*
6 slices Turkey Bacon, cooked/crumbled
1c Turkey Pepperoni Slices
Vegis: Green Pepper, 1/2 Onion, 1/4c Black Olives, chop (Optional)

Sauce:
1/2T Margarine
1T Fresh Green Onions
3/4c Milk (Cream or canned un-sweet Evap. Milk works)
3/4c Shredded Italian 6 Cheese
1/4c Grated Parmesan Cheese (Store shelf kind)
1/8tsp Nutmeg

UP TO 1c Shredded Swiss Cheese
Toppings: Fresh sliced Tomatoes (Optional, I skip)

In sauce pan on Low Heat, melt Margarine (Don’t Burn). Add in Green Onions. Stir in Milk. Add Cheeses, then Nutmeg. Bring to Boil for about 1 minute, then Simmer til nicely Melted. Stirring FREQUENTLY.
Optional to Saute (Helps with excess juices when baking): Cook Bacon. Crumble up. Add all Vegis to Skillet. Cook some. Add in Meats. Cook til Vegis are somewhat soft, juices cooked down. Follow below instructions.
If no Saute: Crisp Bacon. Then:
– Butter Flavor Cooking Spray baking dish. Add in Vegis and Meats. Top with 1c Swiss Cheese. Pour Sauce over top. Fresh Crack some Black Pepper on top. Bake, uncovered, at 425 for 25-30 minutes. Add to Texas Toast (Recipes below). Bun/Hoagie/Toast/Garlic Bread or Wraps/Gyros, work.
* “About” 1.5 lb Chicken. Also, Leftover Carved Turkey can be used!

*** Texas Toast Option (2 Options) *** :
1.) French Toast Style:
4-5 Eggs
1/4c Milk
1/2tsp Garlic Powder
Few Cracks of Pepper
1tsp Dried Parsley
1tsp Grated Parmesan Cheese (Store shelf kind)
1/8tsp Sea Salt (Optional- I SKIP!!!)

Whisk/Blend above. Heat Skillet with Butter Flavor Cooking Spray in it (Or rub w/ Butter). Quick dip both sides of Texas Bread into Egg Mix. Brown both sides. Serve with Cheesy Meat Mixture. (Extra Crispy: Also, Bake in Oven, I skip, tho.)

2.) Grilled Garlic Butter Style:
1tsp Fresh Garlic, minced
2T Butter
1/4tsp Garlic Powder

(I use Microwave) Melt Butter, while still hot, add in minced Garlic. Wait a minute, add in Garlic Powder.  Stir. Allow to set some. Remelt, if needed (Don’t Overheat, Garlic will burn). Brush each side of Texas Bread with Garlic Butter Mix. Heat skillet with Butter Flavor Cooking Spray (Optional). Brown each side of Bread. Serve with Cheesy Meat Mix.

BLT Pizza (Bacon Lotta-Spinach Tomato Pizza)

LOW CALORIES LOW CARBS

1/2c Bacon Ends, cut up
1c Sweet Cherry Tomatoes, halved
1c packed Spinach, rough chop
1/2 of Onion, sliced thin
1T FRESH Garlic, minced
1/2tsp Dried Parsley
1tsp Dried Oregano

Thin Crust

Shredd. Moz. Cheese
Grated Parmesan Cheese (Store shelf kind)

Heat skillet to sizzle. Add bacon ends on med. high heat. Cook some. Add in tomatoes and then the rest. Cook some. Bring to simmer. Cover cook about 6minutes. Stir. Cook more, if needed (Cook down juice some).
BARELY brush bottom of crust and outer top of crust with EVOO. Add Bacon Mix. Spread around. Top with Moz. Cheese. Sprinkle with Parm. Cheese, getting the outer crust well, too. Bake according to directions.

Healthify this with Turkey Bacon, WILL NOT BE AS TASTY… And, not sure if you would need a tiny drizzle of Extra Virgin Olive Oil to cook Turkey Bacon.
YOU COULD VERY WELL SERVE BACON MIX OVER COOKED CHICKEN!

EASY Southwestern Chicken-wiches with BACON WRAPPED FINGERLING POTATOES

Mmmmmm…  Bacon Wrapped Fingerling Potatoes! Great Appetizer…

Bacon Wrapped Fingerlings:
Fingerling Potatoes
1.5tsp Extra Virgin Olive Oil
1T Dried Parsley
1/8 – 1/4tsp Sea Salt (I did 1/8)
1/8tsp Pepper
1/2tsp Garlic Powder
1/8tsp Onion Powder
1tsp Grated Parmesan Cheese (Store shelf kind)

TURKEY Bacon (Or reg. Bacon)
Bacon Glaze:
1T Dijon Mustard
1/8-1/4tsp Red Wine Vinegar (I did 1/4)
1/4tsp Paprika
1/4tsp Brown Sugar

I microwave potatoes, covered, for about 3 minutes. Then, in a bowl, add first 8 Ingredients and mix around. Allow to sit, covered, while you ready Bacon.
Mix glaze. Halve Bacon the LONG way. Lightly brush Glaze onto one side of Bacon. Wrap Bacon around seasoned Potatoes, Glazed side down (Onto potato). Place into Butter Flavor Cooking Sprayed Baking Dish. Lightly brush top (Only the Bacon) with a little more Glaze. Bake, UNCOVERED, at 450 for about 30-35 minutes. Or til Bacon/Potatoes are cooked to liking.

Easy Southwestern Chicken-wich:
Frozen Chicken Breasts (Thawed works)
About 1 tsp Hot Chili Oil
Few Splashes of Red Wine Vinegar
1-2 Chicken Broth Cubes, crushed
Good Shake of Chili Powder
Good Shake of Cumin
Good Shake of Dried Parsley
Good Shake of Garlic Powder
Good Shake of Cajun Seasoning
Good Shake of Onion Powder
Good Shake of Pepper

Everything Bagels
Southwestern Ranch
Toppings: Fresh Tomato, Lettuce, Mayo

Fill pan with JUST ENOUGH Water to Boil Chicken. Add in all ingredients, to your liking. I just shake/pour in.  Boil til cooked. Allow to set 1 minute.
Top toasted Bagels with toppings. Eat with Bacon wrapped Fingerlings.

Chick N Pig Ranchers (EASY Chicken N Bacon Ranch Wraps)

About 1.5 lb. Chicken (I use frozen Breasts)
1 Chicken Broth Cube, crushed
3T Favorite Ranch Dressing
1T McCormick’s Montreal CHICKEN Season
Bacon, cooked
Fresh Tomatoes, diced
Shredded Mild Cheddar Cheese
PEACH PINEAPPLE CHIPOTLE  Salsa (Use this!)
Optional Topping: Onion, Minced Jalapeno, Mayo (We skip Mayo- Tasty, as is.)
Wrap of Choice: Taco Shell, Egg Roll, Toasted Bread, etc. We use Soft Shell

I bake Bacon- Line pan with foil. Bake (No need to preheat) at 425 for about 12-15minutes.
Fill Stove Top Pan with enough water to cover all, but, 1 inch of chicken (Top inch is out of water). Add in 1 Chicken Broth Cube. Boil til cooked (Optional: I sometimes boil til water runs out and allow to sizzle a minute. TASTY.).
Cut up chicken. EVENLY, sprinkle with season. Toss with ranch dressing. Mix well.
Top onto wrap of choice. With Toppings of choice.
Extra Tasty Option:
After wrapping wraps. Butter Flavor Cooking Spray Skillet. Brown on each side, like so:

The Pig that Cut the Cheese – Mozi Melties (Bacon Creamed Cheese Mozzarella with Raisins and Rosemary Melts)

An Elegant Twist…  On the Grilled Cheese Sandwich!

Bread of Choice (White, Brie, Texas!, etc. – I used White)
Bacon, cooked
Raisins (Or Dried Cranberries/Craisins)
Dried Rosemary, crushed some
Grated Parmesan Cheese (Store Shelf Kind)
Sesame Seed Oil

1.5c Shredded Mozzarella , minced (Or white cheese of choice.)
3 oz. Cream Cheese

Bake Bacon on foil in oven at 450 (No need to preheat) for about 12-15 minutes. Mince Moz. cheese. Add in cream cheese. Microwave about 30 seconds. Mix well. (You can choose to add Rosemary to warmed cheese, or sprinkle on later, your choice. I did later.)
On Bread (1 piece or both pieces, your choice), spread a thin layer of cheese mix. Sprinkle lightly with Parm. Cheese. Sprinkle with Rosemary. Layer on Raisins. Top with Bacon. BRUSH EACH SIDE of sandwich with Sesame Seed Oil.
Heat skillet. Brush Sesame Seed Oil onto skillet. Lay in sandwich. Cover. Once browned, lift sandwich and brush SKILLET with more Sesame Seed Oil. Flip sandwich. Brown other side.
Note: Don’t grill these too, too, fast. Allow the cheese to melt nicely. It’s still a fast dish to make! YOU CAN USE ANY CHEESE, if you wish! A mixture of meats (Turkey, Bacon, Ham).

tTt’s Brussels (Baconed Brussel Sprouts)

Lower Calories Lower Carbohydrates!

In bowl (You can pre-prep for quicker, later, cookings):
3 uncooked Bacon Slices, cut into nice chunks
1/2 Red Onion
1/4 Pepper
1/4c Soy Sauce (Optional. I sometimes cook w/o.)
1/4tsp Seasonal Salt
1 12 oz. Package Frozen Brussels

1T Extra Virgin Olive Oil
Good Shake of Pepper (At end)

Mix first 6 ingredients in a bowl (I did about 20minutes prior to cooking). In skillet, heat adding in 1T Extra Virgin Olive Oil. Add in everything, EXCEPT, pepper. Cook til all’s cooked. Sprinkle with Pepper. Eat!

Healthier-er Options: Cut back on Oil, use Turkey Bacon.

Pizza Sauce:
2T Balsamic Vinegar
1/2T Sweet Chili Thai Sauce
1/16tsp Garlic Powder

Toppings:
Baked Bacon, cut to pieces
Shredded Mozzarella
Red Onions, sliced thin
Spinach, rough chop
Dried Sweetened Cranberries *See Notes
Grated Parmesan Cheese (Store shelf kind)
Dried Parsley

Bake Bacon on foil in pan at 450 (Preheat not needed) for about 12-15minutes.
Heat up a Sauce-Pan on stove top. Pour in Balsamic Vinegar. Cook down some. (Mine was quick to cook down!). Turn off heat. Add in Chili Sauce and Garlic. Stir, gettin all that Balsamic.
BUTTER FLAVOR COOKING SPRAY Baking Pan. Lay on Taco Shells in pan.
LIGHTLY/Barely brush sauce onto Soft Shell. Top with Shredd. Cheese. Top with Onions, Spinach, Bacon, and Cranberries (See Notes). Sprinkle with Grated Parm. Cheese and Parsley. Bake 450 for about 8 minutes.

*NOTES: You can choose to use Fresh Strawberry Slices in place of Cranberries. Strawberry Jam can be “Tried” in place of Sweet Thai Chili Sauce (I suggest trying chili, tho!) This recipe made two Burrito Shell Size Pizzas worth. Regular Pizza Crust can be used. I chose shells to cut calories and carbohydrates.

Pestered Chicks N Pigs Rollin in Cheesy Piles (Pesto Chicken Bacon w/ Asparagus over Cheesy Rice N Peppers)

An EXCELLENT combination. Pesto Chicken & Bacon with Asparagus served over Cheesy Rice and Red Pepper. Don’t skip or alter anything. Trust me!

1.5lb Chicken, cubed
1.5c Bacon Ends, cut smaller
1/2 8oz. jar Pesto
1T Grated Parmesan Cheese (Store shelf kind)
1/8tsp TO 1/4tsp Sea Salt (I did 1/4 – Optional)

1 can Asparagus, drained and cut smaller

2c uncooked Instant Rice
2c Water + ONE Chicken Broth Cube, crushed
1/3 Red Bell Pepper, chopped
3/4c Cheese Sauce (I use Prego Creamy Cheddar)
1tsp Grated Parmesan Cheese (Store shelf kind)
1/4tsp Pepper

Cherry Tomatoes, halved (For topping- Optional)

Cube Chicken. Marinade first FIVE ingredients for 5-6 hours.
Cook chicken and bacon in skillet (I Butter Flavor Cooking Sprayed, but, didn’t need to.), adding in asparagus near the end.
I microwave rice. Add water, rice, red bell pepper, and crushed broth cube into a bowl. Microwave according to directions.
Mix together: Cheese sauce, parm. cheese, and pepper. Stir into cooked rice.
Top pesto meat mix over rice. Top with halved cherry tomatoes (I forgot! Optional). Enjoy.

Notes: I was debating on how to cook this. If I should use rice, or make pasta with noodles. I decided rice. You could very well change this into a Pasta by skipping rice and using noodles.
Cutting back on Carbs? Zucchinis, sliced and halved, boil in salted water (Or broth) for 30 seconds to 1 minute… In place of Rice. Cheese sauce amount may need to be altered, less.

Bacon Berry Smoothered Chicks (Chicken topped with Balsamic Strawberry and Bacon Glaze) Chicken

Chicken Breasts, thawed

CHICKEN Marinade (4 hours):
2T Soy Sauce
1tsp Sesame Seed Oil
1/2tsp TO 3/4tsp Cumin
1/8tsp Ginger
1tsp Onion Flakes
1/8tsp Sea Salt

Balsamic Bacon & Strawberry Glaze:
1/3T Butter
1c (Plumply filled) Strawberries, sliced
1/8tsp Vanilla (Optional)
1/8tsp TO 1/4tsp Brown Sugar (Optional)
2.5T Balsamic Vinegar
2-3 Bacon Sliced, baked and crumbled

Mix marinade in ziploc bag. Add in desired amount of chicken. (We did “About’ 2lb./3 good sized breasts). Mix around occasionally. Marinade about 4 hours. CHARCOAL GRILL chicken (It’s best that way). Top with Glaze.
Glaze: I bake bacon in foil (450 for 15minutes- No need to preheat). Cool, crumble.
In pan, heat butter. Add in Balsamic Vinegar. Bring to boil for 1 minute, stirring. Add in rest. Cook down some. Top over cooked chicken.

Notes: Vanilla and sugar is optional. Maybe you want to skip the extra sweetness. Adults like it skipped, kids like it with. Also, adding 1/4tsp bacon grease to glaze cooking, is optional. We skip.

Souped Up Black Bean Stew (Black Bean Stew)

1 bag Dried Black Beans
10c Water
6 Chicken Broth Cubes
2 Beef Broth Cubes
1 can Black Beans WITH Jalapeno IN Lime, undrained (Optional)
1/3T Butter
1/2 lb. Cheese Sausage Link (Cheddar Brats work!)
About 1lb. Boneless Chicken Breast (Large chicken breast)
1c Bacon ENDS
1c Ham, diced (I believe I used Smoked Ham Steak. Optional, I skip sometimes.)
1 Onion (I added last hour, if it matters)
1T Chili Powder
1/2-1tsp Cumin
1/4tsp TO 1/2tsp Garlic Powder (NOT SURE ADDED. “Think” I did 1/2tsp)
1/4tsp Mustard Powder
1/4tsp Red Pepper Flakes (Optional)
1/4tsp Pepper
1/8tsp Sea Salt
1 Dried Bay Leaf

Rinse Beans. Butter Flavor Cooking Spray crock (Or, Butter). Add all to crock. Cook on High first few hours. Then, switch to low for rest of time. Cook 7-8 hours. OPTIONAL: Scoop out half the Beans, blend smooth, add back in, and stir.

Serve with Rice:
Lemon Pepper Rice:
2c Instant Rice
2c Water (Per rice instuctions)
1/2tsp + 1/2tsp Lemon Pepper
I microwave rice with 1/2tsp lemon pepper, covered. Then stir in rest of lemon pepper, when done.
Or:
Lime and Cilantro Rice (Rice cooked in Water + Crushed Broth Cubes with Dried Cilantro. Splash with a LIL Lime)
Reg. White Rice (As dish has enough flavor!)

Honey Mustard Taters N Pig (Honey Mustard Bacon and Potatoes)

GOLDEN Potatoes
4-6 slices Bacon, baked and crumbled  (Reserve 1tsp grease)
1/2-3/4c Shredd. Chedd. Cheese (To top. Optional- I skipped)
Sauce:
1tsp Bacon Grease
1/4c Honey Mustard
1/2tsp Lemon Juice
1T Mayo
1/2T to 1T Fresh Chives,minced
1/2T packed Fresh Parsley (Double if dried)
1/4tsp Paprika
1/4tsp Sea Salt
1/4tsp Pepper

I micowaved potatoes (Whole) for about 2 and a half minutes. Dice. Place into BUTTER FLAVOR COOKING Sprayed baking dish. Toss with sauce and bacon. Bake in oven preheated at 450 for about 35-45 minutes, uncovered. Top with cheese half way through, if using.

and: Try over Bow Tie Noodles. Or make into a Chicken Salad (Skipping Coleslaw and Adding Chicken Chunks- Top onto buns/wraps). Or Lettuce for salads. MANY IDEAS!!!

3/4 TO 1c KRAFT Creamy Poppy Seed Dressing (I did 1c)
2T Mayo (Optional)
14 oz. bag Coleslaw Mix (Or: Bow Tie Noodles/Chicken/or Lettuce)
1/2c canned Mandarin Oranges, drained
1/2c Fresh Strawberries, sliced
3-4 slices Bacon, baked/crispified, crumbled*
1/4c Carrot, grated
1/4c Sweet Red Bell Pepper, chopped small (Optional)
Lil shy 1/2c Onions, chopped (I believe I did Red)
– Top with Shredded Cheddar Cheese
– Top with 2-3T Honey Roasted Sunflower Sesame Seeds

I bake Bacon on foil, in the oven at 450 for about 12-15min. (No need to preheat). Once cooled, crumble. Toss all, EXCEPT, last 2. Then Top with Cheese and Sunflower Seeds. Serve.

BalsBerry Chicks N Poppy Seed Slawad (Balsamic Raspberry Chicken w/ Poppy Seed Coleslaw Salad)

Thawed Chicken Breasts or LEGS

1/3c Raspberry Preserve (Try Healthify w/ 1/3c Fresh Raspberries, mashed)
1/4tsp Lemon Juice (I use concentrate kind)
1tsp Dried Mint
1.5T Balsamic Vinegar
1T Soy Sauce
1/8tsp Sea Salt

Premix sauce. Place aside til use. OPTIONAL: I marinaded chicken with Brush of White Vinegar and a sprinkle of McCormick’s Montreal Steak Seasoning.

A few ways to cook:
1.) Grill Chicken (Best on Charcoal- See tip below). Near end, brush well with sauce (Save 2T for preserving brush-on). Flip, brush other side. Allowing each side to cook few minutes. Brush rest on RIGHT BEFORE serving.
2.) Add chicken to foil. Pour over sauce. Bake at 450 til done.
3.) Brush legs with sauce 30minutes prior to cooking (Great time to heat grill), SAVING 2T sauce for prior-serving brushing. Grill. CHARCOAL’S BEST! (Check out grill tip below)- Careful cooking- This method, the sauce gets a slight char.

Notes: Healthify this using 1/3c Fresh, crushed Raspberry.

Pig’s Sweet on Chicks (Glazed Bacon Wrapped Coconut Chicken)

About 2lb Fresh/Thawed Boneless Chicken
Bacon Slices (About 2 per chicken)
Up To 1T Extra Virgin Olive Oil

Chicken Marinade:
1/3c + 1T UNSWEETENED Canned Coconut Milk
1/4tsp Coriander
1/4tsp Cumin
1/4tsp Sea Salt
1/8tsp Ginger
1/2tsp Red Pepper Flakes
1/4tsp Garlic Powder
1/4tsp Dried Cilantro (Double if fresh)

Bacon Glaze (I doubled recipe):
2T Honey
1.5T Brown Sugar

Place chicken in ziploc, mix in marinade. Marinade Chicken about 5-6 hours.
Mix Bacon Glaze. RIGHT BEFORE spreading onto bacon, microwave about 5 seconds to liquify some (Easier spreading). Spread nicely onto bacon.
Heat, UP TO, 1T Extra Virgin Olive Oil in skillet. Once at sizzle to touch, fry chicken on each side about 3-5minutes, til browned.
Wrap each chicken with bacon. Bake, uncovered, 450 for about 30 minutes, or so.

(Tip: Next time I may try a griddle type pan, to help drain juices, helping to crispify bacon more. Toothpicks may help to hold bacon onto chicken.)
Options: To amp this recipe, you can very well use a Grate, IN/ON A Baking PAN. Place sliced Sweet Bell Peppers (Green/Red) and Onions into pan. Set grate over. On grate, above peppers and onions, place bacon wrapped chicken, allowing juices to fall onto peppers. Yet, allowing bacon to crispify, as it’s not sitting in the juices released by the peppers/onion cooking.
Feel free to up seasons in marinade. It’s just right for us.

Strawberry Chicken Bacon Salad

With the LOADS of Strawberries grown in the garden… We’ve been finding ways to use them, outside our pies, shortcakes, rolls, etc.  Salad it is!

1 Chicken per Salad (Charcoal grill chicken. Once chicken is just about done on grill. LIGHTLY brush a very little Lemon Juice on each side.)
Bacon (Place foil on baking dish. Bake in UN PREHEATED oven at 425 for 12-15minutes)

Salad:
Spinach (Optional)
Red Romaine Lettuce
Reg. Lettuce
Red Onion, sliced
CHIPOTLE Cheese, cubed
Strawberries, halved

Dressing: 
We used WISHBONE Ranch. Your Preference. TRY Tay’s DEVINE Balsamic Dressing or Poppyseed Dressing.

White Bear’s Karate Chop Suey (American Chop Suey)

1/2 lb Bacon, minced/blended
1 lb LEAN Ground Beef
1/2 large Onion
1c SWEET Red Bell Pepper
1c Green Bell Pepper
1 LARGE Celery, halved long way, cut small
1 grated Carrot
1 Garlic Clove, minced
1 28oz. can Whole Tomatoes, SLIGHT drain (You want some juices)
1 can Tomato Paste (Minus 1T-I used in other meal)
1c Tomato Juice (We used store brand)
1tsp Worcestershire
1/4tsp Sea Salt, more to taste
1/4tsp Pepper
1/2tsp Garlic Powder
1/4tsp Onion Powder
1/2tsp Red Pepper Flakes
1 Dried Bay Leaf
2.5c uncooked Rotini Noodles*
SERVE EACH BOWL: SPRINKLE OF MOZ. CHEESE AND GRATED PARM. CHEESE!

Mince bacon (Blend in small blender). On stove top, with 1/4tsp Extra Virgin Olive Oil, cook bacon. Add in beef, brown. Add ALL into BUTTER FLAVOR COOKING SPRAYED CROCK. Add in rest, EXCEPT noodles. (I give tomatoes a stab) Cook on low, about, 5 hours. Bring water with PINCH of sea salt to boil. Add in noodles. Boil suggested time on directions. DRAIN WELL!!! Add to sauce. Stir. Allow to sit few minutes. Allow to cool some. Enjoy.
*You can cook noodles in beef broth, or part, if you choose. We did Sea Salt.

Thin Crust
Rinaldi’s Tomato, Garlic, Onion Sauce
Sargento’s 6 Cheese Shredded Cheese (About 1/3 of bag)***
REAL Bacon Bits
Good shake of Oregano
Grated Parmesan Cheese (Store shelf kind)
EVOO

Preheat oven according to crust instructions (Ours we needed to LIGHTLY brush Extra Virgin Olive Oil on bottom and along outer edge of top crust). Spread on sauce. Top with cheese. Top with hand of bacon bits. Top with good shake oregano. Sprinkle along outer top of crust with grated Parm. cheese. Cook according to crust instructions.

***A mixture of Provolone, Asiago, Mozzarella, Romano, Parmesan Cheese, Fontina.

Italian Roast

2lb Roast
6 slices Bacon+ 1/2tsp Grease (Baked, blended. Reserve grease)
1.5T Olive Oil
1c Water + 1 Beef Broth Cube (Crushed)
1.5c TO 2c jarred Rinaldis Traditional Marinara Sauce
1/2c + 2T Cabaret Red Wine
3/4tsp Red Wine Vinegar
1 Carrot, shredded
1 Celery
1 nice size Onion
1 Green Pepper
3/4c Mushrooms, sliced
1/2tsp Garlic Powder
2tsp Dried Parsley
1.5tsp Italian Seasoning
1/8tsp Sea Salt
1/4tsp Ground Pepper
Other options, add in: 1can Cannellini Beans (Drained)<-I wanted to add, forgot to buy. Will add next time! 1/2c zucchini, sliced and halved.

Line pan with foil. Bake Bacon, reserving grease. Blend up bacon. Lightly Salt and Pepper Roast. Heat oil in skillet. Brown each side of roast. Butter Flavor Cooking Spray Crock. Add Roast to crock. In pan, you cooked roast, add in red wine. Allow to simmer a few minutes, stirring up bottom stuff that’s stuck to pan (Deglazing). Add wine to crock. Add in rest of ingredients. Cook on LOW for 8hours. Remove meat and cut up. You can choose to scoop out excess grease, at this point (Clear stuff floating at top). Add cut up meat back in. Enjoy.
I served with Garlic Toast and My Parm. Green Beans (Also uses Bacon Grease from above)
Leftovers served on taco shells!
*You can try to trim excess fat from meat, prior to browning.

tTt’s EASY Chicken N Bacon – Great for BLT Salads!

Chicken Marinade (1 hour!):
1/4c Vinegar
1T McCormick’s Montreal Steak Seasoning

Bacon

Marinade Chicken. Cut to desired sized strips. Preheat oven to about 425-450. Lay Chicken onto Butter Flavor Cooking Sprayed pan. Cook about 15minutes. Lay on Bacon (You can lay it right over Chicken, too). Bake til Bacon and Chicken is done. Allow to set 1 minute.
Eat as is. Top onto Buns/Wraps for BLTs.
 – Or, as we did. In a Salad:

Lettuce
Fresh Tomatoes
Red Onions
Shredded Cheese (Or Cheese Chunks)
Carrot Slivers
Boiled Eggs
Sweet MINI Bell Peppers
Dressing: Avocado Oil+Balsamic Vinegar, Ranch, etc.

Toss all into Salad Bowl. Top with Dressing of Choice.

(Note: Eggs can be kept separate to avoid molding, and added as you go… If making for later eating)

Aloha Soup-Ah (Hawaiian Soup)

4 cups Water
4 Chicken Broth Cubes
1 can Pineapple Chunks, drained
1 can Tomatoes (Basil Oregano kind, or Stewed), entire can
1 Green Pepper
1 Onion
1 tsp Oregano
1/8 tsp Onion Powder
Grated Parmesan
1 cup Ham, diced
6 oz. Canadian Bacon, MINCED

LIGHTLY oil skillet. Brown up meat. Spray crock with cooking spray. Add all ingredients- EXCEPT Parmesan. Cook on low 5-6 hours. Add in 1 tsp parmesan per bowl (Optional). Serve.
