Baconed Chickpeas and Swiss Chard

1/4lb. Bacon Ends
1T Coconut Oil

1tsp Fresh Minced Garlic
a lil less than 1/4c Onions, chopped up

1 can Garbanzo Beans, drained
1c, or so, Swiss Chard (SPINACH CAN BE USED)
Swiss Chard Stems, cut up

Remove stems from Swiss Chard Leaves (We’re using all, so don’t toss). Set Leaves aside. Heat Oil in Skillet. Add in Bacon Ends and cook. Drain most of Grease, leaving behind a few Tablespoons worth. Add in Garlic and Onions, cook some (Don’t burn). Add in Chickpeas/Garbanzo Beans  and Stems. Cook a bit, frying all up. Add in Swiss Chard Leaves and cook til soft. Eat.


REPOST – Popeye Stick Em Ups (Tay’s Cheesy Spinach Sticks)


I’ve been doing these for years. First starting with Making Pizza Roll types with Wontons. With shortly after deciding sticks were EASIER to make. I know this is a repost, but, I haven’t updated old post with a new photo, so Here it is.

1/2 UP TO 1 pkg. Frozen Spinach (Fresh works!)
1/2tsp Olive Oil
1/4tsp + 1/8tsp Sea Salt
1tsp Dried Parsley
1tsp Garlic Powder
1/4tsp Onion Powder
1.5T Green Onions

1 can White Beans, drained, mashed some
1/3c Queso Blanco
1c Shredded Moz. Cheese (Or mix of Mont. Jack + Moz.)
4T Grated Parmesan Cheese (Store shelf kind)

2T Sour Cream OR Milk

Egg Rolls, HALVED
Coconut Oil (For Frying)
Sprinkle Garlic Powder

Cook/Saute Spinach, Salt, Parsley, Garlic, Grn. Onions, and Meat (If using) in Oil.
In blender, Rough BLEND: Beans, Queso, Cheeses, Milk/Sour Cream. Add Cheese Mix to Spinach. Cook a few minutes, to blend flavors.
CUT EGG ROLLS IN HALF (Important). Add a thin line of Spinach Mix to Egg Rolls. Roll, folding in edges at end..
Fry in Coconut Oil. Set on paper towel, sprinkle LIGHTLY with SMALL pinch Garlic Powder (Or Garlic Salt-LITTLE).
Serve with Salsa, Spaghetti Sauce. Or Tay’s Jalapeno White Sauce+Salsa.

Notes: Optionals: Meat (I skip!): 1/4lb: Sausage, Turkey Kielbasa, Chorizo, Chicken, or Seasoned Shrimp (Cut up/mince all to fit!)
Others (I skip!): 1/4c-1/2c Sweet Bell Peppers, Corn, Olives, Onions, Jalapeno, Tomatoes, etc. (All minced to fit)
COOKING Option: Butter Spray Skillet, Brown Each Side.

BLT Pizza (Bacon Lotta-Spinach Tomato Pizza)

1/2c Bacon Ends, cut up
1c Sweet Cherry Tomatoes, halved
1c packed Spinach, rough chop
1/2 of Onion, sliced thin
1T FRESH Garlic, minced
1/2tsp Dried Parsley
1tsp Dried Oregano

Thin Crust

Shredd. Moz. Cheese
Grated Parmesan Cheese (Store shelf kind)

Heat skillet to sizzle. Add bacon ends on med. high heat. Cook some. Add in tomatoes and then the rest. Cook some. Bring to simmer. Cover cook about 6minutes. Stir. Cook more, if needed (Cook down juice some).
BARELY brush bottom of crust and outer top of crust with EVOO. Add Bacon Mix. Spread around. Top with Moz. Cheese. Sprinkle with Parm. Cheese, getting the outer crust well, too. Bake according to directions.

Healthify this with Turkey Bacon, WILL NOT BE AS TASTY… And, not sure if you would need a tiny drizzle of Extra Virgin Olive Oil to cook Turkey Bacon.

Spanish Popeye Soup (Chorizo Spinach Soup)

Chorizo Spinach N Chickpea Soup

Chorizo N Spinach Soup
2c Vegetable Broth (I used Knorr’s Cubes+Water)
2c Chicken Broth Cubes, crushed + 2c Water
2c Beef Broth Cubes, crushed + 2c Water
1/2lb Ground Chorizo, cooked
3c Spinach, chopped
1 can Chickpeas, drained
1 Sm/Med Onion
1/2c Celery, Halved long way and sliced
1 Carrot, grated
1T Dried Parsley
1 Garlic Clove, minced
1/4tsp Pepper
1/4tsp Cumin
1/4tsp Coriander
A lil shy 1/8tsp Sea Salt *Optional

Toppings: 1tsp Crema Mexicana, per bowl (YES! Don’t Skip!!!)
Optional Toppings: Shredded Cheese, Roma Tomatoes, diced (I skipped tomatoes)

Cook Chorizo. Butter Flavor Cooking Spray Crock. Add all. Cook on low 6 hours. Serve each bowl with Crema.

Currified Popeye Soup (Creamy Curried Sausage and Chicken Soup)


Wish I had a better picture. Forgot to take picture until later. This was all that was left. It went that fast!

1/2lb Breakfast Sausage, browned
2 Frozen Chicken Breast
4c Water + 4 Chicken Broth Cubes
2cans Stewed Tomatoes, UNDrained
1 can Chickpeas, drained
1 bag 5oz. Spinach
1c Potatoes, diced
1 Onion
1.5tsp Fresh Garlic, minced
1.5tsp Curry
1/4tsp Cumin
1/4tsp Paprika
1/8tsp Coriander
1/8tsp Ginger
1/8tsp Pepper
1/2 TO 3/4c Heavy Whipping Cream (Add Later)

Brown sausage. Spray Crock with Butter Flavored Cooking Spray. Add all ingredients, EXCEPT cream. About 35 minutes before serving stir in cream, my crock runs hot so I turn it to warm last 35min.

Rancheria Soup For Me-ah (Chicken Ranch Soup)


3 Frozen Chicken Breasts
6c Water
6 Chicken Broth Cubes
1c Frozen Broccoli Cuts
1c Baby Carrots, halved
3 PACKED cups Spinach, cut
1 Onion, chopped
1/2 can Corn WITH Peppers, drained
1 can Black Beans WITH Jalapeno in Lime Juice, drained well
1 tsp Red Wine Vinegar
1/4 tsp Garlic Powder
1/8 tsp Dried Dill Weed
1 PACKET Ranch Dressing Seasoning (We used Wish Bone brand. Could alter taste if other)
1/2c Heavy Whipping Cream (Add later)

Spray crock with butter flavored cooking spray. Add all ingredients, except Heavy Cream. Cook on low 4-6 hours. Add in creamer about 30-40 minutes prior to serving.

Popeye the Sailor Man’s Soup (Spinach Soup)


.5 lb. Turkey Kielbasa Link (We’ve tried Turkey Kielbasa Link, Smoked Sausage, etc. All were tasty, but turkey kielbasa link’s the best for us!)
2 nice size Frozen Boneless Chicken Breast
3 cups Water (Up to 6c worth, depending on thickness)
3 Chicken Broth Cubes (Up to 6c worth, depending on thickness)
1 cup Mild Salsa
1/4 cup dried Parsley (1/2 cup if fresh)
3 cloves Garlic, minced.
1 medium Onion, diced.
1 Celery, sliced long way, then sliced into slices.
1 cup dry Green Lentils (We have improvised w/ 15 bean or barley. Tho, lentil’s best, it still worked in a pinch.)
1 15oz can Chickpeas (Garbanzo Beans), drained.
1 16oz bag FRESH Spinach Leaves, chopped.

Spray crockpot with butter flavored cooking spray. Add all ingredients to crockpot and cook 4-6 hours.
**This recipe is quite thick. If you want a more soup texture, ADD more water and broth cubes (Equal each). Maybe 5-6cups chicken broth total, instead of 3. If decided later into cooking that it needs more, remember to cook more, after adding. To allow flavors to blend.
