Green Goddess Salad Dressing

1/2c Sour Cream
4T Mayo
1T Lemon Juice
1 Avocado
2T Green Chives
1 Med./Lrg. Garlic Clove
3 Anchovies (From can)
2T Dried Parsley
1/4tsp Pepper
1/8tsp Sea Salt

Easy HEALTHIER Banana Chocolate Chip Ice Cream

A Healthier Go-To for a Sweet Tooth Fix! We’ve seen the Banana Ice cream Idea before. Wanting to amp this up, with the kiddos, we came to this recipe:

4-5 Ripe Bananas (I believe we did 4…?)
Up to 1/2tsp Vanilla Extract
1T Honey
1tsp Cocoa/Cocao Powder

Chocolate Chips

In blender, blend Bananas, Vanilla, honey, Cocoa. BUTTER FLAVOR (Or, Organic Coconut Oil Spray) a Muffin Pan. Pour blended ingredients into pan. Sprinkle tops with Chocolate Chips (I press down a little, so they freeze into it and aren’t loose). Place into freezer. Once COMPLETELY frozen, you can remove and place all into 1 Freezer Friendly Ziploc Bag. Enjoy.

Tay’s HEALTHIER Loaded Sweet Tater Fries

“Sweet potatoes are high in Vitamin A, B5, B6, Thiamin, Niacin, Riboflavin, Antioxidants, Potassium. They’re Fat-Free, relatively Low in Sodium, High in Fiber, and have Fewer Calories than White Potatoes.” 

Sweet Potatoes, cut to fry desire
1/2T Extra Virgin Olive Oil
Fry Season (Recipe Below)
1 lb. LEAN Ground Turkey Meat
1/2 lb. Chorizo (Or more Turkey Meat)
1 Taco Season Pkt.
1 can S&W Chili Seasoned Pinto Beans, undrained
3T Water

Toppings: Shredded Cheese (Reduced Fat), tTt’s Pico de Gallo (Or Salsa), Sour Cream, Jalapeno, Lettuce, Onions (Or Toppings of Choice)

Preheat Oven. In ziploc bag, toss Sweet Potato Fries with Oil. (Reserve about 1/2tsp Fry Season for Post-Cooking Seasoning.). Sprinkle in half the Fry Season, toss. Sprinkle rest, toss. Dump onto Butter Flavor Cooking Sprayed Baking Dish. Bake 450 for 20-30 minutes.
In skillet, cook Turkey Meat and Chorizo. Add in Chili Beans, Taco Season, and Water. Simmer a few minutes, or til cooked down.
Top Fries with Toppings of Choice.

Fry Season:
2tsp Paprika
1tsp Chili Powder
1tsp Cumin
2tsp Onion Flakes (Or 1/2-1tsp Onion Powder)
1tsp Garlic Powder
1/8-1/4tsp Cayenne Powder (I did about 1/4tsp)
1/2tsp Sea Salt (Or to taste. Optional)

Optional: Use Refried Beans or Favorite Chili (Or Both) in place of Chili Pinto Beans (That’s a Boat Load!).
Tater Tots, Fries, etc. in place of Sweet Potatoes (They have Store Bought Sweet Potato Fries/Tots, some already seasoned!).

Texin Mexi Gobblers (Healthier Turkey Burgers with a kick)

1 lb. Ground Turkey Meat
 – Blend together below, then add to meat (Per 1 lb.):
1/4c Sweet Green OR Red Bell Pepper
1/4c Onion
2T Corn
1/4tsp Red Pepper Flakes
1.5tsp Worcesterchire
1/2tsp Garlic Powder
1/4tsp Onion Powder
1/4tsp Chipotle Powder
1/2tsp Paprika
1/4tsp Sea Salt
1/4tsp Black Pepper

Sauce:
1/4c Mayo
1/2tsp Dijon (Optional! House’s split on adding Dijon)
1/2tsp Lemon Juice (Concentrate kind)
1tsp Store Brand Louisiana Hot Sauce
1/2tsp McCormick Cajun Seasoning
2-3 slices Baked Bacon, minced (Or 1-2T Real Bacon Bits)

Toppings
:

PICO DE GALLO! (Don’t skip!)
Cheese, optional (Try Pepperjack)

Bun, Bread, Wrap (Soft Shell, Lettuce Leaf, Flat Bread, etc.) of choice

In blender, blend above ingredients (Bell Pepper thro Black Pepper). Mix into ground Turkey. Form into Patties. Line pan with Foil. Bake about 425 for about 30-35 minutes, til Turkey is done. Last few minutes, I toss on cheese, and cook til melted. On bun of choice (WRAPS WORK GREAT, TOO!), add Sauce, top with Burger/Cheese, then, PICO DE GALLO!!! Eat!
*I was iffy on the sauce… But, it was an AWESOME compliment to the Burger.

Healthified Chorizo and Potato Tacos (Healthier)

Soft Shells

1 lb Ground Turkey
1/2 lb Chorizo
1 large Dried Bay Leaf
1tsp Garlic, minced
1tsp Taco Season (From Packet or Homemade Recipe)
Potatoes:
6 Red Potatoes, diced
1tsp Grated Parmesan Cheese (Store shelf kind)
1tsp Dried Oregano
1tsp Dried Basil
1/2tsp Garlic Powder
1tsp Dried Parsley
1/8tsp Sea Salt
1/8tsp Black Pepper
1/8tsp Red Pepper Flakes

Toppings (All Optional): Shredded Cheese, Sunny Side Up Egg (Or Cheesy Scrambled), Queso, Mexicana Crema or Sour Cream.
(I just used Chorizo Mix, Potatoes, Shredded Cheese, With and/or Without Egg. House was torn on which was best: With/Without egg, but both are GREAT!)

Directions
:

Cut Red Potatoes. Add to ziploc bag, season, and mix. Bake til done.
Cook Meats with Seasons and minced Garlic (Remove Bay Leaf prior to rolling). Top with Toppings of Choice. Roll. Butter Flavor Cooking Spray Skillet. Brown each side. Sprinkle LIGHTLY with Garlic Powder (Or Garlic Salt- I use Powder).

Note: You can use Other Potato Options, too. Seasoned Southwestern diced Potatoes, Hashbrowns, Tater Tots, etc. Above is best!

Seasoned Tomato Slices

ENDLESS Uses for These! (Photo is of Pre-Cooked)

Tomatoes, sliced (Any works, Cherry Tomatoes are great, too!)
Lemon Juice (Fridge Concentrate Kind)
Extra Virgin Olive Oil
Sprinkle with:
Sea salt (Lightly)
Garlic Powder
Fresh Basil, minced
Dried Oregano
Dried Parsley

Slice Tomatoes, thickish.
Start with one side. LIGHTLY/Barely, brush on Lemon Juice, then Olive Oil. Season with Seasons.
Flip. LIGHTLY/Barely, brush on Lemon Juice, then Olive Oil. Season with Seasons.
Marinade about 20 minutes, in fridge, prior to use.

OPTIONAL: Onion Powder.

A Few of their MANY Uses:
– Eat Alone… Or:
– Dehydrate! – YUM!
– Use as replacement for Tomato Based Sauces (Spaghetti, Pizza, etc.)
Top pizza crust with cheese and toppings, SKIPPING pizza sauce. Top with tomato slices. Sprinkle Grated Parm. Cheese. Bake.
– Top slices with Moz. Cheese and sprinkle of Grated Parm. Cheese. Top with Pizza Toppings (Pepperoni, peppers, onions, etc.). Bake.
– Top over Dishes. Pasta dishes, topped with cheese, then Tomato Slices, then Parm. Cheese. Bake.
– Mix bread crumbs, minced Spinach, and Parm. Cheese. Top over tomatoes. Bake. Serve with warmed sauce of choice (Like Butter Sauce. Alfredo. Spaghetti with vegis. Etc.)
– Top over marinaded Chicken. Bake.
– Top over Noodles cooked in broth. Toss noddles with: A lil Olive Oil. Minced Spinach. Seasons of Choice. Serve with lots of Tomato Slices.

Chilied Muff N’ Weiners (Healthier Chili Corn Dogs)

Healthier Corn Dogs
1 package of Jiffy Corn Bread (Flavored Cornbread can be used!)
1 Egg (Per Jiffy Instructions)
1/3c Milk (Per Jiffy Instructions)
3/4tsp Plain Ol’ Mustard
1/4c Shredded Cheddar Cheese
1T Real Bacon Bit
1/4tsp Cumin
1/4tsp Garlic
1/4tsp Chili Powder
1/16 – 1/8tsp Sea Salt
1c + 1/3c Weinies, sliced into 1/3s (OR Cheesy Meat Link/Brats, cut small) *SEE NOTES
Toppings:
Ketchup
Chili of Choice (I used canned)
Shredded Cheddar Cheese

Blend first 3 ingredients. Add in rest, stir up some more. Lightly Butter Muffin Pan (Or spray). Fill each 2/3 way. Bake according to instructions Top each with good squirt of Ketchup, then Chili, then Cheese. Topping with Frito Chips is optional, as well.

*Make it healthier with Turkey Weiners.
Also, Baked Bacon can be used.
Cheesy Sausage/Brat/Kielbasa Link can be used and cut smaller! OR COOKED CHORIZO!!!

Cherry Poppers (Cherry Cream Cheese Rolls)

1 can Cherry Pie Filling
10oz jar Maraschino cherries, destemed, drained *SEE NOTES
1 pkg. Low Fat Cream Cheese
1 Snack Pack Vanilla Pudding
1/8tsp Vanilla Extract
Egg Rolls
Powder Sugar
Coconut Oil

Cream together cream cheese, vanilla pudding, and vanilla extract. In another bowl, mix together cherries and pie filling. Put a nice line of cream cheese mixture onto eggroll, top with cherry filling mix. Wet edges. Roll. Heat Skillet with Coconut Oil. Brown all sides. Place onto plate and sprinkle powder sugar.
Made about 12-15 rolls. To freeze, lay separated on plate sprayed with cooking spray, freeze, toss into freezer bag.
*Notes: I did this with just filling, there wasn’t enough fruit. I had those cherries on hand. YOU CAN CHOOSE TO USE FRESH FRUIT, as well! Try Strawberry Pie Filling with Strawberries. Peach Pie Filling with Peaches, topped with ICE CREAM! Or Whip Cream. I always have leftover cream cheese mixture, use on bagels.

Sicko’s Soup (Cabbage Soup. GREAT for Sickness)

Had someone sick. Wanting to get something warm down their throat, I wanted to make our other version of Cabbage Soup, or Chicken Noodle. But, having to do with what was on hand. I improvised, and used whatever we had and using things that were beneficial in with it… Spinach, Cabbage, Ginger, Garlic, and Cayenne. With digestion help, antioxidant help, the warmth on throat, and other benefits. My improvising created something pretty tasty.

1/2 lb Turkey Smoked Sausage Link, sliced
2 Frozen Chicken Breasts
1c Water + 1 Chicken Broth Cube
2 cans PROGRESSO CLASSIC Tomato Soup
1 can Light Kidney Beans, drained
2 cans Diced Basil Oregano Tomatoes, entire can
1/8 tsp Onion Powder
1/8 tsp Garlic Powder
1/8 to 1/4 tsp Cayenne Powder (I used 1/4)
1/4 tsp Ginger Powder
1/2 tsp Ground Mustard Powder
1/2 Tablespoon Paprika
2 tsp Soy Sauce
2 Garlic Cloves, minced (Or 1 large)
1 large Onion, Cut large
1 small Carrot, grated
1 SMALL Head of Cabbage, cut into chunks
1 cup Spinach, chopped

Spray Crock with Butter Flavored Cooking Spray. Add all ingredients. Cook on low 4-6 hours.
