BLT Pizza (Bacon Lotta-Spinach Tomato Pizza)

LOW CALORIES LOW CARBS

1/2c Bacon Ends, cut up
1c Sweet Cherry Tomatoes, halved
1c packed Spinach, rough chop
1/2 of Onion, sliced thin
1T FRESH Garlic, minced
1/2tsp Dried Parsley
1tsp Dried Oregano

Thin Crust

Shredd. Moz. Cheese
Grated Parmesan Cheese (Store shelf kind)

Heat skillet to sizzle. Add bacon ends on med. high heat. Cook some. Add in tomatoes and then the rest. Cook some. Bring to simmer. Cover cook about 6minutes. Stir. Cook more, if needed (Cook down juice some).
BARELY brush bottom of crust and outer top of crust with EVOO. Add Bacon Mix. Spread around. Top with Moz. Cheese. Sprinkle with Parm. Cheese, getting the outer crust well, too. Bake according to directions.

Healthify this with Turkey Bacon, WILL NOT BE AS TASTY… And, not sure if you would need a tiny drizzle of Extra Virgin Olive Oil to cook Turkey Bacon.
YOU COULD VERY WELL SERVE BACON MIX OVER COOKED CHICKEN!

Parmy Porkies/Piggies on Tomato Piles (Parmesan Pork (Or Chicken) over Delicious Tomato Rice)

4-5 Pork Chops, I used Bone-In (Chicken can be used)
3/4tsp TO 1tsp MCCORMICK Montreal CHICKEN Season
1/4 Dried Basil
1/4 Dried Oregano
1/8tsp Garlic Powder

1/4c TO 1/2c Grated Parmesan Cheese (Store shelf kind- I did 1/4)
3-4T Mexicana Crema (Creamer/Ricotta/Sour Cream can be used)

*SEE NOTES. Butter Flavor Cooking Spray baking dish. Lay in chops (Or chicken). EVENLY sprinkle with Montreal Chicken Season. Then, Basil, Oregano, Garlic Powder.
Cook at 425 for 20 minutes. Then, mix Parm. Cheese and Crema. Spoon and light spread over tops. Cook additional 20-25minutes. Allow to set few minutes. (Optional to sprinkle with a lil more Parm. Cheese.) Serve over rice recipe below.

Delicious Tomato Piles:
2c uncooked Instant Rice
1c + 3/4c Water
1 Chicken Broth Cube, crushed
2T Tomato Paste
1 can Basil/Oregano Tomatoes, undrained
1/3 Green Bell Pepper, cut small
1/3 Red Bell Pepper, cut small (Optional)
1/2 Smallish Onion, chopped

Mix water with crushed cube, tomatoes, paste, peppers, and onions. Microwave, covered, according to instructions.

*NOTES: For photo I cooked Pork Chops in Crock Pot! I added Pork, Montreal Season, Basil, Oregano, Garlic. Cook on low about 4-5 hours. Last 1.5hour, spoon and spread Parm. Mix over each chop. Cook remaining time. Served over rice.
YOU CAN VERY WELL SPRINKLE TOP WITH SOME SHREDDED MOZ.CHEESE, over Parm./Crema Mixture. At same time adding Parm./Crema Mixture.

The Smoothered Biscuit (Egg and Bacon Biscuit with TOMATO GRAVY)

Giant Fridge Biscuits*
6-8 Bacon Slices, baked (Save drippings and 2 slices for gravy)
Eggs
Cheese slices (Optional)

– TOMATO GRAVY: –
2c Tomatoes (Or canned crushed tomatoes)*
1/2 small Onion, chopped
2-3 Bacon Slices
1/4c Bacon Grease
1/4tsp Sweet Pepper and Onion Season (From Fleet Farm)
1 small Orange Blaze Sweet Bell Pepper, chopped
1/4tsp Sea Salt
1/4tsp Garlic Powder
1tsp Louisiana Hot Sauce
1tsp Tomato Paste (Optional)
–1/2c chicken broth (Hot) + 2T Flour
–1/4c Heavy Whipping Cream

Place foil onto pan, fold sides up (To catch grease). Bake about 12-15minutes at 425. Reserve 1/4c grease and 2-3slices for gravy.
Chop tomatoes. In stove top pan, mix sauce ingredients EXCEPT broth, flour, and whipping cream. Scoop out 2/3 of tomato mixture, blend in blender with 2-3 slices of bacon, til smoothish. Add back to pan.
Start baking biscuits.
Microwave broth til hot. Whisk in flour til thick.
Heat tomato mixture on stovetop, stirring in broth and flour mixture, making it a thick gravy.
Stir in Whipping cream.
Place egg and bacon on each biscuit. Top with gravy. Eat!

*I used Sunnys & Romas from our garden, hence the orange color. Also, you can use bagels, homemade biscuits, crescents, etc.

Fried Tomaters (Fried Green Tomato Burgers)

Partial Green/ Red Tomatoes (I prefer more red on em, yet firm.), sliced thickish
Turkey Burgers
Velveeta Jalapeno Cheese Slices (Or cheese of choice)
Oil for frying

Sauce:
1 cup Mayonnaise
1 tsp Mustard (Dijon works, too)
1 tsp freshly squeezed Lemon Juice
1 tsp Red Wine Vinegar (Or more lemon juice)
1.5T Louisiana-Style Hot Sauce
1 tsp Worcestershire Sauce
1.5 tsp Capers, roughly chopped
1 scallion, finely chopped (I used 1.5T Onion, minced)
1/2 tsp Paprika
1/8 tsp sea salt
1/2 T Parsley
1/4 tsp Mustard Powder
1/8 tsp Cayenne Powder
1/4 tsp Garlic Powder

Tomato Batter:
1c Flour
1/2c Cornmeal
1/4 Bread Crumbs or Croutons (I use Italian Bread Crumbs)
1/2 tsp Garlic Powder
3/4 tsp Cajun Seasoning
1/8 tsp Sea Salt
1/4 tsp Paprika
1/4 tsp Onion
1/4 tsp Pepper
1/2c Heavy Creamer+ 2 Eggs

Premake sauce ahead of time. Place in fridge. Cook burgers, place cheese on top to melt. Mix up batter. Beat egg and creamer in separate bowl. Heat oil on skillet. Place tomatoes in batter, then egg mix, then BACK into batter (Careful not to lose it, I usually don’t flip it. just place batter on top press lightly), then into oil. Fry both sides til nicely browned. Place cooked turkey burgers onto tomatoes. Pour sauce over top. I serve 1 burger on top 1 tomato, with extras on the side to eat. Eat with fork.

tTt’s EASY Chicken N Bacon – Great for BLT Salads!

Chicken Marinade (1 hour!):
1/4c Vinegar
1T McCormick’s Montreal Steak Seasoning

Bacon

Marinade Chicken. Cut to desired sized strips. Preheat oven to about 425-450. Lay Chicken onto Butter Flavor Cooking Sprayed pan. Cook about 15minutes. Lay on Bacon (You can lay it right over Chicken, too). Bake til Bacon and Chicken is done. Allow to set 1 minute.
Eat as is. Top onto Buns/Wraps for BLTs.
 – Or, as we did. In a Salad:

Lettuce
Fresh Tomatoes
Red Onions
Shredded Cheese (Or Cheese Chunks)
Carrot Slivers
Boiled Eggs
Sweet MINI Bell Peppers
Dressing: Avocado Oil+Balsamic Vinegar, Ranch, etc.

Toss all into Salad Bowl. Top with Dressing of Choice.

(Note: Eggs can be kept separate to avoid molding, and added as you go… If making for later eating)

Sicko’s Soup (Cabbage Soup. GREAT for Sickness)

Had someone sick. Wanting to get something warm down their throat, I wanted to make our other version of Cabbage Soup, or Chicken Noodle. But, having to do with what was on hand. I improvised, and used whatever we had and using things that were beneficial in with it… Spinach, Cabbage, Ginger, Garlic, and Cayenne. With digestion help, antioxidant help, the warmth on throat, and other benefits. My improvising created something pretty tasty.

1/2 lb Turkey Smoked Sausage Link, sliced
2 Frozen Chicken Breasts
1c Water + 1 Chicken Broth Cube
2 cans PROGRESSO CLASSIC Tomato Soup
1 can Light Kidney Beans, drained
2 cans Diced Basil Oregano Tomatoes, entire can
1/8 tsp Onion Powder
1/8 tsp Garlic Powder
1/8 to 1/4 tsp Cayenne Powder (I used 1/4)
1/4 tsp Ginger Powder
1/2 tsp Ground Mustard Powder
1/2 Tablespoon Paprika
2 tsp Soy Sauce
2 Garlic Cloves, minced (Or 1 large)
1 large Onion, Cut large
1 small Carrot, grated
1 SMALL Head of Cabbage, cut into chunks
1 cup Spinach, chopped

Spray Crock with Butter Flavored Cooking Spray. Add all ingredients. Cook on low 4-6 hours.
