French Dip-wich

2.5lb Beef Roast, Salt and Peppered. Allow to sit about 20 minutes.
Premix Broth: 2c Beef Broth, 1 Garlic Clove (Minced), 1T Minced Dried Onions, 1tsp Dried Rosemary, 1tsp Dried Thyme, 4T Worcestershire.
Spray Instant Pot with Butter Flavor Cooking Spray. Add Premixed Broth and place in Roast. Pressure cook on high for 45 minutes. (It’s okay if it’s not done. We are simmering it next.)
Remove Meat from Juice, RESERVING the Broth Juice. Cut up Meat. Set aside. Add a drizzle of Olive Oil to skillet. Heat skillet, add 1T Tomato Paste and fry Paste up. Add in Meat and mix around with Paste. Add in 1 Au Jus Packet and mix around. Then, add in 2c Reserved Broth Juice (Use water to reach 2c, if not enough. *See Notes). Bring to boil, then, simmer for about 5-10 minutes. Optional to Melt Provolone on top. Serve on Buns. Dip in excess Juices.


Freezer friendly: Allow to cool some. Freeze. Add to Crock to heat up.

I was making this as a freezer meal for later time eatings. In making the above recipe, it gave me about 3c of Broth Juice reserved from the instant pot. So, I had about 1c Reserved Broth Juice left, outside from the 2c I needed for the French Dip recipe. Instead of tossing it, I used that leftover juice and cooked some Green Beans, from the garden, and Pork Steaks. Just added all to the skillet, and cooked down juices. It was delish.

NOTES: If a more tamed flavor is desired, use desired ratio of Reserved Broth Juice, with Water. Just simmer a lil longer when you mix with Paste and Au Jus. Example: Instead of 2c Reserved Broth Juices, use 1 1/2c Reserved Broth Juice with 1/2c Water.

TAY’s UltiMelt (Steak Melt Manwich)

Texas Toast Bread
Toppings: Mayo, Shredd. Cheese (We use Mild Cheddar AND Italian 6 Cheese)

Marinade
:
1/3c Soy Sauce
1/2c Extra Virgin Olive Oil
1/3c fresh Lemon Juice (I’ve used Fridge Kind, as well)
1/4c Worcestershire Sauce
1/4 tsp Hot Pepper Sauce (We used Louisiana)
1 tsp Regular Mustard
1 tsp Onion Powder
a sprinkle of Cayenne Powder
1T + 1/2T Garlic Powder
3T dried Basil
1T + 1/2T Dried Parsley
1 tsp Course Black Pepper
1 tsp Dried Minced Garlic (I’ve used 2tsp Fresh Garlic, as well)

Vegis:
Green Pepper, sliced into strips
Red Pepper, sliced into strips
Onions, sliced into strips
Mushrooms, sliced into strips
Extra Virgin Olive Oil
Shakes of Dried Oregano

Steaks: Mix all ingredients in a bowl. Pour marinade over desired type of meat (Preferably a slab of dead cow or chops). Cover, and refrigerate for up to 8 hours. Cook meat as desired. Try our best technique for a good steak. (Below). Cut up. Vegis: Cut up. Lay into foil. Drizzle a LITTLE Olive Oil on. Sprinkle with Oregano. Cook, we do on grill. Butter Flavor Cooking Spray skillet. Brown each side of Toast. OR Grill each side of Toast, Butter it.
Top with Toppings.

Steak Cooking Tip: Olive oil in skillet, get that pan hot, I mean I want that steak to sizzle or you’ve ruined your whole meal. Sear for about 3minutes on each side, you want a nice brown, but not fully cooked. Just leave it cook, don’t move it too much! This locks the juices in. Juices rise when cooked. By searing each side, you lock those juices in. Transfer and bake, or grill til desired. Remember that the steaks cook as they rest and absorb the juices. So, allow a few minute rest and cook to just under desired steak- Rare, Med., etc. Or all the way on grill, just be sure it sizzles once it hit it! No constant flipping!!! One and done!

Ultimate Cheesy Melt served on Garlic Texas French Toast

Add onto Wraps, Bread (Buns/Toast/Hoagies/Garlic Bread/etc.), Lettuce Wrap, OR Our Texas Toast Options Below (Garlic Parmesan Texas French Toast OR Garlic Texas Toast)! Who says French Toast can only be eaten one way?!

2 Chicken (Boil in Water + 1 Chicken Broth Cube, crushed), shred*
6 slices Turkey Bacon, cooked/crumbled
1c Turkey Pepperoni Slices
Vegis: Green Pepper, 1/2 Onion, 1/4c Black Olives, chop (Optional)

Sauce:
1/2T Margarine
1T Fresh Green Onions
3/4c Milk (Cream or canned un-sweet Evap. Milk works)
3/4c Shredded Italian 6 Cheese
1/4c Grated Parmesan Cheese (Store shelf kind)
1/8tsp Nutmeg

UP TO 1c Shredded Swiss Cheese
Toppings: Fresh sliced Tomatoes (Optional, I skip)

In sauce pan on Low Heat, melt Margarine (Don’t Burn). Add in Green Onions. Stir in Milk. Add Cheeses, then Nutmeg. Bring to Boil for about 1 minute, then Simmer til nicely Melted. Stirring FREQUENTLY.
Optional to Saute (Helps with excess juices when baking): Cook Bacon. Crumble up. Add all Vegis to Skillet. Cook some. Add in Meats. Cook til Vegis are somewhat soft, juices cooked down. Follow below instructions.
If no Saute: Crisp Bacon. Then:
– Butter Flavor Cooking Spray baking dish. Add in Vegis and Meats. Top with 1c Swiss Cheese. Pour Sauce over top. Fresh Crack some Black Pepper on top. Bake, uncovered, at 425 for 25-30 minutes. Add to Texas Toast (Recipes below). Bun/Hoagie/Toast/Garlic Bread or Wraps/Gyros, work.
* “About” 1.5 lb Chicken. Also, Leftover Carved Turkey can be used!

*** Texas Toast Option (2 Options) *** :
1.) French Toast Style:
4-5 Eggs
1/4c Milk
1/2tsp Garlic Powder
Few Cracks of Pepper
1tsp Dried Parsley
1tsp Grated Parmesan Cheese (Store shelf kind)
1/8tsp Sea Salt (Optional- I SKIP!!!)

Whisk/Blend above. Heat Skillet with Butter Flavor Cooking Spray in it (Or rub w/ Butter). Quick dip both sides of Texas Bread into Egg Mix. Brown both sides. Serve with Cheesy Meat Mixture. (Extra Crispy: Also, Bake in Oven, I skip, tho.)

2.) Grilled Garlic Butter Style:
1tsp Fresh Garlic, minced
2T Butter
1/4tsp Garlic Powder

(I use Microwave) Melt Butter, while still hot, add in minced Garlic. Wait a minute, add in Garlic Powder.  Stir. Allow to set some. Remelt, if needed (Don’t Overheat, Garlic will burn). Brush each side of Texas Bread with Garlic Butter Mix. Heat skillet with Butter Flavor Cooking Spray (Optional). Brown each side of Bread. Serve with Cheesy Meat Mix.

The Pig that Cut the Cheese – Mozi Melties (Bacon Creamed Cheese Mozzarella with Raisins and Rosemary Melts)

An Elegant Twist…  On the Grilled Cheese Sandwich!

Bread of Choice (White, Brie, Texas!, etc. – I used White)
Bacon, cooked
Raisins (Or Dried Cranberries/Craisins)
Dried Rosemary, crushed some
Grated Parmesan Cheese (Store Shelf Kind)
Sesame Seed Oil

1.5c Shredded Mozzarella , minced (Or white cheese of choice.)
3 oz. Cream Cheese

Bake Bacon on foil in oven at 450 (No need to preheat) for about 12-15 minutes. Mince Moz. cheese. Add in cream cheese. Microwave about 30 seconds. Mix well. (You can choose to add Rosemary to warmed cheese, or sprinkle on later, your choice. I did later.)
On Bread (1 piece or both pieces, your choice), spread a thin layer of cheese mix. Sprinkle lightly with Parm. Cheese. Sprinkle with Rosemary. Layer on Raisins. Top with Bacon. BRUSH EACH SIDE of sandwich with Sesame Seed Oil.
Heat skillet. Brush Sesame Seed Oil onto skillet. Lay in sandwich. Cover. Once browned, lift sandwich and brush SKILLET with more Sesame Seed Oil. Flip sandwich. Brown other side.
Note: Don’t grill these too, too, fast. Allow the cheese to melt nicely. It’s still a fast dish to make! YOU CAN USE ANY CHEESE, if you wish! A mixture of meats (Turkey, Bacon, Ham).

Squawkin Oinkers- Fiesta-wiches (Chicken Bacon Salad Sandwiches)

Chicken Bacon Fiesta-Wiches
2 Frozen Chicken Breast (Boiled in water with few CRUSHED Chicken Broth Cubes)
3T-4T canned Southwestern Corn (Peppers/Onions kind)*
2T REAL Bacon Bits
Sauce:
1 TO 1.5T Mayo
1 TO 1.5T Miracle Whip
3/4tsp Lemon Juice (Fridge kind)

Grated Parmesan and Romano Cheese (Store shelf kind)
Buns (Lower Cal. / Carbs– Use Wraps, Cabbage Leaves, or Egg Rolls)

Boil in water with few CRUSHED chicken broth cubes. Remove chicken, shred. In bowl mix Sauce ingredients. Mix in rest. Serve each sandwich with GOOD Sprinkle of Grated Parmesan and Romano Cheese (Store shelf kind), top with Roma Tomato Slice, and (Kid’s preference-Optional) swipe bun with a little Miracle Whip.

* If no Southwestern Corn/ Or in place of it- Add: 3-4T Corn, 2T each- Red Pepper & Onion (Minced), 1T Green Pepper (Minced), 1/8tsp Sea Salt (I add salt to sauce)
If premaking earlier than eating, add mayo, miracle whip, lemon RIGHT BEFORE serving. Or chicken will soak it up. Or just do as I do for kiddos, swipe bun with little Miracle Whip.
We used 2 chicken breasts from 3lb Frozen bag of chicken. Made 2-3 sandwiches.
