Lazy Salisbury- Instant Pot

10 frozen Beef Patties
2c Beef Broth (I use heated water + Cubes, dissolved)
Few good splashes of Worcestershire Sauce
1tsp Yellow Mustard
1lb. Mushrooms, sliced

8T McCormick’s Brown Gravy Powder

In the Instant Pot, add Broth, Worcestershire, and Mustard. Whisk some. Add in patties. Top with Mushrooms. Pressure Cook with seal on for about 18-20 minutes. Remove Patties. Add in Brown Gravy Powder, whisk. Bring to boil using Sautee. Add Patties back in. Use Slow Cooker Button on Low for about 10 minutes.

Serve as is, over Vegis (Celery/Carrots/Potatoes or Peas/Brussels), or Mashed Potatoes, or Biscuits.

McCormick’s Brown Gravy Mix is 4carbs/1T. Use whole beef patties (No breadcrumbs)/0Carbs. That’s about 7 carbs/Serving (2patties+Mushrooms per serving)

Quicky Lunch… Kid Approved!

We all know our Pizza Sticks… But, here’s a quicky Pizza-rrito (Same idear):

Soft Shells
Pizza Shredded Cheese
Turkey Pepperoni Slices
Toppings of Choice: We just did Pepperoni. But, options: Onions, Peppers, Jalapenos, Olives, etc.
Shake of Grated Parmesan
Shake of Oregano

Butter Flavor Cooking Spray
Garlic Powder

Spaghetti Sauce (Or Pizza)

Add Pepperoni to Soft Shells. Top with Cheese, Grated Parmesan Cheese, Seasons, and other Toppings of Choice. Roll, tucking in sides. Heat Skillet. Spray both sides of Wraps with Butter Flavor Cooking Spray. Brown each side. Sprinkle LIGHTLY with Garlic Powder. Serve with Sauce for Dipping.

TAYsty Neapolitan Milk Shake – EASY!

– Per Person/Serving:
3 pieces Hershey’s Milk Chocolate Bar (Rectangle pieces)
2-3 scoops Neapolitan Ice Cream
3T Favorite Chocolate Milk, or to desire
1/4tsp Brown Sugar
1/4tsp Cocoa Powder

In a small Blender, add in Chocolate Pieces. Blend, to break up small. Add in Milk, Sugar, Cocoa Powder, and Ice Cream (Try to get somewhat equal parts of Van., Choc., Straw.). Blend til smooth and Soft. Top with Whip Cream and Cherries (Optional). Or Toppings of Choice.

Tay’s Balsamic Watermelon Strawberry Salsa – And, a few ideas for it! Including EASY & HEALTHY Pizzas!

1/2c Strawberries, chopped
1c Watermelon, cubed small
1 can Basil Oregano Garlic Diced Tomatoes, DRAINED
1/2c Sweet Mini Bell Peppers, chopped
2tsp Balsamic Vinegar
2tsp Green Onions, minced
1/4tsp Sea Salt
1/2tsp Garlic Powder
2-3T Red Onions (I did 2.5T)
1/2tsp Lemon Juice (100% Fridge Kind)
1/4tsp Dried Mint
1tsp Fresh Cilantro, minced (Try WITHOUT FIRST, then add)

– Optional (I skipped. Forgot.):
1tsp Jalapeno, deseed Minced
1/2c Goat Cheese or Crumbled Feta (Optional, I skip for Pizza)

Toss all. Allow to Marinade 20 minutes.
Ideas for Use: Salsa for Chips. Salsa for Sweetened Shells (Fry Soft Shell in Butter. Toss in Sugar and Cinnamon.) Serve as Topping for Wrap, Sandwich, Balsamic Burgers, or Quesadillas. Or, as we did… MAKE Taco Shell Pizza.

Tay’s Chicken/Bacon w/ Balsamic Watermelon/Strawberry Salsa Pizzas:
Chicken (I marinaded in White Vinegar and McCormick’s Montreal Steak)
Bacon

Shredded Cheese of Choice
Grated Parmesan Cheese (Store shelf kind)
Tay’s Balsamic Watermelon and Strawberry Salsa
Soft Shells
Pepper, Dried Oregano (Oregano Optional)

I marinaded Chicken 1hr. Cut up. I added Avocado Oil to skillet. Cooked Chicken, if excess juices- Drain it, to help crispify (Especially, for Bacon). Add in Bacon to Chicken. Cook all (Draining excess juices, if needed). Cut up all to smaller pieces. Or toss all in Oven, Bake.
Butter Flavor Cooking Spray Baking Pan. Lay in Soft Shells (Optional to Butter Spray OUTSIDE Edges, to help brown). Top with Chicken, then Bacon. Top with Salsa. Top with Cheeses of Choice (I used Moz., then sprinkle of Pepperjack.+Jalapeno, then, a small sprinkle of Cheddar). Sprinkle Tops with Grated Parmesan (Be sure to get the outside Edge nicely), Pepper, and Dried Oregano (Optional)
Bake, uncovered, at 450 for about 8 minutes.

Some Doggie DIYs

I thought I’d share some DEEOHHGEE tips I found useful since getting our Pup.

I’ve learned so much about Large Breeds, since getting our St. Bernard/Great Pyrenees Mix. They NEED Large Breed Puppy Food to help along the quick growing. Even the later Neutering to help with growth (Hormones).

Reading TONS and TONS of info online… I’ve come to the conclusion that DIAMOND Dog Food is for us. Yes, I’m aware of the Recalls! But, seeing as his parents and he was already on DIAMOND. Annnd, our recent Family Dog did wonders on DIAMOND (Only food he could eat! The Enzymes helped his Stomach)… We decided to stick with it.
One downfall I’ve read about DIAMOND was that: For the price comparison to others similar, it was LOWER in Protein.

So, keeping that in mind. I started with some Protein Treats to help make up for it.
A few of MANY things I do:

– Dehydrated Sweet Potato with Smidge of 100% Peanut Butter with No additives, not even added Oil.
Slice Sweet Potatoes. Soak in White Vinegar and Water. Some I also sprayed with Lemon Juice, some I didn’t. Place on Dehydrator trays. Dehydrate overnight. I have kids break up to pieces and spread a very lil PB on them. They feed him. Bonding and Deliciousness!

– Slight Sunny Side Up Egg mixed into his first cup of Pup Food for the Day.
Making Many options to keep him protein happy. And, never boring.

 – NOW, for the Toys. I paid only $4 for all the below! Getting idears online, with my own twists, using Old Socks (I save for Dust Rags, anyway). Old Victoria Secret Yoga Pants (Has the PERFECT Stretch and Material for it!). Dollar Store Toys. And, some Regular Tennis Balls. Many Options and types keeps him happily entertained!

1.) A few Dollar Store Items for him to Choose from.
2.) A Tennis Ball with a Small Slit or X shape cut. Stick Treats inside.
3.) A long strip of Victoria Secret Pants. Wrap around your hand til it’s all wrapped around. Take another strip, tie the Center, nice and tight. Making an 8 shape (As, my “Talented” drawing shows). Cut the ends of the 8. I also tied some of those strands together to create more of a ball.

4.) Knot a sock nice and tight. Place into another sock. Knot it off. (Looks like tennis ball in it, it’s not. It’s another sock, knotted.)
5.) Knotted Sock Rope.
6.) Place small slits or Xs on opposite sides of Tennis Ball. Push (I used Pencil) Victoria Secret Yoga Pant LEG through holes. Knot off til ends.

This one uses two pant legs of Victoria Secret’s Yoga Pants. I had old Swing loop screw/bolt, screwed into tree stump. Tightly knotted one leg end to it. The other pants leg, I knotted all the way across it (Like #6 in last photo). Then, I tied the leg from tree to the center of the one similar to #6 (In last photo). I had to tie his favorite stick to it, to get him to realize it was HIS Toy and what it did… Which was Tug A War!

LOADED Hawaiian Lemon Peppered Chicken and Rice

Low Calories!

Frozen Chicken Breasts
1/4-1/2 Frozen Pkg. Shrimp (Optional)
2c Instant Uncooked Rice
2c Water
2 Chicken Broth Cubes, crushed (Optional)
Lemon Pepper Seasoning

1/2 pkg. MINI Sweet Bell Pepper Mix, deseed, halved
1/3-1/2c Red Onions
1/3-1/2c Pineapple Chunks
1/2 bottle Lawry’s Hawaiian Marinade
1-2T RESERVED Marinade

Cut Peppers and Onions. Place into Bowl or Ziploc Bag. Add in Marinade. Marinade 4-5 hours. Once done, Reserve 1-2T excess Marinade, toss rest.
Butter Flavor Cooking Spray Baking Dish. Add in Rice, Water, and Broth. Add in marinaded Vegis, reserved Marinade, and Pineapple Chunks. Give a light stir. Top with Chicken and Shrimp. Season, WELL, with Lemon Pepper. Cover with Foil. Bake, at about 425-450 til Chicken is done.

Italian Salad – LOW CAL. – LOW CARB.

About 1.5lb Frozen Chicken Breast, boiled in Water + 1Broth Cube
1 small container PLAIN Greek Yogurt (Cream Cheese may work)
1/2-1 Italian Dressing Season Pkt. or premade Italian Salad Dressing
1/2c jarred Pepperoncini, cut up
Full 1/2c Turkey Pepperoni pieces
1/2c Red Pepper, chopped
A lil shy 1/2c Red Onions, chopped
Splash of Lemon Juice (100% fridge kind)
Olives, halved (Optional. I forgot in photo)
1/2tsp Red Pepper Flakes or Jalapenos, minced

Wraps/Buns/Flatbread/Bread of Choice
Fresh Tomatoes
Lettuce
Shredded White Cheese (Or diced Brick Cheese)

Add Frozen Chicken to pan of Water with 1-2 Chicken Broth Cubes. Bring to Boil. Boil til cooked. Cut up.
Add in rest of Salad Ingredients. Top onto Wrap/Bun of choice, with Toppings of choice. Eat.

EASY Loaded Cajun Sausage, Rice, and Vegi Bake

1 lb Smoked Cajun Sausage Links
1/2 lb Shrimp, detail/devein (Optional, or Chicken)
2c + 1/4c Water
2 Chicken Broth Cubes, crush
2c uncooked Rice
1tsp Garlic Powder
1tsp Tony’s Creole
1/2tsp Onion Powder
Shake of Pepper
Red Potatoes, half/quarter
Onions
Frozen Brussel Sprouts
Frozen Peas
Frozen Chopped Broccoli
Frozen Corn
Optional (I skip): Fresh Celery

Butter Flavor Cooking Spray Baking Dish (Or Butter). Add in Rice, Water, Seasons. Then, Meats. Then, rest. Cover tight with Foil. Bake about 1 hour at 425, stirring half way through.
Eat alone. Kids loved with Ketchup off to side.

Toss SLIGHTLY! Bake 425 for about 20-25 minutes, til eggs are cooked. Allow to set a few minutes, UNCOVERED!!!

NOTES: I use Lemon Juice for this recipe. May skip if doing a Peanut Butter Recipe. And be careful when mixing TOO MANY things… Eggs can only hold together so much!

Tay’s Loaded Chicken Bacon Ranch:
2 Chicken Breast (Marinade):
1T Vinegar
1tsp McCormick’s Montreal Steak Seasoning
1 Pkt. 0.4 oz. Hidden Valley Buttermilk Ranch

2 Slices Bacon, baked, minced (Or Real Bacon Pieces)
4T Sweet Red Bell Pepper
3T Red Onion
1/2T Jalapeno, minced
1T Dried Tomatoes, chopped small (We skipped)
3-4T Spinach, minced
1/2c Shredd. Cheddar Cheese + 2T Italian 6 Cheese

Butter Flavor Cooking Spray
Garlic Powder and Onion Powder
Optional: Sprinkle lil Butter Powder and Parsley
Low Cal. Loaf (We used French-What we had), sliced thin-ish

Marinade Chicken about 4 hours. Foil line a baking dish. Bake Bacon til crispy. Crumble. Add Marinaded Chicken to Nonstick Pan. Cook til mostly cooked, then, add in rest (Except Cheeses and Loaf, der!). Cook down juices. Set aside to cool.
Thin slice French Loaf. Butter Flavor Cooking Spray each side (Or just bottoms). Sprinkle each side with a lil Garlic Powder and Onion Powder. Once Meat mix is to cool, add in Cheeses. Top each slice with Meat/Cheese mix. Sprinkle tops with Butter Powder and Parsley (Optional). Wrap in Foil. FREEZE (Make sure to freeze face up, til frozen (Few hours), then add to ziploc freezer bag).
Cooking: PREHEAT Oven to 450. Open Foils some (So, tops aren’t touching foils). Bake about 12-15 minutes, or til nice and toasty and melted.

1/4tsp Garlic Powder
1.5tsp Worcestershire
1/8 tsp Sea Salt
1/2tsp Dried Oregano
1/2tsp Jalapeno, deseed, minced
2T Sweet Red Bell Pepper, minced

1/2c Italian 6 Cheese + 2T Shredd. Chedd. Cheese
French Loaf, sliced thin-ish (Or Low Cal. Loaf)

Butter Flavor Cooking Spray
Garlic Powder and Onion Powder

Pesto, Balsamic, Soy Sauce, Salt/Pepper, Lil Mustard Powder. Marinade. Cook, cut up. Prep Loaf/Bread as above states. Add cooked meat. Add on Onions, Dried Tomatoes, Mushrooms + Moz. Cheese. (Adapted from this Recipe).
  – Made Pizza Types: Prep Loaf/Bread as above states. Dried Tomatoes (Or canned Basil Oregano), Turkey Pepperoni, Pizza Toppings, Cheese. (Skip Sauce). Sprinkle tops with Oregano and Grated Parmesan Cheese. Also, a great Pizza Recipe, just cut everything small , to fit: tTt’s Pizza Pie
   *** ANY STEAK MARINADE WORKS! Combo of McCormick’s Montreal Steak, Soy Sauce, Worcestershire and/or Balsamic Vinegar, + Vegis and Cheese… Or Check Out Our Site under Marinades.

BBQ: Cooked Chicken (Can boil frozen Chicken in Broth. Just throw Chicken into Water, THEN, bring to boil til done.). Cut up, toss with BBQ (You don’t need much!). Prep Loaf/Bread as above states. Add BBQ Chicken to Loaf Slice. Add, Corn, Sweet Bell Peppers, Onions + Shredd. Cheddar Cheese (Bacon Pieces Optional (Turkey Bacon))
  – Alfredo Chicken: Favorite Alfredo (I season my sauce with Garlic, Pepper, minced Onions). Toss Sauce with Cooked Chicken (Can boil frozen Chicken in Broth. Just throw Chicken into Water, THEN, bring to boil til done.). Prep Loaf/Bread as above states. Top Alfredo Chicken onto Loaf Slice. Top with Vegis of Choice (Options: Celery, minced. Broccoli, chopped. Onions, minced. Peas. Carrots, grated. Etc.) + Moz. Cheese and Sprinkle of Grated Parmesan Cheese.

We used our leftover Tay’s Crock Pot Sweet n Spicy Chicken Recipe (Any Taco Meat will work).
Bread Bowls: I use freezer Bread Dough. I place in bowl (Earlier in day – To thaw), on a Warmer. Once thawed enough to handle, Sprinkle with Cumin and Oregano, Fold, Sprinkle again, fold… Keep doing til nicely seasoned, WELL! Cover, allowing to rise.
Heat Oil. Break off large piece. I had to improvise with a metal measuring cup. I dipped into oil to oil it (Helps with sticking) spread dough around it. Using tongs, deep fry to shape into a bowl form. Brown both side. Lay onto paper towels. Sprinkle with Garlic Powder.
Top bowls with Refried Beans, Taco Meat, Tay’s Guaca-HOLY MOLY! Sauce, Salsa, Shredded Cheese, Shredded Lettuce. Eat!

We like the plunger we have. When… when… the Throne backs up, no one likes standing over it for a long time, plunging it. So, a while ago, we got ourselves an accordion type plunger. Works great, less time. But, stores DON’T have storage that fit these. So, got my DIY cap on. And, here it is!
Menard’s MINI Trash Can (With REMOVABLE Inner Container – EASY CLEANING!)– Under $10
Cut hole ALONG edge (To fit handle) with Razor Blade (Careful!)
Compact, Clean, Visually better than a Plunger just sitting there! You can even doll it up with Paint or a Durable Modge Podge job.

EASY Chicken Parmesan – Lazy Man’s Way

Fridge Croissants or Biscuits
Chicken Patties, halved
Shredded Moz. Cheese
Grated Parmesan Cheese
Herb and Garlic Bread Crumbs
Pepper
Favorite Spaghetti Sauce
Onions (Optional)

Preheat oven according to Croissants. Spread out Croissants (I press out using fingers to fit halved Patty). Top with halved Chicken Patty (Optional to spread a LIL Mayo- I skip.). Wrap Croissant around Patty. Lay into pan (Ungreased per Croissant instructions). I topped with Onions (Optional). Top with nice amount of Cheese. Sprinkle, well, with Parmesan Cheese. Sprinkle with Bread Crumbs. Pepper. Then, pour a LITTLE Sauce over (As photo shows). Bake according to Croissant instructions (Mine cooked A LOT longer).

EASY Peppermint/Candy Cane Cookies

Store Bought Cookie Dough (We use Sugar & Chocolate Chip)
Peppermint Candy Canes

Add Candy Canes to Sandwich Bag, using a Tablespoon Spoon, smash it to almost dust. Form balls with Dough. Press JUST THE TOPS of each Dough Ball into the Crushed Candy Canes. Bake according to instructions. Done. Easy.

Easy Pizza Pasta

1 Onion
TURKEY Pepperoni Slices (A lil less than 1/2pkg., or to taste), halved
1 jar Ragu Creamy Mozzarella Sauce
1tsp Dried Parsley
1/4tsp Onion Powder
1/2tsp Garlic Powder
1/4tsp Red Pepper Flakes (Optional)
1T Grated Parmesan Cheese (Store shelf kind)
Shake of Pepper
Noodles (Boiled in Water + Pinch Sea Salt + 1/2-1tsp Extra Virgin Olive Oil), drained well

In pan, sautee Pepperoni and Onions. Add in Sauce and Seasons. Boil Noodles, drain well. Add to Sauce, til consistency desired. Easy Breezy.
Amp it up with other Pizza Toppings: 1/4c Mushroom, few Tablespoons Black Olives, etc.

REPOST – The Reason the Chicken Didn’t Cross the Road Soup (tTt’s Chicken Noodle Soup)

No Need to Look Any Further… You Just Found the One And Only Chicken Noodle Soup Recipe KEEPER! And, the answer to the long time question, “Why didn’t the Chicken cross the road?”

12 cups of Water
12 Chicken Broth Cubes
Few good shakes of Basil (About 1/2 TBSP Dried)
Few good shakes of Oregano (About 1/2 TBSP Dried)
Few good shakes of Course Ground Pepper (About 1/4 tsp)
Palm full chopped FRESH Italian Parsley (About 1/4 cup*)
4 frozen Chicken Breasts (Average size from 3lb. bag)
Cook chicken and above seasoning in broth until chicken is done.
Cut chicken into pieces, return to pot
Add in:
3 carrots
3 celery sticks
2 small/medium onions, cut to desired size
1 cup chopped Spinach *Optional
1c Mushrooms *Optional
1/2c Peas *Optional, we add same time noodles
Cook until veggies are soft.
Then add 1/2 lb. Egg Noodles, cook until done.

* For Dried/Fresh Ratio, we use half the amount dried to the full amount fresh. 
Example: 2T Fresh = 1T Dried.

QUICK n EASY Apple Pies – Kid Approved

We’ve been making these for years! These are so easy. I know I posted this a long time ago… But, it’s too good not to re-post! This stems from Spanish Class making Fried Taco Shells sprinkled with Cinnamon/Sugar. Yum! Variations Below!

Soft Taco Shells (I used smaller ones)
Canned Apple Pie Filling
About 1tsp Cream Cheese per wrap

Coconut Oil

1/4tsp Cinnamon
1T White Sugar

Spread a line of Cream Cheese. Spoon on a line of Apple Pie. Fold in sides and roll. Heat Coconut Oil in pan. Brown each side. Mix Cinnamon and Sugar. Sprinkle around shell (Or roll in it).  Serve.
Optional to top with either: Ice Cream, Whip Cream, Sprinkles, Etc…

*** Other Ideas for these ***
– Use Cherry Pie Filling
– Strawberry Rhubarb Pie Filling
– Pineapple Banana
– Add some spice with the sweet Jalapeno Minced! What?!

Quick N Easy Garlic Toasties

Bread
Extra Virgin Olive Oil  (OR Melted Butter-Best Flavor!)
Sea Salt
Dried Parsley
Garlic Powder

Brush each side bread with EVOO, or Butter. Sprinkle each side with: LITTLE Sea Salt, Good shake of Dried Parsley, then, Garlic Powder. I give a light rub-in with finger (Or mix in bowl (Melt butter, if using.). Brush onto both sides of bread). Allow to sit a few minutes. Then, toast in toaster. Sprinkle with Grated Parm. Cheese (Optional). KEEP AN EYE ON IT!!!

Notes: You can melt butter in bowl, adding seasons to warmed butter, stir well. Then, brush on. Garlic Salt, instead… Endless options for this.

Perfectly Cooked Chicken – Non-Grill – 30 minutes!

BONE – IN Chicken Breasts
Extra Virgin Olive Oil

Marinade (Optional- Favorite seasonings can be used prior to cooking):
White Vinegar
McCormick’s Montreal STEAK Seasoning

Place chicken in bowl, bone side down. Pour over Vinegar. Season, WELL, with Montreal Seasoning. Occasionally, spoon vinegar over chicken. (You can make easier by placing  chicken and marinade into ziploc bag, swish around).
I marinaded about 3 hours.
Preheat oven 450.
Heat skillet.
Place a lil Olive Oil into skillet. Once sizzle to the touch, lay chicken in (I started with bone down). COVER with lid. Have heat at a mid to upper medium. Leave alone for about 4-5 minutes, til nice gold brown. Flip ONCE (You may need a lil more Olive Oil at this time, spread around pan- I believe I used about 3T all together). Cook other side about 5 minutes.
Place in baking dish (I brushed dish, LIGHTLY, with a tiny more Olive Oil.).
Bake, COVERED, in PREHEATED oven at 450 for about 15-20minutes.
Allow to set a few minutes. Eat!

Notes: Try the marinade… It’s best, and easiest, chicken we’ve had! Be sure to cover in oven, oil heats and splatters.

Breakfastadas (Egg Burrito Enchiladas)

Meat of Choice:
Bacon, or Sausage, or Ham (A little goes a long way!)
Shells
Cheese of Choice (I use Shredd. Mozzarella and Cheddar)

Egg Mixture (Beat together):
Eggs (Amount needed, I did about 6-8 for 6 burritos)
Few good shakes of Basil (I used fresh, minced)
Few good shakes of Oregano (I used fresh, minced)
1/4 cup Mexicana Crema

Toppings:
A LITTLE spread of Miracle Whip or Mayo (I use Miracle Whip!)
A sprinkle of Shredd. Moz. and/or Shredd. Mild Chedd. Cheese
Onions, chopped
Optional Toppings: Minced Jalapeno, Chopped Sweet Bell Peppers, Minced Spinach, Fresh Tomatoes/Salsa, etc…


Sauce:

1/2c Tomatillo Green Chile Salsa*
1/4c Sour Cream

Preheat oven to 375. Brown/Cook meat of choice (Bacon, or Ham, or Sausage). Beat together eggs and seasons. Cook/Scramble egg mixture. Top onto shells with meat and toppings (Cheese, Onions, Miracle Whip). Roll. Butter Flavor Cooking Spray Skillet. Brown each side of egg burrito. Lay in Butter Flavor Cooking Sprayed baking dish. Top with shredded cheese of choice (I did Moz. and Mild Chedd.). Top with Sauce Mixture. Bake about 30minutes.
*Notes: Reg. Mild Salsa may work, too.

Cheesy Explosives (Fallen Apart Cheese Burger)

1.5 Ground Meat (I used Pork!!!)
1c favorite Cheese Sauce (Prego Creamy Cheddar)*
2T Tomato Paste
1/2tsp McCormick’s Montreal Steak Seasoning
1.5tsp FRESH Chives, minced
2tsp FRESH Parsley, minced
1tsp FRESH Oregano, minced
1tsp FRESH Basil, minced

Shredded Mild Cheddar Cheese (Add to top at end!)

Toppings: Tomato slice, small spoon Relish, a little Ketchup, and Fried Onions

Brown meat. Add to Butter Flavor Cooking Sprayed Crock. Add rest of ingredients. Turn on LOW for few hours, stirring frequently. Last 15-20minutes, top with sprinkle of Shredd. Cheese.
Serve on Buns with Tomato slice, smidge of Relish, a little Ketchup, and a bunch of Fried Onions.

*Notes: You can choose to make your own sauce. A mixture of Shredd. Cheese, Milk, Butter, and seasoning of choice (Good ones are (Not all! Just options): Cajun, Cayenne, Red Pepper Flakes, Nutmeg, Garlic, Sea Salt, Pepper, Paprika, Grated Parm. Cheese, Bacon Bits)… Just bring to simmer til all’s melted.

Now, I know I’ve posted this A LONG TIME AGO. But, I have to post again! We’ve made these for YEARS now! With the kiddos home, it’s nice to have a quick and healthy go-to meal. Annnd… They can make em themselves!

Soft Taco Shells
Favorite Spaghetti Sauce
Cheese of choice
Toppings of choice (Meat of choice, Vegis of choice, etc.)
Grated Parm. Cheese (Store shelf kind)
Dried Oregano

I just did a QUICK Cheese and Sauce Pizza with Parm. and Oregano. Simple. Spread taco shell with sauce. Top with cheese and toppings. Sprinkle with Parm. and Oregano.
Heat skillet. Spray, well, with Butter Flavor Cooking Spray. Turn to a lower heat.
Place pizza/shell onto skillet. COVER with lid. Allow to LIGHTLY become golden brown on bottom, keep checking, they cook fast.  Place onto plate and cut. Set about 30sec. before eating. Bam! Done. You’re welcome…

AMAZING and EASY Chicken Fajitas w/ Peach Salsa

EASY Chicken Fajitas w Peach Salsa
Lower Cal. Lower Carb.

4 Chicken Breasts
1 Pkg. McCormick’s Fajita Seasoning
1 16oz. jar Peach Salsa (I used Newman’s Own)
1 Red Pepper, sliced
1 Green Pepper, sliced
1 Onion
1tsp Jalapeno, deseeded and minced

Butter Flavor Cooking Spray Crock Pot. Add all. Cook on low 6hours, or so. Shred Chicken, add back to crock. Serve with Cheese, Sour Cream, and Lettuce (We used Red Romaine from Garden!).
Can eat on shells, in salads, over rice, etc. (We did shells).

*Notes: I use chicken from 3lb freezer bag, to give idea how much used. Also, above recipe is what I did. Next time, I will use thawed chicken (I used frozen) and I will add in vegis half way through.

Easy Breezy Stewy (EASIEST Hearty Stew)

Easy Stew
Our NEW Go-To Stew Recipe. AMAZING!

About 1.5 lb Large Cut (I used Pork! Was GREAT!)
2c Water + 2 Beef Broth Cubes
1 can Tomato Soup, undiluted
1 Onion Soup/Dip Packet
1.5c Potatoes, diced
1.5c Carrots, sliced
1 sm. Onion
1c Celery, cut long way, sliced
1/4tsp Garlic Powder
1tsp Worcestershire Sauce
1/4tsp Pepper
1/2c Frozen Peas (Add last 30 minutes)

Rice for Serving (Optional)

Butter Flavor Cooking Spray Crock Pot. Add all. Cook on low about 8 hours. Stirring occasionally. Serve with a few spoons of plain Rice (Optional).

Garlic Toast
1/2 tsp Olive Oil
2T + 1T Butter
1/2T Fresh Garlic, minced
1/4tsp Garlic Powder
1T dried Parsley
2tsp grated Parmesan Romano Cheese (Store shelf kind)
1/2tsp Dried Italian Season
1/8tsp Onion Powder
1/8tsp Sea Salt

Microwace 2T butter til boils. RIGHT AWAY, add minced fresh garlic. Set a few seconds. Then, add rest of seasoning, stir. Add in last tablespoon of butter. Microwave about 25-30seconds. Allow to set, to blend. I made when I started stew. So, it sat about 8 hours prior.
Cut bread. Microwave few seconds to soften/melt spread. Brush onto bread. Bake 425 for about 10minutes, or til toasted. Flipping 1/2way.
Cheese Bread: Sprinkle with cheese (We use Moz. or Italian) after 1/2way flip.

Even Quicker Chickie Wiches

(No Photo. If necessary… Picture a delicious sesame seed bun with chicken. Bam! Done. You’re Welcome…)

Mayo, sugar, salt, vinegar… BLAH! These make for QUICKER Chicken Sandwiches… Especially, with kiddos on break!

Boiled Chicken, sliced to slabs
Buns or Wraps
Tomato, DICED

Sauce:
1-2T Miracle Whip
Few drops Lemon Juice (Guesstimate about 1/4tsp)
Sprinkle Paprika (Guesstimate about 1/8tsp + 1/16tsp)
Sprinkle Parmesan Cheese (Guesstimate about 1/4tsp)

Mix sauce, spread onto buns. Add chicken and tomatoes.

Notes: You can amp this up with REAL Bacon Bits! Peppers. Cayenne or Red Pepper Flakes. Etc. Or mix sauce with chicken for chicken salad wiches later/On the Go. (If doing that, make a lil extra sauce, as chicken will absorb it.).

Quicky Porkie (Quicker Grilled Pork, Potato, N Corn)

Quicker Grilled Pork Meal
Pork:

About 30minutes prior to cooking…
Brush BOTH sides of Pork with White Vinegar.
Sprinkle BOTH sides of Pork w/ McCormick’s Montreal Steak Seasoning.
Set aside 30min. Great time to start charcoal grill! After 30minutes… Grill.

Potatoes:
Stab Potatoes a few times.
Cover and Microwave a few minutes, about 4-5minutes.
Then, halve them long way. Spray with Butter Flavor Cooking Spray.
Sprinkle with Garlic Powder (Or Garlic Cheese Season).
Wrap in Foil. Throw on grill few minutes before Pork.
Potato Topper (Premake/Mix 30minutes prior. Add to cooked taters):
Sour Cream
REAL Bacon Bits
FRESH Chives

Corn:
Remove husks.
Boil.

*Notes: Microwaving potatoes quickens the cooking time. Boiling corn doesn’t take long. No need for 8hours of marinading! This meal was AMAZING for such a short prep/cook time.

Corn on Cob
2T Butter (For boiling corn)

RECIPE ONE (Mexican Version- Our Favorite!):
2T Crema Mexicana
2T Mayo
1/2tsp Lime Juice (Concentrate Fridge Kind)
1/2tsp Dried Cilantro
1.5tsp Chili Powder
1/2tsp Garlic Powder
1/8tsp Sea Salt
1/4tsp Paprika
1tsp fresh Chives, minced
1/8tsp Pepper
2T Sour Cream *See Notes
2T grated Parmesan Cheese (Store shelf kind)

RECIPE TWO (Bacon Tomato Version):
2T Crema Mexicana
2T Mayo
1/2tsp Lemon Juice (Fridge Concentrate Kind)
1/2tsp Corner’s Market Sun Dried Tomato Season (Fleet Farm)
1/2tsp Dried Chives
1/8tsp Garlic Powder
1/4tsp Paprika
1/8tsp Onion
1/8tsp Sea Salt
2T Grated Parmesan Romano Cheese (Store shelf kind)
2.5T REAL Bacon Bits
1T Cheddar Cheese, miced/blended
2-3T Sour Cream (I did 2)

Mix spread. Place in fridge while you prep and cook. Allowing to blend some.
Become the Mother Shucker and start Shucking (Remove husks from corn). Boil corn in water with Butter.  Once cool enough to handle, brush on a nice layer of spread onto the corn. Enjoy! (For Less Mess, feel free to cut the corn Off the cob, AFTER spreading it with the cheese mix.)

*Notes: I was going to use 2-3T Cojita, or 2-3T Feta, or 2-3T Ricotta instead of Sour Cream, but forgot at the store. So, we just used Sour Cream. Was delicious! Cuts a few calories… So, we’re sticking with it!

About 3, or so, years ago, I seen something similar to the marble collector’s idear… While I pinned. So, from those ideas, here it is. Only, I did just the tips of pickets. Thankfully, our nice neighbor had a drill piece that was PERFECT in size! 5/8. Dollar Store marbles-SEE THROUGH COLORED/stained like. Drilled holes. Pressed in. Some needed a lil more force. So, I covered with thick cloth (To prevent cracking), and hammered it some. Now, I just need to find red marbles… But, Bam! Done! You’re Welcome…

Also, Michael’s bird and birdhouses, painted and treated. Glued to fence and post tops. Also, 2nd photo doesn’t do justice. It was afternoon sun, on other side. Didn’t get a photo of it’s peek sparkle effect!

Dollar Store had these BEAUTIFUL bottles. I used picture hanging wire, secured it to bottle for hanging. Screwed in hook screws, into tree. Hung. Now, photo is before adding solar lights. Dollar Store has SMALL ones, that I will just set onto top hole of bottle. Secure with silicone or something. Haven’t gotten there yet. But, you get the idea.
It goes GREAT with the beautiful artwork my lil one made on the playhouse.

The Swiss Pig Rolls (Swiss Ham Rolls)

Soft Shell
LISA’S GREEN CHILE TOMATILLO SALSA
Shredded Swiss Cheese
Ham Lunch Meat Slices (Thick)

4oz Cream Cheese
3-4T Sour Cream (I did 4)
1tsp Fresh Chives, minced

Mix cream cheese, sour cream, and chives in a bowl. Spread onto entire taco shell. Then, spread with drained salsa (*See Notes). Top with thick slice of ham (I halve to fit length). Sprinkle with swiss cheese. Roll. Fridge for 1 hour, or so (I wrap in foil til use. Usually overnight!). Slicing optional. Serve cold. Or SLIGHTLY warm (DO NOT warm too long. Test run it. These will ooze if not careful!). Eat as taco warmed, or slices for parties.

Salsa Note
: I use a fork to scoop out salsa. Place into seperate bowl, and drain excess juices. This helps preventing everything to be too runny, etc.

Alfredo Chicken N Broccoli Cups

Alfredo Chicken N Broccoli BiscuitsUsually, I don’t post “The Typicals” type recipes. Try to stick with things that are close to different or new-er-ish, etc. But, figure I throw something up here. It’s easy and quick. We’ve been making these a loooooonnng time now. Even versions using Croissants. Making Alfredo Chicken N Brocc. stuffed Croissants.

Fridge Biscuits
Chicken, boiled
Jar Alfredo
Frozen Broccoli, thawed
Small Garlic Clove, minced (Powder works)
Pepper
Few Tablespoons of Grated Parmesan Cheese (Store shelf kind)

Boil chicken. In pan, heat sauce, garlic, pepper, parm. cheese. Shred chicken. Mix chicken and broccoli with sauce to consistency desired. Make cups using fridge biscuits (I use large sized).  Add chicken mix to cups. Bake according to biscuit instructions (Mine goes a few minutes longer).

Quicky: Use Garlic Powder in place of clove. Shred chicken, add everything together (No need to heat). Fill biscuits. Bake.
