Cheesy Kielbasa N Kraut POTATO Soup

1T Butter
1/2 lb.-1 lb. Kielbasa Link
1.5c-2c canned Sauerkraut, drained (I did 2. Optional to rinse.)
5 Chicken Broth Cubes + 5c Water
2/3c Mushrooms
2c + 1/4c Potatoes, diced
1c Carrots
1c Onions, large cut
2 Celery Sticks
2 med. Garlic Cloves, minced
2T Grated Parm Cheese
1T Louisiana Hot Sauce
1tsp Dry Mustard
1/2tsp Paprika
1/2tsp Pepper
1tsp Sugar
2tsp Dried Dill Weed
1c Peas (Last few hours)

1c Velveeta (Last few hours)
1c Shredded Mild Cheddar Cheese (Last few hours)
1/2c canned Evaporated Milk (Last few hours)

Cook in Crock Pot on Low for 8 hours. Last hour, scoop out most of potatoes and some juice, blend, add back to crock. Add in Cheeses and Evaporated Milk. Cook last hour. Stirring, occasionally.

Fall Time Chicken Legs and Cheesy Broccoli

Chicken Legs (Lightly Salt and Pepper)

Sauce:
3/4c Honey BBQ Sauce
1/2c Apple Butter
1/8-1/4tsp Cinnamon
1/8-1/4tsp Cayenne Powder

Lightly Salt and Pepper Legs. Grill. Mix Sauce. Brush on Sauce at end of Grilling. Eat!

CHEESY BROCCOLI
Drizzle Olive Oil
Fresh Broccoli, cut
1/2c Water
1/2 Chicken Broth Cube, Crushed
Velveeta Cheese, Enough Cheesin to your Pleasin

Oil pan. Add in Broccoli. Then, Water and crushed Cube. Cover and Simmer til cooked nicely. Add in Cheese Cubes. Cook til Melted. Allow to cool SLIGHTLY (Helps thicken Cheese). Eat!

Pestered Chicks N Pigs Rollin in Cheesy Piles (Pesto Chicken Bacon w/ Asparagus over Cheesy Rice N Peppers)

An EXCELLENT combination. Pesto Chicken & Bacon with Asparagus served over Cheesy Rice and Red Pepper. Don’t skip or alter anything. Trust me!

1.5lb Chicken, cubed
1.5c Bacon Ends, cut smaller
1/2 8oz. jar Pesto
1T Grated Parmesan Cheese (Store shelf kind)
1/8tsp TO 1/4tsp Sea Salt (I did 1/4 – Optional)

1 can Asparagus, drained and cut smaller

2c uncooked Instant Rice
2c Water + ONE Chicken Broth Cube, crushed
1/3 Red Bell Pepper, chopped
3/4c Cheese Sauce (I use Prego Creamy Cheddar)
1tsp Grated Parmesan Cheese (Store shelf kind)
1/4tsp Pepper

Cherry Tomatoes, halved (For topping- Optional)

Cube Chicken. Marinade first FIVE ingredients for 5-6 hours.
Cook chicken and bacon in skillet (I Butter Flavor Cooking Sprayed, but, didn’t need to.), adding in asparagus near the end.
I microwave rice. Add water, rice, red bell pepper, and crushed broth cube into a bowl. Microwave according to directions.
Mix together: Cheese sauce, parm. cheese, and pepper. Stir into cooked rice.
Top pesto meat mix over rice. Top with halved cherry tomatoes (I forgot! Optional). Enjoy.

Notes: I was debating on how to cook this. If I should use rice, or make pasta with noodles. I decided rice. You could very well change this into a Pasta by skipping rice and using noodles.
Cutting back on Carbs? Zucchinis, sliced and halved, boil in salted water (Or broth) for 30 seconds to 1 minute… In place of Rice. Cheese sauce amount may need to be altered, less.

Devine Chicken N the Cheesin Ranch Taters (Deliciously Marinaded Chicken N Cheesy Ranch Potatoes)

Chicken Marinade (5-6 hours):
1 Chobani LEMON GREEK Yogurt
1.5T McCormick’s Montreal CHICKEN Season (Or more to taste)
1/8tsp Sea Salt (Or more to taste)

Add marinade to ziploc bag. Add Chicken. place in fridge. Mix around occasionally. Marinade about 4-6hours. (We did almost 6hrs.). Charcoal Grill is best.

Cheesin Ranch Taters:
About 9 Golden Potatoes (Ours were small)
1/4 tsp Lawry’s Seasonal Salt (Optional)
1 Wish Bone Ranch Dressing/Dip Season Packet
1 Onion, chopped
3/4c Queso Con Salsa
3/4c Shredd. Mild Chedd. Cheese

Butter Flavor Cooking Spray baking dish (Or butter). Dice potatoes. Add to pan. Top with Lawrys Seasonal Salt. Mix some. Sprinkle evenly with Ranch Pkt. Spoon over Queso. Sprinkle Shredd. Cheese (Don’t mix). Top with foil. Bake at 450 for 30 minutes. Uncover bake additional 25minutes.

Cheesi-Minis (Cheesy Pot Pie)

Filling:

Meat of Choice (I used 5 slices COOKED Bacon, chopped) *See Notes
1c Frozen Chopped Broccoli, thawed
1c Frozen Peas
1c Frozen Sliced Carrots
1c Frozen Corn
1c Onions, chopped
1 cooked Med. Potato, diced
1c Salsa Con Queso (Or fav. Cheese Sauce- TRY QUESO!)
1/2c TO 1c Shredd. Mild Cheddar Cheese (I did 1/2c)
1 can Cream of Chicken, undiluted
1/3T Butter (I use, but, Optional)

Pie Crust

I microwave Potato about 4 minutes (Quick Cook!). Dice.  Cook meat (I baked Bacon). In sauce pan, add in rest of filling ingredients, simmer. Cut pie crust to size. Place into muffin pan. I did some with crust tops and some without. Bake according to pie instructions. Allow to cool some. Enjoy.

NOTES: You can use meat of preference. Bacon, Ham, Beef, Turkey Meat, lil Chorizo, Turkey Kielbasa, etc.  A LITTLE goes a LONG way!
ALSO… This recipe has endless options. Try ground turkey/beef with sprinkle of Taco Pkt. (Not entire pkt.). Top with Salsa and Sour Cream, when serving.
Homemade Cream Of, can be used.
Lower Carb Options: Use Wontons in place of Pie Crust! Use as Top AND Bottom Crust, or just have a Bottom!

Cheesy Explosives (Fallen Apart Cheese Burger)

1.5 Ground Meat (I used Pork!!!)
1c favorite Cheese Sauce (Prego Creamy Cheddar)*
2T Tomato Paste
1/2tsp McCormick’s Montreal Steak Seasoning
1.5tsp FRESH Chives, minced
2tsp FRESH Parsley, minced
1tsp FRESH Oregano, minced
1tsp FRESH Basil, minced

Shredded Mild Cheddar Cheese (Add to top at end!)

Toppings: Tomato slice, small spoon Relish, a little Ketchup, and Fried Onions

Brown meat. Add to Butter Flavor Cooking Sprayed Crock. Add rest of ingredients. Turn on LOW for few hours, stirring frequently. Last 15-20minutes, top with sprinkle of Shredd. Cheese.
Serve on Buns with Tomato slice, smidge of Relish, a little Ketchup, and a bunch of Fried Onions.

*Notes: You can choose to make your own sauce. A mixture of Shredd. Cheese, Milk, Butter, and seasoning of choice (Good ones are (Not all! Just options): Cajun, Cayenne, Red Pepper Flakes, Nutmeg, Garlic, Sea Salt, Pepper, Paprika, Grated Parm. Cheese, Bacon Bits)… Just bring to simmer til all’s melted.

Healthified Cheesy Basas (Cheesy Kielbasa N Cabbage)

LOW CALORIES LOW CARBOHYDRATES

14oz bag Coleslaw Mix
1/2 TO 1 lb. TURKEY Kielbasa *See Notes
3/4 Onion
1 Garlic Clove, minced
1/4tsp Paprika
1/2tsp Pepper
1/8tsp Sea Salt
1tsp Worcestershire
1/2c Salsa Con Queso
1/2c Shredded Cheddar Cheese
Egg Rolls *Optional

Butter Flavor Cooking Spray skillet. Add in kielbasa, cook few minutes. Add in onions and garlic, cook few minutes. Add in coleslaw and seasons, cool til tender. Stir in in Worcestershire. Add in cheese and queso, cook til melted. Add 1/3c mixture to egg rolls, rolls. Butter Flavor Cooking Spray clean skillet. Brown all sides of egg rolls. Loved these alone, but, optional to serve with Salsa and Sour Cream.

*You can skip egg rolls and eat alone. Or use cabbage leaves instead.
Option to replace Kielbasa with: 1/2lb. Chorizo or with 1/2lb Beef/Turkey (Seasoned with taco seasons: Garlic, chili powder, cumin, coriander, etc.).
… Also, I used 1 lb. of Kielbasa, but, will do 1/2lb. next time. It goes along way, thus, saving 1/2 lb. for another meal!

Cheesy Rice and Broccoli with Chicken

4-5 Chicken Breast (From 3 lb Frozen Bag)
2c Water
2 Chicken Broth Cubes, crushed
2c Rice
1/2c Frozen Corn
2c Frozen Broccoli (Not chopped)
1 sm Onion
1/4tsp Pepper
1/2tsp Garlic Powder

1/2c Salsa
About 1c Creamy Prego Cheese Sauce*
2T-3T Sour Cream
1T Tomato Paste

1c Shredded Cheese (To top)

Butter spray baking pot. Add in water and rice. Sprinkle in chicken broth cubes, garlic powder, pepper. Slight stir. Add in vegis. Top with chicken. (Optional, I skipped- Season top of chicken breasts with SMALL pinch salt/pepper) Cover, bake at 375 for 35minutes. In bowl, mix salsa, cheese sauce, sour cream, tomato paste. Place in fridge til use. After 35min. uncover, move chicken. Stir in sauce. Place chicken back over all. Top with 1c moz. shredded cheese. (Optional- Sprinkle with store shelf Grated Parm. Cheese). Cover, bake additional 20minutes.

*I use leftover Creamy Cheese from Mostaccioli Recipe. Low carb? You can choose to swap out rice for cauliflower and broth (Using 1 broth cube and 1/4-1/2c water). Also, Chicken is Optional. I use chicken to add some extra flavor and make it a complete meal!

En-Cheesi-Lada (Lower Carb N Cal Cheesy Enchilada)

Cheesy Enchiladas (Lower Cal Lower Carb)


Lower Carb Lower Cal

3 Frozen Chicken Breasts
1/2c Water + 1 Chicken Broth Cube
1/2 can Black Beans, drained
1/2c Mild Salsa
Small Onion
1/2tsp Chili Powder
1/2tsp Garlic Powder
1/4tsp Chipotle Season
1/4tsp Pepper

Sauce:
1/2c Salsa Con Queso
1can Reg. Enchilada Sauce

Shredded Mexi Cheese
Egg Rolls (Or taco shells, cabbage leaves, etc.)

Add first 9 ingredients to Butter Flavor Cooking Sprayed Crock. Cook on high 4 hours. Last 30min., remove chicken, shred, and add back to crock. Preheat oven to 375-400. Mix sauce ingredients, set aside. Add chicken mixture to egg rolls, and sprinkle with a little shredd. cheese. (A dab of water seals egg roll edges shut). Butter Flavor Cooking Spray skillet. Brown all sides of egg rolls. Butter cooking spray baking dish, spread a little sauce on bottom, top with layer of egg rolls. Top with more sauce. Sprinkle top with shredd. cheese. Bake about 30 minutes, or til cheese is melted.

***Egg rolls have fewer calories and carbs than the brand flour shells. Corn shells, softshells, or even Cabbage Leafs (Boiled in water for easier rolling), can be used for rolling. MEAT MIXTURE makes extras… Enough for tacos, or taco salads, the next day.

Easily Awesome Pasta (Pesto White Cheesy-Fredo Pasta)

White Cheese Pasta


1/2 to 3/4 lb. Turkey Meatballs (Precooked store bought)
1 small Onion
1/4c Pesto
1 jar Regular Alfredo Sauce (Classico)
3T Grated Parmasen Cheese (Store shelf kind)
3T Ricotta Cheese
1/4tsp Garlic Powder
1/8tsp Ground Pepper
1/2 lb. Spinach and Cheese Tortellini (Cooked separately in Water+Chicken Broth)

LIGHTLY Butter Crock. Add in onions and meatballs. Then the rest, EXCEPT tortellini. Cook low up to 2-3 hours. Last 15minutes, add in Tortellini. I cook tortellini in water with a few smashed Chicken Broth Cubes (About 2-3cubes). Serve with Salad and Garlic Toast (I used English Muffins- Melt butter, sprinkle with Garlic Powder and Garlic and Cheese Powder. Brush on both sides. Bake 450 8-10min.)
Can be done on stove top, as well. EASILY! Just: Cook Meatballs and Onions. Adding in rest, except Noodles. Boil Noodles in Water with Few Broth Cubes. Drain, add to Sauce, til desired consistency.

Cheesin Brocks in a Bowl (Cheesy Broccoli Soup)

1T Butter + Some to rub crock
5 Chicken Broth Cubes + 5c Water
1 lb. Frozen Chopped Broccoli
Small Onion
1 SMALL Carrot, grated
2T Grated Parmesan Cheese (Store shelf kind)
1/4tsp Pepper
1/8tsp Nutmeg
1/8tsp Red Pepper Flakes
1/4tsp Mustard Powder
1/8tsp Garlic Powder
1/8tsp Sea Salt
4oz. Velveeta, cubed (Last hour)
Nicely filled 1.5c Shredded Mild Cheddar Cheese (Last hour)
1c TO 1.5c Carnation Evaporated Milk (Last hour)
1c Medium Shell Noodles (Add once cheese is melted)*

Lightly Butter Crock. Add all, EXCEPT cheeses and evaporated milk. Last hour, about, add in cheese. Once it’s melted, add in noodles.
*Noodles are optional. You can choose to serve with garlic toast, in bread bowls, or with noodles… As we do.

EggTastic Pizza (Egg Pizza)

1 12oz Fridge Crescents
Hollandaise Sauce Packet, prepped (DON’T add suggested lemon juice)
7 Eggs
2 TO 3 oz. Velveeta Cheese, cubed
Up to 1/4 lb Chorizo (Or sausage of choice)
1/4c Heavy Creamer
Shredded Mild Cheddar Cheese
Pepper
Oregano

Preheat oven according to crescents. Make hollandaise sauce. Set aside. In bowl, mix heavy creamer and eggs. In skillet sprayed with cooking spray, brown meat. Add in egg mix and velveeta. Cook.
In cake pan, spread out crescents. Top with desired amount of hollandaise sauce. Top with eggs. Sprinkle shredded cheese. Sprinkle pepper and oregano on top. Bake accordingly, mine always goes about 5 minutes longer.
*You can add whatever other toppings you like: Onions, jalapeno, etc.

Egg on the Moons (Cheesy Egg Crescent Rolls)

6 eggs
About 1/4 lb. Turkey Sausage Link, minced up
1/4c Heavy Creamer
2 oz Velveeta Cheese, cubed
1/4 tsp Black Course Pepper
Pkg. Crescent Rolls (Egg Rolls, Soft Shells can be used-FREEZER FRIENDLY)

Preheat oven according to crescent instructions. Butter skillet. Scramble eggs with creamer, velveeta, and pepper. Press out crescents (I sometimes use 2 per roll, but, you can squeeze it into 1, as well.). I find it easier to press it out into larger triangle. Roll like taco, sides in first. Bake accordingly, until brown.
*You can choose to add onions. Throw in jalapenos before rolling. Your favorite toppings.

Ch-GEEZ WHIZ! (Cheesy Brat and Vegetables)

1/2 lb Turkey Link, Smoked Sausage (Favorite for this meal). Or use Brats of choice.
1 15oz jar Cheez Whiz (Or Great Value Cheesy Dip Mock)
2 cans Cream of Celery, undiluted. Entire can.
1/4 tsp Course Black Pepper
1/2 onion, chopped
About 1c frozen Peas
About 1c Carrots, sliced
About 1c frozen Corn
About 1-2c frozen Broccoli
1 LARGE potato, diced

Spray crockpot with butter flavored cooking spray. Cut link in half long way, then slice in half (Moons), or diced. Add in all ingredients. Cook on low 4-5 hours, stirring occasionally (Cheese will stick to side). Serve alone, with, or under biscuits. Next time I make this, I’m curious how a few cups of chicken broth would make this taste? A cheesy soup.
