Porky Pockets (Pork N Cabbage Pies)

1/2 lb. Pork Sausage
2-3c Coleslaw Mix (I did 2c!)
1c Mushrooms, chopped
1 Onion
1 Carrot, grated
1 Celery, halved long way, cut
1.5c Frozen Southwestern Diced Potatoes (w/ Peppers kind)
1/4tsp + 1/8tsp Celery Salt
1/2 can Cream Of Mushroom (Optional, I used.)
1/2c Shredded Mild Cheddar Cheese

Crescent Rolls

Heat Skillet, butter flavor cooking spray. Cook Pork with vegis. Add in Slaw and Salt. Add in Cream of Mushroom. Then near end, add in cheese. Cook til melted. Roll mixture into Croissant (I press out larger, making larger triangle, top with mixture, roll-folding bottom corners of triangle in, then rolling. Photo Below.)
Bake according to instructions… Mine cooks longer than instructions, tho.

Poppy Seed Salad Dish- Top over Bow Tie Noodles (For Pasta), or Coleslaw (Slawad), or Chicken (For Sandwiches/Wraps)!

MAKE THIS using Coleslaw (As we did- Lower Carbs./Cals.). Or
SKIP Coleslaw
and: Try over Bow Tie Noodles. Or make into a Chicken Salad (Skipping Coleslaw and Adding Chicken Chunks- Top onto buns/wraps). Or Lettuce for salads. MANY IDEAS!!!

3/4 TO 1c KRAFT Creamy Poppy Seed Dressing (I did 1c)
2T Mayo (Optional)
14 oz. bag Coleslaw Mix (Or: Bow Tie Noodles/Chicken/or Lettuce)
1/2c canned Mandarin Oranges, drained
1/2c Fresh Strawberries, sliced
3-4 slices Bacon, baked/crispified, crumbled*
1/4c Carrot, grated
1/4c Sweet Red Bell Pepper, chopped small (Optional)
Lil shy 1/2c Onions, chopped (I believe I did Red)
– Top with Shredded Cheddar Cheese
– Top with 2-3T Honey Roasted Sunflower Sesame Seeds

I bake Bacon on foil, in the oven at 450 for about 12-15min. (No need to preheat). Once cooled, crumble. Toss all, EXCEPT, last 2. Then Top with Cheese and Sunflower Seeds. Serve.

*Notes: I sometimes drizzle 1/4tsp Bacon Grease into salad, especially if I’m using the lower count of bacon pieces (3).

BalsBerry Chicks N Poppy Seed Slawad (Balsamic Raspberry Chicken w/ Poppy Seed Coleslaw Salad)

Thawed Chicken Breasts or LEGS

1/3c Raspberry Preserve (Try Healthify w/ 1/3c Fresh Raspberries, mashed)
1/4tsp Lemon Juice (I use concentrate kind)
1tsp Dried Mint
1.5T Balsamic Vinegar
1T Soy Sauce
1/8tsp Sea Salt

Premix sauce. Place aside til use. OPTIONAL: I marinaded chicken with Brush of White Vinegar and a sprinkle of McCormick’s Montreal Steak Seasoning.

A few ways to cook:
1.) Grill Chicken (Best on Charcoal- See tip below). Near end, brush well with sauce (Save 2T for preserving brush-on). Flip, brush other side. Allowing each side to cook few minutes. Brush rest on RIGHT BEFORE serving.
2.) Add chicken to foil. Pour over sauce. Bake at 450 til done.
3.) Brush legs with sauce 30minutes prior to cooking (Great time to heat grill), SAVING 2T sauce for prior-serving brushing. Grill. CHARCOAL’S BEST! (Check out grill tip below)- Careful cooking- This method, the sauce gets a slight char.

Notes: Healthify this using 1/3c Fresh, crushed Raspberry.

Just Peachy BBQies (BBQ Chicken w/Peach Slaw Wraps)

LOW CARB. LOW CAL.
Thinking of a way to Amp Healthiness, making Beneficial, adding Creaminess… I thought to add Greek Yogurt. In very healthy recipes, people use Greek Yogurt (Create Creaminess. In place of Oils, Sour Cream, Cream, etc.). I figured… Why not Flavored Yogurt. Tastes great AND is beneficial.

Wrap/Bun of Choice: Soft Shells, Lettuce/Cabbage Leaves, Egg Rolls, BUNS, etc.
Onions, chopped (Topping)
Shredded Cheese (Topping)

1.5-2lb Fresh Chicken Breasts, thawed
1/4tsp McCormick’s Montreal Steak Seasoning
1/8tsp Ginger Powder
1/4c to 1/3c Hickory Smoke BBQ (Add last 30 min.)*

Coleslaw Mixture (DON’T SKIP):
2c Coleslaw Mix (Cabbage, Carrot, etc. mix)
5.3 oz. CHOBANI Peach Greek Yogurt

Butter Flavor Cooking Spray crock. Add chicken breasts. Sprinkle seasons (Montreal, Ginger) over the top of chicken, careful to keep on top. Cook on Low 5-6 hours. About last 30minutes, shred chicken and add BBQ.
Toss cabbage with yogurt.
Top wrap of choice with BBQ Chicken Mixture, cabbage mixture, onions, and cheese. Fresh Diced Tomatoes, optional.
If using soft shells, extra tasty tip: Heat skillet sprayed with Butter Flavor Cooking Spray. Brown each side. Eat.
*Notes: Use a Non Extra Sweetened BBQ Sauce (Not Honey BBQ, etc.)

Healthified Cheesy Basas (Cheesy Kielbasa N Cabbage)

LOW CALORIES LOW CARBOHYDRATES

14oz bag Coleslaw Mix
1/2 TO 1 lb. TURKEY Kielbasa *See Notes
3/4 Onion
1 Garlic Clove, minced
1/4tsp Paprika
1/2tsp Pepper
1/8tsp Sea Salt
1tsp Worcestershire
1/2c Salsa Con Queso
1/2c Shredded Cheddar Cheese
Egg Rolls *Optional

Butter Flavor Cooking Spray skillet. Add in kielbasa, cook few minutes. Add in onions and garlic, cook few minutes. Add in coleslaw and seasons, cool til tender. Stir in in Worcestershire. Add in cheese and queso, cook til melted. Add 1/3c mixture to egg rolls, rolls. Butter Flavor Cooking Spray clean skillet. Brown all sides of egg rolls. Loved these alone, but, optional to serve with Salsa and Sour Cream.

*You can skip egg rolls and eat alone. Or use cabbage leaves instead.
Option to replace Kielbasa with: 1/2lb. Chorizo or with 1/2lb Beef/Turkey (Seasoned with taco seasons: Garlic, chili powder, cumin, coriander, etc.).
… Also, I used 1 lb. of Kielbasa, but, will do 1/2lb. next time. It goes along way, thus, saving 1/2 lb. for another meal!

Sproutin Ground Cow Rolls (Beef & Bean Sprout Egg Rolls – Lumpias)

Filling:

1.5lbs Ground Beef (I also do part Pork and Part Beef!!!)
1 can Bean Sprouts, drained*
1 Carrot, grated
1 small Onion, sliced thin
Up to 1/4c Cheddar Cheese, grated
1 Egg
A few good splashes of Soy Sauce, or more to taste
About 1/2tsp Brown Sugar (Opt.)
1/8tsp Ginger Powder
Shake of Garlic Powder
Shake of Course Black Pepper
Sprinkle of Onion Powder
Egg Roll Wraps

Brown Meat, drain fat. (I sometimes saute in sesame seed oil.)Add Brown Sugar, small pinch of Ginger, good few dashes Garlic and Onion Powder, a good amount of Pepper. Add in Vegetables. Add in Cheese and Egg. Add in Soy Sauce. Cook til nicely blended and Egg is cooked. Roll up in Egg Roll.
(Now these are usually deep fried, try air fryer! But, the healthier version we do:) Heat skillet, spray with Non Stick Butter Flavored cooking spray. Brown all sides. When done, I always sprinkle lightly with Garlic Powder (Some do Garlic Salt). Serve with Sweet and Sour mixed with Mild Cheddar Cheese (NOT Melted). Or… Sour Cream with Salsa.
***FREEZABLE! Single layer a plate with rolls (I spray plate with non stick spray), freeze, once frozen add to freezer bags.
* (Sprouts And/Or coleslaw mix can be used- About 1.5cups if using coleslaw mix. Less if using both sprouts and coleslaw mix). Also, you can choose to deep fry these. But, our preference is skillet sprayed with Butter Flavor Cooking Spray!
