Easy HEALTHIER Banana Chocolate Chip Ice Cream

A Healthier Go-To for a Sweet Tooth Fix! We’ve seen the Banana Ice cream Idea before. Wanting to amp this up, with the kiddos, we came to this recipe:

4-5 Ripe Bananas (I believe we did 4…?)
Up to 1/2tsp Vanilla Extract
1T Honey
1tsp Cocoa/Cocao Powder

Chocolate Chips

In blender, blend Bananas, Vanilla, honey, Cocoa. BUTTER FLAVOR (Or, Organic Coconut Oil Spray) a Muffin Pan. Pour blended ingredients into pan. Sprinkle tops with Chocolate Chips (I press down a little, so they freeze into it and aren’t loose). Place into freezer. Once COMPLETELY frozen, you can remove and place all into 1 Freezer Friendly Ziploc Bag. Enjoy.

Banana Balloon Balls

Seen a Deep Fried Banana Bites from a friend… Thought of the Balloons we’ve made over the years, and our camping favorite- Cones… And came to these:

Large Butter Fridge Biscuits, halved
Banana, sliced
Marshmallows, halved (Or tsp Peanut Butter?!)
1 Piece Hersheys Chocolate, 1 per biscuit
1.5T Sugar + 1/8tsp Cinnamon

bananaballonballs1Cut Biscuits and marshmallows in half. Place banana slice, 1 piece chocolate, and a 1/2 marshmallow into biscuit… BE SURE they’re enclosed well, no holes.
Roll in Sugar Cinnamon mixture.

bananaballonballs2Place into muffin pan. Bake according to instructions. ALLOW TO COOL some!!! Bananas and Chocolate get HOT!

*You can choose to deep fry, I haven’t. Roll in sugar/cinnamon mixture AFTER frying, tho. Not sure how the Butter Biscuits will deep fry, maybe regular biscuits, if frying…
Other Options:
-Sliced Strawberry/Chocolate/Banana/Marshmallow or Peanut Butter.
-tsp Preserve or Marmalade/ Chocolate.
-Pie Filling.
-Cream Cheese mixed with Fruit or Fruit Preserve.
-Cream Cheese mixed with Lemon Juice and Sugar.
-Many Ideas

Banana Wamma Bread (Banana Bread) with Crumb Topping

2T White Sugar (For dusting pan)
1/2 tsp Ground Cinnamon (For dusting pan)
1/4c+2T butter
1/4c powder sugar + 1 sweetner packet + 3/4c white sugar (Used in pinch. Worked. Stuck with it) OR use 1.5c White Sugar
1.5 Eggs
4 Ripened Bananas, mashed
1/2 (16oz) container Sour Cream
1 tsp Vanilla Extract
1 tsp Ground Cinnamon
1/4 tsp Sea Salt
1.5 tsp Baking Soda
2 1/4c All-Purpose Flour
CRUMB TOPPING: 1/3c Brown Sugar, 2T Flour, 1/8 tsp ground cinnamon, 1T butter

Preheat oven to 300. Butter loaf pan. In small bowl, mix 2T white sugar and 1/2 tsp cinnamon. Dust pans lightly with this mixture.

In large bowl, cream butter and sugar(s). Mix in eggs, mashed bananas, sour cream, vanilla and cinnamon. Mix in salt, baking soda and flour. Add to pan. Sprinkle on crumb topping (Below)

Sprinkle Crumb Topping: In a small bowl, mix together 1/3c packed Brown Sugar , 2T flour, and 1/8 teaspoon ground cinnamon. Cut in 1T butter until mixture resembles coarse cornmeal. Sprinkle topping over banana bread.
Bake for 1 hour at 300, until a toothpick inserted in center comes out clean.

Ohh the Many Bakes of Cakes

For the kiddos Birthdays, I’m always trying out combos. One of our favorites for YEARS is the Chocolate and Strawberry. But, as the years go on, the kiddos and I put our heads together to create a cake, JUST FOR THEM! Frosting flavor/color was picked by the kiddos. They did an amazing job!
Here are some mixes we have tried:

Strawberry Lemonade:
In two separate bowls!
Bowl #1 Lemon Cake Box w/ LEMONADE to REPLACE WATER it calls for.
Bowl #2 Strawberry Cake Box w/ Strawberry Milk to REPLACE Water
PLUS, 1c Strawberries, Chopped, added to Strawberry Bowl.
DIRECTIONS: In a pan (Spray/Butter if it calls for it), Zig Zag cake mixes, alternating! Til each is gone. Carefully, without shaking a lot, place it into Oven, Bake according to instructions (I always use the high/longer time). FROSTING IS OPTIONAL… Whip Cream/Ice Cream can be used!


Strawberry Chocolate:
In two separate bowls!
Bowl #1: Favorite Chocolate Cake Box. REPLACE WATER it calls for WITH CHOCOLATE MILK! Add rest of ingredients (Except water) it calls for.
Bowl #2: Favorite Strawberry Cake Box. REPLACE WATER it calls for WITH STRAWBERRY MILK! Add rest of ingredients (Except water) it calls for.

 Banana That Split Cake (Banana Split Cake)
1 Mix Vanilla Cake Mix
+ add Ingredients boxed cake calls for (Eggs, oil, Replace Water with Milk, that the boxed cake calls for*)
1 can Crushed Pineapple, drained as much as you can.
1 can Strawberry Pie Filling
2-3 Bananas
Whipped Cream
Chocolate Fudge Syrup (Optional)

Preheat oven according to boxed cake mix. Mix cake mix, eggs, oil, milk, mashed bananas. Butter cake pan. Spread out pineapple to cover bottom. Spoon on strawberry filling to cover bottom. Evenly distribute cake mix over that. Bake accordingly. Top each serving with whipping cream and a little swirl of chocolate fudge.
*Try Vanilla Milk, or flavored milk, instead!
