tTt’s SUPER HEALTHY and BENEFICIAL Cabbage N Spinach w/ Mushrooms

1 Head of Cabbage
1 bag Frozen Spinach
16 oz. Pkg. Mushrooms, whole
1.5T Hot Chili Oil
6c Water
6 Chicken Broth Cubes
1 Jalapeno, deseeded, minced
1/2tsp McCormick’s Chinese 5 Spice Season

Add all to Pot. Cover. Cook in Oven at 400, til Cabbage is nice and soft. I like mine soggy.

Delicately Dressed Chicks (Deliciously Amazing Marinaded Chicken w/ Peach N Apple Topping)

Lower Calories Lower Carbohydrates!

Chicken Breasts, thawed (I halve)
A few Cherry Tomatoes, halved (Topping- Optional)

Chicken Marinade (6-8 hours):
3T Soy Sauce
5T Apple Juice
1tsp Sesame Oil
1/4tsp Ginger Powder
1/2tsp Garlic Powder
1/8tsp Red Pepper Flakes
1/4tsp + 1/16tsp McCormick’s Garam Masala Season (DON’T SKIP)

Peachy Apple Topping/Salsa:
1 Apple, cubed small (I leave skin- Beneficial)
1 Peach, cube small (I leave skin- Beneficial)
Few drops of Lemon Juice
1/3c Red Onion, chop small
2T Sour Cream
1/4tsp Curry Powder (DON’T SKIP)

I halve each chicken breast. Marinade 6-8 hours (At LEAST 6hrs.).
No more than 30-40minutes prior to serving, make Topping. Place in fridge til use (Warm at serving, if like). Heat skillet. Cook chicken. Top with topping. A FEW Cherry Tomatoes are optional (I prefer without.).

Notes:
You can amp salsa with 1T Raisins, if you’d like.

And/Or Spinach *See Notes
Options of:
Maraschino Cherries, drained
Pineapple, drained
Apples, diced small
Canned Cranberry Sauce
Cherry Tomatoes, halved
Onions, minced
Sweet Peppers (Orange, Red, Green, Yellow), chopped small
Peas
Carrot, grated!
Sweet Pea Pods, cut small
Mushrooms, minced!
Turkey Bacon, crisped and crumbled
Crab Meat, cut up small
Boiled Eggs, sliced or minced
Grated Parmesan
Texas Toast Croutons

Dressing:
Western Salad Dressing
1-2 Bananas, mashed

Mix the dressing ingredients well. Top a over salad. Toss till all’s coated nicely. I use ALL above except I may pick only a few of the fruit sometimes, whatever’s on hand. Also Peas over pea pods, most times. They LOVE the dressing!
*Notes: You can mince up spinach to get them to eat it. Usually big chunks steer kids away. Mincing sneaks nutrition in.
