EASY Loaded Cajun Sausage, Rice, and Vegi Bake

1 lb Smoked Cajun Sausage Links
1/2 lb Shrimp, detail/devein (Optional, or Chicken)
2c + 1/4c Water
2 Chicken Broth Cubes, crush
2c uncooked Rice
1tsp Garlic Powder
1tsp Tony’s Creole
1/2tsp Onion Powder
Shake of Pepper
Red Potatoes, half/quarter
Onions
Frozen Brussel Sprouts
Frozen Peas
Frozen Chopped Broccoli
Frozen Corn
Optional (I skip): Fresh Celery

Butter Flavor Cooking Spray Baking Dish (Or Butter). Add in Rice, Water, Seasons. Then, Meats. Then, rest. Cover tight with Foil. Bake about 1 hour at 425, stirring half way through.
Eat alone. Kids loved with Ketchup off to side.

Sweet Chili Sauce:
1/3c Chili Sauce (The Ketchup aisle stuff)
2/3c Sweet Thai Chili Sauce (Asian aisle)

Hot Honey Sauce (From our Hot Honey Flaps):
1/3c Louisiana Hot Sauce
1/3c Honey
1T Butter

Batter (Was enough for 3 batches):
2 Eggs
Up to 2/3c Cornstarch
1/3c Oil (For Frying)

Cut up thawed Chicken Breasts. Add to bowl of Cornstarch, rolling each around, one at a time. Beat Eggs, pour over bowl of Cornstarched Chicken. Give a quick toss to distribute the Egg around, NOT TOO MUCH Mixing.
Heat Oil. Place each in, one at a time, and brown each side, til cooked. Once cooked, toss with Sauce of Choosing.
Potatoes: Slice thin-ish. I soaked in COLD Water + a lil Vinegar. Bake in Oven til browned, flipping halfway. PRE, or Post, Cooking- Season with Seasons of Choice (Salt/Pepper. Dill/Salt/Pepper/Chives), etc.

Tay’s HEALTHIER Loaded Sweet Tater Fries

“Sweet potatoes are high in Vitamin A, B5, B6, Thiamin, Niacin, Riboflavin, Antioxidants, Potassium. They’re Fat-Free, relatively Low in Sodium, High in Fiber, and have Fewer Calories than White Potatoes.” 

Sweet Potatoes, cut to fry desire
1/2T Extra Virgin Olive Oil
Fry Season (Recipe Below)
1 lb. LEAN Ground Turkey Meat
1/2 lb. Chorizo (Or more Turkey Meat)
1 Taco Season Pkt.
1 can S&W Chili Seasoned Pinto Beans, undrained
3T Water

Toppings: Shredded Cheese (Reduced Fat), tTt’s Pico de Gallo (Or Salsa), Sour Cream, Jalapeno, Lettuce, Onions (Or Toppings of Choice)

Preheat Oven. In ziploc bag, toss Sweet Potato Fries with Oil. (Reserve about 1/2tsp Fry Season for Post-Cooking Seasoning.). Sprinkle in half the Fry Season, toss. Sprinkle rest, toss. Dump onto Butter Flavor Cooking Sprayed Baking Dish. Bake 450 for 20-30 minutes.
In skillet, cook Turkey Meat and Chorizo. Add in Chili Beans, Taco Season, and Water. Simmer a few minutes, or til cooked down.
Top Fries with Toppings of Choice.

Fry Season:
2tsp Paprika
1tsp Chili Powder
1tsp Cumin
2tsp Onion Flakes (Or 1/2-1tsp Onion Powder)
1tsp Garlic Powder
1/8-1/4tsp Cayenne Powder (I did about 1/4tsp)
1/2tsp Sea Salt (Or to taste. Optional)

Optional: Use Refried Beans or Favorite Chili (Or Both) in place of Chili Pinto Beans (That’s a Boat Load!).
Tater Tots, Fries, etc. in place of Sweet Potatoes (They have Store Bought Sweet Potato Fries/Tots, some already seasoned!).

Loaded Tostada-Bravos

1 lb. Ground Beef, Turkey, Chicken, or Leftover Taco/Mexi Meat
1/4-1/3c Salsa
Taco Pkt. (Or Homemade)

1/2c canned Queso Blanco Sauce (Or Salsa con Queso)
Canned Refried Beans
Tostadas
Soft Shells
Shredd. Chedd. Cheese
Optional: Sauce Below

Cook meat, adding in Salsa and Taco Pkt. Allow to cool slightly. Mix Taco Meat Mix with Shredded Cheese, to desired taste.
Spread Beans on inner side of Soft Shell. Then, spread with A LITTLE Sauce (Recipe below. Optional). Top with Shredded Cheese. Top Tostada with Meat/Cheese Mix, then drizzle on Queso. Add another Tostada. Top with Shredd. Cheese. Spread another Soft Shell (Inner side) with Beans and lil more Sauce (Recipe below. Optional), Lay on top. press edges together. Nicely Butter Flavor Cooking Spray Baking Pan. Place onto Baking Pan. SPRAY tops of Tacos with More Butter Flavor Cooking Spray. Bake 425 til toasty (About 15-20min, or so. I forgot how long!), keep checking bottoms. Sprinkle with Garlic Powder and Black Pepper. Serve with Drizzle of Taco Sauce, Spoon of Salsa and Sour Cream (Optional).

Optional Sauce Spread (I use):
2T Sour Cream
2T Mayo
1tsp of Lime Juice (Fridge 100% kind)
1/2 tsp Cumin
1/2 tsp Sugar
1/2 tsp Paprika
1/8 tsp Cayenne Powder
1/8 tsp Garlic Powder

White Corn Tortillas
Red Onions
Salsa, Sour Cream (For Serving)

Meat of Choice (Seasoned Mexi Style/Taco Pkt. Optional): Turkey/Chicken/Beef/Pork/etc., cooked, shredded (I used Leftover Pork Roast-Not seasoned)

Cream Cheese Avocado (Blend):
1 nicely ripened Avocado
1/2c Shredd. Mont. Jack Cheese, or more to taste
4 oz. Low Fat/No Fat Cream Cheese
1tsp Lime Juice (100% fridge kind)
1/2tsp Garlic Powder
1/2tsp Cumin
1/2tsp Dried Parsley
1/8tsp Sea Salt
1/8tsp Pepper
1/2tsp Dried Cilantro
1/4tsp Dried Oregano
A smidge shy of 1/4tsp Red Pepper Flakes

Cook Meat of Choice. Seasoning, with Mexi/Taco Season (Optional). Shred, if need be. I used leftover Pork Roast (Not seasoned).
In blender, blend Avocado Cream Cheese Ingredients.
Spread Corn Shell with Cream Cheese Mix. Top with Meat of choice, Mont. Jack Shredd. Cheese, Red Onions. Roll, place in TOOTH PICKS to secure. Bake 425 20-35 minutes.
Top with Sour Cream and Salsa.
*** OR ***
Roll up in Corn Shell. Fry in Coconut Oil. Serve with Sour Cream, Salsa.

Roast Stuffed Croissants

Leftover Large Cut Meat (Any meat works)
Cream of Chicken OR Mushroom
Frozen: Carrots, Peas, Chopped Broccoli, Corn
Optionals: Mushrooms, Onions
Fridge Croissants (2per Pocket)

Mix Meat, Cream of, Vegis. Spread out Croissants (I do 2 per Pocket) as big as you can, into square. Line in Mixture, in diagonal. Fold over corners. Bake according to Croissants (Mine went DOUBLE time).

 – Ye Fluthered Pot O’ Cattle (Irish Corned Beef N Cabbage):
Corned Beef and Cabbage

Corned Beef WITH Season Packet included, season top
1T Butter
1 head of Cabbage, cut into 8 chunks
3 to 4c Water (I use 4)
3 Beef Broth Cubes (Or to taste)
Few Splashes Worcestershire (1/2T about)
3/4c Beer (Pilsner-Lite… And if you’re the cook, enjoy the rest!)
4-5 Red Potatoes
2c Baby Carrots (Not cut, whole)
1/2c Pearl Onions (Or large onion, cut big)
1/4c Fresh Parsley
1/2 tsp Garlic Powder
Coarse Pepper, freshly cracked
Pinch of Sea Salt

LATE, THE NIGHT BEFORE, Butter Cooking Spray (Or Butter) Crock. Add 4c Water, 1/2T Worcestershire, and Beef (Add packet later, not yet). Allow to sit overnight, in fridge. In morning, add crock bowl back into crock, turn crock to LOW. Add rest of ingredients (Beer, potatoes, carrots, onions, parsley, garlic, pepper, sea salt, beef cubes, butter, seasoning packet, cabbage). Cook on low 8-12 hours (I did 9-10hrs.).
Or Butter Crockpot. Add all to crock pot. Cook on low 9-12 hours.* Longer, the tastier! Vegis can be added a little later. 

Serve Beef with side of:
 – Horseradish Sauce:
2 Very good size Tablespoons of Horseradish Sauce
3T Light Mayo
1t Ground Mustard
Couple grinds of Black Pepper
Good shake of Garlic Powder
1/8 tsp Sugar
Pinch Sea Salt
1.5 to 2T Red Wine Vinegar
1/4c Sour Cream (I had none so used 1/8c Milk)
Premake and place in fridge.

Lamb’s an excellent source of: Protein, Vitamin B12, Niacin, Zinc, and Selenium. A good source of Iron and Riboflavin. Lamb has over 5.5x more omega 3 than Tilapia. 40% of the fat in lean Lamb is monounsaturated fat, which improves Blood Cholesterol Levels and decreases your Risk of Heart Disease.

Large Cut of Lamb
(Salt, Pepper, 1T Flour, 2T Oil for frying)
3T Real Bacon Pieces
3.5c Water
3c Beef Broth Cubes, crushed
1T Worcestershire
1 Pkt. McCormick’s Garlic Peppercorn Marinade/Season *SEE NOTES
1/2 6oz. can Tomato Paste
2c Fresh Mushrooms, halved
2 med./lrg. Potatoes
2c Fresh Onions
2c Fresh Carrots
1c Fresh Celery
2 Garlic Cloves, minced
1tsp Dried Thyme
1/2tsp Dried Marjoram
1/4tsp Dried Rosemary
1/2tsp Dried Oregano
1/4tsp Caraway Seeds
1/4tsp Onion Powder
1/2c Frozen Peas (Optional. Added last hour)
1/2c Rice (Not Instant. Added last hour.)

LIGHTLY sprinkle Lamb, all over, with Sea Salt and Pepper. Use about 1T of All-Purpose Flour to sprinkle/rub ALL around Lamb. Heat Oil, to sizzle, in skillet. Cook each side of Lamb for about 2-3minutes. Add Lamb to Butter Flavor Cooking Sprayed crock. Add rest of ingredients, adding Frozen Peas last hour. Cook on Low 8-10 hours. Serve with Croissants. Over Mashed Potatoes. Over Noodles. Over/Under Au Gratins or Scalloped Potatoes. However you’d like.
NOTES: Optional to use McCormick’s Garlic/Peppercorn Pkt. If skipping, cut back Water TO 3c.


 – Serve with Beer and Cheddar Biscuits

Make biscuits (Boxed kind, I used Bisquick) accordingly, use Beer instead of Water/Milk. For 2c of Bisquick. Add 1/2tsp Garlic Powder. And, 1/2tsp Butter Seasoning. Mix in a handful, or so, of minced up Cheddar Cheese. Add in Beer. Bake accordingly. Or, deep fry in Oil. Brush melted Butter on and sprinkle with Garlic Powder. Serve.

For Easter or Christmas, we do the NON BEER Version: 
We added 2T of Tay’s Garlic Toast Seasoning. 1T, or so, minced Green Onions. We use half Milk and half Sour Cream instead of the Water that the Bisquick calls for.

Parmesan Crock Pot Chicken – Serve over Mashed Taters N Vegis, Rice N Vegis, or Noodles. Many uses!

Use with Chicken Breasts (As I did), Wings, Legs, Steaks, Pork, Turkey, etc.

4-6 Frozen Chicken Breasts (From 3lb bag)
1/2c Alfredo Sauce
1/3c grated Parmesan Cheese (Store shelf kind)
1 Chicken (Or Beef) Broth Cube
1/2c Water
1tsp Garlic Powder
1/4tsp Black Pepper
1/2tsp Dried Oregano
1/2T Greek Seasoning (McCormick’s Gourmet)
Optional: 1/3T Butter (I skip)

Butter Flavor Cooking Spray Crock Pot. Add all. Cook on low for 4-6 hours. Optional to cut up Chicken. I turn my to warm for about 5-10minutes to thicken some.
Can also Butter Flavor Cooking Spray/Butter Baking Pan. Mix rest, together. Pour over Chicken. Bake.
Serve Alone, or, over/with:
-Shred up. Top with Cheese of Choice (Mont. Jack, Moz., Swiss), melt. Use for Sandwiches, on Gyros, etc.
-Vegis (Sautee/Steam/Cook)Onions, Broccoli, Carrots, Peas
-Rice (Cooked in Broth) mixed w/ Vegis: Carrots, Peas, Broccoli (Photo)
-Noodles (Cooked in Broth)

Eat these as Tacos, or Enchiladas. Meat is Optional, I used Turkey to cut Calories. Beef+Chorizo can be used, etc.

Meat Mixture (*See Notes):
1.5 -2 lb. Turkey Meat (See Notes)
1/2 lb Chorizo
1 pkg. Frontera Red Chile Enchilada Sauce w/ Roasted Tomato & Garlic
3/4tsp Cumin
1/4tsp Pepper
1/2tsp Dried Oregano
Optional: Garlic Powder and Taco Seasoning (I skipped)

Tay’s Chipotle Cranberried Bean Salsa (Recipe Below)
Shredded Cheese: Mont. Jack or Cheddar or Moz.
Shell of Choice: Corn, Soft, Gyro/Pita, etc.

Toppings (Choose): Sour Cream, Guacamole, Salsa, Shredd. Lettuce, Tomatoes

Premix Bean Salsa (Just toss all). Allow to set some.
Cook Meats. Adding in Fontera Sauce and Seasons. (See Notes).
You can have these as Tacos, or Quesadillas:
Butter flavor cooking spray skillet. Top HALF of Burrito Shell with Cheese, Meat Mix, Bean Salsa, more Cheese (I used both Monterey Jack and Cheddar). Fold. Slide into skillet. Brown. BUTTER FLAVOR COOKING SPRAY TOP, then flip. Brown other side (I place lid over to help heat cheeses). Cut up. Serve with Toppings of Choice.

 *** Tay’s Chipotle Cranberried Bean Salsa:
1 can Pinto Beans, drained
1T canned Chipotle Peppers in Adobo Sauce, minced
3T Dried Semi Sweetened Cranberries (Or fresh)
2T Pulp Free Orange Juice
1tsp Lime Juice (100% fridge kind)
1/3c Red Onions
1 Celery, minced small
1/8tsp Cinnamon Powder
1/8tsp Sea Salt (Or more to taste)

Toss all, allow to sit some. Longer, better. Eat with Quesadillas, Tacos, on Bruschetta, as Dip, etc..

* Notes: I used Turkey and Chorizo. To cut Calories. You can use Beef with Chorizo or just Chorizo. Ours was GREAT, so leaving as is, healthier, too! Optional to add Taco Seasoning or Garlic Powder to Meat Mix. I skipped, was amazing! Or season how you wish your Taco meat to be.

MOLE MOLE MOLE Enchiladas

Cooked Seasoned Chicken (I did Marinade Below!), shred
White Corn Shells (Not hard shells)
Shredded Monterey Jack Cheese
Onions, minced

Mole Enchilada Sauce (Makes a lil extra than what I used):
1c Water
1 Chicken Broth Cube, crushed
3T Mole  (I used La Costena)
3/4c canned Queso Blanco SAUCE

I marinaded and Grilled Chicken (BEST with these! TRY IT! Recipe Below). Butter Flavor Cooking Spray Baking Dish. Add a little cooked/grilled Chicken, Onions, and Mont. Jack Cheese. Roll*. Place SEAM DOWN. Fit all snug.
Mole Sauce: In sauce pan, heat Water and Broth cube up. Add in Mole. Simmer til dissolved. Stir in Queso Sauce, simmer a few minutes.
I DID NOT USE ALL SAUCE! I did about half, or so. Top over Corn Rolls. Sprinkle top with LIL more Mont. Jack Cheese.
Bake in preheated oven at about 400-425 for about 25-30minutes, til bottoms are browning slightly.
*I had no problem, so skipped, but, rolling is easier (More flexible), if you place shells, separately, in damp paper towels and microwave few seconds, til more flexible.

Tay’s Mexi Chicken Marinade (Best on Charcoal Grill! Amazing Flavor Combo!):
About 1.5 – 2 lb. Chicken Breast, thawed
1 Taco Season Packet
1tsp Garlic Powder
1tsp Cumin
1tsp McCormick’s Montreal Steak Seasoning
2 Dried Bay Leaves, halved
3T Lime Juice (Fridge 100% kind)

Marinade Chicken about 4-6 hours, in ziploc bag. Last hour I remove from fridge to bring closer to room temp before cooking. Best on Charcoal Grill. Cook. Shred Up!

Grilling Tip: We build a hill in center of grill. Light charcoal (We used Hickory Charcoal). Once coals are ashy grey, they are ready. Place on food, on outside of hill of charcoal. Prop Grill Open, using a Slightly crushed pop can. Chicken: Lay Chicken on outer part of grill (Outside hill). Once Chicken isn’t sticking to grate, so much, it’s ready to flip. Flip once, that’s it. Cook til Thermometer reads correct temp.

Toppings Ideas: Tay’s Guaca-HOLY MOLY SauceShredd. Cheese, Sour Cream, Salsa/Pico de Gallo, Tomatoes, Queso Cheese or Sauce, THIN spread of Mole, Shredd. Lettuce.

Cook Turkey most way. Add in Onions, Garlic, Jalapenos, Black Olives, and Taco Pkt. Once juices are cooked down some, add in Beans. Simmer a few minutes. Serve up on

Optional (Soft Shells): Heat Skillet. Spray with Butter Flavor Cooking Spray. Top shells with Above. Roll. Add to heated and sprayed skillet. Brown each side. Sprinkle with Garlic Powder. Also, Optional to add or top with Bell Peppers.

Moosh Banana!!! Whisk: Eggs, Vanilla, Stevia, Lemon Juice, Bananas. In a Butter Flavor Cooking Sprayed Muffin Pan/Or Baking Dish (As I used), add in Fruits of Choice. Pour Egg Mix over tops. Toss SLIGHTLY! Bake 425 for about 20-25 minutes, til eggs are cooked. Allow to set a few minutes, UNCOVERED!!!

NOTES: I use Lemon Juice for this recipe. May skip if doing a Peanut Butter Recipe. And be careful when mixing TOO MANY things… Eggs can only hold together so much!

1/4tsp Lime (Fridge 100% kind)
1/4 Garlic Powder
1T-2T Fresh Jalapeno, minced (I did 2T)
1/8tsp Sea Salt
1tsp Wishbone/Hidden Valley Ranch Dressing Pkt. (Or to taste)
1/8tsp Dill Weed
2tsp REAL Bacon Pieces

Shredded Cheese (Try Moz. or Mexi/Taco Blend)

Add FROZEN Chicken to a pot with Water and 1-2 crushed Chicken Broth Cube(s). Turn on heat. Bring to Boil til cooked. Allow to set a few minutes in Broth. Cut up.
Mince Vegis. Toss Chicken, Bacon Pieces, and Vegis.
Blend Sauce ingredients. Mix, TO DESIRED CONSISTENCY, with Chicken (I did all). Add to Egg Rolls. Optional to Top with Shredded Cheese. Brown in Butter Flavor Cooking Spray Skillet. OR, Bake in Oven (Sprayed with Butter Spray on both sides). OR, Fry in Oil (Try Coconut Oil)Serve with Salsa and Sour Cream.

Notes: Up, Downsize, or Skip Vegis, to your taste!
Optional to Season Chicken once cooked/cut up (Try Greek Seasoning or 1/2pkt Taco Season)

FREEZER FRIENDLY. Once browned (I use Butter Flavor Cooking Spray), add to plate. Freeze. ONCE FROZEN, add to Freezer Ziploc Bag! ReHeat in Oven or Microwave-Cooks fast!

Tay’s Alfredo Beef-sta (Tay’s Alfredo Steak w/ Rice Noodles)

1 Steak, sliced thin
1/2 pkg. Frozen Bell Peppers/ Onion Mix
1c Mushrooms, chopped
1/2T Fresh Garlic, minced
1 Celery Stalk, minced
2T Soy Sauce
1T Worcesterchire
1tsp Dried Oregano
1/2tsp Dried Basil
1/2tsp McCormick’s Montreal Steak

1 jar Alfredo Sauce (Add last)

Rice Noodles (Or Noodle of Choice)
– About 6c Water + 2 Beef Broth Cubes, crushed (For Noodles)

Butter Flavor Cooking Spray Pan. Cook Steak with Vegis, Soy Sauce, Worcestershire, and Seasons. Cook down Juices. Then, add in Alfredo Sauce. Simmer a few minutes. Cook Noodles per Instructions (I cooked in part water, part Beef Broth – 6c Water + 2 Beef Broth Cubes, CRUSHED. I also add about 1/2tsp Extra Virgin Olive Oil to water to help Noodles w/ sticking). Drain. Serve Noodles and Sauce to consistency desired. Lil Sauce goes long way.

OPTIONAL STEP (I skip): Especially, if using Penne Noodles: Cook Noodles, drain. Mix in Sauce, to desired consistency. Add to Butter Flavor Cooking Sprayed Baking Dish. Sprinkle top with Italian 6 Cheese (Optional), then a little Grated Parmesan Cheese. Bake/Broil til cheese is melted! Or, just top each bowl.
 **TURN THIS into a LASAGNA. Use ZUCCHINI Noodles- Lower Carbs/Lower Cals **

Tay’s Sesame BBQ Sauce

1/4c Kraft Toasted Sesame Seed Dressing
2T Teriyaki Sauce
1/3c Sweet Baby Ray’s HONEY BBQ Sauce (USE HONEY!)
1T Soy Sauce
1tsp Green Onions (Optional, I skipped)
1/2T Brown Sugar

Sea Salt
Pepper
1/2T Olive Oil
1/2T Flour

Premix Sauce. Set aside. LIGHTLY Sea Salt and Pepper Legs. Add into ziploc bag, add Oil, toss. Sprinkle in half the Flour, toss. Sprinkle in other half, toss. Fridge for about 15-20minutes. Bake 425-450 for about 18 minutes, flip. Cook another 12-18minutes, til juices run clear. Toss with Sauce. Serve.

Simple Crock Pot Ham and Vegis

Now, this is probably a given, with doing for years. (One of the many ways to eat Ham, the simplest, too!) Long lines of others who have done this. But, will throw it on here… Well… Just because!
We love having our Loaded Salad nights. For the Ham, we cook in Crock, with Vegis. Then, kiddos eat Ham and Vegis that night. Leftover Vegis make for great side dishes, upcoming dinners. And, Ham, gets cut up, and placed in fridge for our Salads! Or, Sandwiches or Dishes.

Large Ham Cut
1/3c Water
Few good splashes of Worcestershire
A good shake of Mustard Powder
2c Potatoes, or so
1-2c Onions, or so
1c Celery, or so
2c Carrots, sliced, or so
Optional: Mushrooms, Cabbage, I’ve even amped with 1/2can DRAINED Sauerkraut!, Green Beans, Canned Beans (Drained), endless options…

Butter Flavor Cooking Spray Crock. Cover and cook on Low all day. Serve up. Or, separate and eat vegis as side dish for dinners. And, cut up Ham for Salads, Sandwiches, etc.

Tay’s Greek-cado Sauce / Spread (Tay’s Greek Avocado Sauce)

Great on Wraps, Sandwiches, over cooked Meats, top while cooking Meats, with Fries, etc… MANY USES!

1 Avocado, mashed
1/4c Plain Yogurt
1/2T Extra Virgin Olive Oil
1tsp Worcestershire
1tsp Lemon Juice
1tsp Dijon
1.5tsp McCormick’s Gourmet Greek Seasoning
1/2tsp Dried Oregano
a lil shy of 1/2tsp Dried Rosemary, crushed
1/2tsp Garlic Powder
1T Jalapeno, deseed, minced
A lil shy of 1/4tsp Sea Salt

Add all to Blender, drizzling in oil near end. Blend in blender til smooth. Top onto Sandwiches, in Wraps, Over Fries, Over Chicken… MANY USES!

I used this topped over Baked Breaded Chicken Breasts (While cooking):

Flour Mixture:

3-4T Flour
1/4tsp Sea Salt
1/4tsp Pepper
1/2tsp Paprika
1tsp Parmesan Cheese (Store shelf kind)
1/4tsp Cayenne Powder

White Vinegar or Louisiana Hot Sauce
Tay’s Greek-cado Sauce/Spread (Recipe Above)

Blend Sauce ingredients. Place in fridge til use.
Mix Flour Mixture. OPTIONAL TO REMOVE CHICKEN SKIN! Brush Chicken LIGHTLY with Louisiana Hot Sauce OR Vinegar.
Add half Chicken to bag. Sprinkle in half Flour Mix. Shake around. Add in rest of Chicken Legs and Flour Mix. Shake more. Place onto Butter Flavored Cooking Sprayed baking pan. Place into fridge 30min-1 hour. Add a decent amount of Tay’s Greek-cado Sauce on both sides. Bake in oven at 425 til juices run clear (Ours was about 45minutes).

Tay’s Loaded Chicken Bacon Ranch:
2 Chicken Breast (Marinade):
1T Vinegar
1tsp McCormick’s Montreal Steak Seasoning
1 Pkt. 0.4 oz. Hidden Valley Buttermilk Ranch

2 Slices Bacon, baked, minced (Or Real Bacon Pieces)
4T Sweet Red Bell Pepper
3T Red Onion
1/2T Jalapeno, minced
1T Dried Tomatoes, chopped small (We skipped)
3-4T Spinach, minced
1/2c Shredd. Cheddar Cheese + 2T Italian 6 Cheese

Butter Flavor Cooking Spray
Garlic Powder and Onion Powder
Optional: Sprinkle lil Butter Powder and Parsley
Low Cal. Loaf (We used French-What we had), sliced thin-ish

Marinade Chicken about 4 hours. Foil line a baking dish. Bake Bacon til crispy. Crumble. Add Marinaded Chicken to Nonstick Pan. Cook til mostly cooked, then, add in rest (Except Cheeses and Loaf, der!). Cook down juices. Set aside to cool.
Thin slice French Loaf. Butter Flavor Cooking Spray each side (Or just bottoms). Sprinkle each side with a lil Garlic Powder and Onion Powder. Once Meat mix is to cool, add in Cheeses. Top each slice with Meat/Cheese mix. Sprinkle tops with Butter Powder and Parsley (Optional). Wrap in Foil. FREEZE (Make sure to freeze face up, til frozen (Few hours), then add to ziploc freezer bag).
Cooking: PREHEAT Oven to 450. Open Foils some (So, tops aren’t touching foils). Bake about 12-15 minutes, or til nice and toasty and melted.

Pesto, Balsamic, Soy Sauce, Salt/Pepper, Lil Mustard Powder. Marinade. Cook, cut up. Prep Loaf/Bread as above states. Add cooked meat. Add on Onions, Dried Tomatoes, Mushrooms + Moz. Cheese. (Adapted from this Recipe).
  – Made Pizza Types: Prep Loaf/Bread as above states. Dried Tomatoes (Or canned Basil Oregano), Turkey Pepperoni, Pizza Toppings, Cheese. (Skip Sauce). Sprinkle tops with Oregano and Grated Parmesan Cheese. Also, a great Pizza Recipe, just cut everything small , to fit: tTt’s Pizza Pie
   *** ANY STEAK MARINADE WORKS! Combo of McCormick’s Montreal Steak, Soy Sauce, Worcestershire and/or Balsamic Vinegar, + Vegis and Cheese… Or Check Out Our Site under Marinades.

Add BBQ Chicken to Loaf Slice. Add, Corn, Sweet Bell Peppers, Onions + Shredd. Cheddar Cheese (Bacon Pieces Optional (Turkey Bacon))
  – Alfredo Chicken: Favorite Alfredo (I season my sauce with Garlic, Pepper, minced Onions). Toss Sauce with Cooked Chicken (Can boil frozen Chicken in Broth. Just throw Chicken into Water, THEN, bring to boil til done.). Prep Loaf/Bread as above states. Top Alfredo Chicken onto Loaf Slice. Top with Vegis of Choice (Options: Celery, minced. Broccoli, chopped. Onions, minced. Peas. Carrots, grated. Etc.) + Moz. Cheese and Sprinkle of Grated Parmesan Cheese.

We used our leftover Tay’s Crock Pot Sweet n Spicy Chicken Recipe (Any Taco Meat will work).
Bread Bowls: I use freezer Bread Dough. I place in bowl (Earlier in day – To thaw), on a Warmer. Once thawed enough to handle, Sprinkle with Cumin and Oregano, Fold, Sprinkle again, fold… Keep doing til nicely seasoned, WELL! Cover, allowing to rise.
Heat Oil. Break off large piece. I had to improvise with a metal measuring cup. I dipped into oil to oil it (Helps with sticking) spread dough around it. Using tongs, deep fry to shape into a bowl form. Brown both side. Lay onto paper towels. Sprinkle with Garlic Powder.
Top bowls with Refried Beans, Taco Meat, Tay’s Guaca-HOLY MOLY! Sauce, Salsa, Shredded Cheese, Shredded Lettuce. Eat!

Crock Pot Lil Sweet Lil Spicy Chicken

About 3 lb. Chicken or Roast/Large Cut of Choice (Pork/Beef)

Pick ONE of Two Options (Both give very different, YET, AMAZING flavor):
Option 1: Fontera Red Chile Enchilada Sauce w/ Roasted Tomato & Garlic
Option 2 (I did): Stubb’s Chiles, Lime, and Ginger Marinade
Then, add:
1 Taco Season Pkt.
1/2c Root Beer
Brown Sugar (1/2tsp if using Stubb’s. 1tsp if Enchilada)
1/4tsp McCormick’s Garam Masala
1/4tsp Chipotle Powder (Optional)
2 Garlic Cloves, minced
1/2tsp Dry Mustard
1/2T Cumin
1/2tsp Pepper
Add Heat (Optional. I skipped): Red Pepper Flakes or minced Spicy Chiles

Add all to Crock Pot. Cook on low 8, or so, hours. Add to Shells/Bun of choice. Top with Taco Toppings of Choice. We used Tay’s Jalapeno White Sauce along with tTt’s Pico de Gallo, Shredd. Cheese, and Lettuce.

About 2tsp Coconut Oil (Or Butter Spray. More if Frying)

Chicken Marinade
(UP TO 4-5hours):

1.5 lb. Chicken
1 Hidden Valley Buttermilk Ranch PACKET
1 tsp McCormick’s Montreal Steak Seasoning
1T White Vinegar

Shrimp Marinade (UP TO Few hours):
1/2lb. Shrimp (Bell Peppers/Onion Mix, in it’s place)
1tsp TO 1/2T Tony’s Creole Seasoning
1tsp McCormick’s Cajun
1/4tsp Brown Sugar
1/4tsp Chipotle Powder

Toppings: Grated Carrot, minced Celery, minced Red Onion, Avocado Sauce (Recipe Below),

Avocado Sauce:
1 Avocado, mashed
1/2T Mayo
2T Sour Cream
1tsp Lemon Juice
1/2tsp Garlic Powder
1/4tsp Dried Dill Weed
1/4tsp Cumin
1/2tsp Dried Parsley
1/8tsp Sea Salt
1/8tsp Pepper
1/2tsp Dried Cilantro
1/4tsp Dried Oregano
1/2tsp dried Dried Chives
A smidge shy of 1/4tsp Red Pepper Flakes

Marinade Chicken. Diced up.  Marinade Shrimp. (Not a Shrimp Person?: Saute Sweet Bell Peppers and Onions with Shrimp Marinade Ingredients (Can cut back on amounts, if need be).)
Make Sauce: Remove skin and seed, MASH Avocado! Then, I add Sauce Recipe to Blender, blend. Set aside.
In SEPARATE PANS, Heat 1tsp Oil in each, cook Shrimp and Chicken.
Top either: Soft Shells, Buns, Egg Rolls, or Spring Wraps (As we did) with Chicken, 4 Shrimps, grated Vegis (I mix together), and Avocado Sauce. Roll. Cooking Options:

Spring Rolls: Soak each Sheet in Water for about 30 seconds. Top with ingredients. Roll.
Egg Rolls: Top em. Roll em, using water to close ends. Butter Flavor – Cooking Spray Skillet. Brown each side. Sprinkle with Garlic Powder (My favorite way)
OR Bake (Butter Flavor Spraying each side, Bake ABOUT 12-18min., flipping half way thro)
Or Deep Fry.
Tacos/Buns– Top. Add Cheese, Salsa, Sour Cream, if desired. Eat.
Note: OPTIONAL to also add grated Cucumber to Carrots, Onions, Celery.

Beer N Brat Mac N Cheese

Seeing a recipe for a Dip on FB, I thought we’d use Idea and turn it into a Mac. 

4 Jalapeno Cheddar Brats (Or Favorite Brat)
1/2T Butter
1.5 cans Pilsner Light Beer
1/4tsp Sea Salt
1/2tsp Garlic Powder

Up to 2/3c Reserved Beer Broth (Above)(I use 2/3c)
1/2c canned Evaporated Milk
Up to 2+3/4c Shredded Mild Cheddar Cheese
Brats, cut up
3T REAL Bacon Pieces
3T Fresh Onion, minced
1/2T Grated Parmesan Cheese (Store shelf kind)
1/4tsp Dried Thyme

About 1/2 Pkg. (3c COOKED) Dried 3 Cheese Tortellini Noodles (Cooked in Water with Pinch of Sea Salt + 1/2tsp Extra Virgin Olive Oil)

Bring: Beer, Butter, Brats, Salt, Garlic Powder to a boil. Boil for about 10 minutes, or so.
In sauce pan, add 2/3c reserved Beer Broth, Milk, Cheese, Brats, Bacon Pieces, Onions, Parm. Cheese, and Thyme. Stir frequently til nice and melted.
Boil Noodles with Sea Salt and Oil. Add about 3c COOKED noodles to Cheese.
I have yet to try, but, you could replace Sea Salt with Broth Cube (Crushed). We liked as was, so keeping it.

Lamb’s an excellent source of: Protein, Vitamin B12, Niacin, Zinc, and Selenium. A good source of Iron and Riboflavin. Lamb has over 5.5x more omega 3 than Tilapia. 40% of the fat in lean Lamb is monounsaturated fat, which improves Blood Cholesterol Levels and decreases your Risk of Heart Disease.

1/2c Rice (Not Instant. Added last hour.)

LIGHTLY sprinkle Lamb, all over, with Sea Salt and Pepper. Use about 1T of All-Purpose Flour to sprinkle/rub ALL around Lamb. Heat Oil, to sizzle, in skillet. Cook each side of Lamb for about 2-3minutes. Add Lamb to Butter Flavor Cooking Sprayed crock. Add rest of ingredients, adding Frozen Peas last hour. Cook on Low 8-10 hours. Serve with Croissants. Over Mashed Potatoes. Over Noodles. Over/Under Au Gratins or Scalloped Potatoes. However you’d like.
NOTES: Optional to use McCormick’s Garlic/Peppercorn Pkt. If skipping, cut back Water TO 3c.

Corny Chicken (Mexican Corn N Chicken)

DELICIOUS! And, many uses! Serve Alone. Stuffed in Croissants. Over Rice. Some liked on Soft Shells. Even use this to pour over Enchiladas stuffed with Cheese and Peppers! Your Choice!

About 1.5 lb Chicken (I used Frozen)
2 cans Southwestern Corn, drained (Bell Pepper Kind)
3/4c canned Queso Blanco
1 can Cream of Chicken
1c canned Black Beans in Lime W/ JALAPENO, drained
1/8tsp Sea Salt
1/4tsp Paprika (Not sure if I added…)
1tsp Chili Powder
1/2tsp Garlic Powder
1/4tsp Cumin
1/4tsp Pepper
1tsp Dried Cilantro
1T Parmesan Cheese (Store shelf kind)
2T REAL Bacon Pieces

Butter Flavor Cooking Spray Crock. Add Frozen Chicken. Cook on High 1 hour (If using Frozen). Then, add Rest. Cook on low 3-4 hours. Remove Chicken, cut up, add back to crock.
Serve Alone. Stuffed in Croissants. Over Rice. Some even liked it on Soft Shells. Your Choice. Even use this to pour over Enchiladas stuffed with Cheese and Peppers!

Loaded HEALTHY & BENEFICIAL Tuna & Mandarin Orange Salad with a DEVINE Balsamic Wasabi Dressing

1 can Tuna in Water, drained
– 1/4tsp McCormick’s Montreal Steak Seasoning
1/2c Crab (Optional)
3/4c Mandarin Oranges
1-2T of REAL Bacon Bits
1/4c Beet, Grated (These can get messy!)
1c Cucumber, matchstick cut
3/4c Red Onions, sliced thin
Grated Parmesan Cheese (Optional, I forgot)
Lettuce/Spinach to desired amount
Seasoned Texas Croutons

Dressing (Premix):
1.5tsp Kikkoman’s Wasabi Sauce
1.5T Balsamic Vinegar
1/2T Soy Sauce
1/4tsp Sesame Oil
1/4tsp Lemon Juice (100% Fridge Kind)
1/2T Extra Virgin Olive Oil
1T Organic Grade B Maple Syrup (Benefits- USE!)
1/16tsp Sea Salt

Drain Tuna. Stir in McCormick’s Montreal Steak Season. Allow to set some and Marinade while prep rest. Premix Sauce, set aside. Cut up Rest (To your desired taste). Toss in Bowl Serve up and drizzle a little Dressing and add a few Croutons. Enjoy!

REPOST of an Old Favorite- TAY’s Piggy BETTER-ington (Lazy one’s Cheaper Wellington – Pork)

2 Pork Chops (I used Bone In) *See Notes
Marinade (5 Hours):
1tsp Extra Virgin Olive Oil
1-2tsp Soy Sauce (I believe I did 2)
1.5tsp Dried Oregano
1/2tsp Dried Thyme
1/2tsp Pepper
1/8tsp Sea Salt (Optional)
1tsp Mustard

1T Flour
2tsp Extra Virgin Olive Oil
1/2c Beef Broth (I used 1/2c Water+1/2 Cube)
4T REAL Bacon Pieces

Mushroom Mix:
1/2-1tsp Extra Virgin Olive Oil
2c Mushrooms, chopped
3/4c Onions
1tsp White Wine (Movendo- USE!)
1/4tsp Garlic Powder
1.5tsp Worcestershire
1/8 tsp Sea Salt
1/2tsp Dried Oregano

Fridge Croissants

Preheat Oven per Croissant Instructions.
Meat: Marinade Chops 5-6 hours in Ziploc Bag. Remove Bones, dice. Place BACK into Marinade Bag. Add in half Flour, mix around. Add in other half, mix around. Heat 2tsp Oil in skillet. Add in Pork. Once browning, add in Broth and REAL Bacon Pieces. Cook and stir, til juices are cooked down.
Mushroom Mix: Heat Oil in skillet. Add in Onions, then Mushrooms. Cook some. Add in rest. Cook juices down and til Mushrooms are softer. Don’t burn.
Rolling: I usually use the smaller packages of Croissants. I use 2 per each BETTER-ington. Press out into a square with fingers. From one corner to another, line with Mushroom Mix, then Pork Mix. Fold in corners to seal. Bake according to Croissant Instructions.
((Also, can bake into a pie! Layer it on in for a BETTERington Pie))

Notes: Steak Can be Used! Even Chicken (Use Chicken Broth). Even Healthier- Serve in Egg Roll Wraps, Butter Flavor Cooking Spray Skillet, Brown each side, Sprinkle with Garlic Powder. Or in Muffin Pan using Wontons. Do the Taco Wonton Technique- Lay one Wonton in Muffin Cup. Top with Mushroom Mix, press another Wonton on top of that, then add in Pork Mix (Cheese Optional-Provolone or Moz.)
Also, bake into a Pie! Layer it on in for a BETTERington Pie.

Tay’s Crab (Or Lobster) Enchiladas

3 Boiled Eggs, sliced
Tony’s Creole Seasoning

1 pkg. Crab Meat (Crab or Lobster)
Frozen Pkg. Pepper/Onion Mix (Optional)
1tsp Jalapeno, minced

Sauce:
1/4c Queso Blanco
1c moz. Cheese
1/2c Sour Cream
1/2tsp Dried Cilantro
1/4tsp Lime (100% Fridge Kind)
1/4tsp Dill Weed
1/4-1/3T Butter
1/2c Vegi Broth (I used Cube+Water)

Soft Shells
Shredded Moz. Cheese
Small Spread of Miracle Whip or Mayo (I used Mayo!)
Grated Parmesan Cheese (Store shelf kind)
Fresh Tomatoes, diced

Preheat oven to 425. Saute Peppers and Jalapeno. Add in Crab near end.
Slice Boiled Eggs. Season, WELL, with Creole Seasoning.
Sauce: In Saucepan, heat all Sauce Ingredients, adding in Shredd. Cheese once hot. Stir til a Sauce Texture.
Top Soft Shells with Crab and Pepper/Onion mix. Add some Shredd. Moz. Cheese. Then, 3 Seasoned Egg Slices. Roll. Place into a BUTTER FLAVOR COOKING SPRAYED dish. Lay in Rolls. Top with Sauce. Sprinkle, well, with Grated Parmesan Cheese. Bake for about 30-40 minutes. Top with Fresh Diced Tomatoes just before serving.

Extra Crab Mix? STUFF Extra Crab and Cheese Sauce + Sprinkle of Cheese into Mushrooms (Stuffed Mushrooms!) or Wontons!
(Peppers/Onion Mix is Optional. You can just up the cheese on each and add chopped Onions)

You can still get your Dirty Fixes! Just remember Moderation, and skip the extras. As a lot of these recipes are a basis for Healthier, with Healthier Options on Posts. Tay’s Pizza Sticks

Egg Rolls, halved
Garlic Powder
Grated Parmesan (Store shelf kind)

About handful, or so, Shredd.Cheese (We use Moz. and/or Chedd.)
Turkey Pepperoni, to taste
REAL Bacon Bits/Pieces, to taste
Sprinkle Dried Parsley
Sprinkle Dried Oregano
1-2T Onions

In Blender, blend Bottom 6 Ingredients. I halve Egg Rolls (To make sticks). Top a line, kinda pressing compact, rub edges with Water. Roll, sealing edges. Butter Flavor Cooking Spray Skillet. Heat. Add Sticks, brown all sides. Add to plate, sprinkle both sides with Garlic Powder and Parmesan. Serve with heated Spaghetti Sauce to dip.

Notes: TOPPING Ingredients are Optional. Ideas (1-2T): Black Olives, Sauerkraut, Bell Peppers, Meats (Chicken, Sausage, Turkey Kielbasa, Shrimp, etc), Dipping Sauce (Alfredo, etc.), Banana Peppers, Tomatoes, etc. 

Swiss Shroom Burgers (HEALTHIER Mushroom and Swiss TURKEY Burgers)

AMAZING Flavor!!! And, Healthier than Most. But, you wouldn’t know with it’s FLAVOR!!!

Meat Mixture:
2lb. Turkey Meat (Beef can be used)
1 Mushroom Gravy Packet
1T Worcestershire
1tsp Soy Sauce
1T Green Onions, minced super small
2tsp Dried Parsley
1/2tsp Garlic Powder
1/2tsp Dried Dill Weed
1/2tsp Onion Powder
1/4tsp Sea Salt
1/2tsp Ground Pepper
2-3T Celery, minced

Sauteed Mushroom Topping:
1tsp Extra Virgin Olive Oil or Butter
1 pkg. Baby Bella Mushrooms, chopped
3/4tsp Dried Oregano
1/4tsp Lemon Juice (Fridge 100% kind)
1/4tsp Dried Rosemary, crushed more

– Toppings: Tay’s Balsamic Garlic Sauce (Recipe Here) (<-USE IT!) or Mayo, Swiss Cheese, AND FRIED ONIONS!!!
 Tay’s Redhead Flatbread (Recipe here) or Bun of Choice

Mix Meat Mixture. Allow to marinade about 20 minutes. Form Patties. Cook. Near end add on Swiss Cheese, to melt. Try with Tay’s Balsamic Garlic Sauce (Recipe Here) on Buns. Top with Sauteed Vegis. Then, Fried Onions (Optional, but delicious!).

Sauce:
Favorite Spaghetti Sauce
Dried Basil
Dried Oregano
Grated (Store shelf kind) Parmesan Cheese
tTt likes to sprinkle edges LIGHTLY with Creole!

Prep Dough (Needs 1hr to rise.). Mix Sauce ingredients. Stretch, or quickly roll, out dough. Top with Sauce, Toppings, then Pepper and Oregano. Optional to sprinkle edges with Creole for a nice saltiness! Bake 425 for about 11-13 minutes.

Tay’s Pesto ChickPEA-ZZA:
Tay’s Redhead Flatbread (Recipe Here) or Flatbread of chioce
Sauce – (Blend):
A lil Olive Oil
“About” 1/4c-1/2c Chickpeas, drained
“About” 1-2T Prepared Pesto
OPTIONAL 1/8tsp Sea Salt (I skipped!!)
(ADD ABOVE Amounts TO YOUR TASTE!!!)


Red Onions
Tomatoes, chopped
REAL BACON PIECES or Turkey Kielbasa
Shredd. Moz. Cheese
Sprinkle top:
Grated Parmesan Cheese (Store shelf kind)
Pepper

Prep Dough (Needs 1hr. to rise). Stretch out to size, I’m not pretty about it.
Blend Chickpeas, Oil, and Pesto. Spread onto dough. Top with Toppings. Then Cheese. Then Parmesan and Pepper. Bake about 10-13minutes at 425.

Tay’s RedHead FlatBread

1c + 3/4c All Purpose Flour
1 pkg. ACTIVE Yeast
1/2tsp Sugar
a smidge shy of 1tsp Salt
1tsp Dried Thyme, crushed some
1/2tsp Cumin
3/4c Warm Water
1tsp Extra Virgin Olive Oil

In a bowl, add Flour, Yeast, Sugar, Salt, Thyme, and Cumin. With a hand blender, I blended some.
I microwaved Water to a nice warmth. Slowly pour in Water. Knead with PALM (Fold dough, press, fold, press, etc.) to a nice smoothness.

RISING TECHNIQUE! My house is not warm enough (Warmth aides in rising), so:
IN A SEPARATE bowl, I add an inch or 2 of Microwaved Hot (Not too HOT!) Water, I take ANOTHER BOWL and LIGHTLY brush with Olive Oil. Set the Dough into the bowl brushed with Olive Oil. SET THAT BOWL on top of the microwaved water bowl (This keeps the dough warm, rises PERFECTLY!). Cover with a Dampened Paper Towel or Rag (I dampen with warm water).
Allow to rise 1 hour. Some people press it smaller after rising, I don’t I just:
Cut off what’s needed, stretch or quick roll to size.
I Butter Flavor Cooking Spray a pan, Bake at 425 for about 10-13 minutes (Pizzas, Flat Tacos, Buns).
You can also cook in a skillet. Once it bubbles nicely, flip (Be sure it doesn’t burn)(Flatbreads, Pita types).
Great for Pizza Crust (We bake in Oven). Flatbreads (We cook on skillet). Burger Buns (We bake). Also, great for dipping in Hummus… Etc.

NOTES: We were going to add in Oregano. But, with having toppings that already contained Oregano, we skipped. Up to you. We would have done 1/2 – 1tsp.
