Tay’s Sweet and Spicy Chicken with AMAZING Cucumber Tzatziki Wrap

EASY to Make! LOW CALORIES LOW CARBOHYDRATES Sweet and Spicy Chicken Wraps with a Delicious Cucumber Tzatziki Sauce. Healthier never tasted so good!

Tay’s EASY Sweet and Spicy Grilled Chicken:
Chicken Marinade (ONE HOUR! That’s it!):
About 1/3c White Vinegar
About 1T McCormick’s Montreal Steak Seasoning

Chicken Sauce (To toss cooked Chicken):
1 part Sweet Thai Chili Sauce (Asian aisle. I did about 1/3c)
1 part Louisiana Hot Sauce (I did about 1/3c)

Tzatziki Sauce:
1/2c Sour Cream
2T Mayo
1T Grated Parmasen Cheese
1tsp Lemon Juice (100% fridge kind)
1c Cucumber, peeled, seeded, grated
1/4tsp Garlic Powder
1/2tsp McCormick’s Gourmet Greek Seasoning
1/4tsp Dill Weed
1/8tsp Mustard Powder
1/8tsp Sea Salt

Toppings: Lettuce, Tomatoes, Red Onions, Italian Shredd. Cheese
Flatbread/Wrap of Choice (I used Joseph’s Flaxseed Flatbreads)

Marinade thawed Chicken Breasts 1 hour, mixing around every so often. (Great time to make Tzatziki Sauce.). This Chicken is BEST ON CHARCOAL GRILL!!! Cook Chicken. Once cooked, cut into strips. Toss Chicken with Sauce IMMEDIATELY.
Top Flatbread/Wrap of choice with Tzatziki, Chicken, Lettuce, Tomatoes, Onions, Cheese

Optional to use Breaded/Fried Chicken to toss with Sauce, instead.

Served with Quick Grilled Potatoes:
Potatoes (Stab w/fork. Microwave about 3minutes)
Butter Flavor Cooking Spray
McCormick’s Herb Garlic Seasoning
Butter Flavor Seasoning
Pepper
Green Onions

Microwave Potatoes, covered (Cuts cooking time). Then, halve then. Butter flavor cooking spray them. Sprinkle, WELL, with Herb Garlic Seasoning and Pepper. Add Green Onions. Wrap in Foil. Grill.

Tay’s Chick Rub – Tay’s Sweet Honey BBQ Recipe, as well. KILLER COMBO!

Season over makes, for few uses! Try over Fries. Potato Skins. Chicken. Etc. Great for indoor cooking or Grilling!

Rub/Season:
1T Chili Powder
1tsp Brown Sugar (Optional. Depending on use.)
1/4tsp Sea Salt
1/2tsp Black Pepper
1/2tsp Mustard Powder
1/2tsp Cumin
1tsp Garlic Powder
1tsp Onion Powder
1tsp Paprika
1/8tsp Cayenne
1/2tsp Fresh Lemon Peel
1 Chicken Broth Cube, crushed to powder*
1/8tsp Celery Seed

White Vinegar (Depending on how cooking)

Flour (Depending on how cooking)
Extra Virgin Olive Oil (Depending on how cooking)

Use Rub any way you’d like. For this particular recipe, I BAKED Chicken Legs. So, I:
REMOVED SKIN FROM LEGS (Easier to do when Partial Frozen!).
I Marinaded in Ziploc Bag: 6 Legs + 1/2T White Vinegar + 1-2T Chicken Rub (I skipped Brown Sugar for this particular recipe). Marinade 20min.
Add 1/2T Olive Oil to bag, toss around. Sprinkle in half of 1/2T Flour in the bag, toss. Add other half, toss. Set in fridge for about 20 minutes.
Butter Flavor Cooking Spray baking pan. Bake, uncovered, at about 425-450 for 18minutes, flip, bake another 12-18minutes, or til juices run clear.
I tossed cooked Chicken with Tay’s Sweet Honey BBQ Sauce (Recipe below)!

If Grilling: Marinade 1hr. in Ziploc Bag: 6 Legs + 1/2T White Vinegar + 1-2T Chicken Rub. Grill. Eat alone, or, Optional, to toss with Sauce (BBQ, Buffalo, etc.)

NOTES: Brown Sugar: If I’m doing a BBQ Chicken, or Sauce Toss, I skip Brown Sugar. Usually only use if just doing Season with Oil/Butter. Also, USE the crushed Chicken Broth Cube. Lots of famous seasons contain Meat Flavoring/etc. It’s GREAT!

Premake Sauce. Set aside til use. Cook Chicken. Toss COOKED Chicken with Sauce. Then, serve.

Crock Pot Lil Sweet Lil Spicy Chicken

About 3 lb. Chicken or Roast/Large Cut of Choice (Pork/Beef)

Pick ONE of Two Options (Both give very different, YET, AMAZING flavor):
Option 1: Fontera Red Chile Enchilada Sauce w/ Roasted Tomato & Garlic
Option 2 (I did): Stubb’s Chiles, Lime, and Ginger Marinade
Then, add:
1 Taco Season Pkt.
1/2c Root Beer
Brown Sugar (1/2tsp if using Stubb’s. 1tsp if Enchilada)
1/4tsp McCormick’s Garam Masala
1/4tsp Chipotle Powder (Optional)
2 Garlic Cloves, minced
1/2tsp Dry Mustard
1/2T Cumin
1/2tsp Pepper
Add Heat (Optional. I skipped): Red Pepper Flakes or minced Spicy Chiles

Add all to Crock Pot. Cook on low 8, or so, hours. Add to Shells/Bun of choice. Top with Taco Toppings of Choice. We used Tay’s Jalapeno White Sauce along with tTt’s Pico de Gallo, Shredd. Cheese, and Lettuce.

Tay’s Sweet Shrimp over Rice and Vegis (Chicken can be used)

Coating *See Notes:
About 1/2 lb to 1 lb Shrimp (Or Chicken, cubed)
1/3c+1T Cornstarch (Flour can be used)
1 tsp+1/4 tsp Ol Bay Seasoning
1/2tsp Garlic Powder
1/4tsp Onion Powder
1/4tsp Sea Salt
1/8tsp Pepper
1/8tsp Cayenne

Egg + 1T canned Unsweetened Coconut Milk, beat
Organic Coconut Oil (For Frying)

Sauce *See Notes:
1/2c canned Unsweetened Coconut Milk
1/4tsp Lemon Juice (Fridge 100% kind)
1/8tsp Vanilla Extract
1/2T +1tsp Brown Sugar
1/4tsp Sea Salt
1T + 1tsp Green Onions, minced

Toppings (For Serving. Optional): Drizzle of Sweet Thai Sauce (I skipped), Honey Roasted Sunflower Seeds (Shell-less. I skipped)

Rice:
2c Rice (Mine was not instant)
4c Water (Per instructions 2c per 1c Rice)
2 Chicken Broth Cubes, crushed
1/2c Carrots and Peas
Optional (I Skip): Pineapple, Peppers, Mushrooms, Broccoli

Preheat oven to about 400. Mix Sauce. Toss Shrimp in Egg+Coconut Milk Mix. Dump into Cornstarch Coating. Toss. Add into skillet with heated Coconut Oil. Fry on both sides. Add to baking pan. Top with Sauce. Bake, uncovered, about 18minutes, cooked to desire.
Rice: 1 Broth Cube per 1c Rice, crushed. Add Water, Rice, Vegis together. Cook. Serve Shrimp over Rice.
Served with Chipotle Fish Tacos with Special Slaw & Avocado Sauce

Notes: My original recipe was going to try Coconut Milk with SWEETENED Condensed Milk… But, realized I didn’t have any. So improvised with this Recipe. 1/3c Coconut Milk + 1/4c Condensed Sweetened Milk then 1/2tsp Brown Sugar, rest of ingredients the same. I liked it the above way, tho.

Skip Breading, Just Marinade Meat with Seasons. (Shrimp 1.5-2hrs, Chicken for 4-8 hours)

Sweet Mashed Taters (Mashed Sweet Potatoes)

1 Large Sweet Potato, skin on
2-3 Chicken Broth Cubes, crushed
3c Water
2 sm. Dried Bay Leaves

Reserved Broth, from Boiling Potato, to desired consistency
Sour Cream (Optional, I sometimes just add Broth.), to desired consistency
Pinch of Dried Chives (Optional)

Add Water, crushed Cubes, Bay Leaves, and Potato to pan. Boil til soft (RESERVE COOKED BROTH). Remove Potato, add to bowl and mash. Add in Broth, you boiled Potatoes in, to desired amount. IT IS OPTIONAL TO ADD SOUR CREAM. I sometimes do. But, tasty with just Broth, as well.
If adding Sour Cream, do “About” 1/2 Broth and 1/2 Sour Cream, to desired consistency (I do about 1T More Broth than Sour Cream).
Sprinkle in Chives (Optional).

Vegi Broth for Vegetarians, for boiling Potatoes. (Have yet to try.).
I always eyeball it, but, I use “About” 1/4c Reserved Broth for 1 Large Potato… Half of that, if using Sour Cream (1/2 Broth, 1/2 Sour Cream)… Potatoes very in size. So, eyeball to your liking.

Kicking Angels (Sweet and Spicy Chili Chicken Wraps)

Boneless Chicken Breasts, thawed
1/4c Thai Sweet Chili Sauce, or to taste
1 can Green Chiles, slight drain
Onion
1/4c Carrot, grated
1/3c Celery, cut long way then sliced small

Two ways of eating these *SEE NOTES:
1.) Wraps:
In Butter Flavored Cooking Sprayed pan, lay chicken. Top with Chili Sauce, Green Chiles, and Celery. Bake, covered, 425 for 45min. Allow to set few minutes when done. Lay onto wrap of choice (We used Lettuce). Top with Fresh Sliced Onions and Grated Carrot.
Optional (WE DID!): Top with a little Coleslaw that was tossed with a little Kraft Creamy Poppy Seed Dressing (A little goes a long way!).

2.) Over Rice (Cooked in Broth):
In Butter Flavored Cooking Sprayed pan, lay chicken. Top with rest of ingredients. Bake 425, covered, for about 45minutes. Allow to set few minutes when done. Serve over Rice cooked in Chicken Broth and sprinkle of Pepper.

*NOTES: You can very well try boiling chicken (Maybe with Broth Cubes…?). Once cooked, remove chicken. Then, mix in rest. Cuts time in half.

General Tay’s Chicken Soup (General Tso Soup)

3 Frozen Chicken Breasts
5 Chicken Broth Cubes + 5c Water
1/4 tsp + 1/8 tsp Sesame Seed Oil
1/2 tsp White Sugar
1T Rice Vinegar
1T White Wine
1/4c Soy Sauce
1/4c + 1/8c Apricot Preserve
1 Carrot, grated
2-3 Garlic Cloves, crushed
1.5c Frozen Broccoli (SKIP if frozen vegis below have this)
1/4 tsp Ginger Powder
1.5 tsp Red Pepper Flakes
1/16 tsp Sea Salt
1 bag Frozen Stir Fry Vegis OR Asian Medley (Add last hour)
1/4c Brown Rice (Last 35min. – Hour. Enough time to cook)

Butter Flavor Cooking Spray Crock. Add all in, EXCEPT Rice and Vegis. Cook on low 6 hours. Within last hour, add rest.
*Next time I’d like to try Ramen noodles broken (Season Pkt tossed), or similar noodle, instead of rice.

Sweet Porky Pig and Carrots



3-4 Pork Chops (I use bone in, but REMOVE BONE)
2T Dijon Mustard (Nice size T)
1/4c Brown Sugar
1/4 tsp Mustard Powder
1T Honey
2 Garlic Clove, minced
1 small Onion, chopped
1/4 tsp Pepper
1/16 tsp Sea Salt
1.5c TO 2c BABY Carrots

Butter Crock, well. Add all ingredients (I don’t brown meat, just throw in.). Cook low 4-5 hours, until all’s cooked and soft. Stirring. (If needed, add in Chicken Broth, a little as needed. Throughout cooking. I didn’t need to.)

Note: Maybe add a cup of large chunk Sweet Potatoes! I will try this next time. Also this recipe goes GREAT with HAM!!!

Pucker Up Spicy Kielbasa (Sweet and Sour Kielbasa)

1lb Turkey Kielbasa
1 tsp Sriracha Hot Chili Sauce (Rooster) … Or to taste
1/2 tsp Red Pepper Flakes … Or to taste *Optional
1 Green Pepper
1 Red Pepper
Large Onion
1 Carrot, peeled sliced
DRAINED pineapple chunks (We used heavy syrup kind)
Sliced Jarred Jalapenos to taste

Sweet and Sour Sauce:
1 cup Powdered Confectioners Sugar
4 Tablespoons Ketchup
1/2 cup White Distilled Vinegar
1 Tablespoon Soy Sauce
1/2 tsp Garlic Powder
1/8 tsp Sea Salt
Mix together sweet and sour sauce. Set aside. Spray crockpot with Butter Cooking Spray. Add all ingredients. Top with sauce. Cook til Vegetables are tender. Eat plain, or on rice.

Sweet N Sour Chicks (Sweet N Sour Chicken) and Stir Fried Rice

Sweet N Sour Sauce:
1c powdered sugar (Confectioners’ sugar)
4 TBSP Ketchup
1/2 cup White Distilled Vinegar
1 TBSP Soy Sauce
1/2 tsp Garlic Powder
1/8 tsp Sea Salt
***TO ADD SPICINESS, which we LOVE this version:
1 tsp Sriracha Sauce (Other hot sauces may alter taste)
1/4 to 1/2 tsp Hot Red Pepper Flakes

Batter Mixture:
1 cup cornstarch
1/2 tsp Garlic Powder
Up to 1/4 tsp Course Black Pepper
Good pinch of Sea Salt
1/2 tsp Onion Powder
1/2 tsp Paprika

4 Chicken Breasts
2 eggs, beaten
1/3 cup vegetable oil

Preheat oven 350. Cut chicken into 1 inch cubes. Pour the starch over the chicken and toss til coated, I’m not pretty about it. Then I Distribute eggs over battered chicken. I find this easier than dipping them into the egg and losing most batter on my fingers.
Heat oil in large skillet. Cook chicken until browned on each side. Place in baking dish.
Mix ingredients of sauce. Whisk until smooth (I make earlier, let flavors combine some.). Pour evenly over chicken.
Bake at 350 for 15 minutes. Turn chicken, bake for 15 more minutes.

Stir Fried Rice:
4 cups Rice, already prepared and cooked. Instead of water, use chicken broth to cook rice with! Broth cubes works.
½lb. boneless, no skin Chicken Breasts, cooked. Or shrimp, cooked. Or both. I just boil chicken. Or cook shrimp in pan. Or leave out as we did in photo.
3 T Sesame Oil + 1/8 tsp
2 cloves Garlic, minced
1/2 cup to 3/4 cup Onion, chopped
3/4 to 1 cup Carrots
3/4 to 1 cup Peas
2 Eggs
1/3 c soy sauce
Heat sesame oil on medium heat. Add onion, garlic, peas, carrots. Stir fry until tender. Scramble eggs, mixing throughout vegetables. Add rice, chicken/shrimp, and soy sauce to pan. Stir in soy sauce and remove from heat. Drizzle 1/8 tsp Sesame oil over (Optional).
Mix. Serve

Jack O Lantern & Sweet Potato Soup

4 cups water
4 chicken broth cubes
2 cups sweet potato cut up
small onion
1 cups celery
1 cups carrots
1 teaspoon curry
1/8 teaspoon sea salt
1/4 teaspoon course pepper
1 cup of canned Libbys Pumpkin Mix (The just add egg and milk stuff)
2 Tablespoons soy sauce
1/8 teaspoon ginger
1/2 lb. Sausage link, cut up. Our preference is using the Apple Gouda Sausage kind (Best version of this soup, I believe) Or we’ve also used a Turkey Kielbasa Link
Spray crockpot with Butter Spray cooking spray. Throw all in crockpot. Cook 4-6 hours.
*We have yet to try reg. canned pumpkin in this. I’m sure it might be delicious. I just had Libby’s and thought, why not try er out. It was good, so I just stuck with that.
