Poppy Seed Salad Dish- Top over Bow Tie Noodles (For Pasta), or Coleslaw (Slawad), or Chicken (For Sandwiches/Wraps)!

MAKE THIS using Coleslaw (As we did- Lower Carbs./Cals.). Or
SKIP Coleslaw
and: Try over Bow Tie Noodles. Or make into a Chicken Salad (Skipping Coleslaw and Adding Chicken Chunks- Top onto buns/wraps). Or Lettuce for salads. MANY IDEAS!!!

3/4 TO 1c KRAFT Creamy Poppy Seed Dressing (I did 1c)
2T Mayo (Optional)
14 oz. bag Coleslaw Mix (Or: Bow Tie Noodles/Chicken/or Lettuce)
1/2c canned Mandarin Oranges, drained
1/2c Fresh Strawberries, sliced
3-4 slices Bacon, baked/crispified, crumbled*
1/4c Carrot, grated
1/4c Sweet Red Bell Pepper, chopped small (Optional)
Lil shy 1/2c Onions, chopped (I believe I did Red)
– Top with Shredded Cheddar Cheese
– Top with 2-3T Honey Roasted Sunflower Sesame Seeds

I bake Bacon on foil, in the oven at 450 for about 12-15min. (No need to preheat). Once cooled, crumble. Toss all, EXCEPT, last 2. Then Top with Cheese and Sunflower Seeds. Serve.

*Notes: I sometimes drizzle 1/4tsp Bacon Grease into salad, especially if I’m using the lower count of bacon pieces (3).

Tatered Tacos (Potato Taco Dish)


Potatoes, sliced ..OR.. Southwestern Hash Browns (Pepper/Onion kind)
Shredd. Cheddar Cheese
About 1c Lettuce or Spinach, minced (I used spinach)

Cheese Sauce:
3/4c Salsa con Queso
1/2c Shredd. Cheddar Cheese
1/4c Crema Mexicana
1/2T Butter
1/8 Cayenne

Meat Mixture:
1 lb Ground LEAN Turkey Meat*, browned & seasoned with:
1 Taco Season Pkt., skip water (Or homemade recipe)
1/4tsp Paprika
1/4tsp Garlic Powder
1/8tsp Sea Salt
1/4c Salsa (Add at end of cooking)
1/2c Black Olives, chopped
3/4c FRESH Romas, diced
1 sm. Onion, minced

Simmer, stirring frequently, sauce ingredients in pan til melted. Layer bottom of Butter Flavored Cooking Sprayed baking dish with potato slices (1 layer enough to completely cover bottom) or 1/2 hashbrowns. Top with 1/2 cheese sauce and 1/2 meat mixture. Sprinkle LIGHTLY with a little Shredd. Chedd. Cheese. Top with 1/2 minced spinach. Layer more potatoes (1 layer) or hashbrowns, then rest of sauce and meat. Top top with Light sprinkle of cheese (Optional) and shredded lettuce/Spinach. Bake, covered, 375-400 for 45min- 1hr. Last 15-20minutes I uncover. Topping with Sour Cream is optional.

Sweet N Sour Chicks (Sweet N Sour Chicken) and Stir Fried Rice


Sweet N Sour Sauce:
1c powdered sugar (Confectioners’ sugar)
4 TBSP Ketchup
1/2 cup White Distilled Vinegar
1 TBSP Soy Sauce
1/2 tsp Garlic Powder
1/8 tsp Sea Salt
***TO ADD SPICINESS, which we LOVE this version:
1 tsp Sriracha Sauce (Other hot sauces may alter taste)
1/4 to 1/2 tsp Hot Red Pepper Flakes

Batter Mixture:
1 cup cornstarch
1/2 tsp Garlic Powder
Up to 1/4 tsp Course Black Pepper
Good pinch of Sea Salt
1/2 tsp Onion Powder
1/2 tsp Paprika

4 Chicken Breasts
2 eggs, beaten
1/3 cup vegetable oil

Preheat oven 350. Cut chicken into 1 inch cubes. Pour the starch over the chicken and toss til coated, I’m not pretty about it. Then I Distribute eggs over battered chicken. I find this easier than dipping them into the egg and losing most batter on my fingers.
Heat oil in large skillet. Cook chicken until browned on each side. Place in baking dish.
Mix ingredients of sauce. Whisk until smooth (I make earlier, let flavors combine some.). Pour evenly over chicken.
Bake at 350 for 15 minutes. Turn chicken, bake for 15 more minutes.

Stir Fried Rice:
4 cups Rice, already prepared and cooked. Instead of water, use chicken broth to cook rice with! Broth cubes works.
½lb. boneless, no skin Chicken Breasts, cooked. Or shrimp, cooked. Or both. I just boil chicken. Or cook shrimp in pan. Or leave out as we did in photo.
3 T Sesame Oil + 1/8 tsp
2 cloves Garlic, minced
1/2 cup to 3/4 cup Onion, chopped
3/4 to 1 cup Carrots
3/4 to 1 cup Peas
2 Eggs
1/3 c soy sauce
Heat sesame oil on medium heat. Add onion, garlic, peas, carrots. Stir fry until tender. Scramble eggs, mixing throughout vegetables. Add rice, chicken/shrimp, and soy sauce to pan. Stir in soy sauce and remove from heat. Drizzle 1/8 tsp Sesame oil over (Optional).
Mix. Serve
