White Bean Salad



1 can White Beans (White Cannellini), drained well
1/2T Chives
1/2T Grapeseed Oil
1/4tsp Himalayan Salt
1tsp Dried Dill
Small Shake of Onion Powder
Feta Cheese
1T Rice Vinegar (We do Rice. Otherwise, White Vinegar, etc. works)

Roasted Tomatoes:
Cherry Tomatoes, halved (To taste, about 1c)
Spray Tomatoes with Butter Flavor Cooking Spray (Or, use 1tsp Grapeseed Oil)
Shake of Onion Powder
Good Shake of Garlic Powder
1T Stacy’s Freshly Dried Italian Seasoning (Mix of Parsley, Oregano, Basil)
1 Garlic Clove, minced

Directions:
Roasted Tomatoes:
Half Tomatoes. Drizzle with Grapeseed Oil. Add rest of Roasted Tomato Ingredients, EXCEPT, Garlic. Mix. I spray top of Tomatoes with Butter Spray, toss around. Add to non stick oven pan. Top with Garlic. Add to oven, preheated to 400. Bake for about 8minutes (Mine’s a Convection oven).
Remove and add to Serving Dish. Add in Beans, Chives, Drizzle over Grapeseed Oil, Salt, Dill, Onion Powder. Lightly mix around. Cover and cool in fridge.
Add in Feta Cheese. Keep in fridge until serving.

Tay’s Greek Seasoning – Grilled Greek Chicken

What better way to get one’s mind distracted, than, with cooking?
With no longer finding my McCormick’s Greek Seasoning, I made my own. AMAZING CHICKEN!

Seasoning:
2T Dried Basil
2T Dried Oregano
1+1/2T Dried Mint
1T Dried Minced Onion
1T Garlic Powder
1tsp Himalayan Salt
1tsp Dried Rosemary
1/2tsp Dried Thyme
Place in season container.
(Tip: Salt/Garlic sinks to bottom, so, mix before each scoop)

Marinade (Add to ziploc bag):
Chicken Breasts
1/4c Plain Greek Yogurt (I used homemade)
3T Above Greek Seasoning (No lemon peel)
2T Lemon Juice
Heat Grill. Set Chicken on. DO NOT FLIP until it does not stick. Cook til done.

Serve over Rice: Rice cooked using: Chicken Broth, Splash of Lime, Shake of Cilantro
Sweet potatoes, diced (Air fried) on side.

*Notes: I was going to add Lemon Zest to Seasoning. I did not have any. So, I used Lemon Juice in Marinade. I liked it the way it was. Your choice.

Greek Butternut Squash

Sweet Potatoes, Carrots, etc. can be used.

Premix:
1T Mayo
1tsp Olive Oil
2-3T Parmesan Grated Cheese (Store shelf kind)
1-1.5tsp Dijon Mustard
Splash of Lemon Juice
Shake of: Pepper, Him. salt
Good shake of: Garlic Powder, McCormick’s Mediterranean Greek Seasoning

Butternut Squash (I used frozen squash, we froze from garden)
Air Fry on Fry Button, we toss halfway through.
Toss with above sauce, IMMEDIATELY, after cooking.

Loaded Greek Sweet Potatoes

HEALTHY & BENEFICIAL! MANY ways to make this. Over Sweet Potato Fries, over Baked Sweet Potatoes and Vegis (Options below)… But, here’s what we did:

Oil (Hot Chili Oil, Coconut, Olive Oil (What we used)… Any, works)
Sweet Potatoes, diced (Fry option below)
1 can Artichokes, drained
Black Olives, halved
Red Onions
Sprinkle Garlic Powder,  Pepper, Sea Salt (Optional, we skip salt)

Easy Greek Marinade (Or try Tay’s Greek Marinade):
Chicken
1T McCormick’s Gourmet GREEK Seasoning
1.5tsp McCormicks Montreal Steak Seasoning
2T Worcestershire
1tsp Dijon

Toppings:
Roasted Red Pepper Hummus
Tay’s Avocado Tzatziki (Below) (Or Guacamole)
Fresh Tomatoes
Crumbled Feta Cheese

DIRECTIONS: Marinade Chicken 4-8 hours. Toss Potatoes and Artichokes with a lil Oil (We used Olive). Place into Foil. Grill both Chicken and Potatoes (Separately). Add Potato mix to bowl. Top with Chicken. Top with Toppings and Cheese Mix. OR TOP ALL ONTO Pita Breads!

Tay’s Avocado Tzatziki:
1 Ripe Avocado, mashed
1/2c Sour Cream, or to taste
1-2T Mayo
1T Grated Parmasen Cheese
1tsp Lemon Juice (100% fridge kind)
1c Cucumber, peeled, seeded, grated
1/4tsp Garlic Powder
1/2tsp McCormick’s Gourmet Greek Seasoning
1/4tsp Dill Weed
1/8tsp Mustard Powder
1/8tsp Sea Salt


NOTES/OPTIONS:
 -Or, Marinade Chicken, cut up. Add Chicken, Potatoes, Artichokes, Onions, and Olives to baking dish. Bake. Top with Toppings.
 -Cut Sweet Potatoes to fries, toss with Oil, season. Bake. Cook rest (Together or separately up to you). Top all onto Fries.
 -Also, you can skip tzatziki and use Marinaded Cucumbers and Onions (Skip onions with vegis). Eat on Pitas, or over Sweet Potato Vegi Mix, or Sweet Potato Fries! Here’s a Sour Cream Cucumber and Onion Recipe I found:
2 cucumbers, thinly sliced
1/2 small white onion, thinly sliced
1/2 cup white vinegar
1/4 cup water
1/4 cup and 2 tablespoons white sugar
1-1/2 teaspoons dried dill, or to taste
1/2c Sour Cream, or to taste

Salt & Pepper Cucumber slices. I set into strainer in fridge for about 15minutes. Bring to boil, Vinegar, Water, and Sugar. Add Cukes to bowl. Pour over. Allow to marinate 1 hour.
Sour Cream Version: Drain, reserving 1-2T Marinade. Stir in 1/3c Sour Cream with reserved Marinade.

Tay’s Greek-cado Sauce / Spread (Tay’s Greek Avocado Sauce)

Great on Wraps, Sandwiches, over cooked Meats, top while cooking Meats, with Fries, etc… MANY USES!

1 Avocado, mashed
1/4c Plain Yogurt
1/2T Extra Virgin Olive Oil
1tsp Worcestershire
1tsp Lemon Juice
1tsp Dijon
1.5tsp McCormick’s Gourmet Greek Seasoning
1/2tsp Dried Oregano
a lil shy of 1/2tsp Dried Rosemary, crushed
1/2tsp Garlic Powder
1T Jalapeno, deseed, minced
A lil shy of 1/4tsp Sea Salt

Add all to Blender, drizzling in oil near end. Blend in blender til smooth. Top onto Sandwiches, in Wraps, Over Fries, Over Chicken… MANY USES!

I used this topped over Baked Breaded Chicken Breasts (While cooking):

Flour Mixture:

3-4T Flour
1/4tsp Sea Salt
1/4tsp Pepper
1/2tsp Paprika
1tsp Parmesan Cheese (Store shelf kind)
1/4tsp Cayenne Powder

White Vinegar or Louisiana Hot Sauce
Tay’s Greek-cado Sauce/Spread (Recipe Above)

Blend Sauce ingredients. Place in fridge til use.
Mix Flour Mixture. OPTIONAL TO REMOVE CHICKEN SKIN! Brush Chicken LIGHTLY with Louisiana Hot Sauce OR Vinegar.
Add half Chicken to bag. Sprinkle in half Flour Mix. Shake around. Add in rest of Chicken Legs and Flour Mix. Shake more. Place onto Butter Flavored Cooking Sprayed baking pan. Place into fridge 30min-1 hour. Add a decent amount of Tay’s Greek-cado Sauce on both sides. Bake in oven at 425 til juices run clear (Ours was about 45minutes).

Try on the Grill: Can choose to skip Flour, do rest. Add to grill cook Chicken most way. Near end, Brush on Sauce, Cook each side a few minutes more!

Geeky Greeky Salad (Healthy and Fulfilling Greek Salad)

3c Spinach, chopped
To desired amount- Lettuce
About 3/4c canned Black Olives, drained (I halve half)
1/2c Italian 6 Cheese Shredded Cheese
1/4c Feta Cheese (Optional, I skip. It’s in Vinaigrette)
1T Grated Parmesan Cheese (Store shelf kind)
3/4c – 1c Tomato, diced (Or Cherry Tomatoes, halved)
3/4c Red Onions, sliced THIN
1/2 can Chickpeas, drained
1c Cucumber, sliced/halved
1/2 Red or Green Bell Pepper

2-3 Frozen Chicken Breast
2 Chicken Broth Cubes, crushed + 3c Water
2tsp McCormick’s Greek Seasoning

Kraft Greek Vinaigrette Dressing*
 – OR, try our Caesar Dressing, HERE!
Texas Toast SEASONED Croutons

Boil Frozen Chicken Breasts with crushed Broth Cubes, Water, and Greek Seasoning.
Toss All Salad Ingredients. Top with cut up/shredd. cooked Chicken. Toss with Dressing. Top with Croutons.
(I mix above, then add lettuce, last. Til, I get to desired consistency)
*Salad Dressing is Optional, Ranch, or other Favorite, can be used.

Easy Breezy Greekies (Refreshing and Healthy Wraps)

A lot of healthy recipes creamy up dishes with Greek Yogurt. It creamifies, it’s healthy, beneficial, low calories, etc. I thought, “Why not add flavored…?” So, I’m trying out a few. I thought these were alright. But, everyone else loved them. So, I’ll share.


Wrap of choice (Lettuce, Cabbage, Flat Bread/Pita Bread, Soft Shells, etc.)*

About 2lb. Fresh Thawed Chicken Breast
1 Hidden Valley Greek Yogurt Ranch Season Pkt.*SEE NOTES
3/4tsp McCormick’s Greek Seasoning
1/4tsp Lemon Pepper
1/8tsp Sea Salt, or to taste
1/2T Fresh Chives, minced
1tsp Grated Parm. Cheese (Store shelf kind)
1c packed Spinach, rough chop
5.3 oz. CHOBANI Lemon GREEK Yogurt (Last hr.) *SEE NOTES
Toppings:
Fresh Tomatoes, diced
Fresh Red Onion, thin sliced
Fresh COLD Cucumber, seeded/grated (Set in strainer on plate in fridge til use)
Shredded Moz. Cheese (Optional*)

Add chicken to Butter Flavored Cooking Sprayed crock. Top with Season Pkt., Greek Season, Lemon Pepper, Chives, Parm. Cheese, and Spinach. Cook on low 5-6 hours. Remove chicken, shred, and add back to crock. Mix in Yogurt (Or you can try mixing yogurt with cucumber and use as topping!). Cook on low another 20minutes.
Top onto shells (Or wrap/bread of choice: Lettuce leaves, Cabbage Leaves, Soft Shells, Bread, Gyro Bread/Flat Bread, etc.)
Top with FRESH Tomatoes, Onions, Cheese, and good amount of Grated Cucumbers.

Notes: I actually thought I was buying a Greek Season Packet. Then realized it was RANCH for Greek Yogurt. Not too sure if they are the same flavor, but, YOUR FAVORITE regular ranch may work. I preferred shell or breading for these. Try Mixing grated Cucumber with Yogurt and use as topping to top over Shredded Chicken!!!

Tay’s Best Chicken Marinade N’ tTt’s Spuddy Buddies (Greek Chicken w/Seasoned Red Potatoes)

Chicken Marinade:
2tsp Worcestershire
1T Soy Sauce
1/2tsp Lemon Pepper
1/2tsp Garlic Powder
1tsp Dijon Mustard
1T + 2tsp Extra Virgin Olive Oil
1T Dried Parsley
2.5tsp McCormick’s Greek Seasoning
1tsp Dried Oregano
1tsp Dried Rosemary

Mix, WELL, marinade ingredients. Brush ALL onto thawed Chicken Breasts (I did 3 chicken breasts). Marinade 5 hours.

Tastes great cooked on grill. tTt’s Charbroil Charcoal Grill Cooking Tip: Make a Mountain Shape with Plain Ol’ charcoal. (You do a Mountain, with center highest, to control cooking. If too hot, move away from center.) Use lighter fluid to start. Once coals are nicely started, place chicken on, around outside of grill. Place a half smashed pop can sideways onto grill rim, to prop a little open. Cook til chicken is easy to slide a spatula underneath (It doesn’t stick much, when ready to flip). Flip once. Cook other side. tTt calls it, “The one and done”. Once done, take off. Cover til eating.
WE SERVED OURS OVER A NICE SALAD: Lettuce, boiled eggs, red onions, cheese cubes, roma tomatoes, croutons, and ranch. With side of tTt’s Spuddy Buddies (Seasoned Baked Red Potatoes).

tTt’s Spuddy Buddies
6 Red Potatoes, quartered or so
1T Extra Virgin Olive Oil
2 Garlic Cloves, minced
1/4 Large Onion, minced
1/2tsp Dried Basil
1/2tsp Dried Oregano
1/8tsp Sea Salt, or to taste
1/2T Red Pepper Flake

Bake, covered, 450. 45minutes. Gave nice mix, bake uncovered 10-15 more minutes.

1/4c TO 1/2c Feta Cheese, crumbled (Add later) – I did 1/2c

Toppings: Red Onion, Cherry/Grape Tomatoes (Halved), and Sauce below.

Sauce* (Premake):
1/2c Sour Cream
2T Mayo
1/8c Grated Parmasen Cheese
1 tsp Fresh Lemon Juice
1/2tsp White Vinegar
1 Cucumber, peeled, seeded, grated
1/4tsp Garlic Powder
1/4tsp Oregano
3/4tsp Dill
1/4tsp Mustard Powder
a lil shy 1/4tsp Sea Salt

Butter Flavor Cooking Spray, or LIGHTLY Butter, Crock. Heat skillet with Olive Oil. Brown meat. Add all to crock, except Feta. 30minutes prior to serving, crumble in Feta. Cook on Low 3-4 hours, total. Top shells, or egg rolls, with meat mixture, sauce, tomatoes, onions.

Sauce is a Tzatziki. I usually add in Greek Yogurt, but, didn’t have. Ended up delicious, and less ingredients. You may choose to add that.

My Big Fat Greek Soup, Minus the Fat! (Light Greek Soup)

A Delicious and Light Greek Soup. Full of beneficial ingredients.
5c Chicken Broth Cube + 5c Water
1.5 lb. JENNIE-O EXTRA LEAN Turkey Cutlets
1 can Chickpeas, drained
1 can Cannellini Beans, drained
1 Carrot, grated
1c Well Packed Spinach
Nicely filled 1/4tsp FRESH Lemon Zest
1 Garlic Clove, minced
2tsp + 1 tsp McCormick Greek Seasoning
1tsp Dried Dill Weed
1/8tsp UP TO 1/4tsp Sea Salt
1/2c Frozen Peas (Add last hour)
1c Frozen Okra (Add last hour)
1 Egg, beat til frothy/foaming (Last 15minutes)

LIGHTLY Butter Crock. Add in all except peas, okra, 1tsp Greek seasoning, and egg. Cook on Low 6-8 hours. Last hour add in peas, okra, and 1tsp seasoning. Beat egg til frothy/foamy. SLOWLY stir into soup. Cook for 15 minutes. Stirring frequently. Serve.
