tTt II’s Mushroom Pizza

Preheat oven and Pizza Stone to 400-425.

Butter Sauce (Premix):
ABout 2T Butter, melted
Dried Parsley, to taste
Garlic Powder, to taste

tTt’s Homemade THIN Pizza Crust *Recipe below
Cover Pizza Stone with Cornmeal. Roll out dough, flat.
Brush ENTIRE dough (Even the crust) with Butter Sauce above.
Add grated Parmesan onto JUST the OUTER CRUST.
Mushrooms, sliced
Onions, sliced thin
Moz. Cheese Cheese
Frozen Spinach
A lil more Moz. Cheese.
Bake for 20 minutes.

tTt’s Crust:
Makes: 4 THIN Crusts or 2 Regular Crusts. Above pizza is using THIN crust.
4 c flour
2 Tbls butter, softened
2 Tbls sugar
2 tsp yeast
2 tsp salt
1 1/3 c water (105-110 degrees)

Add to Bread Machine, in above order (Or, per manual). Allow to rise some. Divide up. Wrap in Seran and add to Freezer. Allow to thaw in fridge. Remove to use.


Flatbread Pizza

Butter Spray
Joseph’s Flatbread (Soft taco shells work)
Tomatoes, diced small
Onions, cut up small
Shredded Moz. Cheese
Parmesan Cheese

Preheat Pizza Oven. Butter Spray bottom side of Flatbread. Butter Spray OUTER crust of top side. Smear on small amount of Pesto. Top with Tomatoes and Onions. Top with Moz. Cheese. Sprinkle nicely (Getting the outer layer, as well.) with Parm. Cheese. Top with some Spinach. Cook in preheated pizza oven for only 4 minutes.

Low Carb Pizzas

JOSEPH’S Flax Oat Bran & Whole Wheat Pita Bread
Meat Link (I used Smoked Sausage), sliced
Can Basil Oregano Tomatoes, drained well
Season tops with: Oregano, Parmesan, Pepper

Top Pizzas with cut up Link, Tomatoes, Cheese. Season with Seasons. Cook in pizza oven til melted and crispy.

Quicky Lunch… Kid Approved!

We all know our Pizza Sticks… But, here’s a quicky Pizza-rrito (Same idear):

Soft Shells
Pizza Shredded Cheese
Turkey Pepperoni Slices
Toppings of Choice: We just did Pepperoni. But, options: Onions, Peppers, Jalapenos, Olives, etc.
Shake of Grated Parmesan
Shake of Oregano

Butter Flavor Cooking Spray
Garlic Powder

Spaghetti Sauce (Or Pizza)

Add Pepperoni to Soft Shells. Top with Cheese, Grated Parmesan Cheese, Seasons, and other Toppings of Choice. Roll, tucking in sides. Heat Skillet. Spray both sides of Wraps with Butter Flavor Cooking Spray. Brown each side. Sprinkle LIGHTLY with Garlic Powder. Serve with Sauce for Dipping.

Tay’s Balsamic Watermelon Strawberry Salsa – And, a few ideas for it! Including EASY & HEALTHY Pizzas!

1/2c Strawberries, chopped
1c Watermelon, cubed small
1 can Basil Oregano Garlic Diced Tomatoes, DRAINED
1/2c Sweet Mini Bell Peppers, chopped
2tsp Balsamic Vinegar
2tsp Green Onions, minced
1/4tsp Sea Salt
1/2tsp Garlic Powder
2-3T Red Onions (I did 2.5T)
1/2tsp Lemon Juice (100% Fridge Kind)
1/4tsp Dried Mint
1tsp Fresh Cilantro, minced (Try WITHOUT FIRST, then add)

– Optional (I skipped. Forgot.):
1tsp Jalapeno, deseed Minced
1/2c Goat Cheese or Crumbled Feta (Optional, I skip for Pizza)

Toss all. Allow to Marinade 20 minutes.
Ideas for Use: Salsa for Chips. Salsa for Sweetened Shells (Fry Soft Shell in Butter. Toss in Sugar and Cinnamon.) Serve as Topping for Wrap, Sandwich, Balsamic Burgers, or Quesadillas. Or, as we did… MAKE Taco Shell Pizza.


Tay’s Chicken/Bacon w/ Balsamic Watermelon/Strawberry Salsa Pizzas:
Chicken (I marinaded in White Vinegar and McCormick’s Montreal Steak)

Shredded Cheese of Choice
Grated Parmesan Cheese (Store shelf kind)
Tay’s Balsamic Watermelon and Strawberry Salsa
Soft Shells
Pepper, Dried Oregano (Oregano Optional)

I marinaded Chicken 1hr. Cut up. I added Avocado Oil to skillet. Cooked Chicken, if excess juices- Drain it, to help crispify (Especially, for Bacon). Add in Bacon to Chicken. Cook all (Draining excess juices, if needed). Cut up all to smaller pieces. Or toss all in Oven, Bake.
Butter Flavor Cooking Spray Baking Pan. Lay in Soft Shells (Optional to Butter Spray OUTSIDE Edges, to help brown). Top with Chicken, then Bacon. Top with Salsa. Top with Cheeses of Choice (I used Moz., then sprinkle of Pepperjack.+Jalapeno, then, a small sprinkle of Cheddar). Sprinkle Tops with Grated Parmesan (Be sure to get the outside Edge nicely), Pepper, and Dried Oregano (Optional)
Bake, uncovered, at 450 for about 8 minutes.

Tay’s Pizza Sticks


Egg Rolls, halved
Garlic Powder
Grated Parmesan (Store shelf kind)

About handful, or so, Shredd.Cheese (We use Moz. and/or Chedd.)
Turkey Pepperoni, to taste
REAL Bacon Bits/Pieces, to taste
Sprinkle Dried Parsley
Sprinkle Dried Oregano
1-2T Onions

In Blender, blend Bottom 6 Ingredients. I halve Egg Rolls (To make sticks). Top a line, kinda pressing compact, rub edges with Water. Roll, sealing edges. Butter Flavor Cooking Spray Skillet. Heat. Add Sticks, brown all sides. Add to plate, sprinkle both sides with Garlic Powder and Parmesan. Serve with heated Spaghetti Sauce to dip.

Notes: TOPPING Ingredients are Optional. Ideas (1-2T): Black Olives, Sauerkraut, Bell Peppers, Meats (Chicken, Sausage, Turkey Kielbasa, Shrimp, etc), Dipping Sauce (Alfredo, etc.), Banana Peppers, Tomatoes, etc. 

Flatbread Pizzas (tTt’s Flatbread Pizza – Tay’s Pesto Chickpea Pizza)


tTt’s Flatbread Pizza:
Tay’s Redhead Flatbread (Recipe Here) or Flatbread of Choice
Red Onions
Meat (We used REAL Bacon Pieces)
Cheese (Mixture of Shredd. Chedd. and Moz.)
Favorite Spaghetti Sauce
Dried Basil
Dried Oregano
Grated (Store shelf kind) Parmesan Cheese
tTt likes to sprinkle edges LIGHTLY with Creole!

Prep Dough (Needs 1hr to rise.). Mix Sauce ingredients. Stretch, or quickly roll, out dough. Top with Sauce, Toppings, then Pepper and Oregano. Optional to sprinkle edges with Creole for a nice saltiness! Bake 425 for about 11-13 minutes.


Tay’s Pesto ChickPEA-ZZA:
Tay’s Redhead Flatbread (Recipe Here) or Flatbread of chioce
Sauce – (Blend):
A lil Olive Oil
“About” 1/4c-1/2c Chickpeas, drained
“About” 1-2T Prepared Pesto
OPTIONAL 1/8tsp Sea Salt (I skipped!!)

Red Onions
Tomatoes, chopped
REAL BACON PIECES or Turkey Kielbasa
Shredd. Moz. Cheese
Sprinkle top:
Grated Parmesan Cheese (Store shelf kind)

Prep Dough (Needs 1hr. to rise). Stretch out to size, I’m not pretty about it.
Blend Chickpeas, Oil, and Pesto. Spread onto dough. Top with Toppings. Then Cheese. Then Parmesan and Pepper. Bake about 10-13minutes at 425.

Tay’s RedHead FlatBread

1c + 3/4c All Purpose Flour
1 pkg. ACTIVE Yeast
1/2tsp Sugar
a smidge shy of 1tsp Salt
1tsp Dried Thyme, crushed some
1/2tsp Cumin
3/4c Warm Water
1tsp Extra Virgin Olive Oil

In a bowl, add Flour, Yeast, Sugar, Salt, Thyme, and Cumin. With a hand blender, I blended some.
I microwaved Water to a nice warmth. Slowly pour in Water. Knead with PALM (Fold dough, press, fold, press, etc.) to a nice smoothness.

RISING TECHNIQUE! My house is not warm enough (Warmth aides in rising), so:
IN A SEPARATE bowl, I add an inch or 2 of Microwaved Hot (Not too HOT!) Water, I take ANOTHER BOWL and LIGHTLY brush with Olive Oil. Set the Dough into the bowl brushed with Olive Oil. SET THAT BOWL on top of the microwaved water bowl (This keeps the dough warm, rises PERFECTLY!). Cover with a Dampened Paper Towel or Rag (I dampen with warm water).
Allow to rise 1 hour. Some people press it smaller after rising, I don’t I just:
Cut off what’s needed, stretch or quick roll to size.
I Butter Flavor Cooking Spray a pan, Bake at 425 for about 10-13 minutes (Pizzas, Flat Tacos, Buns).
You can also cook in a skillet. Once it bubbles nicely, flip (Be sure it doesn’t burn)(Flatbreads, Pita types).
Great for Pizza Crust (We bake in Oven). Flatbreads (We cook on skillet). Burger Buns (We bake). Also, great for dipping in Hummus… Etc.

NOTES: We were going to add in Oregano. But, with having toppings that already contained Oregano, we skipped. Up to you. We would have done 1/2 – 1tsp.

Easy Pizza Pasta


1 Onion
TURKEY Pepperoni Slices (A lil less than 1/2pkg., or to taste), halved
1 jar Ragu Creamy Mozzarella Sauce
1tsp Dried Parsley
1/4tsp Onion Powder
1/2tsp Garlic Powder
1/4tsp Red Pepper Flakes (Optional)
1T Grated Parmesan Cheese (Store shelf kind)
Shake of Pepper
Noodles (Boiled in Water + Pinch Sea Salt + 1/2-1tsp Extra Virgin Olive Oil), drained well

In pan, sautee Pepperoni and Onions. Add in Sauce and Seasons. Boil Noodles, drain well. Add to Sauce, til consistency desired. Easy Breezy.
Amp it up with other Pizza Toppings: 1/4c Mushroom, few Tablespoons Black Olives, etc.

BLT Pizza (Bacon Lotta-Spinach Tomato Pizza)

1/2c Bacon Ends, cut up
1c Sweet Cherry Tomatoes, halved
1c packed Spinach, rough chop
1/2 of Onion, sliced thin
1T FRESH Garlic, minced
1/2tsp Dried Parsley
1tsp Dried Oregano

Thin Crust

Shredd. Moz. Cheese
Grated Parmesan Cheese (Store shelf kind)

Heat skillet to sizzle. Add bacon ends on med. high heat. Cook some. Add in tomatoes and then the rest. Cook some. Bring to simmer. Cover cook about 6minutes. Stir. Cook more, if needed (Cook down juice some).
BARELY brush bottom of crust and outer top of crust with EVOO. Add Bacon Mix. Spread around. Top with Moz. Cheese. Sprinkle with Parm. Cheese, getting the outer crust well, too. Bake according to directions.

Healthify this with Turkey Bacon, WILL NOT BE AS TASTY… And, not sure if you would need a tiny drizzle of Extra Virgin Olive Oil to cook Turkey Bacon.

Mock Buff Pie Hole Stuffer (Mock Buffalo Chicken Pizza – NO MEAT!)

MEAT-LESS, But, You Wouldn’t CARE! Healthier Game Day Recipe

2T Ken’s Ranch Dressing
1/4tsp Garlic Powder
1/16tsp Sea Salt
1/8tsp Pepper

Buffalo Cauliflower
A lil under 1/2 Frozen Bag Chopped Cauliflower
– Sprinkle Sea Salt (Optional)
– Sprinkle Grated Parmesan Cheese (Store Shelf Kind)
– Light Sprinkle Paprika (Optional)
– Sprinkle Pepper or Light Sprinkle McCormicks Montreal Steak Season
Buffalo Sauce:
2T Buffalo Sauce (We use store brand, NOT FRANK’S)
2T Louisiana Sauce
1/3T Butter (Optional. I will skip next time!!!)

Celery, cut 1/3 long way, then minced (To desired Amount)
Red Onions, sliced (To desired Amount)
Jalapeno, mincedBARELY, a few spaced evenly
Shredded. Moz. Cheese (Or Cheese of Choice)
Another Sprinkle Parmesan Cheese

For Cauliflower, I Butter Flavored Cooking Sprayed pan. Lay ouy Cauliflower. Season LIGHTLY with Sea Salt, Grated Parm., Pepper, Paprika. Bake. (You can very well microwave, or cook in skillet, and toss with seasons. I liked baking.). Toss Cauliflower with Buffalo Sauce.
I brush, LIGHTLY/BARELY, outer crust of upper crust, then entire bottom with Extra Virgin Olive Oil. Brush Ranch Sauce on top. Lay on desired amount of Buffalo Cauliflower. Add toppings. Cheese. Then Sprinkle a little Parm. Cheese (Be sure to sprinkle around outer crust!). Bake according to directions (I do minimal time, if that).

Optional to sprinkle crumbled Blue Cheese on top. Or serve Blue Cheese Dressing on side. A little Grated Carrot, as topping, is optional, as well.

Chicken Sha-cka-lahka-lahka-Ma (Chicken Shawarma with Cucumber Salad/Slaw)

Eat this on Pita Bread (Yes!), Bagels, Wraps of choice, Alone, or Over Rice, as a Pizza! … Endless Ideas.

Chicken Breasts, thawed and halved or thirds
A Good Roasted Red Pepper Hummus
Wrap of Choice/ Or Rice / Or Crust of Choice

Chicken Marinade (6-8hours):
Chobani Greek Lemon Yogurt (MINUS 3T- Reserve 2T for Slaw)
1/2T Extra Virgin Olive Oil
1T Dried Parsley
1/2tsp Garlic Powder
1/4tsp Sea Salt
1/2tsp All Spice
1/2tsp Paprika
1/4tsp Chili Powder
1/8tsp Ginger Powder
1/4tsp Coriander
1/2tsp Cumin
1/2tsp Red Pepper Flakes

Cucumber Salad/Slaw:
1.5T TO 2T reserved Lemon Yogurt
1c Cucumber, peeled, deseeded, quartered, & sliced
1/3c Cherry Tomatoes, quartered
1/3c Red Onion
1.5T Raisins
1/8tsp Sea Salt
1/4tsp Dried Mint
1/2tsp Grated Parmesan Cheese

Cut chicken how you like (Cubes, 1/3s (Like Tenderloins), etc.). Marinade 6-8 hours. Cook chicken in skillet. Spread Pita with thin layer of Hummus (Photo is of Soft Shell- We forgot Pitas at store.). Top with some Chicken. Top with a spoon of Cucumber Salad/Slaw. Eat!

If Rice: Use Instant Rice. In bowl, add rice amount of choice, water suggest for amount of rice, and chicken broth cubes (I use 1 cube per 2 cups uncooked rice). I microwave according to time suggested in instructions.
If Pita Pizza (Soft flour shell can be used for crust, as well- Less Carbs Less Calories): Preheat oven to 450. Spread Hummus onto crust of choice. Top with Chicken. Shredded Moz. Cheese is optional. Bake about 8minutes. Cut. Top each slice with lil Coleslaw Mix.

Ballsy Pig Pies (DELICIOUS Balsamic Bacon N Berry Pizza)

AMAZING Pizza! A favorite in our house… Kids included!

Soft Flour Taco Shells (I used Baja Cafe Burritos)

Pizza Sauce:
2T Balsamic Vinegar
1/2T Sweet Chili Thai Sauce
1/16tsp Garlic Powder

Baked Bacon, cut to pieces
Shredded Mozzarella
Red Onions, sliced thin
Spinach, rough chop
Dried Sweetened Cranberries *See Notes
Grated Parmesan Cheese (Store shelf kind)
Dried Parsley

Bake Bacon on foil in pan at 450 (Preheat not needed) for about 12-15minutes.
Heat up a Sauce-Pan on stove top. Pour in Balsamic Vinegar. Cook down some. (Mine was quick to cook down!). Turn off heat. Add in Chili Sauce and Garlic. Stir, gettin all that Balsamic.
BUTTER FLAVOR COOKING SPRAY Baking Pan. Lay on Taco Shells in pan.
LIGHTLY/Barely brush sauce onto Soft Shell. Top with Shredd. Cheese. Top with Onions, Spinach, Bacon, and Cranberries (See Notes). Sprinkle with Grated Parm. Cheese and Parsley. Bake 450 for about 8 minutes.

*NOTES: You can choose to use Fresh Strawberry Slices in place of Cranberries. Strawberry Jam can be “Tried” in place of Sweet Thai Chili Sauce (I suggest trying chili, tho!) This recipe made two Burrito Shell Size Pizzas worth. Regular Pizza Crust can be used. I chose shells to cut calories and carbohydrates.

Now, I know I’ve posted this A LONG TIME AGO. But, I have to post again! We’ve made these for YEARS now! With the kiddos home, it’s nice to have a quick and healthy go-to meal. Annnd… They can make em themselves!

Soft Taco Shells
Favorite Spaghetti Sauce
Cheese of choice
Toppings of choice (Meat of choice, Vegis of choice, etc.)
Grated Parm. Cheese (Store shelf kind)
Dried Oregano

I just did a QUICK Cheese and Sauce Pizza with Parm. and Oregano. Simple. Spread taco shell with sauce. Top with cheese and toppings. Sprinkle with Parm. and Oregano.
Heat skillet. Spray, well, with Butter Flavor Cooking Spray. Turn to a lower heat.
Place pizza/shell onto skillet. COVER with lid. Allow to LIGHTLY become golden brown on bottom, keep checking, they cook fast.  Place onto plate and cut. Set about 30sec. before eating. Bam! Done. You’re welcome…

Thin Crust
Rinaldi’s Tomato, Garlic, Onion Sauce
Sargento’s 6 Cheese Shredded Cheese (About 1/3 of bag)***
REAL Bacon Bits
Good shake of Oregano
Grated Parmesan Cheese (Store shelf kind)

Preheat oven according to crust instructions (Ours we needed to LIGHTLY brush Extra Virgin Olive Oil on bottom and along outer edge of top crust). Spread on sauce. Top with cheese. Top with hand of bacon bits. Top with good shake oregano. Sprinkle along outer top of crust with grated Parm. cheese. Cook according to crust instructions.

***A mixture of Provolone, Asiago, Mozzarella, Romano, Parmesan Cheese, Fontina.

Vegi Pizza with a VEGI SPREAD


Vegi Spread:
We made this and it lasted about 3 meals (3rd meal feeding just kids). We used for a vegi pizza, chicken egg rolls, and chicken and vegi spread stuffed croissants.
1/4c Mayo
3/4c Sour Cream
8oz. Cream Cheese
2T Grated Parm. Cheese
1 Pkg. Vegetable Soup/Recipe Mix
10oz. Pkg. Spinach, minced
1 Red Pepper, chopped
1/4tsp Garlic powder
1/8tsp Ground Pepper
1/4tsp Dill Weed
1/4tsp Sweet Pepper and Onion Seasoning (Fleet Farm, has sweet taste. Sugar may work.)

Warm SLIGHTLY cream cheese. Mix all above. Place in fridge for few hours, or til use.

Thin crust, prepped per instructions. Top with good amount of spread. Toppings:
Frozen Broccoli, thawed, chopped
Roma Tomatoes, sliced and halved
Red Onions, sliced
Chicken, cooked in water w/ Chicken Broth Cube(s). Cut up.
Shredd. Moz. Cheese
Sprinkle top and outer crust with Grated Parm. Cheese (Store shelf kind)
Bake accordingly.

Stuff and roll each croissant. Cook according to instructions. Filling:
Shredd. Chicken, cooked in Water w/ Broth Cube(s)
Shredd. Cheese
Red Onion, sliced
Fresh Tomatoes, diced
Sprinkle top croissant lightly with Parm. Cheese and Garlic Powder

Egg Rolls: Same as croissants, just using egg rolls. Less carb.

Can also be used for wraps. Dip (Instructions on pkg.). Sandwiches. Etc.

Chicken Florentine Pizza Pie


2-3 Chicken Breasts, cooked and cut up. Seasoned with Sea Salt, Pepper, Garlic Powder, Onion Powder, Parsley, Basil, Oregano.
1 Small Onion, chopped
Sun Dried Tomatoes
1/2c Spinach, chopped
Shredded Mozarella Cheese
Sprinkle of Oregano
1 Pkg. Cream Cheese (1/3 fat)
1/4c Mayo
1/4c Pesto (I used traditional)
1/3c Grated Parmasen Cheese (Store shelf kind)
1/4 tsp Garlic Powder
1/4 tsp Red Wine Vinegar
2 PACKED cups spinach (2c Pre-blend), blended small/minced

Mix all Sauce ingredients, except spinach. In blender, blend spinach. Add to sauce, mix well, set aside. Boil chicken. Cut up and season. Lightly oil entire bottom of crust and very outside of top of crust.*SEE NOTES. Spread sauce spread onto pizza. Top with seasoned chicken, dried tomatoes, chopped onions, chopped spinach, and a little moz. cheese (Desired amounts). Sprinkle outer crust with grated parm. cheese. Bake according to instructions. Pic above is using cherry tomatoes. Work okay, but sun dried is better!

*Notes: I’ve used Butter Flavored Cooking Spray in place of oil. Works fine. Cuts Calories. Also, use leftover sauce spread for sandwiches, or taco rolls (Spread spread onto taco shell, add toppings, roll, place in fridge til hardened, cut up, serve.)

HOLAY MOLAY ChipotLE (Spicy Chipotle Pizza)


Thin Pizza Crust
Oil or Butter Flavored Cooking Spray
Red Pepper Flakes (About 1/4 tsp, or so)
3 Chipotle Peppers in Adobo Sauce (Canned) (A lil sauce from can, as well)
3 Boiled, cooked, Chicken Breasts
1/2 can Black Beans with Jalapenos in Lime, drained
1 can Stewed Tomatoes, drained
Cumin (About 1/4tsp)
Shredded Cheddar Cheese

Preheat oven accordingly. Oil both sides of crust. Sprinkle top with red pepper flakes. Chop up chicken and mince up chipotle peppers. Mix chicken with peppers, a lil adobo sauce, black beans, and cumin. Spread over crust. Layer with tomatoes. Top with cheese. Bake accordingly.

EggTastic Pizza (Egg Pizza)


1 12oz Fridge Crescents
Hollandaise Sauce Packet, prepped (DON’T add suggested lemon juice)
7 Eggs
2 TO 3 oz. Velveeta Cheese, cubed
Up to 1/4 lb Chorizo (Or sausage of choice)
1/4c Heavy Creamer
Shredded Mild Cheddar Cheese

Preheat oven according to crescents. Make hollandaise sauce. Set aside. In bowl, mix heavy creamer and eggs. In skillet sprayed with cooking spray, brown meat. Add in egg mix and velveeta. Cook.
In cake pan, spread out crescents. Top with desired amount of hollandaise sauce. Top with eggs. Sprinkle shredded cheese. Sprinkle pepper and oregano on top. Bake accordingly, mine always goes about 5 minutes longer.
*You can add whatever other toppings you like: Onions, jalapeno, etc.

El Taco Pizza


2- 7.5oz. cans fridge Biscuits
1/3c Sour Cream
8 oz. Cream Cheese
1.5 tsp Taco Season (From Packet)
Separate Bowl Mix:
1 lb. Ground Turkey, browned and seasoned with a dash Pepper and Garlic Powder.
1/2 can Refried Beans
1c Salsa
Rest of Taco Season Packet
Shredded Mozzarella Cheese
Frito Chips

Preheat oven according to biscuits. In a rectangle pan, spread out biscuits, flattening and connecting all. Spread on layer of Cream Cheese and Sour Cream mixture. Top with Meat and Bean mixture. Top with shredded lettuce. Fresh cut tomatoes. Mozzarella. Bake accordingly. Then top with Frito chips.

Reub N Kraut Pizza (Reuben Pizza)


About cup or so Leftover Corned Beef (From St. Patrick’s Day!)
About 1/2c Sauerkraut
Grated Parmesan Cheese (Store shelf kind)
Mozzarella Cheese, shredded
Thin Pizza Crust
Leftover Horseradish Sauce
– 2 Very good size Tablespoons of Horseradish
– 3T Light Mayo
– 1 tsp Ground Mustard Powder
– Couple grinds of Black Pepper
– Good shake of Garlic Powder
– 1/8 tsp Sugar
– Pinch Sea Salt
– 1.5 to 2T Red Wine Vinegar
– 1/4c Sour Cream (In a pinch, I’ve used 1/8c Milk)
Premake and place in fridge.

Lightly brush EVOO on both sides of crust. Spread THIN layer of horseradish sauce. Sprinkle with Parm. Cheese. Top with meat, then sauerkraut. Top with moz. cheese. Sprinkle entire crust with more parm. cheese. Then sprinkle with oregano. Bake accordingly.

Fungi Pie (tTt’s Mushroom and Parm. Pizza Pie)


Thin Crust of Choice
Mozzarella Cheese
Grated Parmesan and Romano Cheese Mix (Store shelf kind)
Olive Oil
Pkg. Mushrooms, sliced
1/2 Onion, sliced thin
1 Garlic Clove, minced
1/2 T Oyster Sauce
Few Dashes Pepper

Butter flavored cooking spray pan. Saute mushrooms and onions (Using few drops of water to keep from sticking). Season with pepper. Half way through add garlic and oyster sauce. Continue to saute. SLIGHTLY oil both sides of crust. Sprinkle top with nice amount of grated parm. and romano cheese. Top with mushroom mixture. Top with moz. cheese. Sprinkle entire top with more parm. and romano cheese. Sprinkle oregano. Bake according to directions.
Note: We tried with well drained canned tomatoes. Side WITHOUT tomatoes won our taste test!

Jal-Up-InYo Seasons (Jalapeno Season)


1 Jar UN-TAMED Sliced Jalapenos (Not the tamed)
Single layer onto dehydrator. Dehydrate til crispy. Grind up everything, seeds included, in a blender til powder. Tip: Do near vent. Can be a bit much, the smell. Also, use with care and not rub your eyes, or breathe in while blending.

GREAT for:
Buttered Popcorn. Cooked. Splashed with Louisiana Hot Sauce. Sprinkled well with jalapeno season. Give it shake. Eat.

Great on Pizzas before cooking. Eggs. Beefsticks. Etc. MANY uses to this stuff!

tTt’s Pizza Pie


Your favorite Thin Crust
Lightly rub both sides of Crust with Extra Virgin Olive Oil.
Sprinkle a good amount of Grated Parmesan (Store shelf kind).
Top with good amount of Shredded Mozzarella Cheese.
Fully drain 1 can Basil Oregano Seasoned Diced Tomatoes, spread onto pizza.
1/4 lb. Turkey Kielbasa Link (Link of choice), sliced. Add to pizza.
Sprinkle Dried Oregano Season over top.
Cook according to Crust Instructions.

TAYzzas (Low Carbohydrate Pizzas)


Make Muffin Pizzas (Using LARGE Muffin Pan) or Make in Baking Dish! Kids love the Fun Muffin sizes!

Extra Virgin Olive Oil or Butter Flavor Cooking Spray
Rinaldis Tomato Garlic Spaghetti Sauce
Shredded Cheese (I used Moz. w/ Sprinkle of Chedd.)

Toppings (Optional. I used ones with *):Mushrooms*, Olives*, Onions*, Peppers, Turkey Pepperoni*, REAL Bacon Pieces*, Italian Turkey Meat (Ground,browned), etc.

1/2c Egg Whites (Or, about 3-4 Reg. Eggs)
Dried Oregano
Grated Parmesan Cheese (Store shelf kind)

Lightly Extra Virgin Olive Oil or Butter Flavor Cooking Spray LARGE Muffin Pan or Baking Dish. Spoon in Sauce. Top with Cheese. Top with Toppings (Start with Vegis) of Choice. Pour over Eggs. Top with SPRINKLE of more Cheese. Sprinkle tops with Parm. Cheese. Bake 450 for 25minutes. Allow to cool a few. Then, serve up!
(If doing Muffin Pan: You can repeat layers!!! Also, I did about 1-2T Eggs in each Muffin Cup)

CauliFLAVORFUL Crust (Cauliflower Pizza Crust) Includes: Sweet Thai Pizza Recipe


Shred head of Cauliflower De-leaved, destem big stems. DON’T over shred, you don’t want to puree it. Microwave about 8min. (DO NOT ADD WATER, cauliflower has enough water in it!)
3 cups of above shredded Cauliflower
2 Eggs
About 2 cups of Mozzarella
1 to 1.5 tsp Garlic, minced
2 tsp Oregano
A few good shakes of Onion Powder
A few good shakes of Garlic Powder
Mix all ingredients
Spread THINLY onto well sprayed pan with cooking spray, use butter flavored. (Some spread EVOO on it). Also spray TOP of crust with spray, as well.
Bake 450 about 15min., eyeball it. The very outside edge gets really brown, but not the bottom. So, don’t worry it’s not burning! My oven’s weird and I used a cake pan, so it went longer than 15min. I also threw it under broil a few minutes. To help crispify it.
Take out crust and add toppings.

Topping Option (Pictured):
Sweet Thai Pizza
Brush a thin layer of Thai Sweet Chili Sauce onto crust
Top with
Cooked Chicken, cut up (I boil a few pieces, cut up, and season with: Basil, Oregano, Parsley, Pepper, Pinch of Sea Salt, Onion Powder, and Garlic Powder)
Onions, sliced thin
Mushrooms, sliced
Zucchini, THINLY sliced and halved
Jalapenos, jarred kind
Mozzarella, sprinkled over top (I used a little, since crust had it in it)
Sprinkle a little more sweet chili sauce on top.
Add Red Pepper Flakes for Spiciness *Optional
Sprinkle very outer (Crust area) with grated Parmesan (I use fridge kind). On top, too, if ya like.
Bake til melted. Low Carbs never tasted so good.
