Vacation Meal Plan of Attack 2016

Here’s our Plan of Attack for 2016 (2014, 2015 Vacay Meal Prep):

TIP: LOOK OUT FOR SALES-Prep few months in advance:
Frozen Burger Patties
Pkgs. Hot Dogs (Freeze)
Chicken Legs
Other Meats (Ground Meats, Bacon, Roast, Chicken, whatever)
Buns (Buy close to, but Keep Eye Out for Coupons, etc. For Purchase)
Cheese Bricks
Miracle Whip (Sandwiches/Tuna or Bacon Salad)
Canned Items (Tomatoes, Corn, Beans, etc.)
DON’T FREEZE MEATS that have been Frozen then already Thawed!

Chicken Bacon Fiesta-Wiches
 – CHICKEN SALAD SANDWICHES
2 Frozen Chicken Breast (Boiled in water with few CRUSHED Chicken Broth Cubes)
3T-4T canned Southwestern Corn (Peppers/Onions kind)*
2T REAL Bacon Bits
Sauce:
1 TO 1.5T Mayo
1 TO 1.5T Miracle Whip
3/4tsp Lemon Juice (Fridge kind)

For Serving: A lil swipe Miracle Whip, Buns/Wraps

Boil in water with few CRUSHED chicken broth cubes. Remove chicken, shred. In bowl mix Sauce ingredients. Mix in rest. Place in tightly sealed container. KKEP COLD! Eat within week.

 – Frozen Burritos (Any works, ours are tTt’s Sausage, Egg, Taters):
Potatoes, cubed small
Olive Oil + shake of Seasonal Salt
add to pan, add Potatoes, season with:
Dried Oregano, Basil, Pepper

1 lb Ground Pork Sausage, cooked with:
1/2 pkg. Frozen Sweet Bell Pepper/Onion Mix
4 Mushrooms, sliced or chopped

Scrambled Eggs+ Basil Oregano

Soft Shells
Mayo
Shredd. Cheese

PreCooking: Cube Potatoes. Mix Olive Oil with Seasoned Salt. Add to pan, add Potatoes. Cook and Season with Oregano, Basil, Pepper. In sep. pan cook Sausage with Pepper Mix and Mushrooms. On Soft Shell add All (Including Mayo, Shredd. Cheese). Butter Flavor Cooking Spray skillet. Brown all sides. Freeze single layer on plate sprayed with cooking spray (Don’t allow to touch, may stick). Wrap in Foil if using Crockpot Cooking Method (May need to Butter Cooking Spray Foils before wrapping!).
Cooking: Rub with wet finger. Microwave. Bake: Butter spray pan and tops. Bake. Or, place pre-prepped Burritos in foil that was SPRAYED WITH BUTTER FLAVOR COOKING SPRAY. Wrap. Freeze. Add to Crock and Cook on Low/Warm til warmed through. Rotate if needed.

Using Leftover Potatoes (From Burger Foils) and having Frozen Pork Sausage at home, we made some tasty Breakfasts. Here’s one:

Potatoes fried in Crisco (What we had for Fish fry, if we caught any), seasoned with Pepper, Basil, Oregano, and a lil Salt. Side Aside and top with Sandwich Cheese Slices and Onions (Onions Optional). Cover to melt.
Give light wipe of Pan with Paper Towel. Cook Sausage. In same pan, in Sausage Grease, fry up some Eggs.
Pork Sausage served under Eggs. Look at those about to Burst Yolks!
Toast on Side

– Frozen premade store bought Burgers/Hot Dogs
Simple… You know how to cook.

– CHICKEN LEGS / TUNA (Or BACON) SALAD (Forgot Tuna, so made BACON Salad)

 – BBQ Chicken:
Family Size Pkg. Chicken Legs, skin removed
3T White Vinegar
1-1.5T McCormick’s Montreal Steak Seasoning
1.5-2T McCormick’s BBQ Seasoning

Sweet Baby Ray’s Honey BBQ Sauce (Optional, some liked it plain, too)

PrePrep:
Buy Chicken NON FROZEN!!! REMOVE SKIN! Place Chicken and Vinegar into ziploc bag. Mix Around. Add in McCormick’s Seasonings. Toss evenly. Lay Flat, Freeze!
Cooking: Thaw, cook on Grill. Near end, brush with BBQ (Optional. Tasty plain, too).

 – BACON SALAD 
(Was gonna be  Tuna Salad, but forgot Tuna!):
Space Saver– I bought Miracle Whip. I kept a lil over 1/2 the jar. Rest I placed into separate container (For sandwiches on vacation). Then, I used Miracle Whip Jar to store the Salad SAUCE. In jar, I did:

I kept a lil more than 1/2 jar Miracle Whip (Leave in jar!)
1+1/4tsp Lawry’s Seasonal Salt
1/4-1/2tsp Paprika
1.5T Dill Pickle Juice from Pickle Container (USE A TASTY Dill Pickle!)
1/8 tsp Onion Powder
  -MIX ABOVE INGREDIENTS IN Miracle Whip container.
-Then, add to jar, on top of Sauce (Don’t mix in):

1.5c Shredd. Cheddar Cheese
1c Frozen Peas
  -Place on lid.
-1 hour Prior to Serving:

About 2c uncooked Macaroni Noodles, cooked
Baked Bacon, cut up (Kept in pkg. Cooked day of making)

PrePrep: I premade sauce morning of trip. For leak reinforcement: I placed some plastic over top of Miracle Whip jar (I used ripped sandwich bag. Reinforced seal), twisted on top. Keep cold til serving.
About 1 hour prior to serving: Cook Bacon. Cook noodles (I add pinch of Salt and a lil Oil to keep from sticking). Mix Sauce and Bacon together. Add Noodles into Sauce, to consistency desired. Toss rest. I always have it a little saucy, as it’ll sit and absorb some. Keep cold til serving.
OPTIONAL to top with Cherry Tomatoes for Serving. You can also keep the Miracle Whip unopened, and place pickle juice and Seasoning in a small container and place into Noodle Box, place in fridge on arrival. Mix as needed. Your choice.

– HAMBURGER FOILS:
Frozen Burger Patties, 1 per foil
1 Potato per foil, diced
1 bag Baby Carrots, split up (1 bag lasted 6 foils)
Chopped Onions (We used 2 small for 4 people)
1 Onion Season Pkt. (A small sprinkle per foil. It goes a LONG way!)
1-2T Butter per packet, we forgot, and a smidge of Crisco worked well!

Prep: We buy a pkg. of Frozen Burger Patties, and KEEP FROZEN til use. Doubles as ice for cooler.
Cooking: I cut vegis at cooking. Dice potatoes and cut onions. Give each person foil. Kids love making their own! Add in desired vegis. Top with butter or crisco. Add one frozen burger to top. A small sprinkle of onion pkt. seasoning. Double or triple wrap. Add to hot fire pit coals. Ours cooked in about 45 minutes (Time varies). Rotate, we didn’t flip!
Rest of burgers we had for supper another night. We also ate leftover Tuna Salad with this meal.
Healthier options: Turkey Burger. Butter Spray/Olive Oil/Coconut Oil

– FRITO TACO SALAD, a ritual for a while now.
1.5-2lb Beef
2 GOOD Taco Season Pkt.
1/2c Water
1/2 can Diced Tomatoes, undrained
3/4c Salsa
1/2can Refried Beans*
1 small onion, chopped (Added right before freezing)

Serving: Serve with tomatoes (Canned works), fritos, sour cream, shredd. cheese, lettuce, whatever other toppings of choice.

PreCooking: Cook beef. Add in taco seasons, beans, salsa, tomatoes with juice, shakes of: Garlic Powder, Chili Powder, Onion Powder.
Allow to cool. Place in freezer bag (I double bag), lay flat.
Cooking: Throw into crock. (I kept on warm, flipping.) Serve with toppings of choice.
*(If using, rest of cans we used for tacos, the night I premade meals) These are also optional. Point is, just premake and freeze.)

 – SICILIAN DELUXE MEATBALL SUBS:
Sauce:
1tsp Extra Virgin Olive Oil
1 lb. Turkey Sweet Italian Sausage Links, remove from casings
2T Balsamic Vinegar
1.5T Red Wine Vinegar
1 Garlic Clove, minced
1/2c canned whole Olives, halved
1/2c Onions (I believe I did Sweet Red)
4T jarred whole Pepperoncini, minced
1/2c Sweet Mini Bell Peppers (Optional)

1 jar Tomato Onion Garlic Spaghetti Sauce
1 can Basil Oregano Tomatoes, drained
1 can Tomato Paste
1/2tsp Brown Sugar
1/8tsp Sea Salt
1/4 Dried Red Pepper Flakes
1/8tsp Pepper
1/4tsp Dried Rosemary

1lb. Meatballs (LATER ADDING-Keep frozen)
Provolone Brick (Later Adding-Freeze)
Hot Dog Buns (For Serving)

I cut my links into chunks (Can remove casings and cook as ground). Cook in Oil with Onions. Add in Garlic and Vinegars. Cook down some. Add Olives, Peppers, and Pepperoncinis. Cook down juices. Once juices are mostly gone, add in rest of ingredients. Simmer a lil bit.
ONCE COOLED… Add to Ziploc Bag, on it’s side. FREEZE. Cooking: Add Regular Beef Meatballs to Crock with Sauce. Cook on Low. Top with Cheese last 30min-1hour. Serve on Buns/Wraps/Hoagies with Cheese… We used Hot Dog Buns. Mayo/Miracle Whip is Optional.

 – SLOPPIES
1.5lb – 2lb Ground Pork or Beef
Brown Meat, season with few good shakes of:
Basil
Oregano
Garlic Powder
1 can diced Basil Oregano Tomatoes, drained
1 can Manwich Sloppy Joe Mix
1 sm. Onion
Celery, minced

Cook all above. Once cooled. Add to ziploc bag, lay on it’s side, for flat storage. Freeze. Cooking: Add to Butter Flavor Cooking Sprayed Crock… Cook on Low or Warm til thawed and heated through. Eat on Bread or Buns.

 – EASY PHILLY (Stems from This Recipe and This One) 
1-1.5 lb. Chili Style Ground Beef or Pork (I used 1/2lb. Beef 1lb. Turkey-What I had)
1tsp McCormick’s Montreal Steak Seasoning
1/2tsp Garlic Powder
1/2T Soy Sauce
1tsp Worcestershire
1tsp Dried Oregano
1 Beef or Chicken Broth Cube, crushed
1/2T Grated Parmesan Cheese
1c (Packed) Kale or Spinach Mix
Up To 1/2c Green Peppers, sliced (Don’t Add, Yet)
1/4-1/2c Onions, to taste (Don’t Add, Yet!)

Provolone Cheese Brick (Freeze)

Cook in skillet all above, EXCEPT Peppers, Onions, and Provolone. Once cooled, add to ziploc bag. ADD IN Peppers and Onions. Lay on side (I folded mine in half). Freeze. Cooking: Cook on Low or Warm til heated through. Top with Cheese. Once Melted, serve on Buns of Choice with Miracle Whip/Mayo. Or try packing away a small container of Tay’s Balsamic Garlic Sauce.

 – CARNE ASADA CHILI (Stems from This Recipe):
1.5-2 lb. Chuck Roast or Chicken Marinade:
1/2 Taco Pkt. (I used Fiesta Style)
2 1/2T White Vinegar
1/4c Soy Sauce
1T Cumin
1/2T Garlic Powder
1/2T Onion Powder
1/2T Dried Oregano
1tsp Chili Powder
1tsp Paprika

1/2 pkg. Sweet MINI Bell Pepper Mix (Orange Red Yellow)
Onions
Mushrooms (Optional)
1 Sweet Potatoes, diced
1 can (Mild) Black Beans with Jalapeno in LIME JUICE, drained
1 can Southwestern Corn (Bell Pepper/Onion kind), drained

RICE:
2c Rice (Instant)
2c Water
2 Chicken Broth Cubes, crushed

Add NON FROZEN Meat to Bag. Add in Marinade Ingredients. Mix Around. Lay as Flat as you can. Freeze. Cook Rice in Water with Broth Cubes (I cook in Microwave). Once Cooled to handle, place in Freezer Bag. I flattened and Folded. Freeze.
In A SEPARATE Freezer Bag, Add in Vegis. Lay flat and Freeze.
Cooking: Add all to Butter Flavor Cooking Sprayed Crock Pot. Cook on Low til all’s done. Shred up Meat. Last hour, I wrapped Rice in Foil and place RIGHT ON TOP of Chili to cook. Serve each bowl of Chili with a lil Rice, Sour Cream, Salsa, and Fritos/Tortillas.

OTHER OPTIONS
Roast Wiches (Don’t Pre Cook. Add ingredients to freezer bag, MINUS Water that the Broth Cubes call for (Takes up too much room!). Write on Freezer Bag the amount of Water needed during cooking.

Party in my Egg Roll (Chicken Avocado Egg Rolls- Avocado Optional)

Not an Avocado Person? NO WORRIES! Just skip it!

1 FROZEN Chicken, Boiled in Broth, Cut up
3T: Red Onions, Red Bell Pepper, grated Cucumber (Opt.)
3-4T Spinach, minced
Sauce:
1 nice ripened Avocado (OPTIONAL!)
1/2c Sour Cream
1tsp Dried Cilantro
1/4tsp Lime (Fridge 100% kind)
1/4 Garlic Powder
1T-2T Fresh Jalapeno, minced (I did 2T)
1/8tsp Sea Salt
1tsp Wishbone/Hidden Valley Ranch Dressing Pkt. (Or to taste)
1/8tsp Dill Weed
2tsp REAL Bacon Pieces

Shredded Cheese (Try Moz. or Mexi/Taco Blend)

Add FROZEN Chicken to a pot with Water and 1-2 crushed Chicken Broth Cube(s). Turn on heat. Bring to Boil til cooked. Allow to set a few minutes in Broth. Cut up.
Mince Vegis. Toss Chicken, Bacon Pieces, and Vegis.
Blend Sauce ingredients. Mix, TO DESIRED CONSISTENCY, with Chicken (I did all). Add to Egg Rolls. Optional to Top with Shredded Cheese. Brown in Butter Flavor Cooking Spray Skillet. OR, Bake in Oven (Sprayed with Butter Spray on both sides). OR, Fry in Oil (Try Coconut Oil)Serve with Salsa and Sour Cream.

Notes: Up, Downsize, or Skip Vegis, to your taste!
Optional to Season Chicken once cooked/cut up (Try Greek Seasoning or 1/2pkt Taco Season)

FREEZER FRIENDLY. Once browned (I use Butter Flavor Cooking Spray), add to plate. Freeze. ONCE FROZEN, add to Freezer Ziploc Bag! ReHeat in Oven or Microwave-Cooks fast!

MAKING these for YEARS! Still a HIT! This, along with our Frozen Egg Rolls, helped with hunger for “FOOD, FOOD”, yet, saves on Calories. If you buy the Lean Cuisine, save the container! If not damaged, you can reuse for these, a few times, in the MICROWAVE, making these some Quickies!
 * Tay’s Loaded Chicken Bacon Ranch are ONLY about 82 Calories per slice (Brings TAY’s to 164! Lean Cuisine’s Chicken Club = 350!!!  So, enjoy MORE of Tay’s!
 * Tay’s Mushroom Steaks are ONLY about 146 Calories per slice (Brings TAY’s to 292! Lean Cuisine’s Philly = 330!)
NOT TO FORGET: Mine lacks the excess of Processed Ingredients

Tay’s Loaded Chicken Bacon Ranch:
2 Chicken Breast (Marinade):
1T Vinegar
1tsp McCormick’s Montreal Steak Seasoning
1 Pkt. 0.4 oz. Hidden Valley Buttermilk Ranch

2 Slices Bacon, baked, minced (Or Real Bacon Pieces)
4T Sweet Red Bell Pepper
3T Red Onion
1/2T Jalapeno, minced
1T Dried Tomatoes, chopped small (We skipped)
3-4T Spinach, minced
1/2c Shredd. Cheddar Cheese + 2T Italian 6 Cheese

Butter Flavor Cooking Spray
Garlic Powder and Onion Powder
Optional: Sprinkle lil Butter Powder and Parsley
Low Cal. Loaf (We used French-What we had), sliced thin-ish

Marinade Chicken about 4 hours. Foil line a baking dish. Bake Bacon til crispy. Crumble. Add Marinaded Chicken to Nonstick Pan. Cook til mostly cooked, then, add in rest (Except Cheeses and Loaf, der!). Cook down juices. Set aside to cool.
Thin slice French Loaf. Butter Flavor Cooking Spray each side (Or just bottoms). Sprinkle each side with a lil Garlic Powder and Onion Powder. Once Meat mix is to cool, add in Cheeses. Top each slice with Meat/Cheese mix. Sprinkle tops with Butter Powder and Parsley (Optional). Wrap in Foil. FREEZE (Make sure to freeze face up, til frozen (Few hours), then add to ziploc freezer bag).
Cooking: PREHEAT Oven to 450. Open Foils some (So, tops aren’t touching foils). Bake about 12-15 minutes, or til nice and toasty and melted.

Tay’s Mushroom Steak:
1 Small Steak (Marinade-Double if larger steak):
1/2tsp Extra Virgin Olive Oil (Optional)
1tsp Soy Sauce (I believe I did 2)

1/2tsp Mustard

1c Mushrooms, chopped
1/2c Onions, minced
1tsp White Wine (Movendo)
1/4tsp Garlic Powder
1.5tsp Worcestershire
1/8 tsp Sea Salt
1/2tsp Dried Oregano
1/2tsp Jalapeno, deseed, minced
2T Sweet Red Bell Pepper, minced

1/2c Italian 6 Cheese + 2T Shredd. Chedd. Cheese
French Loaf, sliced thin-ish (Or Low Cal. Loaf)

Butter Flavor Cooking Spray
Garlic Powder and Onion Powder
Optional: Sprinkle Butter Powder and Parsley

Sprinkle each side with a lil Garlic Powder, Onion Powder, and Parsley optional. Once Toppings (Below) are added, it’s Optional to sprinkle tops w/ Butter Powder Seasoning, Parmesan Cheese, and Garlic Powder. Right before freezing. I do!):
  – Steak/Pork Marinade:
Soy Sauce, McCormick’s Montreal Steak, Garlic, Onion Powder. Marinade. Cook, cut up. Prep Loaf/Bread as above states. Add cooked meat. Add on Onions, Peppers, and Mushrooms + Cheese (Can season Vegis with Oregano)
Steak/Pork Marinade:
Montreal Steak Season, Soy Sauce, Balsamic. Marinade. Cook, cut up. Prep Loaf/Bread as above states. Add cooked meat. Add chopped Vegis + Cheese.
Steak Pork Marinade:
Pesto, Balsamic, Soy Sauce, Salt/Pepper, Lil Mustard Powder. Marinade. Cook, cut up. Prep Loaf/Bread as above states. Add cooked meat. Add on Onions, Dried Tomatoes, Mushrooms + Moz. Cheese. (Adapted from this Recipe).
  – Made Pizza Types: Prep Loaf/Bread as above states. Dried Tomatoes (Or canned Basil Oregano), Turkey Pepperoni, Pizza Toppings, Cheese. (Skip Sauce). Sprinkle tops with Oregano and Grated Parmesan Cheese. Also, a great Pizza Recipe, just cut everything small , to fit: tTt’s Pizza Pie
   *** ANY STEAK MARINADE WORKS! Combo of McCormick’s Montreal Steak, Soy Sauce, Worcestershire and/or Balsamic Vinegar, + Vegis and Cheese… Or Check Out Our Site under Marinades.

BBQ: Cooked Chicken (Can boil frozen Chicken in Broth. Just throw Chicken into Water, THEN, bring to boil til done.). Cut up, toss with BBQ (You don’t need much!). Prep Loaf/Bread as above states. Add BBQ Chicken to Loaf Slice. Add, Corn, Sweet Bell Peppers, Onions + Shredd. Cheddar Cheese (Bacon Pieces Optional (Turkey Bacon))
  – Alfredo Chicken: Favorite Alfredo (I season my sauce with Garlic, Pepper, minced Onions). Toss Sauce with Cooked Chicken (Can boil frozen Chicken in Broth. Just throw Chicken into Water, THEN, bring to boil til done.). Prep Loaf/Bread as above states. Top Alfredo Chicken onto Loaf Slice. Top with Vegis of Choice (Options: Celery, minced. Broccoli, chopped. Onions, minced. Peas. Carrots, grated. Etc.) + Moz. Cheese and Sprinkle of Grated Parmesan Cheese.

NOTES: You can choose to skip Butter Flavor Cooking Spray and use your favorite Oil. May alter Calories.

Round em’ Up Rolls (Southwestern Egg Rolls)

Southwestern Egg Rolls 1
Chicken Mixture:

3 Frozen Chicken Breasts, boiled (In water with 3 Chicken Broth Cubes)*
1/2c Mild Salsa
1/4c canned Corn with Peppers/Onions, drained
1c canned Black Beans, drained
3/4c Spinach, chopped
1.5tsp Jalapeno, deseeded, minced
1/3c Onion, chopped small
1.5tsp McCormick’s Grill Mates Montreal Steak Season
1/2tsp Chili Powder
1tsp Dried Parsley
1/4tsp Cumin
1/4tsp Red Pepper Flakes
1tsp Grated Parmesan and Romano Cheese (Store shelf kind)

Egg Rolls
Shredded Mozzarella Cheese, for topping (Monteray Jack works)

Boil Chicken in water with 3 CRUSHED chicken broth cubes. Shred.  Add in rest of chicken mixture. Add to egg rolls. Sprinkle on cheese. Roll. Heat skillet, spray with Butter Flavor Cooking Spray. Brown all sides. GREAT ALONE! Or serve with Salsa Con Queso or Salsa and Sour Cream.
(I premade chicken mixture in late morning and rolled them that night. Allowing mixture to sit, blending flavors. Just reheated when time to roll-Great Time Manager, as well.).
FREEZER FRIENDLY– Single layer, separately, onto plate sprayed with non stick butter spray. Freeze. Once frozen, throw into freezer safe bag.

*3 chicken breasts from a 3lb frozen bag. Made about 11 rolls.
*You can try to skip Montreal, and in it’s place a good sprinkle of Ranch Dressing Seasoning Packet (Not entire packet), or do both- Montreal and Ranch! There’s been times I used a good sprinkle (Not all) taco season packet with a good sprinkle (Not all) wishbone ranch dressing packet with sprinkle of sea salt, parm. cheese, red pepper flakes, and skipped rest of seasons. Many options to Southwestern Egg Rolls.

Many Faces of Quesadillas

Oh, the Oh So Many Ways to Enjoy Quesadillas. Each of these uses Soft Taco Shell. Add cheese, of suggestion, to half the shell. Top cheese with below choice. Then more cheese. Fold in half. Browned in skillet sprayed with BUTTER FLAVOR Cooking Spray. Flip, brown other side. (Before flipping to brown other side, I spray with Butter Flavor Cooking Spray). Sprinkle done shell with Little Garlic Powder or Garlic Salt. Serve with dipping sauce, of suggestion. Mix top 10 ingredients. Allow to marinade about 30minutes. Spread one side of shell with Queso Blanco. Sprinkle Shredded Cheese on. Top with Black Eyed Pea Mixture. Add to heated skillet sprayed with Butter Flavor Cooking Spray. Top with more Shredded Cheese. Top with other shell. Brown underside, flip. Sprinkle with Garlic Powder. Brown other side. Add to plate. Sprinkle other side with Garlic Powder.
Top with Pico de Gallo (tTt’s Recipe) or Salsa, Taco Sauce, and Sour Cream.

Nemo in My Pie Hole (Fish Egg Rolls with Delicious Dill Spread) – Freezer friendly

Even if you’re not into fish, this dill spread is fantastic for Ham Roll Ups, etc.
Breaded Fish, baked
Egg Rolls (Taco shells work, too)
TOPPINGS:
Fresh Tomatoes, diced
Shredded Mozzarella Cheese
Coleslaw Mix
Red Onions, chopped
Sprinkle of Grated Parmesan Cheese
Optional: Little Salsa
DILL SPREAD:
1T Heavy Creamer
1/8c Miracle Whip
1/2c Cream Cheese
1/8c Sour Cream
2T Dill Weed
1T Relish
.5 tsp Parsley
1/4 tsp Fresh Cracked Pepper
1 tsp Lemon Juice (From Concentrate w/ added ingred. kind)
1/4 tsp Garlic Powder
1/4 tsp Onion Powder

Mix sauce ingredients. Bake fish accordingly. Spread some sauce onto egg roll. Add other ingredients. Wet corners and roll. Spray skillet with Butter Flavored Cooking Spray. Brown all sides. Serve with side of more Dill Spread/Sauce.

It’s ALL MIXED UP! Taco Salad

Frito Taco Salad
Frito Taco Salads, a ritual for a while now.

1.5-2lb Beef (Turkey can be used)
2 GOOD Taco Season Packets
1/2c Water
1/2 can Diced Tomatoes, drained (Reserve juice)
3/4c Salsa
1/2can Refried Beans*
Little less than 1/2 can Black Beans w/Jalapenos* Optional
1 small onion, chopped (Added right before freezing- If freezing)

Cook beef. Add in taco seasons, tomatoes (With Juice), salsa, beans, onions, shakes of: Garlic Powder, Chili Powder, Onion Powder.
Serve with FRESH tomato, fritos, sour cream, shredd. cheese, lettuce, whatever other toppings of choice.

If freezing: Allow to cool. Place in freezer bag (I double bag), lay flat. Day of eating, either thaw or just throw into crock. (I just threw in and kept on warm, flipping.) Serve with FRESH tomato, fritos, sour cream, shredd. cheese, lettuce, whatever other toppings of choice.

*(Rest of cans we used for tacos, the night I premade meals) These are also optional. Point is, just premake and freeze. Or eat time of making and place cans in fridge for later burritos, or freeze burritos for later eatings.

Freezer Friendly Wonton Wraps

Freezable, quick microwaveable meals! Great for Quick Healthier Meals. ALSO, it works GREAT, if you use Egg Roll Wraps, cut in half, line on Toppings, and Bake, Skillet (Butter Spray and Brown), or Fry in Coconut Oil.  UPDATED POSTS:  STICKS (Recipe #1 Here) AND STICKS (Recipe #2 Here)

Recipe options that work great (Blend or mince to fit):
– Jalapeno Poppers
Crisped Bacon, Jalapeno, Shredded Cheddar Cheese, Splash Worcestershire, Cream Cheese, A tiny smidge of Mustard. Season: Paprika, Onion Pwdr., Garlic Pwdr.

– Buffalo Chicken
Add to blender (Or chop WELL): Leftover Buffalo Chicken, Mozzarella, a little more Buffalo Sauce, to taste. Minced Onions, Minced Celery, Jalapenos (Optional). (Buffalo Recipe Options: Option 1 or Option 2)
– Alfredo Chicken w/Broccoli
Boil Chicken in Water with few Chicken Broth Cubes (Crushed). Shred WELL. Heat with Alfredo and 1 Garlic Clove (Minced) and some Onions (Chopped). Add in Frozen Broccoli (Thawed), to amount desired. Sprinkle of Grated Parmesan Cheese (Store shelf kind). Chopped Spinach Optional.
– Pizza Ingredients
Toss Shredded Cheese with Sauce. Add toppings of liking (Ex.) Pepperoni, Beef, Bacon Bits, Vegis (Peppers, Onions, Jalapenos, Tomatoes). Chop all WELL.
– Cheesy Spinach
Spinach, 1/4tsp + 1/8tsp Sea Salt, 1tsp Dried Parsley, 1tsp Garlic Powder, 1/4tsp Onion Powder, 1.5T Green Onions, 1 can White Beans, 1/3c Queso Blanco
1c Shredded Moz. Cheese, 4T Grated Parmesan Cheese (Store shelf kind), 2T Sour Cream OR Milk
– Mini Taco Bites
Turkey Meat/Chicken/Beef (Browned), seasoned with 1/2-1 Taco Packet and up to 1/2c Salsa. Tomatoes, chopped. Spinach, chopped. Shredded Moz. Cheese. Toppings of Choice: Vegis (Peppers, Onions, Jalapenos, Corn), Black Beans, Refried Beans (If using, mix into meat), Cream Cheese, etc. Chop all WELL or Blend. Try Our Beef & Bean Taco Egg Rolls- Freezable – Low Carb
Philly Cheese Steaks
Pork/Chicken/Steak Marinaded. Cheese. Peppers.
– ENDLESS IDEAS!!!

Preheat oven about 375 or 400. Spoon mixture onto wonton, wet corners, fold as desired (I did squares & triangles-I liked the squares better.), press down edges, spray pan w/ Butter Flavored Cooking Spray, layer onto pan, spray top w/ more cooking spray. Cook until browned, about 5 minutes, flip and cook until browned on other side. Keep an eye on them, they can burn fast! Optional: If eating right away, you can add more flavor by sprinkling a little garlic powder, salty eaters use garlic salt, over top when fresh out of the oven, let stand a min.
Note- To prevent from oozing out, press down along edges well (I ran my damp finger along seem). I did poke a needle hole thro top of each before baking, seemed to work. Some went flat-ter.

Freezer: Once cooked, single layer onto plate, separated. Freeze. Add to freezer bag. Cook: Place in microwave til warmed. Eat plain or with sauce of choice, mine for buffalo is sour cream or ranch.

Frying in pan brushed lightly with EVOO (Or Butter Flavor Cooking Sprayed), brown each side, is optional. Or Deep Frying is optional (Try Coconut Oil).
Also, turning into
Pot Stickers! By adding Broth to the pan after browning, is optional, as well. But, I don’t think Pot Stickers would freeze too well. So right away eatings meal!

The Cow’s Magical Fruit Roll Ups (Beef & Bean Taco Egg Rolls)

1.5lbs LEAN Ground Beef*  (Seasoned w/ few dashes of Garlic Powder, Course Black Pepper, Cumin, Chili Powder, Tiny bit of Cayenne Powder)
3/4 can Refried Beans
1 pkg Taco Season
1 Onion, Chopped
1/2c Salsa
Salsa Con Queso
FRESH Tomatoes, diced
Shredded Mild Cheddar Cheese
Egg Roll Wraps (Soft Shells, Cabbage Leaves work, too)

For spicy: Red Pepper Flakes or 1tsp Sriracha Hot Sauce to beef mixture. Or few drops as rolling
Other topping options are: Cream Cheese, Jalapenos, Rice (Cilantro & Lime Rice is tasty!), even Lettuce or Coleslaw Mix (In place of lettuce).

Season Beef as you Brown it, drain excess grease. Add in beans, onions, salsa, and taco season. Cook til soft. Spread Queso onto egg roll (Do cream cheese 1st, if using). Add Beef mix. Top with toppings- Shredded cheese, fresh tomatoes. Roll up. Non Stick Butter Flavor Spray skillet. Brown all sides. When done, I always sprinkle lightly with garlic powder. Serve with: Sour Cream, Salsa, or Queso. Great plain, too.
*Turkey Meat can be used!

Sproutin Ground Cow Rolls (Beef & Bean Sprout Egg Rolls – Lumpias)

1.5lbs Ground Beef (I also do part Pork and Part Beef!!!)
1 can Bean Sprouts, drained*
1 Carrot, grated
1 small Onion, sliced thin
Up to 1/4c Cheddar Cheese, grated
1 Egg
A few good splashes of Soy Sauce, or more to taste
About 1/2tsp Brown Sugar (Opt.)
1/8tsp Ginger Powder
Shake of Garlic Powder
Shake of Course Black Pepper
Sprinkle of Onion Powder
Egg Roll Wraps

Brown Meat, drain fat. (I sometimes saute in sesame seed oil.)Add Brown Sugar, small pinch of Ginger, good few dashes Garlic and Onion Powder, a good amount of Pepper. Add in Vegetables. Add in Cheese and Egg. Add in Soy Sauce. Cook til nicely blended and Egg is cooked. Roll up in Egg Roll.
(Now these are usually deep fried, try air fryer! But, the healthier version we do:) Heat skillet, spray with Non Stick Butter Flavored cooking spray. Brown all sides. When done, I always sprinkle lightly with Garlic Powder (Some do Garlic Salt). Serve with Sweet and Sour mixed with Mild Cheddar Cheese (NOT Melted). Or… Sour Cream with Salsa.
***FREEZABLE! Single layer a plate with rolls (I spray plate with non stick spray), freeze, once frozen add to freezer bags.
* (Sprouts And/Or coleslaw mix can be used- About 1.5cups if using coleslaw mix. Less if using both sprouts and coleslaw mix). Also, you can choose to deep fry these. But, our preference is skillet sprayed with Butter Flavor Cooking Spray!
