

Alfredo Mocksagna
Zucchini, sliced long way (You can use reg. lasagna noodles)
About 2 jars of Favorite Alfredo Sauce
About 3-4 sm. Chicken Breasts (Boiled, shred, seasoned with Garlic Powder, Onion Powder, Parsley)
2 Garlic Cloves, minced
1 Onion, chopped
Broccoli (Or Spinach)
Mozzarella Shredded Cheese
Grated Parmesan Cheese (I use fridge kind in container. Don’t skip this!)
Course Black Pepper
Boil Chicken, season, shred. Preheat oven about 350. In skillet cook garlic, onions, add in sauce. Stir frequently til flavors blend. Butter pan. Spread lightly sauce on bottom. Single layer zucchini slices, top with sauce, then shredded chicken, then broccoli, then Moz. cheese, then sprinkle Parm. cheese on top. Repeat starting with zucchini. Make sure you end with cheese as last layer. On very top add a few broccoli pieces, shredded or cut up. Then sprinkle a little pepper. Bake about 350 til done. BROIL at very end to brown cheese on top.
*There are options to this, like shrimp (Cook in with sauce). Or mushroom. Even spinach (Either layer on, or chop small 1c and mix with shredded chicken) Etc. Also, the only pics I had, I used not as much cheese as I usually do.
Good Ol’ Lasagna


1-2 jars Favorite Spaghetti Sauce
1 lb Ground beef, cooked. Seasoned with Onion Powder, Garlic Powder, Oregano, Parsley, and Pepper.
1 Green Pepper, chopped
1 Onion, chopped
2 Garlic Clove, minced
1 14oz Can Tomatoes, drained
Zucchini, sliced long way (You can use reg. lasagna noodles)
Mozzarella Shredded Cheese
Parmesan Grated Cheese (I use fridge kind in container. Don’t skip this!)

Brown Meat with season along way. Preheat Oven about 350. Add to pan with sauce, green pepper, onion, garlic, drained tomatoes, green pepper. Cook til vegis are tender. Butter spray lasagna pan (We use small pan, serve with salad). Layer meat and sauce mixture on bottom. Top with Zucchini slices, top with nice amount meat and sauce mixture, top nice amount of Moz. cheese, sprinkle nice amount of Parm. cheese, repeat til cheese is last and pan is filled. Sprinkle with pepper. Bake til done. Broil to brown top cheese. Allow to cool some.
*NOTE- If sauce is too watery (Depending on sauce used), add in half of tiny can of paste to sauce meat mixture! Also, on top each layer you can sprinkle A LIL mild cheddar cheese, if you’d like.
YOU CAN CHOOSE TO USE LASAGNA NOODLES, AS WELL.
