Tay’s Rocky Mountain Chili


rockychiliphotosA Great Chili Recipe. I’m using some leftovers tonight for Smoothered Burritos ANNND Smoothered Sweet Potato Fries! Check Back Soon!

1/2 – 1 lb. Bacon ENDS (1/2pkg.)
1/2-1 lb Pork Sausage (I used 1 lb.)
2tsp Jalapeno, deseed, minced
2c Med Onions
A lil shy 1c Celery
1T Fresh Garlic Cloves, minced
1T Butter (Plus, some to rub Crock)

1c Beef Broth
1c Chicken Broth
1 can diced Tomatoes (Garlic Basil Oregano), undrained
1 can diced Tomatoes WITH Green Chiles, undrained

1 can Cannellini Beans, drained
1/2T Cumin
1/2tsp Coriander
1/8tsp Sea Salt
1/4tsp Pepper

3T White Corn Shells (Not the hard/cooked ones), blended
Serve with: Tay’s Bread Balls

Add 1T Butter to skillet. Add in Bacon and Pork Sausage, cook. Adding in Garlic, Onions, Celery, Jalapenos. Cook down Juices. Add in Broths, cook down “Some”. Add in Tomatoes. Cook some. Butter Crock Pot. Pour in. Add in Seasons. ADD BEANS. Cook on Low 6 hours. 30 minutes before Serving, in a blender, blend shells to almost a powder. Stir 3T into Crock. Allow to set 20-30minutes. Eat!

Optional: More Chiles or 1/2tsp Green Chile Powder. I used Water + Broth Cubes to make Broth… If that matters.

Leftovers (EXACT RECIPES COMING SOON! Check Back.): I’m debating on blending Chili to smooth (That’s Optional). Using the other 1/2 pkg. of Bacon Ends, I may cook it with Pinto Beans and make Smoothered Burritos: Blend Chili, mix with Cheese, top over Bean Burritos.
I have enough for 2 meals, so then, I will use the leftover of the leftovers (Chili) for Sweet Potato Fries: Double Fry Sweet Potatoes (Or baked). Bake/Heat Cheese over tops til melted. Serve Fries with Blended Chili, Sour Cream, Tomatoes, and other toppings of chioce (Olives, Jalapenos, Onions, Beans, Shredded Lettuce, etc.).

Buffalo Chicks (Buffalo Chicken Bites)

Sauce can also be used on Legs and Wings!!!

1 lb., or so, Frozen Chicken Breasts
2.5tsp Corner Market’s Sweet Pepper & Onion Seasoning *See Notes
— Throw Chicken into ziploc bag. Add season and allow to thaw, marinading.

1/3c Vegetable Oil, for frying (Try Coconut Oil- I have yet to try it, tho)
2 Eggs, Beaten
Batter Mixture:
2/3 TO 1c Cornstarch
1/2 tsp Garlic Powder
Up to 1/4 tsp Course Black Pepper
1/8 tsp Sea Salt
1/2 tsp Onion Powder
1/2 tsp Paprika
Sauce:
1/2c Louisiana Hot Sauce
2T Butter (I used Salted)
1T Honey

Preaheat oven 350. Thaw chicken with Sweet Pepper and Onion Seasoning *See Notes. Cut chicken into pieces. Mix batter ingredients, lightly toss chicken. Beat eggs, pour over. Lightly toss. Heat oil in skillet. Brown chicken. Place into baking dish. Evenly spread sauce. LIGHTLY toss. Bake 15minutes, LIGHTLY toss. Bake another 15minutes.
Notes: Corner Market’s Sweet Pepper and Onion Season was found at Fleet Farm. Has a sweet taste.

BBQ Chicks (BBQ Chicken Bites)

BBQ Sauce:
3/4c BBQ (I used a good Hickory)
1T Honey
2tsp Brown Sugar
1/4tsp Ginger
1/8tsp Garlic Powder
1/8tsp Pepper
1/16tsp Chili powder
1/8tsp Red Pepper Flakes

Premake sauce earlier, set in fridge. Place 3-4 frozen chicken breasts in a bag with few squirts of Fresh Lemon Juice. Marinade til thawed and ready to cook.

1/3c Vegetable Oil, for frying (Try Coconut Oil- I have yet to try it, tho)
2 Eggs, Beaten

Batter Mixture:
1c Cornstarch (You could probably get away with less)
1/2tsp Garlic Powder
Up to 1/4tsp Course Black Pepper
Good pinch of Sea Salt
1/2tsp Onion Powder
1/2tsp Paprika

Preheat oven 350. Cut chicken into 1 inch cubes. Pour the starch over the chicken and toss til coated, I’m not pretty about it. Then I Distribute eggs over battered chicken. (I find this easier than dipping them into the egg and losing most batter on my fingers.)
Heat oil in large skillet. Cook chicken until browned. Place in baking dish. Pour BBQ Sauce evenly over chicken. Bake at 350 for 15 minutes. Turn chicken, bake for 10-15 more minutes.

Served 6-7. “About” 281-334 Calories/Serving. Serve on side of pizza. Or rice.

Lemony Snickets Chicks (Lemon Chicken Bites)

Lemon Sauce:
1/2c Powdered Sugar (Confectioners Sugar)
1/4tsp Garlic Powder
1/8c+1T Fresh Lemon Juice (More to taste)
1/4tsp Fresh Lemon Zest
2T Honey
1/2c Hot Water
1 Chicken Broth Cube (Crushed added to hot water)
1tsp Rice Vinegar
1/16tsp Ginger

Turn chicken, bake for 15 more minutes. Squirt with a little more Fresh Lemon Juice. Allow to set and thicken some. Serve with 2.5c rice, cooked in Chicken Broth, pinch of sea salt, and mixed with 1c frozen Peas.

Healthier Version (Skipping deep fry coating): Make sauce, skipping powder sugar and adding a little more honey and a LITTLE sugar (To taste)- To sweeten. Cook chicken in A LITTLE EVOO (Or butter flavored cooking spray). Add in sauce, stirring, til thickened… OR: Fry in LITTLE EVOO, add to baking pan with sauce, then bake 350 15minutes. Toss, bake 15more minutes.

BBQ Chili

1 lb SWEET Italian Sausage, casings removed, ground, cooked
5-8 pieces Bacon, Cooked, blended up (Minced) *See Notes
1 large Red Onion
1 Red Pepper
1/2 Yellow Pepper
2.5 tsp Garlic Cloves, minced
2 cans Basil Oregano Tomatoes, entire can
1 can Kidney Beans, drained
1 can Chili Beans, entire can
1/4c TO 1/2c Good BBQ Sauce (I use 1/2c Hickory)
1T Chili Powder
1/2T Cumin
1/4tsp Garlic Powder
1/4tsp Paprika
1/4tsp Red Pepper Flakes
Toppings: Sour Cream, Shredd. Cheese, Fritos/Tostitos, Jalapenos

Butter Flavor Cooking Spray Crock. Add all. Cook on low 6-8 hours.
*Notes: Cooked in oven. Preheat 425. Place foil on pan. Bake 12-15minutes.
I used 8pcs Turkey Bacon. Any good bacon works.

Tay’s Easy Chillin Chili

1 can Light Kidney Beans, slight rinse, drained well
1 can Chili Beans, entire can
1 can Hormel Chili WITH BEANS (Yes, ADD!)
4-5 cans Tomato Soup, not diluted, entire can
2 14.5oz cans Diced Italian Tomatoes (Basil/Oregano), entire can.
1.5 Green Pepper
1.5 Large Red Pepper
1 Large Garlic Clove, minced
1 Large Onion
1 TO 1.5 lbs Beef, ground. Cooked, drained of grease. (Season well, as cooking, with Garlic Powder, Pepper, Onion Powder, Chili Powder, few dashes Cayenne Powder, Paprika, Parsley)… DRAIN GREASE.

*Optional: 1 inch of Red Fresno Pepper, minced

Spread butter LIGHTLY around crockpot. Add all ingredients. Then, season with more Chili Powder (Good amount of this), Onion Powder, Pepper, Garlic Powder, Parsley… To taste. I do the Taste and Add, as I go.
Cook Low 4-6 hours (Until all’s blended nicely and vegis are soft.). Stirring, occasionally. Allow to cool slightly before serving.
Optional to do 2 cans Tomato Soup + 1 can Tomato Sauce
