EASY Loaded Cajun Sausage, Rice, and Vegi Bake

1 lb Smoked Cajun Sausage Links
1/2 lb Shrimp, detail/devein (Optional, or Chicken)
2c + 1/4c Water
2 Chicken Broth Cubes, crush
2c uncooked Rice
1tsp Garlic Powder
1tsp Tony’s Creole
1/2tsp Onion Powder
Shake of Pepper
Red Potatoes, half/quarter
Onions
Frozen Brussel Sprouts
Frozen Peas
Frozen Chopped Broccoli
Frozen Corn
Optional (I skip): Fresh Celery

Butter Flavor Cooking Spray Baking Dish (Or Butter). Add in Rice, Water, Seasons. Then, Meats. Then, rest. Cover tight with Foil. Bake about 1 hour at 425, stirring half way through.
Eat alone. Kids loved with Ketchup off to side.

Cajun Ranch Sweet Tater Fries

2 Sweet Potatoes, cut to desire
1.5T Chives or Green Onions (Optional)
2T Jalapeno, deseed, minced
1T Extra Virgin Olive Oil (Vegetable or Hot Chili Oil)

1.5-2T WISHBONE Ranch Dressing & Season Pkt.
1tsp Chili Powder
1tsp Onion Powder
1.5tsp Garlic Powder
1/2tsp McCormick’s Cajun
1/2tsp Sea Salt

Cut Potatoes. In a bowl add all the Seasons. Add half the Cut Potatoes to a large Ziploc Bag. Add in half Oil, toss around, then add half the Season Mix. Add other half of Potatoes, other half of Oil, MINCED JALAPENOES, GREEN ONIONS, then rest of Season Mix. Toss around. Allow to marinade some while the oven Preheats. Preheat to 450. I Butter Flavor Cooking Spray pan. Add Potatoes. Bake about 35, or so, minutes. (I usually check around 25minutes, in case)

Tay’s Queso Alfredo Cajun Pasta

1 lb. Turkey Kielbasa
2c (Packed) Kale/Spinach Mix, chopped
1 can Roasted Garlic Tomatoes, drained well!
2tsp McCormick’s Cajun Season
1tsp Garlic Powder
1/8tsp Sea Salt
1/2 pkg. Frozen Peppers/Onions Mix
1-2tsp Jalapeno, deseeded, minced

1/2c canned Queso Blanco
1 jar Alfredo

Whole Wheat Penne Noodles (5-6c when cooked)
Water
Pinch Sea Salt
1tsp Extra Virgin Olive Oil

Optional (I DO!): Shredded Moz. Cheese (To sprinkle), Grated Parmesan Cheese (To Sprinkle)

Bring Water, Sea Salt, and Extra Virgin Olive Oil to boil (For Penne Noodles).
Preheat Oven (If using Cheese Option).
Cut Kielbasa into diagonal chunks. Butter Flavor Cooking Spray a separate pot, add first 8 ingredients (Listed above). Cook down juices. Then, add in Queso and Alfredo. Simmer Queso/Alfredo Sauce while you cook Penne Noodles, stirring frequently.
Drain Noodles, well. Add 5-6c Cooked Noodles to Butter Flavor Sprayed Baking Dish. Mix in Sauce with Noodles. Top with Handful of Cheese, then sprinkle with Grated Parmesan Cheese. Bake, til cheese is nicely melted. Serve.

Healthier Options: Use 1/2 TURKEY Kielbasa. Cut Back on Sauce and Cheese Use. Rice Noodles or Zucchini Noodles in place of above Noodles.

Cajuned Corny Beanies (HEALTHY Cajun Bean N Corn Egg Rolls)

1 can Southwestern corn, drained
1 can Pinto Beans, drained
1 can Basil Oregano Garlic Tomatoes, slight drain
1/2 Sweet Red Bell Pepper, chopped
1 Onion (Sm./Med.)
About 1 in. Jalapeno, minced
2T + 1tsp Taco Season (From Packet)
1tsp McCormick’s Cajun Season
1/4tsp Garlic Powder
Few good cracks of Fresh Cracked Black Pepper
1/2c Shredded Mild Cheddar Cheese

Egg Roll Wraps
Extra Virgin Coconut Oil (Or Butter Flavor Cooking Spray)

Butter Flavor Cooking Spray Skillet. Cook Onions and Red Pepper for a few minutes. Add in Corn, Beans, Tomatoes, Jalapeno, Black Pepper, Cajun. Cook down some, then add in Taco Season. Simmer for a while. Mix in cheese. Continue to simmer til nice and thick.
Spoon onto Egg Roll Wraps. Roll up, using water to seal edges. Heat skillet with Coconut Oil (Or Butter Flavor Cooking Spray – Coconut Oil tastes BEST!!!). Brown all side. Eat alone, or with Sour Cream.

Under 150 Calories if using Butter Flavor Cooking Spray to brown Egg Rolls. About 160 if using a few Tablespoons of Coconut Oil.

Smoked Pumpkin Seeds – 2 Recipes

tTt’s Beered Salt N Pepper Pumpkin Seeds (THE BEST SEED I’VE EVER EATEN!!!):
Brine:
1can Miller Lite Beer
1/2T Cracked Pepper
1/3c SEA SALT
2 1/4c Pumpkin Seeds

Extra Virgin Olive Oil
Hickory Chips

Season:
3/4tsp Cracked Pepper
3/4tsp Lawry’s Season Salt
(Directions Below)

Brine:
2c Pumpkin Seeds
1c – 1.5c Mr. Mrs T’s Bloody Mary Mix
To 1T Sea Salt
1tsp Garlic Powder
1/2tsp Onion Powder
1T Lemon Juice
1T Louisiana Hot Sauce
1/4tsp Worcestershire

Extra Virgin Olive Oil
Hickory Chips

Season Mix (Toss with-Premix THEN add to seeds!):
2-3T Mr. Mrs T’s Bloody Mary Mix
1/8tsp Garlic Powder
1/8tsp Onion Powder
1/4tsp Lemon Juice
1/4tsp Louisiana Hot Sauce
1/8tsp Worcestershire
-Then Season with (Premix THEN add to seeds!):
1tsp + 1/4tsp Sea Salt
2tsp McCormick’s Cajun
1tsp Dill (Dried)
1/2tsp Course Cracked Pepper
1/4tsp Paprika

Directions for Both:
While gutting Pumpkins, Place seeds into pot of warm water (Easier cleaning).
Rinse off seeds, removing pumpkin guts.
Add to Brine/Marinade. Marinade overnight (We did little over 12 hours).
Light pat with paper towel (Mine weren’t complete dry. Just gave one pat.) We smoked- Lay Foil over grates. LIGHTLY brush foil, on grates, with Extra Virgin Olive Oil.  Lay seeds down. Smoke 1 hour. Good time to PREMIX Season Mixes.  Toss with Season Mix.
…   (Cajun Bloody– Premix Top part of season mix, toss with seeds, THEN season with Lower Season Mix!) …
BUTTER FLAVOR COOKING SPRAY a foil lined baking dish
. Bake 375 for about 8-13 minutes… KEEP AN EYE ON… THEY BURN FAST! Cook to a light crisp.
– Tip: PreMix Seasons Mixes to quicken cooking, and spread flavor better!!!
I like to cook til they have a crisp. DELICIOUS! And, YES! You can eat the
entire thing!

Cajun Bean-ness! (Cajun 16 Bean Soup)

Cajun 16 Bean Soup


1 lb. 16 Dried Bean Soup Mix, season pkt. discarded
1/2lb TURKEY Kielbasa Link, halved long way, sliced
1/2lb Shrimp (Optional)
2 frozen Chicken Breasts
12c Water
10 Chicken Broth Cubes
2 cans Stewed Tomatoes, undrained
1/2 Green Pepper, chopped
1/2 Red Pepper, chopped
1 Onion
1-1.5tsp Louisiana Hot Sauce (Believe I did 1)
2tsp McCormick Cajun Season
1/4tsp McCormick Lemon Pepper
1/4tsp Paprika
1/4tsp Mustard Powder
1/4tsp Sweet Pepper and Onion Season (From Fleet Farm)
1/8 tsp Sea Salt
1 tsp dried Parsley

Butter Cooking Spray Crock. Add all ingredients. Due to time restraints that day, I did on High for 3 hours, then Low for 4-5 hours. Otherwise, cook on LOW till Beans are soft.

Optional to Saute Shrimp and/or add 1/2way through cooking.

Soup? OCay Jun! (Cajun Chicken Kielbasa & Shrimp Soup)

2 cups V8 Juice- BLOODY MARY KIND!!!
2 Chicken Broth Cubes
2 cups Water (1.5 + .5)
1 can Tomatoes (Basil Oregano Kind), entire can
2 can CREAM STYLE Corn, entire can
1 PACKED cup Spinach, chopped
1 Onion, chopped (Save half)
1 Celery, sliced long way, then sliced
2 Garlic Cloves, minced (Save half)
1/4 tsp Course Black Pepper
1/4 tsp Cajun (I use McCormick)
1/8 tsp Cayenne Powder *Optional- It’s got a spice, as is.
1 tsp Dried Parsley *Optional (To be honest, don’t remember if I added this?!)
.5 lb Turkey Kielbasa Link, sliced
2-3 Chicken Breast
.5 lb Shrimp

Nicely Butter Crockpot. Nicely butter skillet. Sautee half chopped onions and half garlic. Add in shrimp and link. Cook til link browns. Add to crockpot. Add .5c water into skillet to loosen/ Deglaze pan. Add to crock. Add in rest of ingredients. Cook low 4-6 hours. Shred chicken. Serve.
*I’m sure you can just throw all into the crockpot.
