Tay’s Sausage FRIED BREAD and GRAVY

Mmmm Mmmm Tasty…

Freezer Loaf  (+ Deep Fryer & Crisco Oil)

Desired Scrambled Eggs w/ Meat
– (We did Eggs (Seasoned w/ Basil, Oregano, Pepper, lil Milk, chopped Onions). Cooked with Turkey Sausage Links, cut up (Or Pork Sausage). Moz./Parm. Cheese is OPTIONAL.)

Favorite Sausage Gravy (I used canned)

I thaw 1-2 loafs.
Cook/Scramble Eggs and Sausage.
Heat Oil about 375-400. Break of pieces of Dough and stretch out to about palm size. Deep Fry (I use deep fryer grated bowl to help hold dough in oil, helping to fry flat). Brown each side, place onto paper toweled plate. Season with a Garlic Powder and a lil Garlic Salt. Top with Eggs and Sausage Mix. Pour on Gravy.

Quick and EASY Egg Salad

Easter means… Boiled and Dyed Eggs! Get Your Egg Salad On!

Boiled Eggs
Miracle Whip or Spin Blend Mayonnaise
LITTLE Squirt of Mustard
Good Sprinkle of Paprika
Few Drops to a Splash of Lemon Juice (100% Fridge Kind)

For Heat, I add:
Splash of Louisiana Hot Sauce or Tabasco
Cayenne Powder
Jalapeno, minced
Onion, minced

Other Optional Adds:
Celery, minced
Real Bacon Pieces
Sweet Red/Green Bell Peppers, minced

Mix all. Stuff Eggs (Deviled Eggs), Egg Salad Sandwiches… Or, Mix (I do with Heat options, Celery, Real Bacon Pieces). Top a Soft Shell with a Lil Shredded Mild Cheddar Cheese. Roll up, tucking in sides. Heat Skillet. Spray with Butter Flavor Cooking Spray. Brown each side. Sprinkle with a Little Garlic Powder (Or a LITTLE Garlic Salt). Eat, or place in fridge for later Cooler eating!

Tay’s Crab (Or Lobster) Enchiladas

3 Boiled Eggs, sliced
Tony’s Creole Seasoning

1 pkg. Crab Meat (Crab or Lobster)
Frozen Pkg. Pepper/Onion Mix (Optional)
1tsp Jalapeno, minced

Sauce:
1/4c Queso Blanco
1c moz. Cheese
1/2c Sour Cream
1/2tsp Dried Cilantro
1/4tsp Lime (100% Fridge Kind)
1/4tsp Dill Weed
1/4-1/3T Butter
1/2c Vegi Broth (I used Cube+Water)

Soft Shells
Shredded Moz. Cheese
Small Spread of Miracle Whip or Mayo (I used Mayo!)
Grated Parmesan Cheese (Store shelf kind)
Fresh Tomatoes, diced

Preheat oven to 425. Saute Peppers and Jalapeno. Add in Crab near end.
Slice Boiled Eggs. Season, WELL, with Creole Seasoning.
Sauce: In Saucepan, heat all Sauce Ingredients, adding in Shredd. Cheese once hot. Stir til a Sauce Texture.
Top Soft Shells with Crab and Pepper/Onion mix. Add some Shredd. Moz. Cheese. Then, 3 Seasoned Egg Slices. Roll. Place into a BUTTER FLAVOR COOKING SPRAYED dish. Lay in Rolls. Top with Sauce. Sprinkle, well, with Grated Parmesan Cheese. Bake for about 30-40 minutes. Top with Fresh Diced Tomatoes just before serving.

Extra Crab Mix? STUFF Extra Crab and Cheese Sauce + Sprinkle of Cheese into Mushrooms (Stuffed Mushrooms!) or Wontons!
(Peppers/Onion Mix is Optional. You can just up the cheese on each and add chopped Onions)

Peppered Hash (Southwestern Chorizo N Hash Stuffed Peppers)

Sorry, photo doesn’t do justice. I broke the flash on my camera , so pictures have been reddish/orange and dark.

Bell Peppers or Poblanos (Sweet Red, Green, Orange, etc. of choice)

1/2 lb Chorizo, browned
1 Frozen bag SOUTHWESTERN Hashbrowns or Diced Potatoes
1c TO 1.5c Shredd. Cheddar Cheese
1/2c Frozen Corn

6 Eggs
1/4c Crema Mexicana (Milk or Sour Cream may work)
3/4c Mild Salsa (Canned or fresh tomatoes may work)
1/4tsp Dried Mustard
1/2tsp Garlic Powder
1/8tsp Sea Salt
1/4tsp Pepper
1T Grated Parmesan Cheese (I use store shelf kind)

Toppings (Optional)- Minced Jalapenos, Sour Cream, Ketchup, Hot Sauce, endless options.

Beat bottom 8 ingredients. Then, mix all together. Stuff into Peppers. (I halve peppers, width way, and deseed. KEEP STEM ON, just cut down some, you don’t want a hole!). Place into Muffin Pan sprayed with Butter Flavor Cooking Spray. Bake in preheated oven, at 425, for 40 minutes, ot til egg is cooked.

*Southwestern Hash Browns or Diced Potatoes are the ones with Peppers and Onions in them (Among other ingredients).
1 lb. of Chorizo can be used.

The Morning Juans (Breakfast Stuffed Poblanos)

Egg Stuffed Poblano


Poblanos, halved, remove seeds (DON’T Remove stem)
Eggs
1/4 Red Pepper
1/4 Green Pepper
1/4 Onion
1/4-1/2c Italian Cheese (6 Cheese-Or of choosing)
Up to 6oz. Ham*, diced
Season with seasons of choice:
– I did about 1/2-1tsp Basil, 1/2-1tsp Oregano, 1/8tsp Sea Salt

Preheat oven to 425. Cut poblanos in half. Remove seeds. DO NOT remove stem. You are pouring egg mix in, you don’t want it to pour out! Mix eggs and ingredients of choice (Peppers, onion, cheese, ham, seasons). Place peppers into muffin pan (To avoid tipping, or egg mixture making mess). Pour egg mixture into poblanos. Top with a little more cheese. Bake about 40minutes. Serve with sour cream, salsa, and taco sauce.
*You can choose to use Italian Sausage or Turkey Kielbasa, as well. Any meat you like with your eggs!

El Low TaCarbos (Low Carb Taco Dish)

Lower Carbs
10 Eggs
1/2c Sour Cream
1/8tsp Baking Powder (Optional)
1/4tsp Chili Powder (Optional)
1/4tsp Garlic Powder

1.5c Shredd. Mexi Cheese
1 lb. Lean Ground Turkey
1 Taco Season Pkt. (Skip water in instructions)
2/3c Salsa
Up to 1/2can Black Beans w/ Jalapenos (Drained well)
1 Onion
1/2 Green Pepper, cut small
1/2 Red Pepper, cut small
1c Spinach, chopped small

Sprinkle Top with Pepper
Toppings: TACO SAUCE (Don’t skip this), Sour Cream, Roma Tomatoes, Lettuce, FRITOS, etc.

Cook turkey meat. Add in taco seasoning and salsa (Skip water on packet instructions). In a bowl blend first 5 ingredients. In a separate bowl toss the rest. Place meat mixture in Butter Flavor Cooking Sprayed pan. Pour egg mixture over top. Give slight stir, to get eggs underneath, too. Sprinkle top with pepper. Bake about 30-35 minutes at 400-425. Or until pick goes into center and comes out clean.

*Regular beans work. You can choose to use egg whites. Substitute accordingly. Even serve on shells as Mexi Breakfast Burritos.

YEE HAW Fritta-TAW (Southwestern Frittata)

Southwestern Frittata

10 Eggs
1/2 lb. Sweet Italian TURKEY Sausage
1/2 lb. bag Frozen Diced Potato Hash with Peppers*
1 sm. Onion
3/4c + 1/4c Shred. Mild Cheddar Cheese
2T + 2T Parmesan Cheese (Store shelf kind)
1/4tsp Paprika
1/4tsp Pepper
1/2c Queso Cheese Dip
1/4c Grape Tomatoes, sliced
1/4c Spinach, chopped

Remove sausage from casings. Brown in skillet adding in frozen hash and onion.
In bowl whisk 10 eggs, queso, seasoning, 3/4c cheese, and 2T parm. cheese. Using a Buttered oven safe dish (You will be baking soon), add the potato mixture. Stir in tomatoes and spinach. Turn stove top to Med. heat and pour eggs over. Cover. Allow to cook a few minutes. Then do a slight stir of the bottom, to get eggs underneath. Then cook about 6 more minutes. Then top with 1/4c cheese and 2T parm. cheese. Bake in oven at 425 for 10-15 minutes. Broil til top is browned.
Optional: SERVE with 1tsp Salsa and 1tsp Sour Cream.

*I used Ore Ida’s Potatoes O Brien with onions and peppers.
***TIP: I’ve heard that a pinch of baking soda in with the eggs, makes it fluffier. Have yet to try!

Fritta-Tastic (Frittata)

9 Eggs
1T Butter
1/2c Alfredo Sauce***
3/4c + 1/4c Mozzarella
1/8c +1/8c Grated Parmesan Cheese (Store shelf kind)
1tsp Parsley
1/4tsp Garlic Powder
1/4tsp Pepper
1tsp Parsley
1/8tsp Sea Salt
Good Shake of Basil
1/2c Ham, diced small***
1/2 small Onion
1/4c Baby Bella Mushrooms
2c Spinach, roughly chopped
1/4c Sun Dried Tomatoes, chopped

In a bowl, beat eggs with seasoning, 3/4c Moz. cheese, and 1/8c Parm. cheese. In pan (Oven safe pan) saute onions, mushrooms, spinach, sun dried tomatoes, with ham. Once cooked a few minutes, turn heat to med. high, pour in egg mixture. Give a few seconds to cook, then LIGHTLY lift/stir bottom so eggs get underneath. Cover and let cook about 3-6minutes til it sets nicely. Sprinkle 1/4c Moz. cheese and 1/8c Parm. cheese over the top. Broil til nicely browned. If not done, throw in oven (I covered mine) about 10minutes on 425. Remove from oven. Allow to sit a second. Enjoy plain, or with a little alfredo on top.

***There are other options like: Use a Tomato Basil Sauce instead of Alfredo, using Sweet Italian Turkey Sausage instead of ham.
Vegis are optional, as well. Like: Roasted Red Peppers, or Southwester Style: Chorizo meat with a lil Mexicorn, jalapenos, salsa in place of sauce, top with sour cream… Etc. Frittata recipes are endless!

Tay’s Pickled Eggs

THE BEST PICKLED EGGS EVER!
GREAT for right away eating, pasta dishes, deviled eggs, quick egg salad sandwiches, add to salads, top off soups with few slices, etc.
10 Eggs
Brine:
2c Vinegar
1/2c Water
1/4 tsp Pumpkin Spice
1/4 tsp Cinnamon
1/2c Sugar
2 tsp Pickling Salt
1 tsp Red Pepper Flakes
1/2 tsp Mustard Seed
1 Sweet Red Bell Pepper, cut strips*
1 Hot Red Pepper (Fat one), sliced
1 Cayenne, halved (1 half per jar)
2 Fresh smaller Jalapenos, sliced
1 small-med. Red Onion, sliced into rings

Boil eggs. Peel carefully. Set aside. Simmer Brine 15 minutes, stirring occasionally. Trying to divide evenly, add in brine ingredients, top with eggs, add more, top with more eggs, repeat til near top. When done, pour the remaining broth into the mason jars, to within a quarter inch of the top. Hand tighten on lid. Allow to cool. Refrigerate a week to couple of weeks. Enjoy!
*(I believe I did half sweet red bell pepper and 1/2 sweet orange bell pepper)

tTt’s Breakfast Burrito



tTt’s Scrambled Eggs

Eggs
Few Shakes of Basil
Few Shakes of Oregano
Black Pepper
Onion, chopped
Some Chopped Green Pepper

Meat of choice: Bacon, Pork/Turkey Sausage (We used Pork Sausage)

Cook meat. Then cook eggs and seasoning.  Add to meat.
Add Eggs/Meat to taco shells, with: Cheese, Miracle Whip/Mayo, Small Spoon of Salsa. Rolls burritos. Brown each side in Butter Flavored Cooking sprayed skillet. Optional to Serve With: Sour Cream, Hot Sauce, More Salsa.
– Or, Add to bread/bun/Bagel/Muffin/Biscuit. Eat.

YOU CAN PRE-FREEZE EGG BURRITOS!
If you choose so: On softshell top with mixture, top with, A Little: Salsa, Thin spread of Miracle Whip/Mayo, Cheese. Wrap. Butter Flavor Cooking Spray Skillet, Brown. Freeze single layer on plate sprayed with cooking spray (Don’t allow to touch, may stick). Cooking: Rub with wet finger. Microwave or bake til warmed through (I cover). Butter spray pan if baking.

Egg on the Moons (Cheesy Egg Crescent Rolls)

6 eggs
About 1/4 lb. Turkey Sausage Link, minced up
1/4c Heavy Creamer
2 oz Velveeta Cheese, cubed
1/4 tsp Black Course Pepper
Pkg. Crescent Rolls (Egg Rolls, Soft Shells can be used-FREEZER FRIENDLY)

Preheat oven according to crescent instructions. Butter skillet. Scramble eggs with creamer, velveeta, and pepper. Press out crescents (I sometimes use 2 per roll, but, you can squeeze it into 1, as well.). I find it easier to press it out into larger triangle. Roll like taco, sides in first. Bake accordingly, until brown.
*You can choose to add onions. Throw in jalapenos before rolling. Your favorite toppings.
