Chinese Steak & Vegis

LOW CARBS!

Thin Steak, sliced
-Season with:
Few Good Shakes of Chinese 5 Spice
Shake of Ginger
Shake of Onion Powder
Shake of Garlic Powder
Good Shake of Pepper
1tsp Orrington Farms Beef Base and Seasoning (Or, Beef Broth Cube)

Olive Oil

Soy Sauce
Lime Juice

Zucchini, quartered or halved
1/4c Onion, sliced thin
1c Mushrooms
1 Block of Frozen Broccoli

Slice Steak. Season. Set aside. Heat Oil in a Skillet. Add Steak. Add good few splashes of Soy Sauce. Add a splash of Lime Juice. Cook Steak. Add in Vegis. Cook down juices. Near end, add a nice splash of Soy Sauce and a splash of Lime Juice. Serve.

ZuSKINNIES (Zucchini Skins) – A healthy and Beneficial Snack

I make ZucCandies (A candy that is made with Zucchini and tastes like Fruit Snacks/Gummies) and never wanting to waste anything… I, ALSO, use the Peeled Skins to make ZuSKINNIES (A great snack to replace Chips!), which are an Extremely Beneficial part of the Zucchini: 
Zucchini’s skin is a more concentrated source of nutrients. Carries Vitamin C, Potassium, and most of the Zucchini’s Fiber and Vitamin K. The skin itself is a rich source of Antioxidant Carotenoids, including Lutein, Zeaxanthin and Beta-Carotene.

Skins from peeled Zucchinis (About 16 oz.)
2T Water
1T Pepper
2tsp – 1T Sea Salt (I did 1T)

Place all into ziploc bag, mix around. Marinade 30 minutes. Place onto Dehydrator. Dehydrate til dried to crisp (Crisps a lil as sits, as well. I want to say I did 8-12 hours. Not sure).

Kielbasa N Kraut Lasagna

Noodles of choice (Lasagna or Zucchini Slices – For Low Carb.)
Shredded Mozzarella Cheese
Grated Parmesan Cheese (Store shelf kind)
Pepper

1tsp Extra Virgin Olive Oil
Green Pepper
Onion
1c Mushrooms, chopped
1 Celery, cut long way and cut
1lrg Garlic Clove, minced
1/4tsp Caraway Seeds

3c Fav. Spaghetti Sauce (I used 3c Bolognese Sauce! Or Onion Garlic Tomato)
1/2 Turkey Kielbasa Link, quartered long way, then cut (Reg. Kielbasa works)

1c canned Sauerkraut
1c TO 1.5c Shredded Cheddar Cheese (I did 1c)

Sautee Link, Vegis, and Caraway Seeds in Olive Oil. Add in Sauce. Simmer a bit.
In separate bowl, mix together Cheddar Cheese and Sauerkraut (Chop Saurkraut some).
Spoon a few spoons of sauce into a BUTTER FLAVOR COOKING SPRAYED baking dish. Single layer noodle of choice (We used Zucchini Slices *SEE NOTES). Top with sauce. Then, desired amount of MOZZARELLA Cheese. Sprinkle with Parmesan Cheese. Then, layer more Noodle/Zucchini. More Sauce Mix. More Mozarella Cheese. Sprinkle Parmesan Cheese. Then 3rd layer: Layer Noodles/Zucchini, Sauce Mix, THEN, top with CHEDDAR Cheese and Sauerkraut Mix. Sprinkle with Parmesan Cheese. Shake Pepper over top.
Bake 450 for about 25-35 minutes. Allow to set a few minutes, before serving.
Serve with EASY TOASTER Garlic Toast!

sauerkrautkielbasalasagna4NOTES: Mock Lasagna Noodles using Zucchini… Lower Carbohydrates and Lower Calories. And you will LOVE IT!!!  I peel. Slice thin (About thickness of cooked lasagna noodle, or thicker) layers (Remove seeds or stop when you get to seeds, if any). It doesn’t have to be pretty.
Also, you can UP the amount of Sauerkraut, sprinkle A LITTLE on each layer of cheese. I think above amount is perfect!

MEATLESS – Go BZerks for Zu Lil Jerks (Zerky Jerky – Zucchini Mock Beef Jerky)

This gets your salty fix of Beef Jerky, but WITHOUT the meat! We used the recipe for tTt’s Lil Jerks for these (We had ingredients on hand). CHOOSE YOUR FAVORITE JERKY RECIPE! Looking forward to having some fun with this idea!

Our Recipe (Any fav. recipe will do!):
3 lb Zucchini, peeled deseeded cut in chunks
4c Water
Hi Mountain Seasoning’s Jerky Cure & Seasoning ORIGINAL BLEND:
–1.5T of Season Mix (Darker colored Powder)
–2T Cure (We “May” cut back a lil with next batch! Not sure.)
1.5tsp Cayenne Pepper Powder (Spicy!)
1.5tsp Liquid Hickory Smoke
1/4c Teriyaki Sauce

Choose your favorite Beef Jerky Recipe (May need to cut back on salt).
Hopefully, your recipe contains liquid of some sort. You will need some. Our recipe called for 4c water for Hi Mountain steak jerky marinade.
Peel, deseed, and cut zucchini into chunks. (First time, I did about the size of my thumb, but, will try bigger with next batch. Your choice.)
Bring recipe ingredients to a boil. Add in Zucchini chunks. Lower temp to simmer. Simmer for about 20 minutes.
Remove chunks from liquid and add to dehydrator tray (Yes, some are soggy, still use them!). Dehydrate for 12-18 hours. Once cooled some, place in airtight bag. Enjoy.

ZucCandies (Sweet Zucchini Candy)

These are Delicious! Easy to do. Kids say they’re better than gummies. Not sure if this is healthier, but, it’s a vegetable! Great for those extra zucchinis in the garden.

10c Zucchinis, Peeled, deseeded, and cut small (I do about 1×2.5-3inch)
2.5c Sugar
2-3 pkts. Strawberry Koolaid Packets (I used 3)
3c Water

(DON’T WASTE PEELED Zucchini SKINS! Make our ZuSKINNIES: HERE! Healthy Chip-Like Snack)
In pot on low heat, add water, sugar, koolaid pkts. Stir til dissolved. Add zucchinis, bring to boil. Once to boil, turn to low and simmer 30 minutes. Place onto dehydrator. Dehydrate 14-18hours. Until they are mostly unsticky. Keep on trays til cooled some. Toss with A LITTLE powdered sugar, once dried and cooled some. Helps to keep from sticking when storing. (Optional)
***Save the leftover water/juice from the zucchini boiling. Add water (About 6-8cups, depending on sweetness liked). Drink up. Some nutrients from zucchini are lost during boiling process and stays in the water.

Chicken Rancheria Boats

LOW CARBS LOW CALORIE
2 ways to cook this. Skillet or Crock Pot

1T Olive Oil (If skillet)
5 Frozen Chicken Breast
1/2c Jarred Roasted Red Peppers +1T Juice from Jar
1 Fresh Tomato, diced
1c Red Onion
1c Mushrooms, sliced
1/2c Frozen Corn
1/2T Parsley
1 tsp Oregano
1 tsp Basil
1pkt WISHBONE Ranch Dip Season *See Notes
1.5T Italian Dressing Packet
2T Grated Parm. Cheese (Store shelf kind)
1/8 tsp Pepper
1/16tsp Sea Salt (If Crock)
Sprinkle Moz. Cheese
Zucchinis, halved and deseeded (Making boats)
-Some slices Zucchini, quartered

Crock: Add all to crock, EXCEPT, Moz. Cheese and Zucchini. Cook on low about 5-6hours. About 1-1.5 hours before serving, add halved zucchinis (Cut side down). Cook til desired softness. Remove zucchinis, place on plate, cut side up. Fill in with chicken. Sprinkle with cheese. Broiling to brown cheese is optional.

Skillet: Preheat oven to 400. Thaw Chicken (I have boiled with broth cube to quickly work with frozen in a pinch). Cut up. Olive oil skillet. Mostly cook chicken. Add in rest, except Moz. Cheese. Fill boats with chicken mixture. Top with cheese (Above pic shows we used Mild Cheddar. Bake for about 40-50 minutes, or until zucchini is tender.

*Notes: USE WISHBONE. Has a smoother taste than other ranch pkts. Using another brand may alter taste.
