Great for Breakfast or Dessert (As Mock-ffins (Mock Muffins)) You can choose to use Muffin Pan to make Mock-ffins for a Healthy LOW Carb Dessert. Or, use a baking dish! Whatever you want… It doesn’t Matter! Because, you and the kiddos will be DEVOURING these!!!
Eggs (4T Egg Whites (4 Eggs). Or, 3-4 Eggs w/yolks)
1tsp Vanilla Extract
1/2tsp Lemon Juice (Fridge 100% Kind. OPTIONAL!) *SEE NOTES
1-2 Banana, mooshed well
1 Stevia Sweetener Packet (Optional)
Few Each: Strawberries, Blueberries NOT TOO MANY! Enough to taste!
(Optional: Chocolate Chips, Craisins, Peanut Butter, Cherries, Berries, Cocao Powder, etc.)
Moosh Banana!!! Whisk: Eggs, Vanilla, Stevia, Lemon Juice, Bananas. In a Butter Flavor Cooking Sprayed Muffin Pan/Or Baking Dish (As I used), add in Fruits of Choice. Pour Egg Mix over tops. Toss SLIGHTLY! Bake 425 for about 20-25 minutes, til eggs are cooked. Allow to set a few minutes, UNCOVERED!!!
NOTES: I use Lemon Juice for this recipe. May skip if doing a Peanut Butter Recipe. And be careful when mixing TOO MANY things… Eggs can only hold together so much!

1 package of Jiffy Corn Bread (Flavored Cornbread can be used!)
1 Egg (Per Jiffy Instructions)
1/3c Milk (Per Jiffy Instructions)
3/4tsp Plain Ol’ Mustard
1/4c Shredded Cheddar Cheese
1T Real Bacon Bit
1/4tsp Chili Powder
1/16 – 1/8tsp Sea Salt
1c + 1/3c Weinies, sliced into 1/3s (OR Cheesy Meat Link/Brats, cut small) *SEE NOTES
Chili of Choice (I used canned)
Shredded Cheddar Cheese
Blend first 3 ingredients. Add in rest, stir up some more. Lightly Butter Muffin Pan (Or spray). Fill each 2/3 way. Bake according to instructions Top each with good squirt of Ketchup, then Chili, then Cheese. Topping with Frito Chips is optional, as well.
*Make it healthier with Turkey Weiners.
Also, Baked Bacon can be used.
Cheesy Sausage/Brat/Kielbasa Link can be used and cut smaller! OR COOKED CHORIZO!!!

Make Muffin Pizzas (Using LARGE Muffin Pan) or Make in Baking Dish! Kids love the Fun Muffin sizes!
Extra Virgin Olive Oil or Butter Flavor Cooking Spray
Rinaldis Tomato Garlic Spaghetti Sauce
Shredded Cheese (I used Moz. w/ Sprinkle of Chedd.)
Toppings (Optional. I used ones with *):Mushrooms*, Olives*, Onions*, Peppers, Turkey Pepperoni*, REAL Bacon Pieces*, Italian Turkey Meat (Ground,browned), etc.
1/2c Egg Whites (Or, about 3-4 Reg. Eggs)
Grated Parmesan Cheese (Store shelf kind)
Lightly Extra Virgin Olive Oil or Butter Flavor Cooking Spray LARGE Muffin Pan or Baking Dish. Spoon in Sauce. Top with Cheese. Top with Toppings (Start with Vegis) of Choice. Pour over Eggs. Top with SPRINKLE of more Cheese. Sprinkle tops with Parm. Cheese. Bake 450 for 25minutes. Allow to cool a few. Then, serve up!
(If doing Muffin Pan: You can repeat layers!!! Also, I did about 1-2T Eggs in each Muffin Cup)
