Turkey Chorizo Quesadillas W/ Chipotle Cranberried Bean Salsa

Eat these as Tacos, or Enchiladas. Meat is Optional, I used Turkey to cut Calories. Beef+Chorizo can be used, etc.

Meat Mixture (*See Notes):
1.5 -2 lb. Turkey Meat (See Notes)
1/2 lb Chorizo
1 pkg. Frontera Red Chile Enchilada Sauce w/ Roasted Tomato & Garlic
3/4tsp Cumin
1/4tsp Pepper
1/2tsp Dried Oregano
Optional: Garlic Powder and Taco Seasoning (I skipped)

Tay’s Chipotle Cranberried Bean Salsa (Recipe Below)
Shredded Cheese: Mont. Jack or Cheddar or Moz.
Shell of Choice: Corn, Soft, Gyro/Pita, etc.

Toppings (Choose): Sour Cream, Guacamole, Salsa, Shredd. Lettuce, Tomatoes

Premix Bean Salsa (Just toss all). Allow to set some.
Cook Meats. Adding in Fontera Sauce and Seasons. (See Notes).
You can have these as Tacos, or Quesadillas:
Butter flavor cooking spray skillet. Top HALF of Burrito Shell with Cheese, Meat Mix, Bean Salsa, more Cheese (I used both Monterey Jack and Cheddar). Fold. Slide into skillet. Brown. BUTTER FLAVOR COOKING SPRAY TOP, then flip. Brown other side (I place lid over to help heat cheeses). Cut up. Serve with Toppings of Choice.

 *** Tay’s Chipotle Cranberried Bean Salsa:
1 can Pinto Beans, drained
1T canned Chipotle Peppers in Adobo Sauce, minced
3T Dried Semi Sweetened Cranberries (Or fresh)
2T Pulp Free Orange Juice
1tsp Lime Juice (100% fridge kind)
1/3c Red Onions
1 Celery, minced small
1/8tsp Cinnamon Powder
1/8tsp Sea Salt (Or more to taste)

Toss all, allow to sit some. Longer, better. Eat with Quesadillas, Tacos, on Bruschetta, as Dip, etc..

* Notes: I used Turkey and Chorizo. To cut Calories. You can use Beef with Chorizo or just Chorizo. Ours was GREAT, so leaving as is, healthier, too! Optional to add Taco Seasoning or Garlic Powder to Meat Mix. I skipped, was amazing! Or season how you wish your Taco meat to be.

Cr-Ana-Berry Fudgies (Ana’s Bananas about Her Cranberry Fudge)

1.5c Chocolate Chips
1/2tsp Vanilla Extract
7 oz. Sweetened Condensed Milk
1-1.5T Butter (I used 1.5T  Salted Sweet Cream Butter)
4-5T Less Sugar Craisins (Dried Cranberries)
1/4tsp Cocoa Powder

Optional: Banana Chips (Dried Bananas), crushed. With kid’s allergy to nuts (Brownie/Fudge Recipes are usually topped with Nuts)… We improvise, sometimes, with pressing Crushed Banana Chips onto top,  once at a slight cool.

Butter Flavor Cooking Spray Double Broiler (No Double Broiler? Do what I do (Tip Below!)), then added ALL ingredients into the pan, except Banana Chips.
Once to a smooth melt, I shut off heat. Give it a minute. Pour into a pan lined with plastic non stick sheet/oven liner/etc. (So, it doesn’t stick to pan). Press firm to form to a square/rectangle to thickness desired.
Optional to Sprinkle top with Banana Chips, crushed, and give a light press.
Once to an almost cool, place into fridge for 1 hour. Cut into squares.
*** No Double Broiler? What I do, is I take two pans. In one pan, I fill with a little water. I place a Mason Jar Lid into the water (To hold other pan level(ish)). I bring to a slight Boil. I add another pan IN the pan with water (Creating a Double Boiler Pan to melt Fudge without placing onto direct heat.)

tTt’s LOADED Ham N Cranberry Salad with Tay’s DEVINE Balsamic Dressing

LOW CALORIES LOW CARBOHYDRATES – AMAZING Flavor!

Tay’s Balsamic Dressing:
2T Balsamic Vinegar
1/2T Extra Virgin Olive Oil
1/4tsp Lemon Juice (Fridge 100% kind)
1T Honey Mustard
1T Maple Syrup (Organic Grade B)
1/16tsp Sea Salt
1/8tsp Pepper
1/8tsp Mustard Powder
1/4tsp Greek or Italian Season (I did Italian)

Lettuce
Romaine Lettuce
Ham
Dried LESS SUGAR Craisins/Cranberries
Cubed Cheddar Cheese
Red Onions, sliced
Mushrooms, chopped
Canned Basil Oregano Tomatoes, drained well
Sprouts
Cucumber, sliced, quartered

Cut all up to desired consistency. Premix Dressing. Allow to set about 10-20minutes. Drizzle over Salad. A LITTLE GOES A LONG WAY!!!

Notes: Organic Maple Syrup (Grade B) has Many Benefits! As do Sprouts! Use them!

Ballsy Pig Pies (DELICIOUS Balsamic Bacon N Berry Pizza)

AMAZING Pizza! A favorite in our house… Kids included!

Soft Flour Taco Shells (I used Baja Cafe Burritos)

Pizza Sauce:
2T Balsamic Vinegar
1/2T Sweet Chili Thai Sauce
1/16tsp Garlic Powder

Toppings:
Baked Bacon, cut to pieces
Shredded Mozzarella
Red Onions, sliced thin
Spinach, rough chop
Dried Sweetened Cranberries *See Notes
Grated Parmesan Cheese (Store shelf kind)
Dried Parsley

Bake Bacon on foil in pan at 450 (Preheat not needed) for about 12-15minutes.
Heat up a Sauce-Pan on stove top. Pour in Balsamic Vinegar. Cook down some. (Mine was quick to cook down!). Turn off heat. Add in Chili Sauce and Garlic. Stir, gettin all that Balsamic.
BUTTER FLAVOR COOKING SPRAY Baking Pan. Lay on Taco Shells in pan.
LIGHTLY/Barely brush sauce onto Soft Shell. Top with Shredd. Cheese. Top with Onions, Spinach, Bacon, and Cranberries (See Notes). Sprinkle with Grated Parm. Cheese and Parsley. Bake 450 for about 8 minutes.

*NOTES: You can choose to use Fresh Strawberry Slices in place of Cranberries. Strawberry Jam can be “Tried” in place of Sweet Thai Chili Sauce (I suggest trying chili, tho!) This recipe made two Burrito Shell Size Pizzas worth. Regular Pizza Crust can be used. I chose shells to cut calories and carbohydrates.
