Healthy(er) Chili Cheese Sweet Potato Fries

Absolutely Amazing! Using Beneficial Sweet Potatoes, Turkey Meat, and Air Fryer… These are BETTER than the more unhealthier versions! 

1/2 lb. Turkey Meat (Browned while seasoned with: Basil, Oregano, Pepper)
1/2, or so,  10oz. can Hormel Chili w/NO Beans (Or, to taste)
1/4-1/3  15oz. jar Salsa Con Queso Dip (Or, to taste)

Shredded Cheddar Cheese
Green Onions
Fresh Jalapeno, minced
Optional Topping: tTt’s Pico

Sweet Potato, cut to fry size
1.5tsp Olive Oil
1/2 Tay’s Chili Fry Seasoning (Recipe Below)

Brown and season meat with Basil, Oregano, and Pepper. Stir in Queso Cheese and Hormel Chili until desired consistency. Simmer a few minutes, stirring.
Cut Fries to size desired. In ziploc mix mix Oil and HALF the fry Seasoning (Save rest for another meal). We use Air Fryer and cook.
Lay Fries onto plate. Top with a little Shredded Cheese. Top with Meat/Cheesy Chili mixture. Top with a LITTLE more cheese. Then, Green Onions and Jalapenos. (Enjoy it with tTt’s Pico).

Tay’s Chili Cheese Fry Seasoning (We only used 1/2):
2tsp Orrington Farm’s Broth Base & Seasoning (Or 1 Beef Broth Cube, crushed)
1tsp Tony’s Creole Seasoning
1tsp Chili Powder
1/2tsp Mustard Powder
1/2tsp Pepper
1/2tsp Paprika
1/2tsp Garlic Powder
1/2tsp Onion Powder
1/8tsp Cayenne Powder
1/8tsp Sea Salt
(Another version of this was used for this recipe.)

Try the Loaded Version:
Optional Toppings (tTt’s Pico, Olives, Onions, etc.)

Beer N Brat Mac N Cheese

Seeing a recipe for a Dip on FB, I thought we’d use Idea and turn it into a Mac. 

4 Jalapeno Cheddar Brats (Or Favorite Brat)
1/2T Butter
1.5 cans Pilsner Light Beer
1/4tsp Sea Salt
1/2tsp Garlic Powder

Up to 2/3c Reserved Beer Broth (Above)(I use 2/3c)
1/2c canned Evaporated Milk
Up to 2+3/4c Shredded Mild Cheddar Cheese
Brats, cut up
3T REAL Bacon Pieces
3T Fresh Onion, minced
1/2T Grated Parmesan Cheese (Store shelf kind)
1/4tsp Dried Thyme

About 1/2 Pkg. (3c COOKED) Dried 3 Cheese Tortellini Noodles (Cooked in Water with Pinch of Sea Salt + 1/2tsp Extra Virgin Olive Oil)

Bring: Beer, Butter, Brats, Salt, Garlic Powder to a boil. Boil for about 10 minutes, or so.
In sauce pan, add 2/3c reserved Beer Broth, Milk, Cheese, Brats, Bacon Pieces, Onions, Parm. Cheese, and Thyme. Stir frequently til nice and melted.
Boil Noodles with Sea Salt and Oil. Add about 3c COOKED noodles to Cheese.
I have yet to try, but, you could replace Sea Salt with Broth Cube (Crushed). We liked as was, so keeping it.

REPOST – The Cheesin Hot Headed Pigs (Tay’s Jalapeno Bacon Cheesy Sticks)

I’ve been doing these for years. First starting with Making Pizza Roll types with Wontons. With shortly after deciding sticks were EASIER to make. I know this is a repost, but, I haven’t updated old post with a new photo, so Here it is.

Egg Roll Wraps, halved

1c Shredd. Mozzarella  Cheese
1/2c Mont. Jack Cheese
1/4c Queso Blanco
1T Grated Parmesan Cheese (Store shelf kind)
2T REAL BACON PIECES
1.5T Jalapeno, deseed, minced
2T Green Onions
1/4tsp Pepper
1/2tsp McCormick’s Brick Oven Seasoning (Optional)
1tsp Dried Parsley
1/4tsp Garlic Powder
1/4tsp Onion Powder

Blend all, except Egg Roll Wraps (Derr!). Cut Egg Roll Wraps in HALF!!! Spoon a line (About cheese stick size) onto Egg Rolls. Roll. Fold in Sides. Fry in Coconut Oil. Place on plate lined with Paper Towels. Sprinkle with Garlic Powder.
Dip in Ranch, Salsa + Sour Cream, Spaghetti Sauce, endless options.

COOKING OPTION: Baking is an Option. Or, Butter Flavor Cooking Spray Skillet and Brown Each side. Baking or Frying is best! If skipping McCormick’s Brick Oven, try 1/8tsp Sea Salt.

REPOST – Popeye Stick Em Ups (Tay’s Cheesy Spinach Sticks)

I’ve been doing these for years. First starting with Making Pizza Roll types with Wontons. With shortly after deciding sticks were EASIER to make. I know this is a repost, but, I haven’t updated old post with a new photo, so Here it is.

1/2 UP TO 1 pkg. Frozen Spinach (Fresh works!)
1/2tsp Olive Oil
1/4tsp + 1/8tsp Sea Salt
1tsp Dried Parsley
1tsp Garlic Powder
1/4tsp Onion Powder
1.5T Green Onions

1 can White Beans, drained, mashed some
1/3c Queso Blanco
1c Shredded Moz. Cheese (Or mix of Mont. Jack + Moz.)
4T Grated Parmesan Cheese (Store shelf kind)

2T Sour Cream OR Milk

Egg Rolls, HALVED
Coconut Oil (For Frying)
Sprinkle Garlic Powder

Cook/Saute Spinach, Salt, Parsley, Garlic, Grn. Onions, and Meat (If using) in Oil.
In blender, Rough BLEND: Beans, Queso, Cheeses, Milk/Sour Cream. Add Cheese Mix to Spinach. Cook a few minutes, to blend flavors.
CUT EGG ROLLS IN HALF (Important). Add a thin line of Spinach Mix to Egg Rolls. Roll, folding in edges at end..
Fry in Coconut Oil. Set on paper towel, sprinkle LIGHTLY with SMALL pinch Garlic Powder (Or Garlic Salt-LITTLE).
Serve with Salsa, Spaghetti Sauce. Or Tay’s Jalapeno White Sauce+Salsa.

Notes: Optionals: Meat (I skip!): 1/4lb: Sausage, Turkey Kielbasa, Chorizo, Chicken, or Seasoned Shrimp (Cut up/mince all to fit!)
Others (I skip!): 1/4c-1/2c Sweet Bell Peppers, Corn, Olives, Onions, Jalapeno, Tomatoes, etc. (All minced to fit)
COOKING Option: Butter Spray Skillet, Brown Each Side.

TAY’s UltiMelt (Steak Melt Manwich)

Texas Toast Bread
Toppings: Mayo, Shredd. Cheese (We use Mild Cheddar AND Italian 6 Cheese)

Marinade
:
1/3c Soy Sauce
1/2c Extra Virgin Olive Oil
1/3c fresh Lemon Juice (I’ve used Fridge Kind, as well)
1/4c Worcestershire Sauce
1/4 tsp Hot Pepper Sauce (We used Louisiana)
1 tsp Regular Mustard
1 tsp Onion Powder
a sprinkle of Cayenne Powder
1T + 1/2T Garlic Powder
3T dried Basil
1T + 1/2T Dried Parsley
1 tsp Course Black Pepper
1 tsp Dried Minced Garlic (I’ve used 2tsp Fresh Garlic, as well)

Vegis:
Green Pepper, sliced into strips
Red Pepper, sliced into strips
Onions, sliced into strips
Mushrooms, sliced into strips
Extra Virgin Olive Oil
Shakes of Dried Oregano

Steaks: Mix all ingredients in a bowl. Pour marinade over desired type of meat (Preferably a slab of dead cow or chops). Cover, and refrigerate for up to 8 hours. Cook meat as desired. Try our best technique for a good steak. (Below). Cut up. Vegis: Cut up. Lay into foil. Drizzle a LITTLE Olive Oil on. Sprinkle with Oregano. Cook, we do on grill. Butter Flavor Cooking Spray skillet. Brown each side of Toast. OR Grill each side of Toast, Butter it.
Top with Toppings.

Steak Cooking Tip: Olive oil in skillet, get that pan hot, I mean I want that steak to sizzle or you’ve ruined your whole meal. Sear for about 3minutes on each side, you want a nice brown, but not fully cooked. Just leave it cook, don’t move it too much! This locks the juices in. Juices rise when cooked. By searing each side, you lock those juices in. Transfer and bake, or grill til desired. Remember that the steaks cook as they rest and absorb the juices. So, allow a few minute rest and cook to just under desired steak- Rare, Med., etc. Or all the way on grill, just be sure it sizzles once it hit it! No constant flipping!!! One and done!

Parmesan Tomatoed Chicken N Vegis

Chicken Marinade (1+hours) *Optional:
Red Wine Vinegar
McCormick’s Montreal CHICKEN Seasoning

In a ziploc bag (Or bowl) season each side of chicken with seasoning. Put in about 5 good splashes of Red Wine Vinegar. Marinade 1, or so, hour(s). I marinaded 4-5 hours.

1 Red Pepper
1 Green Pepper
1 Onion
1 Garlic Clove, minced
Desired amount of Zucchini, halved/deseeded/sliced
1 Celery *Optional
1/8tsp TO 1/4tsp Sea Salt

1c TO 2c Shredded Mozzarella Cheese
1 jar Garlic Onion Tomato Spaghetti Sauce

Tomato, sliced
Grated Parmesan Cheese (Store shelf kind)
Shakes of Dried Parsley
Shakes of Pepper

Cut Chicken into tenderloin sizes (Width wise). Marinade.
Preheat oven to 450.
Cut vegis, lay in BUTTER FLAVORED COOKING SPRAYED dish. Sprinkle with Sea Salt.
Heat a LITTLE Extra Virgin Olive Oil in skillet. Once to a GOOD SIZZLE, add chicken. Cook on Med.-High heat about 3 minutes on EACH side. Lay over Vegis.
Mix sauce and cheese. Top over chicken. Top with Tomatoes. Sprinkle, WELL, with Parm. Cheese. Sprinkle with Parsley and Pepper. Bake 450 for 25minutes.

The Pig that Cut the Cheese – Mozi Melties (Bacon Creamed Cheese Mozzarella with Raisins and Rosemary Melts)

An Elegant Twist…  On the Grilled Cheese Sandwich!

Bread of Choice (White, Brie, Texas!, etc. – I used White)
Bacon, cooked
Raisins (Or Dried Cranberries/Craisins)
Dried Rosemary, crushed some
Grated Parmesan Cheese (Store Shelf Kind)
Sesame Seed Oil

1.5c Shredded Mozzarella , minced (Or white cheese of choice.)
3 oz. Cream Cheese

Bake Bacon on foil in oven at 450 (No need to preheat) for about 12-15 minutes. Mince Moz. cheese. Add in cream cheese. Microwave about 30 seconds. Mix well. (You can choose to add Rosemary to warmed cheese, or sprinkle on later, your choice. I did later.)
On Bread (1 piece or both pieces, your choice), spread a thin layer of cheese mix. Sprinkle lightly with Parm. Cheese. Sprinkle with Rosemary. Layer on Raisins. Top with Bacon. BRUSH EACH SIDE of sandwich with Sesame Seed Oil.
Heat skillet. Brush Sesame Seed Oil onto skillet. Lay in sandwich. Cover. Once browned, lift sandwich and brush SKILLET with more Sesame Seed Oil. Flip sandwich. Brown other side.
Note: Don’t grill these too, too, fast. Allow the cheese to melt nicely. It’s still a fast dish to make! YOU CAN USE ANY CHEESE, if you wish! A mixture of meats (Turkey, Bacon, Ham).

Cheesy Explosives (Fallen Apart Cheese Burger)

1.5 Ground Meat (I used Pork!!!)
1c favorite Cheese Sauce (Prego Creamy Cheddar)*
2T Tomato Paste
1/2tsp McCormick’s Montreal Steak Seasoning
1.5tsp FRESH Chives, minced
2tsp FRESH Parsley, minced
1tsp FRESH Oregano, minced
1tsp FRESH Basil, minced

Shredded Mild Cheddar Cheese (Add to top at end!)

Toppings: Tomato slice, small spoon Relish, a little Ketchup, and Fried Onions

Brown meat. Add to Butter Flavor Cooking Sprayed Crock. Add rest of ingredients. Turn on LOW for few hours, stirring frequently. Last 15-20minutes, top with sprinkle of Shredd. Cheese.
Serve on Buns with Tomato slice, smidge of Relish, a little Ketchup, and a bunch of Fried Onions.

*Notes: You can choose to make your own sauce. A mixture of Shredd. Cheese, Milk, Butter, and seasoning of choice (Good ones are (Not all! Just options): Cajun, Cayenne, Red Pepper Flakes, Nutmeg, Garlic, Sea Salt, Pepper, Paprika, Grated Parm. Cheese, Bacon Bits)… Just bring to simmer til all’s melted.

Tay’s Philly’s Chickies (Chicken Philly Cheese Sandwich)

3-4 Frozen Chicken Breast *See Notes
3/4c Water
1 Chicken Broth Cube, crushed
1/8tsp Liquid Hickory Smoke
1/2tsp Extra Virgin Olive Oil
1T + 1tsp Soy Sauce
1/4tsp Garlic Powder
3/4tsp MCCORMICK’S Montreal Steak Seasoning
Onion, sliced
Green Pepper, halved & sliced (Add last hr.)

Topping: Shredded Moz. Cheese and Mayo
Buns of choice (We used Whole Wheat) *See Notes

LIGHTLY/Barely Rub Crock with Butter. Add all, EXCEPT peppers.
Cook on Low 5hours. Shred Chicken and add in green pepper last hour. Last 15minutes, top with favorite shredded white cheese (We used moz.) Serve on toasted buns with Mayo.

Notes: I use chicken from 3lb freezer bag, to get idea on size. Low Carb Option is using Taco Shells, Wraps, Lettuce Wraps, Egg Roll Wraps, etc.

MexiCheese Soup (Mexican Cheese Soup)

1T Butter + Some to rub Crock
5c Water + 5 Chicken Broth Cubes
2T Tomato Paste
4oz can Green Chilies, drained
1c Red Onion
1 fresh Garlic Clove, minced
1T Jalapenos, deseeded, minced
1/2T Dried Chives
1/4tsp Sea Salt
1/4tsp Pepper
1/4tsp Garlic Powder
3/4tsp Cumin Powder
1/2lb Chorizo, Browned
Last hour add:
1.5c Queso Fresco, grated/shredded
1.5c Brick Moterey Jack, grated/shredded
1c canned Evaporated Milk
1c Egg Noodles/Shell Noodles (*Optional)

Lightly Butter Crock. Add all, except cheeses and milk. Cook on low, 5-6 hours. Last 1.5-2hr, add in grated cheeses. Stir occasionally. Last 30-45minutes (Depending on noodles), add noodles. Serve with (Optional): Tortilla Chips, Garlic Toast, or Grilled Tomato and Cheese Sandwich.

More Options: 1/2 Red Bell Pepper. Noodles are Optional. I would have used shell noodles, but didn’t have at time. Beans, Salsa… all options.
Note: We put cheeses in last 1.5hr. Cheeses didn’t melt all the way. I already added noodles and started garlic bread, so needed to eat before moosh and cold… But, it was GREAT with little chunks of cheese! Just an FYI…

Thin Crust
Rinaldi’s Tomato, Garlic, Onion Sauce
Sargento’s 6 Cheese Shredded Cheese (About 1/3 of bag)***
REAL Bacon Bits
Good shake of Oregano
Grated Parmesan Cheese (Store shelf kind)
EVOO

Preheat oven according to crust instructions (Ours we needed to LIGHTLY brush Extra Virgin Olive Oil on bottom and along outer edge of top crust). Spread on sauce. Top with cheese. Top with hand of bacon bits. Top with good shake oregano. Sprinkle along outer top of crust with grated Parm. cheese. Cook according to crust instructions.

***A mixture of Provolone, Asiago, Mozzarella, Romano, Parmesan Cheese, Fontina.

Cheesin Brocks in a Bowl (Cheesy Broccoli Soup)

1T Butter + Some to rub crock
5 Chicken Broth Cubes + 5c Water
1 lb. Frozen Chopped Broccoli
Small Onion
1 SMALL Carrot, grated
2T Grated Parmesan Cheese (Store shelf kind)
1/4tsp Pepper
1/8tsp Nutmeg
1/8tsp Red Pepper Flakes
1/4tsp Mustard Powder
1/8tsp Garlic Powder
1/8tsp Sea Salt
4oz. Velveeta, cubed (Last hour)
Nicely filled 1.5c Shredded Mild Cheddar Cheese (Last hour)
1c TO 1.5c Carnation Evaporated Milk (Last hour)
1c Medium Shell Noodles (Add once cheese is melted)*

Lightly Butter Crock. Add all, EXCEPT cheeses and evaporated milk. Last hour, about, add in cheese. Once it’s melted, add in noodles.
*Noodles are optional. You can choose to serve with garlic toast, in bread bowls, or with noodles… As we do.

Coconut Shrimp (Or Chicken) Mac N Cheese

1/2lb. Shrimp, detailed deveined (Or 2 Chicken Breasts)*
1 13.5oz UNsweetened can Coconut Milk
8oz. Velveeta, cubed
1T Butter
1.5c Mild Shredded Cheddar Cheese
2T Grated Parmesan Cheese (Store Shelf Kind)
1/8tsp Nutmeg
1/4tsp Paprika
1/4tsp Corner’s Market Sweet Pepper and Onion Powder*
1/2c Frozen Peas (Add Last Hour)
2.5c Medium Shell Noodles (Equals 3.5c cooked)
1 Chicken Broth Cube (For Boiling Noodles)
Light sprinkle of Bread Crumbs (Herb/Garlic, Italian worked) *OPTIONAL
Light sprinkle of Coconut Flakes *OPTIONAL

Butter crock pot. Add all ingredients, EXCEPT Peas. Cook on Low 4 hours, stirring frequently. (I don’t let mine boil. My warm is hot enough to cook on my crock. So, I do half and half.)
Bring Water and 1 crushed Chicken Broth Cube to a boil. Boil Noodles. Once done, drain well. Add Noodles to Sauce until you get the Sauce/Noodle consistency desired. Stir. Eat as is, OR:
OPTIONAL: Add to baking dish. Sprinkle LIGHTLY with Bread Crumbs and Coconut Flakes. Bake, or place under broiler til browned. About 1-2minutes.

*Notes: Corner Market’s Sweet Pepper and Onion Season was found at Fleet Farm. Has a sweet taste.
Also, Sauteing Shrimp prior to adding, is optional.

Soup-A-Roni (Mac N Cheese Soup)

5c Water
5 Chicken Broth Cubes
1T Butter
8oz Velveeta, cubed
2c Shredded Mild Cheddar Cheese
1/4c Grated Parmesan
1/2T Mustard Powder
1/4tsp Paprika
1/4tsp Chili Powder
1/4tsp Red Pepper Flakes
2 Celery Stalks, sliced
1c carrots, sliced (Or Frozen Sliced Carrots- Added last hr.)
1/2c Frozen Peas (Added last Hr.)
1 cup milk (Added last Hr.)
1.5c (Dry) Macaroni Noodles. COOKED Separately in Water w/ 1 Chicken Broth Cube (Drain well, add to crock last hour)

Add in all, EXCEPT 2c chedd. cheese, milk, peas, and pre cooked noodles. Stir frequently cooking on LOW 4-6hrs. About 1 hour prior to serving, add those in. Stirring frequently.
*** You can choose to add in shredd. cheese the last hour. I don’t, and it’s fine.

Rav-voilà (Ravioli)

2 jars Favorite Spaghetti Sauce (Ours is Rinaldi’s Brands. We used Garden Combo- This is sweet. Any will do)
2 cans Tomato Soup
1 can Basil Oregano type Diced Tomatoes
.5 lb Beef Link, sliced (Or 1 lb cooked Ground Beef)
10 to 20 oz. Bag 4 Cheese Ravioli
1 Green Pepper, chopped
1 Onion, chopped
1/4 tsp Course Black Pepper
1/2c Heavy Whipping Cream

Spray Crockpot with Butter Flavored Cooking Spray. Add all, except noodles. Cook on low for few hours til vegis are soft. Add in Add in ravioli. Continue til ravioli is done. Add in cream. Serve.

Chipperonis (Pepperoni Chips)

Turkey Pepperoni Slices (20 slices)
1/2c Mozzarella Cheese
Oregano

Preheat oven to 375. Blender the slices and cheese. Press onto parchment paper that’s set in pan. Flatten as flat as you can. Slightly push the edges in. Season with Oregano. Bake 350-375 for about 8minutes. Place under broiler til nice and browned (Browned means crispy! Allow to cool and harden. Cut or rip into smaller pieces. Enjoy, maybe with some sauce.
Many options: Add ground up dried tomatoes. You can do just cheese, any cheese, skipping pepperonis. Cheese with Season (Ranch, BBQ seasoning powder, Taco seasoning). Or you can sprinkle a little cheese onto pepperonis and skip blending. Or just slice brick cheese into sandwich cheese thickness pieces, etc. Many options.

Drunken Cheese in a Bowl (Beer Cheese Soup)

1T Butter + Lil for rubbing crockpot
4 Chicken Broth Cubes + 4 cups Water
1 can Beer (We used Lite Miller… Pilsner)
1 can Cream of CELERY (On accident I got FAT FREE, was great!)
2 Celery Stalks, sliced
3/4c Mushroom, sliced
2 smaller Potatoes, diced
1 Large Carrot, grated
1 Onion, chopped
2 Garlic Cloves, minced
10 oz. cubed VELVEETA Cheese
1/4c Grated Parmesan & Romano Blend (Stuff on store shelf) **See notes
.5 lb Turkey Smoked Sausage Link, sliced
1T Worcestershire
1 tsp Louisiana Hot Sauce
1 tsp Dry Mustard Powder
1/4 tsp Course Black Pepper
1/4 tsp Paprika
A smidge less than 1/8 tsp Cayenne
1/4c Heavy Creamer (Add later)

Rub Crock with butter. Add all, EXCEPT heavy creamer. Cook on LOW or WARM for 4-6 hours. Stirring frequently. About 30 minutes before serving, add Heavy Creamer. Serve ALONE or with sliced Jalapenos, or crumbled bacon, or popcorn.

**Notes: You can use the regular shelf kind Grated Parmesan, without Romano.

Ch-GEEZ WHIZ! (Cheesy Brat and Vegetables)

1/2 lb Turkey Link, Smoked Sausage (Favorite for this meal). Or use Brats of choice.
1 15oz jar Cheez Whiz (Or Great Value Cheesy Dip Mock)
2 cans Cream of Celery, undiluted. Entire can.
1/4 tsp Course Black Pepper
1/2 onion, chopped
About 1c frozen Peas
About 1c Carrots, sliced
About 1c frozen Corn
About 1-2c frozen Broccoli
1 LARGE potato, diced

Spray crockpot with butter flavored cooking spray. Cut link in half long way, then slice in half (Moons), or diced. Add in all ingredients. Cook on low 4-5 hours, stirring occasionally (Cheese will stick to side). Serve alone, with, or under biscuits. Next time I make this, I’m curious how a few cups of chicken broth would make this taste? A cheesy soup.
