tTt’s Chicks (tTt’s Chicken Bites)

Sweet Chili Sauce:
1/3c Chili Sauce (The Ketchup aisle stuff)
2/3c Sweet Thai Chili Sauce (Asian aisle)

Hot Honey Sauce (From our Hot Honey Flaps):
1/3c Louisiana Hot Sauce
1/3c Honey
1T Butter

Batter (Was enough for 3 batches):
2 Eggs
Up to 2/3c Cornstarch
1/3c Oil (For Frying)

Cut up thawed Chicken Breasts. Add to bowl of Cornstarch, rolling each around, one at a time. Beat Eggs, pour over bowl of Cornstarched Chicken. Give a quick toss to distribute the Egg around, NOT TOO MUCH Mixing.
Heat Oil. Place each in, one at a time, and brown each side, til cooked. Once cooked, toss with Sauce of Choosing.
Potatoes: Slice thin-ish. I soaked in COLD Water + a lil Vinegar. Bake in Oven til browned, flipping halfway. PRE, or Post, Cooking- Season with Seasons of Choice (Salt/Pepper. Dill/Salt/Pepper/Chives), etc.

Orange You Glad the CooCooNuts are Here?! (Coconut Orange Chicken Bites)

Coconut Orange Chicken Bites 2
Healthier/Other Options Below.

About 1.5lb Chicken Breasts, thawed and cubed *See Notes
1T – 2T Sweetened Coconut Flakes

Sauce:
5.5T – 6T Sweet Orange Marmalade
1T Soy Sauce
1/4tsp Ginger Powder
1tsp Lemon Juice (Fridge Concentrate Kind)
1.5tsp canned Unsweetened Coconut Milk
1/4tsp – 1/2tsp Hot Chili Oil (I did 1/2tsp)
1/2tsp Red Pepper Flakes

Breading (Mix):
6-8T Cornstarch
3T Bread Crumbs (I used Italian- All I had)
1/2c Sweetened Coconut Flakes, minced/blended more
1/2tsp Garlic Powder
1/4tsp Pepper

2 Eggs Beaten
2T canned Unsweetened Coconut Milk

About 5T Vegetable Oil

AT LEAST one hour prior to cooking, mix sauce mix.
Cube chicken. BLEND/MINCE coconut flakes, to make smaller! Stays on chicken better. Mix breading in one bowl. Whisk eggs and 2T coconut milk in another bowl. Toss chicken with breading mixture. Drizzle egg over, quick mix. Heat oil in skillet, I start with 3T of oil and add, as needed. Brown chicken. Add to baking dish. Top with 1-2T coconut flakes. Top with sauce. Gently, quick stir. Bake UNCOVERED in preheated oven at 350 for 15minutes. Mix once, then bake another 15minutes.
Serve with: 2.5c uncooked Rice. Add amount water called for AND 2 crushed Chicken Broth Cubes. Add in Frozen Broccoli and Frozen Peas. Microwave/Cook per instructions.

OPTIONS:
-Try marinading chicken in coconut milk for 1 hour prior to cutting into cubes and cooking!
CUT CALORIES! : You can SKIP breading and egg mix… By doing it this way:
Butter Cooking Spray Skillet (Or Oil it). Halfway cook chicken, or brown each side. Add to baking dish. Top with 1-2T coconut flakes. Top with sauce. Bake 350, uncovered, for 15minutes. Toss, then bake another 15minutes.
-Try heating this up with up to 1tsp Sriracha Sauce- Have yet to try. May alter flavor.

-Coconut oil can be tried. I have yet to, tho.
-Amp up orange flavor with 1/4tsp McCormick’s Dried Orange Peel
-Using Sesame Oil instead of Hot Chili Oil

Buffalo Chicks (Buffalo Chicken Bites)

1 lb., or so, Frozen Chicken Breasts
2.5tsp Corner Market’s Sweet Pepper & Onion Seasoning *See Notes
— Throw Chicken into ziploc bag. Add season and allow to thaw, marinading.

1/3c Vegetable Oil, for frying (Try Coconut Oil- I have yet to try it, tho)
2 Eggs, Beaten
Batter Mixture:
2/3 TO 1c Cornstarch
1/2 tsp Garlic Powder
Up to 1/4 tsp Course Black Pepper
1/8 tsp Sea Salt
1/2 tsp Onion Powder
1/2 tsp Paprika
Sauce:
1/2c Louisiana Hot Sauce
2T Butter (I used Salted)
1T Honey

Preaheat oven 350. Thaw chicken with Sweet Pepper and Onion Seasoning *See Notes. Cut chicken into pieces. Mix batter ingredients, lightly toss chicken. Beat eggs, pour over. Lightly toss. Heat oil in skillet. Brown chicken. Place into baking dish. Evenly spread sauce. LIGHTLY toss. Bake 15minutes, LIGHTLY toss. Bake another 15minutes.
Notes: Corner Market’s Sweet Pepper and Onion Season was found at Fleet Farm. Has a sweet taste.

BBQ Chicks (BBQ Chicken Bites)

BBQ Sauce:
3/4c BBQ (I used a good Hickory)
1T Honey
2tsp Brown Sugar
1/4tsp Ginger
1/8tsp Garlic Powder
1/8tsp Pepper
1/16tsp Chili powder
1/8tsp Red Pepper Flakes

Premake sauce earlier, set in fridge. Place 3-4 frozen chicken breasts in a bag with few squirts of Fresh Lemon Juice. Marinade til thawed and ready to cook.

1/3c Vegetable Oil, for frying (Try Coconut Oil- I have yet to try it, tho)
2 Eggs, Beaten

Batter Mixture:
1c Cornstarch (You could probably get away with less)
1/2tsp Garlic Powder
Up to 1/4tsp Course Black Pepper
Good pinch of Sea Salt
1/2tsp Onion Powder
1/2tsp Paprika

Preheat oven 350. Cut chicken into 1 inch cubes. Pour the starch over the chicken and toss til coated, I’m not pretty about it. Then I Distribute eggs over battered chicken. (I find this easier than dipping them into the egg and losing most batter on my fingers.)
Heat oil in large skillet. Cook chicken until browned. Place in baking dish. Pour BBQ Sauce evenly over chicken. Bake at 350 for 15 minutes. Turn chicken, bake for 10-15 more minutes.

Lemony Snickets Chicks (Lemon Chicken Bites)

Lemon Sauce:
1/2c Powdered Sugar (Confectioners Sugar)
1/4tsp Garlic Powder
1/8c+1T Fresh Lemon Juice (More to taste)
1/4tsp Fresh Lemon Zest
2T Honey
1/2c Hot Water
1 Chicken Broth Cube (Crushed added to hot water)
1tsp Rice Vinegar
1/16tsp Ginger

1/3c Vegetable Oil, for frying (Try Coconut Oil- I have yet to try it, tho)
2 Eggs, Beaten

Batter Mixture:
1c Cornstarch (You could probably get away with less)
1/2tsp Garlic Powder
Up to 1/4tsp Course Black Pepper
Good pinch of Sea Salt
1/2tsp Onion Powder
1/4tsp Paprika

Turn chicken, bake for 15 more minutes. Squirt with a little more Fresh Lemon Juice. Allow to set and thicken some. Serve with 2.5c rice, cooked in Chicken Broth, pinch of sea salt, and mixed with 1c frozen Peas.

Healthier Version (Skipping deep fry coating): Make sauce, skipping powder sugar and adding a little more honey and a LITTLE sugar (To taste)- To sweeten. Cook chicken in A LITTLE EVOO (Or butter flavored cooking spray). Add in sauce, stirring, til thickened… OR: Fry in LITTLE EVOO, add to baking pan with sauce, then bake 350 15minutes. Toss, bake 15more minutes.
