Easy Pesto Pot Pie

pesto pot pie(Sorry, last minute photo.)

3-4 Chicken Breast, thawed (From 3lb bag)
OPTIONAL TO ADD 1/2 lb Turkey Kielbasa, sliced (I skipped)
1/8 – 1/4tsp Sea Salt
1/4tsp Pepper

1.5c fresh Carrots, sliced
2c Fingerling Potatoes, halved
1c Onion
1c Baby Bella Mushrooms, sliced
1/2c Peas (Add Last hour)
1-2 cans Cream of Mushroom (I used 1)
1 can Artichokes, drained
1/3 Pesto
2 sm. Dried Bay Leaves

Canned Biscuits (I used flaky)
Grated Parmesan Cheese (Store shelf kind)

Butter Flavor Cooking Spray Crock Pot. Add Vegis, then rest. Cook on Low 4-6 hours. Sprinkle Biscuits, well, with Grated Parmesan Cheese. Bake according to instructions. Serve Biscuit in bowl topped with Pesto Pot Pie.

OPTIONAL to skip Potatoes in Pot Pie, and SERVE OVER MASHED POTATOES… OR EVEN Oven Baked Seasoned Cubed Potatoes (Try tTt’s Potatoes or tTt’s Mashed Taters).

Cheesi-Minis (Cheesy Pot Pie)



Meat of Choice (I used 5 slices COOKED Bacon, chopped) *See Notes
1c Frozen Chopped Broccoli, thawed
1c Frozen Peas
1c Frozen Sliced Carrots
1c Frozen Corn
1c Onions, chopped
1 cooked Med. Potato, diced
1c Salsa Con Queso (Or fav. Cheese Sauce- TRY QUESO!)
1/2c TO 1c Shredd. Mild Cheddar Cheese (I did 1/2c)
1 can Cream of Chicken, undiluted
1/3T Butter (I use, but, Optional)

Pie Crust

I microwave Potato about 4 minutes (Quick Cook!). Dice.  Cook meat (I baked Bacon). In sauce pan, add in rest of filling ingredients, simmer. Cut pie crust to size. Place into muffin pan. I did some with crust tops and some without. Bake according to pie instructions. Allow to cool some. Enjoy.

NOTES: You can use meat of preference. Bacon, Ham, Beef, Turkey Meat, lil Chorizo, Turkey Kielbasa, etc.  A LITTLE goes a LONG way!
ALSO… This recipe has endless options. Try ground turkey/beef with sprinkle of Taco Pkt. (Not entire pkt.). Top with Salsa and Sour Cream, when serving.
Homemade Cream Of, can be used.
Lower Carb Options: Use Wontons in place of Pie Crust! Use as Top AND Bottom Crust, or just have a Bottom!

Cow Pie Soup (Beef Pot Pie Soup)

Beef Pot Pie Soup
A name with a DIFFERENT meaning! A Pile of Hearty Beefy Deliciousness!

1lb TO 1.5lb. Ground Beef, browned*
1 pkg. McCormick Brown Gravy
1 can Cream of Mushroom
4 Beef Broth Cubes + 4c Water
2 Vegetable Broth Cubes (2c worth) + 2c Water
1/4c Water
1c, overfilled, Onions, cut
1.5c Carrots, sliced
1 + 1/4c Potatoes, diced
2 Celery, cut long way then sliced
1/2c frozen Peas (Added last 30minutes)
1c, overfilled, Mushrooms
1tsp Dried Parsley
1/4tsp Red Pepper Flakes
1/4tsp Pepper
1/4tsp Garlic Powder
Shredded Provolone Cheese (Top each bowl)

Butter Cooking Spray crock. Add all, except peas. Add peas last 30minutes. Cook on low, stirring frequently, for about 6-8 hours.

*Notes: I used ground Beef… You can use Ground Turkey, cooked. Or Beef Stew Meat. Or Steaks. Or Pork Chops.
