Habanero Mango Chicken Fajitas

Chicken Marinade (Or Shrimp):
1T Olive Oil
2T Lime Juice (Concentrate kind)
3T McCormick’s Culinary Circle Habanero Mango Season
1.5tsp Chili Powder
1tsp Onion Powder
Optional: Minced Fresh Garlic

Cilantro Lime Rice:
1.5c Instant Rice
1 crushed Chicken Broth Cube
Water Rice calls for
Splash of Lime
Good shake of Cilantro
I microwave, covered, according to directions.

Green Giant Steamers Honey Roasted Sweet Corn
Red Peppers, sautee in Oil and Dried Oregano
  Other Toppings: Habanero Mango Salsa, Sour Cream, Cheese, Sweet Red Onions, Lettuce, Garlic Powder OR Garlic Salt

Marinade Chicken. Cook in skillet. Cut up, add back to pan with juices, cook down.
Microwave rice. Top all onto shells. Roll. Butter Flavor Cooking Spray skillet and all sides of Burritos. Brown each side. Sprinkle with Garlic Powder OR Garlic Salt. Serve with More Salsa and Sour Cream.

Squaking Tacos with Haba-Pineapple Salsa (Chicken Tacos with Habanero Pineapple Salsa)

AMAZING! A NEW FAVORITE TACO in this house! Don’t skip out on any ingredients or it’s marinading! Also, don’t let the Habanero scare you… It’s not that hot. Kiddos ate it!

Chicken Marinade:
2tsp Cumin
1/2tsp Chili Powder
1/8tsp Pepper
1/4tsp Sea Salt
2tsp Rice Vinegar
1T Extra Virgin Olive Oil
1/2tsp Garlic Powder
2T Lemon or Lime Juice (Concentrate) (I think I did Lemon!)*
1tsp Honey

Habanero Pineapple Salsa:
3 Roma Tomatoes, deseeded gutted, chop small
2T Pineapple Preserve
1T Lemon Juice (Concentrate kind)
1T Louisiana Hot Sauce
1T White Vinegar
1/2c Red Onion
1 Red Pepper
1/2c canned Pineapple Rings in juice, cut smaller
1/8tsp Sea Salt
1/4tsp Garlic Powder
1tsp FRESH Cilantro + 1/2tsp DRIED Cilantro
1tsp, packed, Habanero, minced*

PREMAKE Salsa about 8 hours prior to cooking, allowing to marinade.
Marinade chicken 8 hours, as well.
BEST ON CHARCOAL GRILL!!! Grill chicken. Serve on Taco Shells with Habanero Pineapple Salsa, Italian Shredded Cheese. Sour Cream or Crema Mexicana is optional.

*Notes: Use gloves for Habanero mincing. MAKE sure you premake salsa 8 hours prior!!! When I first tried it, I thought it was Ehhh… After marinading- WOW!

Haba-Pineapple Sauce (Habanero Pineapple Sauce / Wings)

Sweet and Spicy Wings
BEST SWEET & SPICY Sauce! Better than Dominos Habanero Mango Wings!

1tsp fresh Habanero, minced (Use gloves)
1/3c Pineapple Preserve
1/4c Louisiana Hot Sauce
1/2T Butter, softened/melted
1/2tsp Chili Powder
1/2tsp Garlic Powder
1/4tsp Onion Powder

Mix Sauce. Allow to set some. Use as sauce. Top over/ cook with chicken. Endless ideas.
Wings: BEST ON GRILL!!! Grill wings. Add to bowl, add sauce. Toss. Enjoy.

Peach, Mango, etc. Preserve can be used… But, I had Pineapple from another recipe, so used that. Won’t look back… Very delicious!

2 lb. Bag of SWEET MINI Peppers (Orange Red Yellow mix)
4-8 Habaneros (We did 8, we will cut back to 4)
Handful of Cayenne
1 tray worth Jalapeno

Deseed sweet peppers. You can choose to deseed others, I left them in. Place all into dehydrator. Dehydrate until dried well. I let it cool completely, then blend really well in blender. Add to everything under the sun. Or, use to make Sauces, Rubs, Marinades, etc.
BE CAREFUL – Tips:
-I threw Habaneros on whole. Didn’t want to handles these too much.
-Dehydrate in ventilated area. Preferably outdoors. This process wilted my tomato starters sitting next to dehydrator.
-CAREFUL BLENDING, don’t breathe that in!
-Handle with care. Don’t rub those eyes afterwards… Or wipe wrong!


Asian Invasion:
1 1/2T tTt’s xXx Seasoning
1/2c Water
1/3c Rice Vinegar
1tsp Mirin
1/4tsp Sea Salt
1/8tsp Garlic Powder
1/16tsp Ginger Powder

Great for making a Spicy Asian Chicken. Make a Slurry, adding into heated Asian Invasion Sauce. Toss with cooked Tempura Coated Chicken (Or, toss with any cooked Meat). Serve over Rice. Drizzle over cooked cabbage. Dipping Sauce. Many uses.
