Apple Sausage, Sauerkraut, and Potatoes


2 Large Potatoes, cubed small
1T Butter
3/4c Ham Broth (Better than Boullian. *CAN DILUTE 1/2 1/2 Water/Boullian)
Cook potatoes in Butter. Golden, slightly. Add in Broth, if browning too much. Keep adding in broth, and covering with lid, to cook til tender. I used about 3/4c. Add in:
1/2 Large Onion, cut small
8oz. Mushroom, sliced
Cook. Adding in Ham Broth, if needed. At end, season with:
Good shake of Mustard Powder
Small shake of Caraway Seed
Lil Salt
Lil Pepper
ADD IN Can of Sauerkraut (Slightly Drained)
Mix Around.
Remove from pan.
Add 1/2T Butter to Pan.
Add in Apple Sausage.
Brown.
Add Set Aside Sauerkraut/Potatoes/etc. to Apple Sausage Pan.
Top with REGULAR Canned Biscuits.
Bake in Preheated Oven until Golden Brown.
Allow to cool.
Eat.

Pork Sausage Stew

About 1T, or so, Tay’s Herbed Garlic Oil (Or, Olive Oil)
1 Med./Large Garlic Clove, minced
1 Large Onion, cut up

About 1-1.5T Fresh Parsley, minced (1/2amount if dried)
2 FRESH Basil Leaves, minced (1/2amount if dried)
1-1.5tsp FRESH Oregano, minced (1/2amount if dried)

1.5lb GROUND Pork Sausage *See Notes

About 6 Potatoes, a lil larger than a dice cut
5 Small/Med. Carrots, cut up
2 Celery Sticks, cut up
1/3-1/2c Frozen Peas

2 cans Cream of Chicken, undiluted
1 can Cream of Mushroom, undiluted
1 Turkey Gravy Pkt.

Butter Crock Pot. Cut up Potatoes, Carrots, Celery. Add to Crock Pot WITH Peas.
Heat Tay’s Oil in skillet. Add in minced Garlic. Sautee a lil. Add in Onions. Sautee more. Add in Seasons and sautee a lil more. Add in Meat. Cook, cooking down juices. Add to Crock Pot. I cook mine on HIGH for 2 hours, then, low until vegis are soft.
Eat alone, or, with Buttered Biscuits.

*NOTES: You can use 1/2Beef +1/2Pork, etc.
You can make it closer to keto with using half the cream of and adding 1c Chicken Broth with using Rutabaga+Vegis (Green Beans, Broccoli, Corn, Carrots, Peas, Mushrooms) in the place of Potatoes. Optional to skip gravy pkt.

Chinese TAY-Rolls (Egg Rolls)

Delicious Egg Rolls. Easy to make. Yet, not lacking in flavor. Get Your Eat On!

1 lb. Ground Pork Sausage (Or, just Beef/Chicken)
1 lb. Ground Lean Beef (Turkey can be used)

1T Lemon Juice (Concentrate kind)
1.5T Rice Vinegar
2T Soy Sauce
1/16tsp Liquid Hickory Smoke
1 sm. Onion, slivered
2 sm./med. Fresh Garlic Cloves, minced
2tsp Chinese 5 Spice
1/4tsp Brown Sugar, or more to taste
1/4tsp Ginger Powder
Sprinkle Cayenne Powder

1 Bag Coleslaw Mix (16oz.), or more to taste (I like mine cabbage-y, I used a lil more than 1+1/2 bags)

Egg Rolls

Cook Meats together. Drain excess juice/grease. Add in rest, EXCEPT Coleslaw. Cook some. Add in Coleslaw. Cook til soft. Roll in Egg Rolls.

Cooking Options:
– Air Fry 6 minutes, turn, Air Fry 6 more minutes. Sprinkle with Garlic Powder.
– Butter Flavor Cooking Spray Skillet, add Egg Roll Wraps. Spray tops. Brown 4 sides.
– Butter Spray them. Bake.
– Deep Fry.
(Once done cooking, I sprinkle with Garlic Powder)

Tay’s Curried Sausage, Potatoes, and Chickpeas over Rice

Amazing! Eat Over Rice, with Pita, endless options! 

1 lb Smoked Sausage Link
1 can Chickpeas, drained
1 can Stewed Tomatoes (I used Hunts)
1 can Tomato Soup, undiluted
1/2c Peas (Last hour. Optional. I skipped)
1c Fresh Carrots, sliced
2.5c-3c Potatoes, diced (Russet, Golden, Fingerling)
1/2T Soy Sauce
1/4tsp Cumin Powder
1/2tsp Curry Powder
1/4tsp Paprika Powder
1/2tsp Garlic Powder
1/8tsp Old Bay Seasoning
2 sm. Dried Bay Leaf

Butter Flavor Cooking Spray Crock Pot. Add all, cook on low about 5-8 hours.
Rice: 1c Instant Rice, 1c Water, 1 crushed Vegetable Broth Cube. Add all to Microwave Safe Bowl. Cook, covered, according to directions. Stir half way through. Serve Curry over Rice.

EASY Loaded Cajun Sausage, Rice, and Vegi Bake

1 lb Smoked Cajun Sausage Links
1/2 lb Shrimp, detail/devein (Optional, or Chicken)
2c + 1/4c Water
2 Chicken Broth Cubes, crush
2c uncooked Rice
1tsp Garlic Powder
1tsp Tony’s Creole
1/2tsp Onion Powder
Shake of Pepper
Red Potatoes, half/quarter
Onions
Frozen Brussel Sprouts
Frozen Peas
Frozen Chopped Broccoli
Frozen Corn
Optional (I skip): Fresh Celery

Butter Flavor Cooking Spray Baking Dish (Or Butter). Add in Rice, Water, Seasons. Then, Meats. Then, rest. Cover tight with Foil. Bake about 1 hour at 425, stirring half way through.
Eat alone. Kids loved with Ketchup off to side.

On Softshell add All (Including Mayo, Shredd. Cheese). Butter Flavor Cooking Spray skillet. Brown all sides. Sprinkle with Garlic Powder. Serve with Salsa and Sour Cream

Tay’s Sicilian Spaghetti

1tsp Extra Virgin Olive Oil
1.5  lb. Turkey Sweet Italian Sausage Links, halved or 1/3cut
1/2c Onions (I believe I did Sweet Red)
1 Garlic Clove, minced
1/2c  canned whole Olives
1/2 pkg. frozen Peppers and Onions
3-4T jarred whole Pepperoncini, minced
2T Balsamic Vinegar
1.5T Red Wine Vinegar

1 jar Tomato Onion Garlic Spaghetti Sauce
1 can Basil Oregano Tomatoes, drained
1 can Tomato Paste
1/2tsp Brown Sugar
1/8tsp Sea Salt
1/4 Dried Red Pepper Flakes
1/8tsp Pepper
1/4tsp Dried Rosemary

I cut my links into 1/2 or 1/3s. Cook in Oil with Onions. Add in Garlic and Vinegars. Cook down some. Add Olives, Peppers/Onions, and Pepperoncinis. Cook down juices. Once juices are mostly gone, add in rest of ingredients.
Boil Noodles in Water with Pinch of Sea Salt and a lil Olive Oil (Helps noodles with sticking).

Tay’s Hot Dago Casserole

1 lb. Jennie-O Italian Turkey Sausage (Remove from casings)
1c Turkey Pepperoni Slices
1 Red Bell Pepper
1 Onion
1c canned sm./med. Black Olives, drained
1T Fresh Garlic, minced

3T Parmesan Cheese (Store Shelf Grated Kind)
1tsp McCormick’s Cajun Seasoning
1/4tsp Fresh Cracked Black Pepper
1/4-1/2tsp Red Pepper Flakes (I used 1/4)
1/8tsp Sea Salt
1 jar Rinaldi’s Tomato/Garlic/Onion Spaghetti Sauce
1/2 small can Tomato Paste

2.5c Uncooked Mostacccioli Rigati Noodles
 – For Noodles: 5-6c Water, 3 Beef Broth Cubes, crushed, 1/2tsp Extra Virgin Olive Oil
1c Shredded Italian 6 Cheese

Cook Italian Sausage most way (I like to cook it into bigger chunks-Photo Below). Add in Pepperonis and the rest of Vegis. Cook til most juices are gone. Add in Parmesan Cheese and Seasons, cook few minutes. Then, stir in Sauce and Paste. Simmer for about 15minutes, or so, stirring frequently.
Cook Noodles– Bring to Boil: Water, crushed Cubes, Extra Virgin Olive Oil. Add in Noodles. Cook a lil longer than Al Dente*. Drain well.
Butter Flavor Cooking Spray a Baking Dish. Add in Sauce Mix. Add in Cooked/Drained Noodles, TIL DESIRED CONSISTENCY (I actually took out a few noodles)! Mix. Top with Shredded Italian Cheese. Covering with Foil is optional, I didn’t. Bake 25 minutes, in oven preheated to 400.

Mama’s Jamba-Bake-ah (Jambalaya Bake)

THIS IS AMAZING!!! 

1/4c Louisiana Hot Sauce
1 pkt Hidden Valley Ranch Pkt.
1tsp Hot Chili Oil (Butter, melted, if you don’t have. Hot Chili’s best!)
1.5tsp McCormick’s Cajun Season
1/4tsp Garlic powder
1/4tsp Pepper
1/4 McCormick Montreal Chicken Seasoning

Boneless Chicken Breasts, thawed
1T Grated Parm. Cheese (Store shelf kind)

1/2lb Sausage Cheddar Link, diced (Qtr. long way, cut)
1 Celery, halved long way & cut
1 Medium GOLDEN Potato, diced
1 large Sweet Red Bell Pepper, cut
1 large Green Bell Pepper, cut
1 Onion

Mix first 7 ingredients in ziploc bag. Add chicken. Marinade 3-4 hours.
Cut up bottom 6 ingredients. Place into BUTTER FLAVORED COOKING SPRAYED baking dish. Top with chicken AND extra sauce from ziploc bag. SPRINKLE Parm. Cheese over top. Bake, covered, 425, about 45minutes, or til done. Eat alone. Or, try topping with JALAPENO Sour Cream!

Italian Sausage Submarines (Italian Sausage Subs)

Italian Sausage Submarines

1.25 lb. Sweet Italian TURKEY Sausage, casing removed
1/2 lb. Chorizo
2c Rinaldi’s Spaghetti Sauce (We did Original- But, any works)
1 can Basil and Oregano Tomatoes, DRAIN WELL (Press lid some)
2T Tomato Paste
1.5T TO 2T White Wine (I did 1.5T Movendo Moscato)
1 Red Pepper
1 Green Pepper
1 filled cup Red Onion, sliced
1/8tsp Pepper
3/4tsp Dried Italian Seasoning
1T Grated Parmesan Cheese (Store shelf kind)

Topping Shredd. Cheese Choice: Provolone, Moz., Or Italian (At end)
Other toppings *Optional: Olives, Spinach/Kale/Lettuce, Tomatoes, even Mayo!, etc.

Two Ideas of cooking:
1.) Cook meat (I start with Turkey, then add in Chorizo.). Butter Flavor Cooking Spray Crock. Add all, EXCEPT, peppers and topping cheese. Cook on Low total about 4-5 hours. About 1/2way TO hour before serving, add in peppers. At end, top with cheese, once melted serve on toasted bread of choice. Garlic Bread works.
Or Over noodles (Mock noodles work, like Zucchini noodles).

2.) Cook meats in large skillet, adding in seasons. Add in rest. (Optional: Saute vegis separate on side, with minced garlic. Add as topping.). Top meat with cheese. Cover, simmer til melted. Serve all on buns. Or over noodles.

FOR BREAD: Preheat oven to about 450. Cut bread to sizes desired, then mostly half. Quick spray of Butter Flavor Cooking Spray (Brush of butter works, too). Sprinkle with Cheese & Garlic Topper Season (Fleet Farm Brand) and Garlic Powder. Bake about 8 minutes, then broil for about 20seconds.

NOTES: We amped our typical Meat, Pepper, and Sauce recipe to get this. Chorizo gives it some heat. White Wine gives it an oomph. Turkey Meat cuts some cals. Feel free to skip or tweek to your taste. Like using Beef, Italian Sausage-Not turkey, etc. Or skipping Chorizo, up Italian Turkey- I’d add Red Pepper Flakes then! Basil and Oregano instead of Italian season, or seasons of choice. Up Sauce to taste. Etc. Like I said, To Your Taste! Endless Options.
Healthier Options: Serve on Lettuce Wraps, over Rice Noodles/Zucchini Noodles, etc.

2 Frozen Chicken Breast
1/2lb Sweet Italian Sausage
1T Butter + Some to rub crock
1 Red Delicious Apple, peeled, cored, diced
1/2c Raisins
5c Water + 5 Chicken Broth Cubes
1 can Cream of Chicken
3/4c Dried Green Lentils
1 can Butter Beans, drained
1 Carrot, grated
1 Celery, minced
1 sm. Onion
1/16tsp Sea Salt
1/2T Curry Powder
1/4tsp Dill
1/8tsp Thyme
1/8tsp Pepper
1/4tsp Garlic Powder
1/4tsp Ginger Powder
1/4tsp Chili Powder
1/4tsp McCormick Masala Garam Season*
1/2c canned Unsweetened Coconut Milk (Last hour)
Optional: Serve with tsp of Whip Cream (I skip, kids love)

Butter, LIGHTLY, crock. Remove sausage from casing. Cook Sausage in skillet. Add all to crock, except Coconut Milk. Cook on low 6-8 hours (Til lentils are cooked). Last hour add Coconut Milk.

*(Alternative can be: 1/4tsp Cumin, 1/8tsp Coriander, 1/8tsp Red Pepper Flakes, 1/8tsp Cinnamon (Cinnamon Optional))

Currified Popeye Soup (Creamy Curried Sausage and Chicken Soup)

Wish I had a better picture. Forgot to take picture until later. This was all that was left. It went that fast!

1/2lb Breakfast Sausage, browned
2 Frozen Chicken Breast
4c Water + 4 Chicken Broth Cubes
2cans Stewed Tomatoes, UNDrained
1 can Chickpeas, drained
1 bag 5oz. Spinach
1c Potatoes, diced
1 Onion
1.5tsp Fresh Garlic, minced
1.5tsp Curry
1/4tsp Cumin
1/4tsp Paprika
1/8tsp Coriander
1/8tsp Ginger
1/8tsp Pepper
1/2 TO 3/4c Heavy Whipping Cream (Add Later)

Brown sausage. Spray Crock with Butter Flavored Cooking Spray. Add all ingredients, EXCEPT cream. About 35 minutes before serving stir in cream, my crock runs hot so I turn it to warm last 35min.

Popeye the Sailor Man’s Soup (Spinach Soup)

.5 lb. Turkey Kielbasa Link (We’ve tried Turkey Kielbasa Link, Smoked Sausage, etc. All were tasty, but turkey kielbasa link’s the best for us!)
2 nice size Frozen Boneless Chicken Breast
3 cups Water (Up to 6c worth, depending on thickness)
3 Chicken Broth Cubes (Up to 6c worth, depending on thickness)
1 cup Mild Salsa
1/4 cup dried Parsley (1/2 cup if fresh)
3 cloves Garlic, minced.
1 medium Onion, diced.
1 Celery, sliced long way, then sliced into slices.
1 cup dry Green Lentils (We have improvised w/ 15 bean or barley. Tho, lentil’s best, it still worked in a pinch.)
1 15oz can Chickpeas (Garbanzo Beans), drained.
1 16oz bag FRESH Spinach Leaves, chopped.

Spray crockpot with butter flavored cooking spray. Add all ingredients to crockpot and cook 4-6 hours.
**This recipe is quite thick. If you want a more soup texture, ADD more water and broth cubes (Equal each). Maybe 5-6cups chicken broth total, instead of 3. If decided later into cooking that it needs more, remember to cook more, after adding. To allow flavors to blend.
