Quicky Fruit Salad

Needed a quicky salad with what was on hand. So, just threw this together. Great and REFRESHING for this Hot Summer’s Day!

Watermelon, cubed
1/2 Sweetner Packet
1/8tsp Sea Salt
Small Splash of Lemon Juice (100% fridge kind)
1/4c Canned Pineapple in Juice, cut up smaller
1-2 Bananas, cubed (I did 1)
Up to 1/4c Zucchini or Cucumber, peel/deseed/cube tiny (I did Zucch.)

Add Watermelon, Lemon Juice, Salt, and Sweetner. Toss. Add in rest. Toss.

ZuSKINNIES (Zucchini Skins) – A healthy and Beneficial Snack

I make ZucCandies (A candy that is made with Zucchini and tastes like Fruit Snacks/Gummies) and never wanting to waste anything… I, ALSO, use the Peeled Skins to make ZuSKINNIES (A great snack to replace Chips!), which are an Extremely Beneficial part of the Zucchini: 
Zucchini’s skin is a more concentrated source of nutrients. Carries Vitamin C, Potassium, and most of the Zucchini’s Fiber and Vitamin K. The skin itself is a rich source of Antioxidant Carotenoids, including Lutein, Zeaxanthin and Beta-Carotene.

Skins from peeled Zucchinis (About 16 oz.)
2T Water
1T Pepper
2tsp – 1T Sea Salt (I did 1T)

Place all into ziploc bag, mix around. Marinade 30 minutes. Place onto Dehydrator. Dehydrate til dried to crisp (Crisps a lil as sits, as well. I want to say I did 8-12 hours. Not sure).

3c EACH Chex Cereal: Corn, Wheat, Rice
2c Pretzels (Or a combo or Pretzels, Breadsticks, Rye Chips)

6T Butter
2tsp Sesame Seed Oil
3T Louisiana Hot Sauce (Store brand kind)
2T Soy Sauce
1tsp Liquid Smoke
1tsp Seasonal Salt
1/4tsp Ginger Powder
1tsp Garlic Powder
3/4tsp Onion Powder

Mix Liquid and Season ingredients (Bottom 9 ingredients). LIGHTLY toss Chex Mixture and Pretzels.
Preheat oven. Right before adding to oven, mix together Sauce and Chex Mixture. Lay onto Baking Pan/Cookie Sheet. Bake, LIGHTLY tossing every 15 minutes.
Allow to cool.

tTt’s Jalapeno Cheese Beef Stick Snacks (The Best Beef Stick you will EVER have!

THE BEST BEEF STICK I’ve Ever Had! And, I’ve had MANY!!! 
Per pound of Beef (I double batch, but, mix 1 lb. at a time. Then mix all together at the end).

– 1 lb. LEAN Ground Beef (Leaner then better)
– 1 Pkt. Cure/Season Nesco Jerky Season HOT STICK Variety
– 2T Mezzetta Deli SLices HOT Jalapeno Peppers (Jarred untamed Jalapeno slices), minced
– 3T SHARP CHEDDAR Cheese Brick, cubed small
– 2tsp Liquid Hickory Smoke
– 17mm Collagen Skins (Tubing for sticks)

I double batch, BUT, I mix 1 lb. at a time. Then, mix it all together at the end. Stick into your jerky gun. I just did one stick at a time. Got it to length I wanted, cut off, repeat. Lay onto Dehydrator Trays (I did 6 per tray). Dehydrate 8 hours, or so.
You can make into nuggets: Skip skins. Form nuggets and place onto dehydrator and optional to season, well, with Fresh Cracked Pepper. Pepper is tasty!

Smoked Pumpkin Seeds – 2 Recipes

tTt’s Beered Salt N Pepper Pumpkin Seeds (THE BEST SEED I’VE EVER EATEN!!!):
Brine:
1can Miller Lite Beer
1/2T Cracked Pepper
1/3c SEA SALT
2 1/4c Pumpkin Seeds

Extra Virgin Olive Oil
Hickory Chips

Season:
3/4tsp Cracked Pepper
3/4tsp Lawry’s Season Salt
(Directions Below)

Brine:
2c Pumpkin Seeds
1c – 1.5c Mr. Mrs T’s Bloody Mary Mix
To 1T Sea Salt
1tsp Garlic Powder
1/2tsp Onion Powder
1T Lemon Juice
1T Louisiana Hot Sauce
1/4tsp Worcestershire

Extra Virgin Olive Oil
Hickory Chips

Season Mix (Toss with-Premix THEN add to seeds!):
2-3T Mr. Mrs T’s Bloody Mary Mix
1/8tsp Garlic Powder
1/8tsp Onion Powder
1/4tsp Lemon Juice
1/4tsp Louisiana Hot Sauce
1/8tsp Worcestershire
-Then Season with (Premix THEN add to seeds!):
1tsp + 1/4tsp Sea Salt
2tsp McCormick’s Cajun
1tsp Dill (Dried)
1/2tsp Course Cracked Pepper
1/4tsp Paprika

Directions for Both:
While gutting Pumpkins, Place seeds into pot of warm water (Easier cleaning).
Rinse off seeds, removing pumpkin guts.
Add to Brine/Marinade. Marinade overnight (We did little over 12 hours).
Light pat with paper towel (Mine weren’t complete dry. Just gave one pat.) We smoked- Lay Foil over grates. LIGHTLY brush foil, on grates, with Extra Virgin Olive Oil.  Lay seeds down. Smoke 1 hour. Good time to PREMIX Season Mixes.  Toss with Season Mix.
…   (Cajun Bloody– Premix Top part of season mix, toss with seeds, THEN season with Lower Season Mix!) …
BUTTER FLAVOR COOKING SPRAY a foil lined baking dish
. Bake 375 for about 8-13 minutes… KEEP AN EYE ON… THEY BURN FAST! Cook to a light crisp.
– Tip: PreMix Seasons Mixes to quicken cooking, and spread flavor better!!!
I like to cook til they have a crisp. DELICIOUS! And, YES! You can eat the
entire thing!

Chipperonis (Pepperoni Chips)

Turkey Pepperoni Slices (20 slices)
1/2c Mozzarella Cheese
Oregano

Preheat oven to 375. Blender the slices and cheese. Press onto parchment paper that’s set in pan. Flatten as flat as you can. Slightly push the edges in. Season with Oregano. Bake 350-375 for about 8minutes. Place under broiler til nice and browned (Browned means crispy! Allow to cool and harden. Cut or rip into smaller pieces. Enjoy, maybe with some sauce.
Many options: Add ground up dried tomatoes. You can do just cheese, any cheese, skipping pepperonis. Cheese with Season (Ranch, BBQ seasoning powder, Taco seasoning). Or you can sprinkle a little cheese onto pepperonis and skip blending. Or just slice brick cheese into sandwich cheese thickness pieces, etc. Many options.
