BEST PoTAYto Salad


2T White Vinegar
1/4tsp Celery Seed
1tsp Yellow Mustard
1/8tsp Ground Black Pepper
2T White Sugar

Mix above into 1c Mayo.
Place into fridge until about 1 hour to serving.

Boil Potatoes. Cube up. Sprinkle with Lawry’s Seasonal Salt. Once done, add in:
1/4 of a SMALL Onion, minced
1 Celery, minced
1T Chives, minced
Place into fridge until cool.
About 1 hour pre-serving. Mix sauce in.

Versatile Sauce. Makes for GREAT Coleslaw Mix, as well.

OPTIONAL to top finished dish with:
Chopped Boiled Egg (I’ve used Tay’s Pickled Egg, gave nice spiciness).
Sprinkle of Mild Cheddar Shredded Cheese.
Also, optional: 1/4c Sweet Mini Peppers, chopped up small. Add in when adding Onions/Chives.
Depending on mood and time. We’ve skipped all the “Optionals”.


Simple Crock Pot Ham and Vegis

Now, this is probably a given, with doing for years. (One of the many ways to eat Ham, the simplest, too!) Long lines of others who have done this. But, will throw it on here… Well… Just because!
We love having our Loaded Salad nights. For the Ham, we cook in Crock, with Vegis. Then, kiddos eat Ham and Vegis that night. Leftover Vegis make for great side dishes, upcoming dinners. And, Ham, gets cut up, and placed in fridge for our Salads! Or, Sandwiches or Dishes.

Large Ham Cut
1/3c Water
Few good splashes of Worcestershire
A good shake of Mustard Powder
2c Potatoes, or so
1-2c Onions, or so
1c Celery, or so
2c Carrots, sliced, or so
Optional: Mushrooms, Cabbage, I’ve even amped with 1/2can DRAINED Sauerkraut!, Green Beans, Canned Beans (Drained), endless options…

Butter Flavor Cooking Spray Crock. Cover and cook on Low all day. Serve up. Or, separate and eat vegis as side dish for dinners. And, cut up Ham for Salads, Sandwiches, etc.

Sweet Mashed Taters (Mashed Sweet Potatoes)


1 Large Sweet Potato, skin on
2-3 Chicken Broth Cubes, crushed
3c Water
2 sm. Dried Bay Leaves

Reserved Broth, from Boiling Potato, to desired consistency
Sour Cream (Optional, I sometimes just add Broth.), to desired consistency
Pinch of Dried Chives (Optional)

Add Water, crushed Cubes, Bay Leaves, and Potato to pan. Boil til soft (RESERVE COOKED BROTH). Remove Potato, add to bowl and mash. Add in Broth, you boiled Potatoes in, to desired amount. IT IS OPTIONAL TO ADD SOUR CREAM. I sometimes do. But, tasty with just Broth, as well.
If adding Sour Cream, do “About” 1/2 Broth and 1/2 Sour Cream, to desired consistency (I do about 1T More Broth than Sour Cream).
Sprinkle in Chives (Optional).

Vegi Broth for Vegetarians, for boiling Potatoes. (Have yet to try.).
I always eyeball it, but, I use “About” 1/4c Reserved Broth for 1 Large Potato… Half of that, if using Sour Cream (1/2 Broth, 1/2 Sour Cream)… Potatoes very in size. So, eyeball to your liking.

tTt’s Brussels (Baconed Brussel Sprouts)

Lower Calories Lower Carbohydrates!

In bowl (You can pre-prep for quicker, later, cookings):
3 uncooked Bacon Slices, cut into nice chunks
1/2 Red Onion
1/4 Pepper
1/4c Soy Sauce (Optional. I sometimes cook w/o.)
1/4tsp Seasonal Salt
1 12 oz. Package Frozen Brussels

1T Extra Virgin Olive Oil
Good Shake of Pepper (At end)

Mix first 6 ingredients in a bowl (I did about 20minutes prior to cooking). In skillet, heat adding in 1T Extra Virgin Olive Oil. Add in everything, EXCEPT, pepper. Cook til all’s cooked. Sprinkle with Pepper. Eat!

Healthier-er Options: Cut back on Oil, use Turkey Bacon.

Piled CooCoo Nuts (Coconut Rice)


2c Instant Rice
1 Chicken Broth Cube, crushed
1c Water
1c canned Coconut Milk
Splash of Lime Juice (Concentrate kind)

In microwave dish, add in rice, water, coconut milk, crushed broth cube. Microwave according to instructions. Allow to sit a minute. Splash with Lime Juice, toss with fork.

-COMPLIMENTS Spicy Dishes ( Try our Mad Hot Pig Chop Stewy )
-Great with Hawaiian Chicken with Peppers and Onions
-With Chicken boiled in Chicken Broth. Add Frozen Peas in with Rice. Chinese Vegis can be added with Chicken (As well as Soy Sauce, many options)

Chicken of the Sea Salad (Tuna Salad)


Tuna Salad:
I used a lil more than 1/2 jar Miracle Whip
1tsp TO 1+1/4tsp Lawry’s Seasonal Salt
1/4-1/2tsp Paprika
1-1.5T Dill Pickle Juice from pickle jar. *SEE NOTES
1/8 tsp Onion Powder
1.5c Shredd. Cheddar Cheese (Save some for topping presentation- 1/2c)
1c Frozen Peas
Add later:
About 2c uncooked Macaroni Noodles, cooked hour before eating
2 cans Tuna, drained (1 hr. prior to eating. KEEP IN CANS TIL THEN!)

I premade sauce morning of use. Keep in fridge. About 1.5 hour prior to eating, cook noodles. Rinse noodles in cold water, drain well. Mix together sauce with tuna (Drained). EYEBALL adding noodles into sauce, to consistency desired. Toss rest of noodles. I always have it a little saucy, as it’ll sit an hour and absorb some. Top with rest of cheese. Place into fridge.
*NOTES: I didn’t have pickle juice from the jar, what we usually use, so improvised with vinegar and dill. 1/2 tsp Dill Weed and 2 tsp White Vinegar. Works very well in a pinch. Just allow the sauce to sit and marinade at least a few hours, prior to adding it to noodles.

Frozen Legs
Favorite BBQ Season Pkt. (Marinade- Grill Mates Texas BBQ kind!)
Favorite BBQ Sauce

Add legs to plastic bag, add in seasoning, allow to thaw- Mixing around. Grill legs. Close to being done, smoother with BBQ sauce, flip and repeat on other side. Allow each side to thicken. Serve.
