Tay’s Sweet and Spicy Chicken with AMAZING Cucumber Tzatziki Wrap

EASY to Make! LOW CALORIES LOW CARBOHYDRATES Sweet and Spicy Chicken Wraps with a Delicious Cucumber Tzatziki Sauce. Healthier never tasted so good!

Tay’s EASY Sweet and Spicy Grilled Chicken:
Chicken Marinade (ONE HOUR! That’s it!):
About 1/3c White Vinegar
About 1T McCormick’s Montreal Steak Seasoning

Chicken Sauce (To toss cooked Chicken):
1 part Sweet Thai Chili Sauce (Asian aisle. I did about 1/3c)
1 part Louisiana Hot Sauce (I did about 1/3c)

Tzatziki Sauce:
1/2c Sour Cream
2T Mayo
1T Grated Parmasen Cheese
1tsp Lemon Juice (100% fridge kind)
1c Cucumber, peeled, seeded, grated
1/4tsp Garlic Powder
1/2tsp McCormick’s Gourmet Greek Seasoning
1/4tsp Dill Weed
1/8tsp Mustard Powder
1/8tsp Sea Salt

Toppings: Lettuce, Tomatoes, Red Onions, Italian Shredd. Cheese
Flatbread/Wrap of Choice (I used Joseph’s Flaxseed Flatbreads)

Marinade thawed Chicken Breasts 1 hour, mixing around every so often. (Great time to make Tzatziki Sauce.). This Chicken is BEST ON CHARCOAL GRILL!!! Cook Chicken. Once cooked, cut into strips. Toss Chicken with Sauce IMMEDIATELY.
Top Flatbread/Wrap of choice with Tzatziki, Chicken, Lettuce, Tomatoes, Onions, Cheese

Optional to use Breaded/Fried Chicken to toss with Sauce, instead.

Potatoes (Stab w/fork. Microwave about 3minutes)
Butter Flavor Cooking Spray
McCormick’s Herb Garlic Seasoning
Butter Flavor Seasoning
Pepper
Green Onions

Microwave Potatoes, covered (Cuts cooking time). Then, halve then. Butter flavor cooking spray them. Sprinkle, WELL, with Herb Garlic Seasoning and Pepper. Add Green Onions. Wrap in Foil. Grill.

About 1.5lb Frozen Chicken Breast, boiled in Water + 1Broth Cube
1 small container PLAIN Greek Yogurt (Cream Cheese may work)
1/2-1 Italian Dressing Season Pkt. or premade Italian Salad Dressing
1/2c jarred Pepperoncini, cut up
Full 1/2c Turkey Pepperoni pieces
1/2c Red Pepper, chopped
A lil shy 1/2c Red Onions, chopped
Splash of Lemon Juice (100% fridge kind)
Olives, halved (Optional. I forgot in photo)
1/2tsp Red Pepper Flakes or Jalapenos, minced

Wraps/Buns/Flatbread/Bread of Choice
Fresh Tomatoes
Lettuce
Shredded White Cheese (Or diced Brick Cheese)

Add Frozen Chicken to pan of Water with 1-2 Chicken Broth Cubes. Bring to Boil. Boil til cooked. Cut up.
Add in rest of Salad Ingredients. Top onto Wrap/Bun of choice, with Toppings of choice. Eat.

1/4tsp Garlic Powder
1/4tsp Onion pwdr
1/4-1/2tsp Dill Weed

1 can Pinto Beans, drained
1tsp LEMON Juice (100% Fridge Kind)
1/2-1 Ranch Pkt.

Healthy Crackers

Optionals: Green Onions, minced. Grated Cucumber. Avocado.
Greek Season instead of Ranch Pkt. Or other seasoned Pkt (Have yet to try)

2T Extra Virgin Olive Oil
3T Teriyaki
1 Frozen Bag Brussel Sprouts
3 Med. Onions
1 8 oz. Pkg Mushrooms
Up to 1T Course Black Pepper

Heat Oil. Add in Vegis. Cook some. Add in Teriyaki, cook down. Eat.
I served over Chinese Spiced Chicken and Rice:
Place 1c Rice into Butter Flavored Baking Dish, add in 1c Water, (Optional to add 1 crushed Broth Cube to Rice/Water), lay over Frozen Chicken, Sprinkle nicely with Chinese 5 Spice, cover with Foil. Bake til Chicken is done.

Quick and EASY Egg Salad

Easter means… Boiled and Dyed Eggs! Get Your Egg Salad On!

Boiled Eggs
Miracle Whip or Spin Blend Mayonnaise
LITTLE Squirt of Mustard
Good Sprinkle of Paprika
Few Drops to a Splash of Lemon Juice (100% Fridge Kind)

For Heat, I add:
Splash of Louisiana Hot Sauce or Tabasco
Cayenne Powder
Jalapeno, minced
Onion, minced

Other Optional Adds:
Celery, minced
Real Bacon Pieces
Sweet Red/Green Bell Peppers, minced

Mix all. Stuff Eggs (Deviled Eggs), Egg Salad Sandwiches… Or, Mix (I do with Heat options, Celery, Real Bacon Pieces). Top a Soft Shell with a Lil Shredded Mild Cheddar Cheese. Roll up, tucking in sides. Heat Skillet. Spray with Butter Flavor Cooking Spray. Brown each side. Sprinkle with a Little Garlic Powder (Or a LITTLE Garlic Salt). Eat, or place in fridge for later Cooler eating!

Easy HEALTHIER Banana Chocolate Chip Ice Cream

A Healthier Go-To for a Sweet Tooth Fix! We’ve seen the Banana Ice cream Idea before. Wanting to amp this up, with the kiddos, we came to this recipe:

4-5 Ripe Bananas (I believe we did 4…?)
Up to 1/2tsp Vanilla Extract
1T Honey
1tsp Cocoa/Cocao Powder

Chocolate Chips

In blender, blend Bananas, Vanilla, honey, Cocoa. BUTTER FLAVOR (Or, Organic Coconut Oil Spray) a Muffin Pan. Pour blended ingredients into pan. Sprinkle tops with Chocolate Chips (I press down a little, so they freeze into it and aren’t loose). Place into freezer. Once COMPLETELY frozen, you can remove and place all into 1 Freezer Friendly Ziploc Bag. Enjoy.

Easy Orange Marinade

Marinade:
1/2c 100% Orange Juice
1/3-1/2c Soy Sauce
1tsp Garlic Powder
2 Dried Bay Leaves

Marinade 5-6 hours. OPTIONAL (We do!): Remove from Marinade, drain excess juice. Place on plate. Season both sides with shake of (Choose ONE!):
-McCormick’s Brick Oven Seasoning (What we did!)
Tay’s Chicken Rub (w/Brown sugar!)
-Or, McCormick’s Montreal Steak Seasoning
Allow to sit 15minutes.
 Then, Grill! (Charcoal Grill is Best!)

Eat Alone. Or serve over Rice (Cooked in Broth) with Vegis.

Tay’s Chicken Pitas – Healthier

Tay’s Chicken Pita is Healthier and Lower in Calories, but you wouldn’t know!

Peppered Parmesan Avocado Sauce:

3T Mayo (Lite can be used)
1/4c Sour Cream, or more to taste
1tsp White Vinegar
1/4tsp Garlic Powder
3T-1/4c Grated Parmesan Cheese (Store shelf kind)
1/2tsp Black Pepper
1 ripened Avocado
Optional: 1/2-1tsp Ranch Dressing PKT. (I used Fiesta Ranch Pkt.)

-Flat Bread/Pita (We used Joseph’s Flax Oat Bran & Whole Wheat Pita)
-Cooked Chicken Breasts (I used Tay’s Mexi Marinade, grilled. *SEE NOTES)
-Toppings: Peppered Parmesan Avocado Sauce, FRESH Tomatoes, Shredd. Chedd. Cheese, Salsa or Quick Pico (Recipe Below), Lettuce. OPTIONAL: TINY Spread of Refried Beans

We Mexi Marinaded Chicken, then Grilled (Charcoal Grill’s Best!). Blend Peppered Parmesan Sauce Ingredients. I lightly rub Pitas, using fingers, with Water. Microwave 10 seconds. Spread half with Peppered Parmesan Avocado Sauce. (Optional to spread other half with Refried Beans). Top with Cooked Chicken Breast and Toppings of Choice. I had no Salsa, so, improvised with Quicky Pico (Below).
 ** NOTES: Any Chicken will do: Plain, Boiled in Chicken Broth (Toss frozen Chicken into a pan w/ Water, throw in 1-2 Chicken Broth Cubes. Bring to boil, boil til cooked.), Desired Seasoning. Any. **

Quicky Pico/Salsa:
1can Basil Oregano Tomatoes, drained (All I had)
To taste Red Onions, chopped
1tsp Jalapeno deseeded, minced, more to taste
1/2tsp Dried Chives
a lil shy 1/2tsp Dried Cilantro
a lil shy 1/2tsp Garlic Powder
1/8tsp Sea Salt, more to taste
1/8tsp Pepper
1tsp+1/4tsp Lime Juice (Fridge concentrate kind)

Potato Oles:
Tater Tots
Season (Pre and Post cooking), well, with either: Tay’s Rub or Tater Ole Season

Season, bake according to directions. Once done, season lil more. Eat.

Mexi Marinade (4-6 hours):
About 1.5 – 2 lb. Chicken Breast, thawed
1 Taco Season Packet
1tsp Garlic Powder
1tsp Cumin
1tsp McCormick’s Montreal Steak Seasoning
2 Dried Bay Leaves, halved
3T Lime Juice (Fridge 100% kind)

Marinade Chicken in ziploc bag. Best on Charcoal Grill. Last hour I remove from fridge to bring closer to room temp before cooking.
Eat as is. Shred, eat over Salads, Rice, on Tacos, Fried Taco Bowls, Mole Enchiladas, etc. MANY USES!

Served with TACO TAY’S TAYter OLES:

Tay’s Wasa-Pea Soup (Tay’s Wasabi Split Pea Soup)

With already having 2 other twists on Our Split Pea Soup (Links below)… We added another! Wasabi!

6c Broth (I did 6c Water + 4 Chicken Broth Cubes + 2 Beef Broth Cubes)
2c Water + 2c worth Vegetable Broth Cubes
1/2 – 1 lb. bag Dried Split Peas (I did 1/2pkg. to cut Cal.)
1/2 lb. Turkey Kielbasa/Sausage Link
2 Potatoes, diced
1c Celery
2c Fresh Carrots, sliced
1 lrg. Onion, chopped
1T Jalapeno, minced
1 large Garlic Clove, minced
1/2tsp Black Pepper
1tsp Garlic Powder
1tsp Dried Oregano
1tsp Dried Parsley (1 TBSP if fresh)
1/4tsp Ginger Powder
1.5T Soy Sauce
1/4c Prepared Kikkoman’s Wasabi Sauce (Last hour) + More for serving

Butter Flavor Cooking Spray Crock. Add all, EXCEPT Wasabi Sauce. Cook on low til Peas are done (About 5-8hours). Last 30min.-1hr. add in Wasabi Sauce (I turn my heat to warm at this point). Serve each Bowl with a lil more Wasabi Sauce (Optional).
Notes: Up Wasabi amount, to taste. But, give it time before adding more, as it’ll spread a lil. Wasabi Paste can be used, but, have yet to try. May need to alter Paste amount.

Great for Breakfast or Dessert (As Mock-ffins (Mock Muffins)) You can choose to use Muffin Pan to make Mock-ffins for a Healthy LOW Carb Dessert. Or, use a baking dish! Whatever you want… It doesn’t Matter! Because, you and the kiddos will be DEVOURING these!!!

Eggs (4T Egg Whites (4 Eggs). Or, 3-4 Eggs w/yolks)
1tsp Vanilla Extract
1/2tsp Lemon Juice (Fridge 100% Kind. OPTIONAL!) *SEE NOTES
1-2 Banana, mooshed well
1 Stevia Sweetener Packet (Optional)
Few Each: Strawberries, Blueberries NOT TOO MANY! Enough to taste!

(Optional: Chocolate Chips, Craisins, Peanut Butter, Cherries, Berries, Cocao Powder, etc.)

Moosh Banana!!! Whisk: Eggs, Vanilla, Stevia, Lemon Juice, Bananas. In a Butter Flavor Cooking Sprayed Muffin Pan/Or Baking Dish (As I used), add in Fruits of Choice. Pour Egg Mix over tops. Toss SLIGHTLY! Bake 425 for about 20-25 minutes, til eggs are cooked. Allow to set a few minutes, UNCOVERED!!!

NOTES: I use Lemon Juice for this recipe. May skip if doing a Peanut Butter Recipe. And be careful when mixing TOO MANY things… Eggs can only hold together so much!

1 FROZEN Chicken, Boiled in Broth, Cut up
3T: Red Onions, Red Bell Pepper, grated Cucumber (Opt.)
3-4T Spinach, minced
Sauce:
1 nice ripened Avocado (OPTIONAL!)
1/2c Sour Cream
1tsp Dried Cilantro
1/4tsp Lime (Fridge 100% kind)
1/4 Garlic Powder
1T-2T Fresh Jalapeno, minced (I did 2T)

1tsp Wishbone/Hidden Valley Ranch Dressing Pkt. (Or to taste)

Shredded Cheese (Try Moz. or Mexi/Taco Blend)

Add FROZEN Chicken to a pot with Water and 1-2 crushed Chicken Broth Cube(s). Turn on heat. Bring to Boil til cooked. Allow to set a few minutes in Broth. Cut up.
Mince Vegis. Toss Chicken, Bacon Pieces, and Vegis.
Blend Sauce ingredients. Mix, TO DESIRED CONSISTENCY, with Chicken (I did all). Add to Egg Rolls. Optional to Top with Shredded Cheese. Brown in Butter Flavor Cooking Spray Skillet. OR, Bake in Oven (Sprayed with Butter Spray on both sides). OR, Fry in Oil (Try Coconut Oil)Serve with Salsa and Sour Cream.

Notes: Up, Downsize, or Skip Vegis, to your taste!
Optional to Season Chicken once cooked/cut up (Try Greek Seasoning or 1/2pkt Taco Season)

FREEZER FRIENDLY. Once browned (I use Butter Flavor Cooking Spray), add to plate. Freeze. ONCE FROZEN, add to Freezer Ziploc Bag! ReHeat in Oven or Microwave-Cooks fast!

 * Tay’s Loaded Chicken Bacon Ranch are ONLY about 82 Calories per slice (Brings TAY’s to 164! Lean Cuisine’s Chicken Club = 350!!!  So, enjoy MORE of Tay’s!
 * Tay’s Mushroom Steaks are ONLY about 146 Calories per slice (Brings TAY’s to 292! Lean Cuisine’s Philly = 330!)

Tay’s Loaded Chicken Bacon Ranch:
2 Chicken Breast (Marinade):
1T Vinegar
1tsp McCormick’s Montreal Steak Seasoning
1 Pkt. 0.4 oz. Hidden Valley Buttermilk Ranch

2 Slices Bacon, baked, minced (Or Real Bacon Pieces)
4T Sweet Red Bell Pepper
3T Red Onion
1/2T Jalapeno, minced
1T Dried Tomatoes, chopped small (We skipped)
3-4T Spinach, minced
1/2c Shredd. Cheddar Cheese + 2T Italian 6 Cheese

Butter Flavor Cooking Spray
Garlic Powder and Onion Powder
Optional: Sprinkle lil Butter Powder and Parsley
Low Cal. Loaf (We used French-What we had), sliced thin-ish

Marinade Chicken about 4 hours. Foil line a baking dish. Bake Bacon til crispy. Crumble. Add Marinaded Chicken to Nonstick Pan. Cook til mostly cooked, then, add in rest (Except Cheeses and Loaf, der!). Cook down juices. Set aside to cool.
Thin slice French Loaf. Butter Flavor Cooking Spray each side (Or just bottoms). Sprinkle each side with a lil Garlic Powder and Onion Powder. Once Meat mix is to cool, add in Cheeses. Top each slice with Meat/Cheese mix. Sprinkle tops with Butter Powder and Parsley (Optional). Wrap in Foil. FREEZE (Make sure to freeze face up, til frozen (Few hours), then add to ziploc freezer bag).
Cooking: PREHEAT Oven to 450. Open Foils some (So, tops aren’t touching foils). Bake about 12-15 minutes, or til nice and toasty and melted.

Steak Pork Marinade:
Pesto, Balsamic, Soy Sauce, Salt/Pepper, Lil Mustard Powder. Marinade. Cook, cut up. Prep Loaf/Bread as above states. Add cooked meat. Add on Onions, Dried Tomatoes, Mushrooms + Moz. Cheese. (Adapted from this Recipe).
  – Made Pizza Types: Prep Loaf/Bread as above states. Dried Tomatoes (Or canned Basil Oregano), Turkey Pepperoni, Pizza Toppings, Cheese. (Skip Sauce). Sprinkle tops with Oregano and Grated Parmesan Cheese. Also, a great Pizza Recipe, just cut everything small , to fit: tTt’s Pizza Pie

Add BBQ Chicken to Loaf Slice. Add, Corn, Sweet Bell Peppers, Onions + Shredd. Cheddar Cheese (Bacon Pieces Optional (Turkey Bacon))
  – Alfredo Chicken: Favorite Alfredo (I season my sauce with Garlic, Pepper, minced Onions). Toss Sauce with Cooked Chicken (Can boil frozen Chicken in Broth. Just throw Chicken into Water, THEN, bring to boil til done.). Prep Loaf/Bread as above states. Top Alfredo Chicken onto Loaf Slice. Top with Vegis of Choice (Options: Celery, minced. Broccoli, chopped. Onions, minced. Peas. Carrots, grated. Etc.) + Moz. Cheese and Sprinkle of Grated Parmesan Cheese.

*** LOW CALORIES – LOW CARBOHYDRATES ***

About 2tsp Coconut Oil (Or Butter Spray. More if Frying)

Chicken Marinade
(UP TO 4-5hours):

1.5 lb. Chicken
1 Hidden Valley Buttermilk Ranch PACKET
1 tsp McCormick’s Montreal Steak Seasoning
1T White Vinegar

Shrimp Marinade (UP TO Few hours):
1/2lb. Shrimp (Bell Peppers/Onion Mix, in it’s place)
1tsp TO 1/2T Tony’s Creole Seasoning
1tsp McCormick’s Cajun
1/4tsp Brown Sugar
1/4tsp Chipotle Powder

Toppings: Grated Carrot, minced Celery, minced Red Onion, Avocado Sauce (Recipe Below),

Avocado Sauce:
1 Avocado, mashed
1/2T Mayo
2T Sour Cream
1tsp Lemon Juice
1/2tsp Garlic Powder
1/4tsp Dried Dill Weed
1/4tsp Cumin
1/2tsp Dried Parsley
1/8tsp Sea Salt
1/8tsp Pepper
1/2tsp Dried Cilantro
1/4tsp Dried Oregano
1/2tsp dried Dried Chives
A smidge shy of 1/4tsp Red Pepper Flakes

Marinade Chicken. Diced up.  Marinade Shrimp. (Not a Shrimp Person?: Saute Sweet Bell Peppers and Onions with Shrimp Marinade Ingredients (Can cut back on amounts, if need be).)
Make Sauce: Remove skin and seed, MASH Avocado! Then, I add Sauce Recipe to Blender, blend. Set aside.
In SEPARATE PANS, Heat 1tsp Oil in each, cook Shrimp and Chicken.
Top either: Soft Shells, Buns, Egg Rolls, or Spring Wraps (As we did) with Chicken, 4 Shrimps, grated Vegis (I mix together), and Avocado Sauce. Roll. Cooking Options:

Spring Rolls: Soak each Sheet in Water for about 30 seconds. Top with ingredients. Roll.
Egg Rolls: Top em. Roll em, using water to close ends. Butter Flavor – Cooking Spray Skillet. Brown each side. Sprinkle with Garlic Powder (My favorite way)
OR Bake (Butter Flavor Spraying each side, Bake ABOUT 12-18min., flipping half way thro)
Or Deep Fry.
Tacos/Buns– Top. Add Cheese, Salsa, Sour Cream, if desired. Eat.
Note: OPTIONAL to also add grated Cucumber to Carrots, Onions, Celery.

1 can Tuna in Water, drained
– 1/4tsp McCormick’s Montreal Steak Seasoning
1/2c Crab (Optional)
3/4c Mandarin Oranges
1-2T of REAL Bacon Bits
1/4c Beet, Grated (These can get messy!)
1c Cucumber, matchstick cut
3/4c Red Onions, sliced thin
Grated Parmesan Cheese (Optional, I forgot)
Lettuce/Spinach to desired amount
Seasoned Texas Croutons

Dressing (Premix):
1.5tsp Kikkoman’s Wasabi Sauce
1.5T Balsamic Vinegar
1/2T Soy Sauce
1/4tsp Sesame Oil
1/4tsp Lemon Juice (100% Fridge Kind)
1/2T Extra Virgin Olive Oil
1T Organic Grade B Maple Syrup (Benefits- USE!)
1/16tsp Sea Salt

Drain Tuna. Stir in McCormick’s Montreal Steak Season. Allow to set some and Marinade while prep rest. Premix Sauce, set aside. Cut up Rest (To your desired taste). Toss in Bowl Serve up and drizzle a little Dressing and add a few Croutons. Enjoy!

Tay’s Pizza Sticks

Egg Rolls, halved
Garlic Powder
Grated Parmesan (Store shelf kind)

About handful, or so, Shredd.Cheese (We use Moz. and/or Chedd.)
Turkey Pepperoni, to taste
REAL Bacon Bits/Pieces, to taste
Sprinkle Dried Parsley
Sprinkle Dried Oregano
1-2T Onions

In Blender, blend Bottom 6 Ingredients. I halve Egg Rolls (To make sticks). Top a line, kinda pressing compact, rub edges with Water. Roll, sealing edges. Butter Flavor Cooking Spray Skillet. Heat. Add Sticks, brown all sides. Add to plate, sprinkle both sides with Garlic Powder and Parmesan. Serve with heated Spaghetti Sauce to dip.

Notes: TOPPING Ingredients are Optional. Ideas (1-2T): Black Olives, Sauerkraut, Bell Peppers, Meats (Chicken, Sausage, Turkey Kielbasa, Shrimp, etc), Dipping Sauce (Alfredo, etc.), Banana Peppers, Tomatoes, etc. 

Swiss Shroom Burgers (HEALTHIER Mushroom and Swiss TURKEY Burgers)

AMAZING Flavor!!! And, Healthier than Most. But, you wouldn’t know with it’s FLAVOR!!!

Meat Mixture:
2lb. Turkey Meat (Beef can be used)
1 Mushroom Gravy Packet
1T Worcestershire
1tsp Soy Sauce
1T Green Onions, minced super small
2tsp Dried Parsley
1/2tsp Garlic Powder
1/2tsp Dried Dill Weed
1/2tsp Onion Powder
1/4tsp Sea Salt
1/2tsp Ground Pepper
2-3T Celery, minced

Sauteed Mushroom Topping:
1tsp Extra Virgin Olive Oil or Butter
1 pkg. Baby Bella Mushrooms, chopped
3/4tsp Dried Oregano
1/4tsp Lemon Juice (Fridge 100% kind)
1/4tsp Dried Rosemary, crushed more

– Toppings: Tay’s Balsamic Garlic Sauce (Recipe Here) (<-USE IT!) or Mayo, Swiss Cheese, AND FRIED ONIONS!!!
 Tay’s Redhead Flatbread (Recipe here) or Bun of Choice

Mix Meat Mixture. Allow to marinade about 20 minutes. Form Patties. Cook. Near end add on Swiss Cheese, to melt. Try with Tay’s Balsamic Garlic Sauce (Recipe Here) on Buns. Top with Sauteed Vegis. Then, Fried Onions (Optional, but delicious!).

Cabbage Explode… In my Bowl (EASY Cabbage Roll Soup)

1 Large Head of Cabbage, quarter or eighth
1 lb. Ground Turkey
1/2 lb. Ground Pork Sausage
1 jar Original/Traditional Spaghetti Sauce (Store Brand)
4c Water
2 HerbOx NO Sodium Beef Broth Pkt. (2c worth) *SEE NOTES!
1 Chicken Broth Cube *SEE NOTES!
1 Beef Broth Cube *SEE NOTES!
1 Onion Soup PACKET
3/4tsp McCormick’s Cajun Season
3/4tsp Tony’s Creole Seasoning
1/4tsp Pepper
1 Onion, chopped
1c cooked Rice (Added last 30min-1hr)

Butter Flavor Cooking Spray Crock Pot. Add above, adding COOKED Rice LAST 30min-1 hour. Cook on LOW 6-8 hours.
    * NOTES *: I improvised with what I had on hand with wanting to cut “Some” Sodium, I used a few No Sodium Broth Pkts. in place of Reg. Broth Cubes…
But, my original Recipe was:
2 Chicken Broth Cubes
2 Beef Broth Cubes
1/4c Water (Or more to taste)
+ rest of Ingredients

Just Peachy Sweet Tea Lil Chickies (Sweet Tea Chicken with Peaches, Peppers, and Onions)

Chicken Marinade (4-6 hours):
About 2lbs Chicken Breasts, thawed
1.5T Balsamic Vinegar
1 McCormick’s Grill Master Smoked Sweet Tea Marinade Pkt.

1tsp Fresh Jalapeno, minced
1c (or 1 can, drained) Peaches

Marinade Chicken. Cut into strips, toss back with Marinade. Heat skillet, add in Frozen Vegis, then rest. Cook down juices! Serve alone. Over Rice (Cooked in Chicken Broth). On Sandwiches or Wraps (With Mayo)

1/8tsp Pepper
1/8tsp Mustard Powder
1/4tsp Greek or Italian Season (I did Italian)

Lettuce
Romaine Lettuce
Ham
Dried LESS SUGAR Craisins/Cranberries
Cubed Cheddar Cheese
Red Onions, sliced
Mushrooms, chopped
Canned Basil Oregano Tomatoes, drained well
Sprouts
Cucumber, sliced, quartered

Cut all up to desired consistency. Premix Dressing. Allow to set about 10-20minutes. Drizzle over Salad. A LITTLE GOES A LONG WAY!!!

tTt’s Jalapeno Cheese Beef Stick Snacks (The Best Beef Stick you will EVER have!

THE BEST BEEF STICK I’ve Ever Had! And, I’ve had MANY!!! 
Per pound of Beef (I double batch, but, mix 1 lb. at a time. Then mix all together at the end).

– 1 lb. LEAN Ground Beef (Leaner then better)
– 1 Pkt. Cure/Season Nesco Jerky Season HOT STICK Variety
– 2T Mezzetta Deli SLices HOT Jalapeno Peppers (Jarred untamed Jalapeno slices), minced
– 3T SHARP CHEDDAR Cheese Brick, cubed small
– 2tsp Liquid Hickory Smoke
– 17mm Collagen Skins (Tubing for sticks)

I double batch, BUT, I mix 1 lb. at a time. Then, mix it all together at the end. Stick into your jerky gun. I just did one stick at a time. Got it to length I wanted, cut off, repeat. Lay onto Dehydrator Trays (I did 6 per tray). Dehydrate 8 hours, or so.
You can make into nuggets: Skip skins. Form nuggets and place onto dehydrator and optional to season, well, with Fresh Cracked Pepper. Pepper is tasty!

Texin Mexi Gobblers (Healthier Turkey Burgers with a kick)

1 lb. Ground Turkey Meat
 – Blend together below, then add to meat (Per 1 lb.):
1/4c Sweet Green OR Red Bell Pepper
1/4c Onion
2T Corn
1/4tsp Red Pepper Flakes
1.5tsp Worcesterchire
1/2tsp Garlic Powder
1/4tsp Onion Powder
1/4tsp Chipotle Powder
1/2tsp Paprika
1/4tsp Sea Salt
1/4tsp Black Pepper

Sauce:
1/4c Mayo
1/2tsp Dijon (Optional! House’s split on adding Dijon)
1/2tsp Lemon Juice (Concentrate kind)
1tsp Store Brand Louisiana Hot Sauce
1/2tsp McCormick Cajun Seasoning
2-3 slices Baked Bacon, minced (Or 1-2T Real Bacon Bits)

Toppings
:

PICO DE GALLO! (Don’t skip!)
Cheese, optional (Try Pepperjack)

Bun, Bread, Wrap (Soft Shell, Lettuce Leaf, Flat Bread, etc.) of choice

In blender, blend above ingredients (Bell Pepper thro Black Pepper). Mix into ground Turkey. Form into Patties. Line pan with Foil. Bake about 425 for about 30-35 minutes, til Turkey is done. Last few minutes, I toss on cheese, and cook til melted. On bun of choice (WRAPS WORK GREAT, TOO!), add Sauce, top with Burger/Cheese, then, PICO DE GALLO!!! Eat!
*I was iffy on the sauce… But, it was an AWESOME compliment to the Burger.

Adobo Grilled Chicken and Vegis with Cilantro Lime Rice

We’ve made Adobo Pork Loin over Coconut Rice (With other options on Post). But, this is using same idea, but, with Grilled Vegis and Cilantro Rice. Great Combo of Flavors!
MARINADE is also great for Legs/Bone-In Breasts/Thighs, too!
Eat Adobo Chicken Alone. With Vegi Mix, or with Vegi Mix+Rice, or on Tacos (With Refried Bean Mix, below, is AMAZING!).

Chicken Marinade (About 5-6 hours):
Chicken Breasts, thawed
1/2c Soy Sauce
1/2c Rice Vinegar
4 large Dried Bay Leaves
1T Garlic Powder
1tsp Coriander
1T Dried Chives

1/2tsp Red Pepper Flakes

Grilled Vegis:
Green Pepper(s), sliced
Red Pepper(s), sliced
Onion, sliced
Mushrooms, sliced
(I believe I also added 1 large Garlic Clove, minced)
Little Drizzle of Extra Virgin Olive Oil
Good Shake(s) Dried Oregano

Cilantro Lime Rice:

Instant Rice + Water it calls for
Pinch of Sea Salt
Splash of Lime (Or Lemon)
Few shakes of Dried Cilantro

Place Chicken in Ziploc Bag or Bowl. Marinade 6 hours. BEST ON CHARCOAL GRILL!!!
Vegis- I wrap, well, in Foil. Grill. (((GRILL TIPS BELOW)))
I microwave Rice with Pinch of Sea Salt. Once done, add a Little Splash of Lime and then a few Shakes of Cilantro. Toss. Cover.
Eat Chicken on top of Vegis with few Spoons of Rice.

Or Optional to Make Adobo Tacos:
adobochickentaco– Adobo Chicken, A LITTLE Rice, Vegis, Shredd. Cheese (I used Italian 6 Cheese), Sour Cream (Optional)
ALSO, AMAZING on Tacos with just Adobo Chicken, Shredded Mild Cheddar Cheese, and Our Beans (Refried Beans + 1 can Basil Oregano Tomatoes + Black Beans, drained, 1/2 small Onion- Mix well.)

Grilling Tip: We build a hill in center of grill. Light charcoal (We used Hickory Charcoal). Once coals are ashy grey, they are ready. Place on food, on outside of hill of charcoal. Prop Grill Open, using a Slightly crushed pop can. Chicken: Lay Chicken on outer part of grill (Outside hill). Once Chicken isn’t sticking to grate, so much, it’s ready to flip. Flip once, that’s it. Cook til Thermometer reads correct temp.

Easy TAYjitas (EASY Herb and Garlic Fajitas)

We’ve been doing these for YEARS! This recipe was our first and our most favorite Fajita Recipe!

Marinade (7-8hours):
1c Lawry’s Herb and Garlic Marinade
2-3 Chicken Breasts (From 3lb Freezer Bag, to give idea on size)
(Reserve 1.5T of Marinade from the marinaded chicken)

1.5T Reserved Marinade
Red Pepper
Orange Pepper
Green Pepper
1c Mushrooms
1 med. Onion
1/2c can Southwestern Corn
1 smallish fresh Garlic, minced

Soft Shells (Or Egg Roll Wraps)
Toppings: Salsa, Shredded ITALIAN Cheese (6 Cheese), & Sour Cream

Marinade Chicken with Lawry’s Herb and Garlic Marinade.
Preheat Oven to 450. Butter Flavor Cooking Spray baking dish. Lay in Vegis. Top with Marinaded Chicken. Spoon over about 1.5T of the Marinade. Bake 450 for about 45-1hr. Top onto Shells with Toppings. OPTIONAL, to heat skillet. Spray with Butter Flavor Cooking Spray. Brown all sides of Tacos. Sprinkle LIGHTLY with Garlic Powder.

Top cooked Chicken/Vegis onto shells (I use spatula with holes, to help drain those excess juices). Smear a LITTLE Sour Cream, a LITTLE Salsa. Sprinkle a Little Italian Cheese. Roll up. Lay into a Butter Flavor Cooking Sprayed Baking Dish. Choose One Sauce Topping (Below). Mix Sauce Option with 1/2-1c Shredded Italian Cheese. Top onto Shells. Bake 400 for about 30-35 minutes, uncovered.
Topping Sauce Mix Options:
– 1/2c Vegi Broth, heated up + 1.5T Tomatoes Paste, mixed well
– Or: 1/2c – 1c Salsa
– Or: Favorite Enchilada Sauce (Try Green!)
Mix with: 1/2-1c Shredd. Italian Cheese

Tay’s Thai Buffalos (Quick Easy Sweet and Spicy Sauce – Chicken Legs, Chicken Breasts, Dipping Sauce, etc.)

A GREAT Wing/Leg Sauce! Cooked Chicken Sauce. Or Dipping Sauce… Endless Options, for this EASY TO MAKE Recipe.

Optional Chicken Marinade (1-4 hours- Optional! I’ve also done Brush White Vinegar + Good Sprinkle McCormick’s Steak Seasoning-Marinade 1hr.):
1/2c Coconut Milk
1tsp TO 1T Lemon Juice (Fridge Concentrate Kind)
1/4tsp Red Pepper Flakes
1/8tsp Sea Salt (Or to desire)

– TAY’s Thai Buffalo Sauce (Just equal parts of 2 ingredients!):
1/4c Louisiana Hot Sauce (Store Brand!)
1/4c Sweet Thai Chili Sauce

Marinading is optional. Depends on my laziness. Tastes great both ways.
– Cook Wings (Best on Charcoal Grill). Toss with Sauce.
Easy Breezy: NO MARINADING! Boil Chicken (With ONLY enough water to cook it). Once done, drain well. Pour Sauce over.
– Cut up Chicken, Cook in Skillet, Top with Sauce. Eat! Alone. over Rice, or Vegis.
– Use as dipping sauce for Moz. Sticks, Wings, Egg Rolls, etc.

Tay’s Sweet N Spicy Salsa (Jalapeno!)

This Salsa is AMAZINGLY DELICIOUS! Tacos, Chips, Right Out of the Jar… Doesn’t matter. This is your PERFECT FIT for every Salsa need!

4c Tomatoes *See notes
3c Jalapeno, deseeded/gutted
1c Onions
1-1.5c Bell Pepper ( I use 1/2c Grn + 1c Sweet Mini Bells)
4 LARGE Garlic Cloves, minced
1c Apple Cider Vinegar
1/2 of 6oz. can Tomato Paste
2tsp Pickling Salt
3-4T White Sugar (I used 3T!)
2tsp dried Oregano
2tsp dried Cilantro
1/2tsp Cumin
1.5T Paprika
1T Coriander

Optional: Per jar, 1/2 Cayenne (Deseeded) OR 1/4tsp Jalapeno Seeds

Makes 3 jars.
Either, Bring above ingredients to a boil. Then, simmer 30 minutes, covering first 5-10min. Then, uncovered rest of way. Serve for Parties… Or:
Tay’s prep:

Bring water to boil. Boil whole Tomatoes for about 30seconds. Remove and place, immediately, into COLD COLD water. Skin should just come right off.
Chop up tomatoes. I cut onto plate, lifted tomatoes with fingers, then place into salsa cooking pot… Ridding of excess tomato juices.
Bring above ingredients to a boil. Then, simmer 30 minutes, covering first 5 -10min. Then, uncovered rest of way.
In clean jars (Wash and boil jars/lids/seals, set on paper towel. DRY all completely), fill to about an inch below top of jars. Place on seal, then twist on rings. Not too, too tight. Just firm enough.
Bring water bath to boil. Boil in water bath for 12-14minutes. Shut off heat, and leave for about 5min. Place on paper towels for a minute or 2, checking they are twisted snug, not tight, but snug (Careful, it’s hot!). Then, turn upside down and keep them upside down til cool. (Upside down tip was given to me by a Farmer at Fleet Farm. Says it ensured his sealing, Update… Since this method, it’s been 100% sealing thus far!).

*Notes: I used a variety of types of tomatoes from the garden. Even a few
Yellow Tomatoes! You can lessen sweetness by lessening to 3T of Sugar. TO UP HEAT… Add a half of Cayenne Pepper,  halfed long way. OR, Jalapeno Seeds (I do 1/4tsp Seeds per jar). Just add either to jar prior to pouring cooked salsa in.

My husband likes his extra spicy. Cuts sugar to 2.5T. Adds to each jar: Sliver of Ghost Pepper and adds 1/4tsp Jalapeno Seed and 1/4tsp, or so, of Red Pepper Flakes.

Smokedy Smoked Smoke Fish

TWO Recipes! Both offering Different Flavors, yet pretty equally Delicious! MANY ways to eat these- Ideas below!

* Smoke Recipe #1 Trailer Trash’s Catch on the Smoke
(Spicy-Mild to the tTt, tho!)

2lb Fish (We used Tilapia)
1/2c Honey
Brine (2hours):
1c Sugar
1/2c Sea Salt (Use Sea Salt)
4c Water
Season:
1T Sea Salt
1T Pepper
1.5tsp Cayenne Powder (Or Cajun, or half half)

Brine for 2 hours. Pat dry with paper towels. Extra Virgin Olive Oil foiled trays. Lay on Fish. Spread with thin layer of Honey, on top of each fish. Season well with Season Mix. DO THAT BEFORE SMOKING! Rest of Smoker/Other instructions Below!


* Smoke Recipe #2 Tay’s Catch on the Smoke

2lb Fish (We used Tilapia)
Marinade:

1c Soy Sauce
1T Sesame Oil
1T Wasabi Paste
1/2tsp Pepper
1/2tsp Garlic Powder
1tsp Sea Salt
1/2tsp Brown Sugar, or more (Optional- I skipped! And, used Glaze.)

Glaze (Last 30minutes):
1/2c Orange Marmalade
1/4tsp Orange Peel
1/4tsp Ginger
1tsp Lemon Juice

Marinade Fish. Pat Dry. Smoke (More instructions Below). Last 30 minutes of smoking, apply good amount of glaze to tops of fish. (Glaze Optional. Can skip and add Brown Sugar to Marinade. Candied Fish uses a good amount of Brown Sugar and Maple Syrup/Molasses. Try 1/4c each. Optional, to up Sea Salt.)

Smoker/Other Instructions:
Marinade/Brine Fish 2hrs. We used Charcoal Smoker with Hickory Chips for smoking. We did add water to the water compartment, in the smoker.
Heat smoker to 200-225. Add in chips when temp gets pretty close (I also throw a few on charcoal).
Cover Smoker’s grate shelves with Foil. Brush Extra Virgin Olive Oil onto the foil.
Once done marinading, pat dry fish with paper towels. Once smoker is heated to Temp… Place fish onto foil, rub to get the bottoms covered with Extra Virgin Olive Oil. (Recipe #1– Add Honey and Seasons before smoking)
Smoke 2 hours, til flakes. I think 2hrs at 200-225 is key. (Glaze Recipe (#2): Glob on glaze last 30 minutes of smoking)
To make a More Jerky type for GREAT Snacking… Add to a Dehydrator for a few hours, AFTER smoking!  Store in container in fridge.
BEST FLAVOR is AFTER it SITS for TWO DAY!!!
If freezing: Allow to set, stored, in fridge for 3days, THEN FREEZE.

***Ideas for Smoked Fish***:
– Quick Snack Bites
– Serve over Rice and Vegis as meal.
– Serve some (A LITTLE goes a LONG way) on Soft Shell with: Miracle Whip, Cherry Tomatoes (Halved/Quartered), Shredded Moz. Cheese, Grated Parmesan Cheese (Store shelf kind)– I melt Moz. Cheese.
– SERVE AS APPETIZER:
– On Crackers (I like Unsalted Saltines, any work)
– On toothpick- Fish Chunk, Cherry Tomato (Quartered/Halved- ROLL IN Grated Parmesan Cheese!), then THIN slice of Mozzarella Cheese.

BLT Pizza (Bacon Lotta-Spinach Tomato Pizza)

LOW CALORIES LOW CARBS

1/2c Bacon Ends, cut up
1c Sweet Cherry Tomatoes, halved
1c packed Spinach, rough chop
1/2 of Onion, sliced thin
1T FRESH Garlic, minced
1/2tsp Dried Parsley
1tsp Dried Oregano

Thin Crust

Shredd. Moz. Cheese
Grated Parmesan Cheese (Store shelf kind)

Heat skillet to sizzle. Add bacon ends on med. high heat. Cook some. Add in tomatoes and then the rest. Cook some. Bring to simmer. Cover cook about 6minutes. Stir. Cook more, if needed (Cook down juice some).
BARELY brush bottom of crust and outer top of crust with EVOO. Add Bacon Mix. Spread around. Top with Moz. Cheese. Sprinkle with Parm. Cheese, getting the outer crust well, too. Bake according to directions.

Healthify this with Turkey Bacon, WILL NOT BE AS TASTY… And, not sure if you would need a tiny drizzle of Extra Virgin Olive Oil to cook Turkey Bacon.
YOU COULD VERY WELL SERVE BACON MIX OVER COOKED CHICKEN!

Mock Buff Pie Hole Stuffer (Mock Buffalo Chicken Pizza – NO MEAT!)

MEAT-LESS, But, You Wouldn’t CARE! Healthier Game Day Recipe

Sauce
2T Ken’s Ranch Dressing
1/4tsp Garlic Powder
1/16tsp Sea Salt
1/8tsp Pepper

Buffalo Cauliflower
A lil under 1/2 Frozen Bag Chopped Cauliflower
– Sprinkle Sea Salt (Optional)
– Sprinkle Grated Parmesan Cheese (Store Shelf Kind)
– Light Sprinkle Paprika (Optional)
– Sprinkle Pepper or Light Sprinkle McCormicks Montreal Steak Season
Buffalo Sauce:
2T Buffalo Sauce (We use store brand, NOT FRANK’S)
2T Louisiana Sauce
1/3T Butter (Optional. I will skip next time!!!)

Toppings:
Celery, cut 1/3 long way, then minced (To desired Amount)
Red Onions, sliced (To desired Amount)
Jalapeno, mincedBARELY, a few spaced evenly
Shredded. Moz. Cheese (Or Cheese of Choice)
Another Sprinkle Parmesan Cheese

For Cauliflower, I Butter Flavored Cooking Sprayed pan. Lay ouy Cauliflower. Season LIGHTLY with Sea Salt, Grated Parm., Pepper, Paprika. Bake. (You can very well microwave, or cook in skillet, and toss with seasons. I liked baking.). Toss Cauliflower with Buffalo Sauce.
I brush, LIGHTLY/BARELY, outer crust of upper crust, then entire bottom with Extra Virgin Olive Oil. Brush Ranch Sauce on top. Lay on desired amount of Buffalo Cauliflower. Add toppings. Cheese. Then Sprinkle a little Parm. Cheese (Be sure to sprinkle around outer crust!). Bake according to directions (I do minimal time, if that).

Optional to sprinkle crumbled Blue Cheese on top. Or serve Blue Cheese Dressing on side. A little Grated Carrot, as topping, is optional, as well.

Rice Noodles and Vegis served with side of Masala Potatoes

Considered Vegetarian AND Vegan… But, you wouldn’t know the difference. This is a HOUSEHOLD FAVORITE in a home of MEAT LOVERS! This stems from a PETA Recipe.
Low Carbohydrates Low Calories

1 Pkg. Frozen Japanese Style Vegis
1 Garlic Clove, minced
1.5T Sesame Seed Oil

Sauce:
1/4c Thai Sweet Chili Sauce
1/4c canned Coconut Milk
2T Soy Sauce

Noodles:
About 5-6 oz. Rice Noodles
3.5c Water
2 Vegi broth Cubes (2c worth!)
Squirt of Sesame Oil

Mix sauce. Set aside.
Noodle Prep: Add 3.5c Water to pan WITH crushed Vegi Broth Cube(s). Allow to boil minute til all’s dissolved. Add in noodles. SHUT OFF HEAT immediately. Cover and allow to set 8-10 minutes.
In another skillet, heat. Add in Sesame Oil. Add in Japanese Style Vegis and Garlic. Sautee a bit. Add in sauce. Simmer a few minutes.
Once time’s up on noodles. Drain.
Add noodles into sauce and vegis, TO DESIRED AMOUNT.

Served with Masala Fingerling Potatoes:
Fingerling Potatoes
1T Sesame Seed Oil

1/8tsp – 1/4tsp Sea Salt
1/4tsp Curry
1/8tsp Ginger
1/8tsp Garam Masala
1/2tsp Garlic Powder
1tsp Dried Parsley

Microwave Fingerling Potatoes for about 3-4 minutes, COVERED. Mix Potatoes with Oil. Add in Seasons and mix well. Bake in preheated oven for about 20-25minutes.

Ballsy Balls (Balsamic Meatballs with Spinach and Vegetables)

Meatballs:
2lb Lean Beef
2 Eggs
1/3c Shredd. Mozzarella Cheese,  minced
Mix below 7 ingredients and then add to above:
3T Balsamic Vinegar
3T Soy Sauce
1.5tsp Red Wine Vinegar
1/4tsp Sea Salt
3/4tsp McCormick’s Montreal Steak Seasoning
1.5T Mayo
1.5T Grated Parmesan Cheese

1T Extra Virgin Olive Oil
1 bag Spinach (At LEAST 4c)
1/4 large Red Onion
2c Mushrooms, or more to taste
1/2 Red Bell Pepper, or more to taste
1c WHOLE Cherry Tomatoes

Mix/Form Meatballs.
In a pan that’ll fit it all…Heat. Add Oil. Brown Meatballs, about 4 minutes on each side.
Top with Vegis, Spinach on way top. Cover. Simmer about 8-10 minutes. CAREFULLY, place a few Meatballs onto top, from bottom (Pretty much a slight mix… You don’t want to ruin meatball forms. Just enough to get some of those vegis down into it.). Simmer another 15-20minutes. Then, cook, uncovered,  15 minutes at a higher heat (This helps to cook down the liquid some.).

Notes: You can up the amounts of vegis.
I used Mayo. Milk or Sour Cream may work. Tho, I have yet to try.
Many stems-offs from this recipe. Adding sauce with noodles, etc.

Ol’ Rolls (Old Fashion Cabbage Rolls)

Meat Mixture:
2 lb. Turkey Meat *See Notes
1 Egg
3/4 small Onion
1 Celery, halved long way & sliced
1T+ 1tsp Worcesterchire
3/4tsp Lemon Juice (Fridge concentrate kind)
1T dried Parsley
3/4tsp Garlic Powder
1/4tsp Sea Salt
1/4tsp Celery Salt
1/4tsp Black Pepper
1/2tsp Paprika
1/4tsp Onion Powder
1T Grated Parmesan Cheese (Store shelf kind)
1/2c UNCOOKED Rice

Sauce:
1 can Tomato Soup, undiluted
1c Water
1 Beef Broth Cube, crushed
1/4tsp Red Pepper Flakes

Mix all meat ingredients, WELL, adding Rice in last. Allow to set about 15 minutes, before rolling.
Prep Cabbage Leaves for Rolling: I cut off stem. Bring Water to boil. Add in head of cabbage. After about a minute or 2, the leaves are bendable enough to roll. Carefully, peel each leaf off.
Form handful logs of Meat Mixture. Roll in Cabbage Leaves (I start opposite side of stem, easier.).
Lay into Butter Flavored Cooking Sprayed Baking Dish.
Top with Sauce. Cover with Foil.
Bake in preheated oven, at 425, for about 45 minutes. I allow to sit a minute, before serving.

Optional: Add a few Tablespoons of Sauce Mix to the Meat Mix. I didn’t.
*Notes: Lean Beef may work. Half Pork Half Beef, may work. I have yet to try either, to cut calories. Above was tasty, as is, but your option.
